Seafood Three-Cheese Pasta

Filipino Style Recipe: Seafood Three-Cheese Pasta is a simple yet delicious seafood-pasta dish that is made of seafood cooked together with Three-Cheese pasta sauce and herbs. Toss together in pasta then sprinkle with Parmesan cheese.

Ingredients:
250 grams spinach spaghetti or any pasta
200 grams shrimps, peeled and deveined
300 grams squid, cut into rings
1 pack Three-Cheese Pasta Sauce
3 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, grated
2 pieces tomatoes, cut into cubed
1/8 cup pasta water
1/4 teaspoon dried basil
Parmesan cheese

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.
2. Reserve 1/8 cup pasta water. Set aside.

Part 2
1. In a pan, saute garlic, onion, ginger and tomatoes.
2. Add shrimp and squid then cook for 3 minutes.
3. Pour pasta water and Three-cheese pasta sauce.
4. Season with dried basil, salt and pepper then simmer until almost thickens.
5. Toss in pasta. Sprinkle with Parmesan cheese. Serve!

Shredded Fish Penne

Filipino Style Recipe: Shredded Fish Penne recipe is my invention during the holy week. It is a low calorie dish that is full of flavor. It is basically made of left over paksiw fish that is shredded and cooked in olive oil, tomatoes, and others.

Good for 3-4 servings
Estimated time of preparation and cooking: 40 minutes

Ingredients:
250 grams whole wheat penne pasta
2 pieces tulingan
1/4 cup vinegar
3 cloves garlic
3 tablespoon olive oil
4 pieces tomatoes
4 pieces anchovy fillet
2 tablepoon olives
fish sauce
salt and pepper
pinch of chili flakes

Procedures:
Part1
1. Cook fish in vinegar, salt, and pepper.
2. Once cooked, let it cool. Remove meat from head and bones, then shred.

Part 2
1. Cook pasta according to package instruction. Drain and mix olive oil. Set aside.
2. Over low heat. saute garlic until transluscent. Add the anchovies and olives then stir until flavor and aroma comes out around 2-3 minutes.
3. Turn heat to medium then add the tomatoes and saute until soft.
4. Pour the shredded fish and cook for around 5 minutes. Add the chili flakes.
4. Add the cooked pasta and season with fish sauce. Mix well until well combined.

Shrimp Pesto Pasta

Filipino Style Recipe: shrimp pesto pasta is another simple and healthy Italian pasta dish. This dish is consists of shrimp, pasta and pesto sauce that is made of processed basil, pine nuts, extra virgin olive oil, salt and pepper.

Estimated time of preparation and cooking: 30-40 minutes.
Good for 3-4 person

Ingredients:
200 grams Penne pasta or any pasta
250 grams shrimp, peeled and deveined
3 tomatoes, chopped
2 red bell pepper, diced
1 head garlic, minced
1 onion, minced
2 tablespoons olive oil

Pesto Sauce:
3/4 cups fresh basil leaves, chopped
3 tablespoons pine nuts or roasted pili nuts or walnuts
1/3 cup extra virgin olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a food processor or blender, process chopped basil, pine nuts, salt and pepper until blended.
2. Add extra-virgin olive oil then continue blending until combined. Add more olive oil if needed. Set aside.

Part 3.
1. In a pan, heat oil then add shrimp and cook until color turns to pink. Remove from the pan and set aside.
2. In a same pan, saute garlic, onion, and tomatoes until softened.
3. Add bell pepper and then pesto sauce. Adjust seasoning according to taste.
4. add pasta then toss to coat evenly, add shrimps.
5. Prepare shrimp and pasta on pasta tray then top with Parmesan cheese.
6. Garnish with remaining basil. Serve and enjoy.

Note:
1. You may also use ready made pesto sauce in supermarket.

