Filipino Style Recipe: chicken salad is comprises a chicken as main ingredient. Combine with mayonnaise, hard-boiled egg, celery and pepper. This dessert is popular in any Filipino occasions. Here is a simple recipe for chicken salad.

Estimated time of preparation: 20 minutes. Good for 2-3 persons

Ingredients
1 chicken breast, 2 chicken legs
1 hard-boiled egg, sliced
3 potatoes, cubed
1 cup lettuce or cabbage, torn into bite size pieces
1 carrot, cubed
2 fresh tomatoes, sliced or chopped
1/2 cup sweet pickles,chopped
1 onion or 1 stem celery, chopped
1-1/2 cup of mayonnaise or any salad dressing
salt and pepper

1 cucumber, peeled and chopped, optional
1 cup diced cheddar cheese, optional
1/2 cup raisins, optional

Procedures:
1. In a pot, boiled chicken in water with 1 tablespoon salt and cook until tender. Remove the chicken and allow to cool before shredding the meat into a large bowl.
2. Boiled potatoes and carrot until cook, drain and allow to cool. Remove the skin and cut into cubed.
3. Combine all the ingredients, add salt and pepper according to taste.
4. Add salad dressing.
5. Refrigerate at least 30 minutes then serve.

Leche Flan Recipe

Filipino Style Recipe: How To Make Filipino Leche Flan Dessert? Leche Flan is made with condensed milk and more egg yolks. This dessert is usually steamed or rarely baked. It also called milk flan which is a heavier version of the Spanish flan or creme caramel.

Estimated time of preparation and cooking: 60 minutes. Good for 4- 5 llanera aluminum molds.

Ingredients
10 egg yolks(pula ng itlog)
1 can(390 grams) evaporated milk
1 can(390 grams) condensed milk
1 teaspoon of vanilla extract
1 cup brown sugar
3/4 cup water

Utensils:
4-5 Llanera aluminum molds
Steamer
Strainer
Whisk

Procedures:
Part 1
1. In a sauce pan, dissolve brown sugar and water over low heat until color turns to pale brown.(do not stir just swirl the pan gently)
2. Pour the syrup in the aluminum molds, spread the caramel on the bottom of the molds.

Part 2
3. In a mixing bowl, combine the egg yolks, condensed milk, evaporated milk and vanilla. Use whisk to mix gently, prevent bubbles from forming. Remove any solids by using a strainer.
4. Pour the mixture on top of the caramel on the aluminum molds. Fill the molds to about 1 to 1 1/4 inch thick.
5. Cover molds with an aluminum foil, so that the moisture from the steam won’t come in the molds as it will become watery.
6. Steam for about 40-45 minutes.
7. Remove the molds and let it cool at room temperature then refrigerate for several hours before serving.

Tips:
1. To remove the leche flan from mold: run a thin knife around the edges of the mold to loosen the leche Flan. Place a platter on top of the mold and quickly turn upside down to position the golden brown caramel on top.
2. Leche plan is cooked by inserting a knife in the center comes out clean.

Banana Split

Banana split is an ice cream-based dessert that served in a long dish called boat. This is one of the best dessert and popular around the world.

Estimated Time of Preparation: 10 minutes. Good for 1-2 person

INGREDIENTS:
1 banana, sliced lengthwise
1 scoop each vanilla, chocolate and strawberry ice cream
marshmallow creme(optional)
whipped cream(optional)
strawberry syrup
chocolate syrup or hot fudge
cherry
nuts,chopped

PROCEDURES:
1. Place banana slices in a long skinny ice cream bowl.
2. Top with scoops of ice cream(vanilla, chocolate and strawberry).
3. Pour chocolate syrup on vanilla ice cream.
4. Pour strawberry syrup on strawberry ice cream.
5. Pour marshmallow creme on chocolate ice cream.
6. Top each with whipped cream.
7. Sprinkle with nuts
8. Top each with a cherry.

Notes:
1. Low-Fat Frozen Yogurt may use instead of whipped cream.
2. You may also use strawberry instead of cherry.
3. Caramel syrup is a good alternative for marshmallow creme.
4. Adding waffle stick like stick-O or sliced peaches makes your dessert much special.
3. Some added marshmallow, pineapple tidbits, pecans, choc bits and mini M&Ms bits as toppings.
