Egg White Leche Flan

Filipino Style Recipe: how to make egg white leche flan dessert? Egg white leche flan is similar to usual leche flan but instead of egg yolk we will use egg white. First we have to dissolve and caramelize the brown sugar in a molds then pour the white egg mixture then cook in a steamer until firm.

Estimated time of preparation and cooking: 60 minutes. Good for 4- 5 llanera aluminum molds.

Ingredients:
10 egg whites(puti ng itlog)
1 can(390 grams) evaporated milk
1 can(390 grams) fat free condensed milk
2 teaspoons calamansi juice
1 teaspoon vanilla extract(optional)
1 cup brown sugar
3/4 cup water

Utensils:
4-5 Llanera aluminum molds
Steamer
Strainer
Whisk

Procedures:
Part 1
1. In a sauce pan, dissolve brown sugar with water over low heat until golden brown. Swirl gently.
2. Pour the syrup in the aluminum molds then spread evenly.

Part 2
1. In a mixing bowl, combine the other ingredients then whisk well.
2. Strain and pour the mixture on top of the syrup for about 1 to 1 1/4 inch thick.
3. Cover with aluminum foil then steam in medium heat for about 40-45 minutes.
4. Remove the molds and let it cool at room temperature then refrigerate for several hours before serving.

Tips:
1. To remove the leche flan from mold, run a thin knife around the edges of the mold to loosen the leche flan. Place a platter on top of the mold and quickly turn upside down to position the golden brown caramel on top.
2. Leche flan is cooked by inserting a knife in the center comes out clean.

Brazo de Mercedes

Filipino Style Recipe: Brazo de Mercedes is another popular Filipino dessert or snack that is mostly available in bakeries. Brazo de Mercedes is a rolled cake filled with custard made of egg yolks and condensed milk. This is usually served in any occasion specially during holidays.

Estimated time of preparation: 15-20 minutes
Estimated time of baking: 20 minutes

Ingredients:
Meringue:
8 egg whites
1 teaspoon cream of tartar
3/4 cup white refined sugar
3 tablespoons confectioners sugar

Filling:
8 egg yolks
1 tsp vanilla extract
1-1/4 cups condensed milk

Procedures:
Part 1
1. In a electric mixer or mixing bowl, combine eggs and cream of tartar until soft.
2. Gradually add sugar while mixing then continue stirring until well blended.
3. In a large baking pan, lined a wax paper then grease with butter.
4. Spread the mixture evenly then bake over 350 degrees Fahrenheit for about 20 minutes or until medium brown. Set aside and Let it cool.

Part 2
1. In a pan, combine condensed milk, vanilla extract and egg yolk in a low heat. Keep stirring until thickens.
2. Sprinkle the top of meringue with confectioners sugar then top with wax paper.
3. Flip the meringue then spread the filling on top.
4. Roll the meringue into a log. Transfer into serving pan then slice and serve.

Egg Pie

Filipino Style Recipe: Egg pie is another popular Filipino dessert or snack that is almost available in all bakeries. Egg pie is similar to egg custard tart, it is made up of eggs, milk, sugar and then mix until well blended. Pour the mixture into a pie crust then bake until firm and done.

Estimated time of preparation: 10-15 minutes
Estimated time of baking: 60-70 minutes

Ingredients:
2 pieces pie crust

Filling:
1 can(375 ml) evaporated milk
1/4 cup water
3 pieces raw eggs + 1 raw egg, separate egg yolk and egg white
1 cup sugar
1 teaspoon vanilla extract(optional)

Procedures:
Filling
1. In a “microwave safe” bowl, combine evaporated milk and water then heat in microwave for 2 minutes.
2. In a large bowl, combine hot milk, 3 eggs, 1 egg yolk, vanilla then gradually add sugar while mixing.
3. Using an electric mixer, beat the egg white until soft peaks then fold into the mixture until the foams separate.(this will give a brown color on top of egg pie after baking)

Baking
1. Pour the filling on the pie crust then bake over 350 degrees Fahrenheit for about 15 minutes.
2. Lower the heat to 325 degrees Fahrenheit then continue baking for 40 minutes or until toothpick inserted in the filling comes out clean.
3. Remove from oven and let it cool for 2 hours before serving.

Stir Fried Cabbage

Filipino style recipe: stir fried cabbage or ginisang repolyo is another healthy yet affordable dish. Normally the cabbage sauteed with tomatoes and beaten egg. Pork or shrimps may added if desired.

Estimated time of preparation and cooking: 10-15 minutes
Good for 2-3 servings

Ingredients:
1 small size cabbage, shredded
2 eggs, beaten
4 cloves garlic, chopped
1 onion chopped
1 tomato, chopped
2 tablespoons fish sauce
salt and pepper to taste
1 tablespoon vegetable oil

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add tomato, stir fry for 2 minutes.
3. Season with fish sauce then add cabbage. Stir and cook until crisp-tender.
4. Adjust seasoning with salt and pepper.
5. Pour beaten eggs, stir until eggs are cooked.
6. Transfer to serving plate, then serve hot.

Notes:
1. You may also add pork or shrimp if desired.

Ginisang Ampalaya

Filipino style recipe: ginisang ampalaya or sauteed bitter melon with egg is another healthy yet affordable dish. Normally the bitter melon sauteed with ground pork then cook with tomatoes and beaten egg.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4-6 servings

Ingredients:
2 bitter melon(ampalaya), seeded and sliced thinly
2 medium-sized tomatoes, diced
2 pieces egg, beaten
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon vegetable oil
salt and pepper to taste
1 cup ground pork (optional)

Procedures:
1. In a pan, heat oil and saute garlic, onion and tomatoes.
2. Add ground pork and cook until brown.
2. Add water and bring to boil.
3. Add bitter melon, cover and simmer for 3 minutes.
4. Add beaten eggs and season with salt.
5. Continue cooking until eggs are firm.
6. Remove from heat and serve hot!

Tips:
If you want to lessen the bitter taste of ampalaya here the procedures:
1. Rub the sliced ampalaya with salt and leave for 10 minutes
2. Then squeeze the ampalaya until the water comes out.