Crab Meat Aglio Olio

Filipino Style Recipe: Crab Meat Aglio Olio is another variety of traditional Italian pasta dish. This dish is made of sauteed garlic in olive oil, chili flakes, crab meat and basil then toss in spaghetti pasta. Aglio olio is usually serve as meryenda(mid-afternoon snack) or in any special occasion.

Ingredients:
400 grams spaghetti pasta
1/4 cup olive oil
8 cloves garlic, peeled and chopped
200 grams crab meat or crab sticks, cut into thin slices
1/4 teaspoon dried chili flakes(optional)
1/4 cup white wine
10 leaves basil, finely chopped
salt and pepper to taste
grated Parmesan cheese

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat 1 tablespoon olive oil then saute garlic, chili flakes until light brown.
2. Add crab stick and then stir cook for 3 minutes. Season with salt and pepper according to taste.
3. Add white wine and simmer for 2-3 minutes or until sauce reduce in half.
4. Add remaining olive oil, pasta and basil then toss until coat evenly.
5. Transfer to serving plate, top with Parmesan cheese and garnish with basil leaves. Serve.

Shrimp and Sausage Pasta

500 grams linguine or spaghetti pasta
250 grams shrimp, peeled and deveined
150 grams Chinese sausage, cut into thin slices diagonally
3 tomatoes, chopped
1 head garlic, minced
1 onion, minced
1/2 tablespoon ginger powder
1/4 cup coriander or parsley
a dash of chili flakes
4 tablespoons olive oil
fish sauce and pepper

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.
2. Reserve 1/8 cup pasta water. Set aside.

Part 2
1. In a pan, heat 2 tablespoons olive oil then stir cook sausage until browned.
2. Add shrimp and cook until color turns to pink. Remove from the pan and set aside.

Part 3.
1. In a same pan, saute garlic, onion and tomatoes until softened.
2. Add chili flakes, shrimp, sausage, ginger powder, coriander, fish sauce and pepper to taste.
3. Add pasta, pasta water and olive oil then toss to coat evenly.
4. Transfer to serving plate, top garnish with remaining coriander. Serve.

Seafood Angel Hair Carbonara

Filipino Style Recipe: Seafood Angel Hair Carbonara is another creamy and mouth-watering seafood-pasta dish. It is consists of seafood such as squid and clams then cooked together with evaporated milk, all purpose cream and cheese. Tossed together and topped with grated cheese. This can be served in any type of occasion or as mid-afternoon snack.

Ingredients:
500 grams angel hair pasta or any
800 grams clams
400 grams squid, cut into rings
3 tablespoons vegetable oil
1/2 head garlic, peeled and chopped
1 onion, chopped
1/4 cup sliced mushroom
1 big can evaporated milk
2 x 250 ml all purpose cream
1/2 cup Parmesan cheese, grated
salt and pepper to taste
parsley for garnishing(optional)

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat oil then saute garlic, onion and mushroom then saute for 2-3 minutes.
2. Add squid and stir cook for a minute. Remove and set aside.
3. In a same pan, add clams then cover and simmer until shells open. Remove and set aside.

Part 3
1. In a same pan, add the evaporated milk and all purpose cream then bring to boil while keep stirring.
2. Add the grated cheese then keep stirring for about 3-5 minutes or until beginning to thicken.
3. Put back the clams then adjust seasoning with salt and pepper. Turn off the heat then add squid.
4. In a serving plate, arrange pasta then add the sauce on top. Sprinkle with grated cheese and garnish with parsley. Serve!

Seafood Fusilli in Creamy White Sauce

Filipino Style Recipe: Seafood Fusilli in Creamy White Sauce is another creamy and mouth-watering seafood-pasta dish. It is consists of clams cooked in creamy white sauce then tossed together with fusilli. This can be served as meryenda(mid-afternoon snack) or in any special occasion.

