Sweet Potato and Mushroom Fritters

Ingredients:
2 medium sweet potato, peeled and julienned
1 cup sliced mushroom
1 cup chopped spinach
100 grams flour
1/4 cup milk
1 raw egg
1/2 teaspoon sugar
1/2 teaspoon salt
vegetable oil for frying
Mint leaves for garnishing (optional)

Procedures:
Part 1
1. In a mixing bowl, whisk the flour, milk, and egg then season with sugar and salt.
2. Continue stirring until well blended.
3. Add spinach, sweet potato and mushroom then mix until evenly coated.

Part 2
1. In a frying pan, heat oil then scoop a tablespoon of mixture. Fry over low heat until golden brown both side. Drain on paper towels.
2.Transfer to serving plate then garnish with mint leaves. Serve hot with dipping sauce.

Kalingking(Sweet Potato Fritters)

Filipino Style Recipe: Kalingking or sweet potato fritters is another typical Filipino meryenda(mid-afternoon snack). Kalingking is normally consists of sweet potato(kamote) cut into strips then dipped in a combination of flour, milk, salt and sugar then deep fried until golden brown. Kalingking is similar to maruya or banana fritters.

3/4 cup brown sugar

1. In a pan, heat oil and deep fry the sweet potato(dipped in batter) until golden brown and crispy.

Maruya(Banana Fritters)

Filipino Style Recipe: maruya or banana fritters is another typical Filipino meryenda(mid-afternoon snack). Maruya is normally consists of cardava banana dipped in a combination of flour, baking powder, milk, eggs, salt and sugar then deep fried until golden brown.

6 pieces ripe cardava bananas(saging na saba), cut into lengthwise
1 cup flour
1 teaspoon baking powder
1/2 cup milk
2 pieces eggs
1/2 cup sugar
1/2 teaspoon salt
oil for frying

1. In a bowl, combine flour, baking powder, salt, sugar, eggs and milk. Mix well.
2. Dip bananas in batter.

Part 2
1. In a pan, heat oil and deep fry the bananas(dipped in batter) until golden brown.
2. Drain then serve with vanilla ice cream or sugar if desired.

Okoy(Crispy Shrimp Fritters)

Filipino Style Recipe: Okoy or Ukoy(crispy shrimp fritters) is a native Filipino dish originated from the province of Laguna. This dish is usually an afternoon snack but some use it as viand for regular meals. Normally the baby shrimps mixed with flour, egg, salt and pepper. Scope to form a patty then deep fry until crisp and brown.

Ingredients:
250 grams baby shrimps, cleaned
1 cups flour or cornstarch
1 egg, beaten
1/4 cup water
1 teaspoons salt
1/2 teaspoon ground pepper
1 onion, chopped
cooking oil for frying
1 cup bean sprouts(toge) (optional)
1 sweet potatoes(kamote) or turnip(singkamas), peeled and cut into strips(optional)

Spicy Garlic Vinegar
1 cup white vinegar
1 tablespoon garlic, minced
1 teaspoon salt
1 teaspoon sugar
1 piece chili(siling labuyo), chopped

Procedures:
Part 1
1. In a bowl, combine flour, salt, pepper, egg and water to make a smooth batter. Stir to mix well.
2. Add the baby shrimps, onion, bean sprouts and sweet potatoes. Mix until shrimps and vegetables are well coated.

Part 2
1. In a frying pan, heat cooking oil and pour about 1/4 cup of the mixture.
2. Deep fry each sides for about 1-2 minutes or until crisp and brown. Drain on paper towels.
3. Repeat until the entire mixture is consumed.
4. Serve hot with spicy garlic vinegar. Enjoy

1. In a bowl, mix all the ingredients for spicy garlic vinegar.
