Grilled Chicken, Apple and Almond Salad

1/4 kilo chicken breasts or fillet
1/2 teaspoon garlic powder
1/2 teaspoon cumin powder
1/2 teaspoon Spanish paprika
salt and pepper to taste

1 fresh apple, sliced thinly
1/4 cup unsalted roasted almonds, coarsely chopped
lettuce leaves, cut into serving pieces
1/4 grated Parmesan or cheddar cheese (optional)
3/4 cup salad dressing(Dijon, honey mustard or any dressing)

Part 1
1. Pound chicken breasts then season with salt, garlic powder, cumin, paprika and ground pepper.
2. Grill for 20 minutes or until cooked.
3. Let it cool then cut into strips. Set aside.

Part 2
1. In a large bowl, arrange lettuce then top with sliced apple, almond and grilled chicken.
2. Pour the salad dressing then toss to combine.
3. Sprinkle with grated cheese then serve cold.

Kiwi, Apple, Pineapple Smoothie

Filipino Style Recipe: kiwi, apple, pineapple smoothie is a healthy and refreshing beverage. This beverage is made of kiwi, apple, pineapple and cubed ice. This refreshing beverage is similar to other healthy shakes and best to serve during summer season.

Estimated time of preparation: 5-8 minutes
Good for 2 glasses

3 pieces kiwi, peeled and cubed
1 apple, peeled and cubed
1/2 cup pineapple juice
3 tablespoons honey or sugar
3/4 cup ice cubes

1. In a blender, process kiwi, apple, pineapple juice and honey until blended.
2. Add ice and blend until smooth, add more honey if needed.
3. Pour into glasses then served cold.

Apple Bread Pudding

Filipino Style Recipe: apple bread pudding is a bread-based dessert popular in many countries including the Philippines. There are several ways to make bread pudding, normally the bread(leftover) break and then soak in milk, egg, sugar and other fruits. Bake for 30 minutes or until the knife comes out clean when inserted. Thanks to for delivering my ingredients from Walter Mart.

Estimated time of cooking: 30 minutes

6 slices white bread(leftover), break into pieces
1/2 apple, diced
1/2 apple, sliced(optional)
2 tablespoons butter or margarine, melted
4 eggs, beaten
2 cups evaporated milk
3/4 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla

1. In a 8 inch baking pan, toss bread and apples then drizzle the melted butter.
2. In a bowl, combine beaten eggs, milk, sugar, cinnamon and vanilla. Mix well.
3. Pour the egg mixture over the bread then push with fork until the bread is fully soaked.
4. Arrange apple slices on top then bake in a preheated oven over 300 degrees Fahrenheit for 30 minutes or until the knife comes out clean when inserted.
5. Remove from oven and let it cool. Slice into serving pieces then serve.

Apple-Cinnamon Pork Chops

Filipino Style Recipe: Apple-cinnamon pork chops is simple dish made of seared pork chops and apple slices cooked in cinnamon and brown sugar. The combination of apple, cinnamon and brown sugar provides a sweet aroma and sweet taste in our dish.

Estimated time of cooking: 30 minutes
Good for 4 servings

4 pieces pork chops(thick cut)
2 pieces apple, slice thinly
2 tablespoons butter
2 tablespoons brown sugar
1/4 teaspoon cinnamon powder
salt and pepper to taste

Part 1
1. Season pork chops with salt and pepper then set aside for 15 minutes.
2. In a bowl, combine brown sugar, cinnamon and salt. Set aside.

Part 2
1. In a pan, heat oil in a low heat and melt butter then sear pork chops for 5 minutes or until light brown. Set aside.
2. In a same pan, add apple slices and sugar mixture then stir cook until tender.
3. Arrange pork chops in a serving plate then serve with apple mixture.