Spiral Aglio Olio

Filipino Style Recipe: Spiral aglio olio or fusilli pasta in garlic and oil is a traditional Italian dish and become popular to Filipino cuisine. This dish is consists of garlic sauteed in olive oil then toss in fusilli pasta. We add chili flakes, clams and basil to add more flavor to our dish. Aglio olio is usually serve as meryenda(mid-afternoon snack) or in any special occasion.

Meatballs Spaghetti

Filipino Style Recipe: Meatballs Spaghetti is another variety of spaghetti dish. Meatball is a combination of beef, breadcrumbs, eggs and other herbs then mold together into a balls. The sauce is a made of diced or crushed tomatoes simmered together with tomato sauce, cheese and other ingredients.

Estimated time of preparation and cooking: 40-50 minutes
Good for 6 servings

Ingredients:
500 grams spaghetti(any prefer pasta)
24 pieces premade meatballs

Sauce:
3 tablespoons tomato paste
1 can(28 oz) crushed tomatoes
2 tablespoons olive oil
1 yellow onion, chopped
3 cloves garlic, chopped
1/4 cup Parmesan cheese, grated
1 tablespoon sugar
salt and pepper to taste

1 cup carrots, finely chopped(optional)
1 cup brown button mushrooms, chopped(optional)
1/4 cup parsley, finely chopped(optional)
1/4 cup basil, finely chopped(optional)
1/4 cup red wine(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside

Part 2
1. In a frying pan, heat cooking oil and fry meatballs for about 5-10 minutes depending on the size or until color turns to golden brown. Drain and set aside.

Part 3
1. In a sauce pan, heat olive oil on medium heat. Saute onions and garlic.
2. Add carrots and mushrooms and continue sauteing for 2 minutes.
3. Add diced tomatoes, tomato paste, basil and parsley then stir to blend.
4. Reduce heat and simmer for about 15 minutes. Stirring occasionally.
5. Add red wine, Parmesan cheese, adjust seasoning with salt, pepper and sugar according to taste.
6. Add meatballs and gently stir then simmer for another 5 minutes. Stirring occasionally.

Part 4
1. Prepare pasta on pasta tray, add sauce and meatballs, sprinkle with grated Parmesan cheese, garnish with remaining parsley. Serve with garlic bread.

Tips:
For homemade meatballs, follow the instructions below:
1. In a large bowl, combine ground beef, ground pork, eggs, breadcrumbs, Parmesan cheese, salt, pepper, basil and parsley. Mixed well.
2. Scoop about 2 tablespoons of the mixture and roll and compress to form 1-inch round meat balls. Continue this step until the mixture is consumed.

Miki Noodle Soup

Filipino Style Recipe: miki noodle soup is another delicious noodle soup similar to mami and lomi. Like other noodle dish, this recipe is made of pork or chicken meat, vegetables, dumplings and miki noodles which is thinner compared to lomi noodles. We added shrimps, squid balls and more vegetables to enhance the taste. This is commonly serve during rainy season.

500 grams miki noodles
200 grams pork belly, slice into small pieces
100 grams squid balls, cut into half
150 grams shrimp, peeled
1 piece carrots, sliced
1 cabbage, chopped
1/4 kilo green beans or snow peas(sitsaro)
1 cup celery(kintsay), sliced
6 gloves garlic, minced
1 onion, chopped
3 tablespoons oyster sauce
6 cups pork or chicken broth
2 tablespoons cooking oil
salt and pepper to taste

100 grams mushrooms(taingang daga)(optional)
100 grams chicken breast or liver(optional)
1/4 cup spring onions, diced(optional)

Procedures:
Part 1
1. Wash miki noodles in running water. Drain and set aside.

Part 2
1. In a wok, heat oil then saute the garlic and onions.
2. Add pork, liver and squid balls then cooked until color turns to brown.
3. Add oyster sauce and broth then stir and bring to boil.
4. Add shrimps and vegetables then stir fry until the vegetables are half-cooked.
5. Add miki noodles then stir and cook for 3 minutes or until soft and tender.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to a serving plate then garnish with spring onion. Serve and enjoy.
