Spicy Sardines Lumpia


Ingredients:
2 small cans spicy sardines in tomato sauce
1 tablespoons flour
1 raw egg
1 red onion, minced
3 cloves garlic, minced
1/2 teaspoon soy sauce
1 small carrot, minced
3 stalks parsley, chopped
salt and pepper to taste

18-20 pieces lumpia wrappers
cooking oil for frying

Procedures:
Part 1
1. Using a strainer, drain sardines and reserve the sauce.
2. In a mixing bowl, combine sardines, flour, egg, onion, garlic, soy sauce, carrot, parsley, salt and pepper then stir while slightly mashing it using a pair of forks.

Part 2
1. Place 1 tablespoon of filling in a line shape at the middle of the wrapper.
2. Fold over the bottom edge of the wrapper to the center.
3. Fold the two sides towards the center and roll. Finally, use water of seal the lumpia completely.
4. Repeat until all wrapped up.

Part 3
1. In a frying pan, heat oil deep enough that wrapped lumpia is half-submerged.
2. When the oil is hot enough, deep fry lumpia for 5 minutes or until golden brown and crisp.
3. Drain on paper towel then serve with sweet and sour sauce.

Ginisang Upo with Sardines

Filipino Style Recipe: Ginisang upo with sardines is another easy and simple vegetable dish. The white squash or upo is cook together with sardines until done. I always prepare this dish if I want a healthy dish in a tight budget.

Estimated time of preparation: 20 minutes
Estimated time of cooking: 15-20 minutes

Good for 3-4 servings

Ingredients:
1 medium-sized White Squash(Upo), peeled, discard seeds and sliced
1 large can sardines in tomato sauce
5 cloves garlic, crushed
1 medium-sized onion, diced
1/4 cup water
2 tablespoon cooking oil
fish sauce or salt and pepper to taste

2 medium-sized tomatoes, diced(optional)

Procedures:
1. In a pan, heat oil over medium heat then saute garlic and onions.
2. Add white squash then cover and simmer for another 5 minutes.
3. Add sardines and water then simmer for 3 minutes or until the white squash is cook.
4. Adjust seasoning with fish sauce and pepper.
5. Transfer to serving plate then serve hot with steamed rice.

Sardines Sotanghon Soup

Filipino Style Recipe: Sardines Sotanghon Soup is another easy and simple soup dish. The sardines in tomato sauce sauteed and cooked together with sotanghon noodles and veggies. I use spicy sardines because I usually serve this dish during rainy season.

Ingredients:
2 small cans spicy sardines in tomato sauce
200 grams sotanghon noodles, cut into desired length and soak in water until soft
1 tomato, chopped
1 onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
2-4 cups water
3/4 cup cabbage, shredded(optional)
1/4 teaspoon chili flakes(optional)
spring onion for garnishing(optional)

Procedures:
1. In a pan, heat oil and saute garlic, onion, chili flakes and tomatoes until soft.
2. Add sardines including tomato sauce, break big chunks then stir cook for a minute.
3. Add water then bring to boil, season with salt and pepper according to taste.
4. Add sotanghon noodles then simmer for 2 minutes. Add water if necessary.
5. Add cabbage then simmer for another minute then remove from heat.
6. Transfer to serving bowl then sprinkle with spring onion. Serve with steamed rice.
