Sarciadong Bangus

Filipino Style Recipe: Sarciadong bangus is another simple and easy Filipino dish. This dish is a way to re-cooked left over fish. It is usually consist of fried bangus (or Leftover) then cooked in a combination of tomatoes and beaten eggs.

Estimated time of preparation and cooking: 20-30 minutes
Good for 3-5 persons

Ingredients:
1 medium-sized bangus (milk fish), cleaned and cut into serving pieces
2 pieces eggs, beaten
4 medium-sized tomatoes, diced
1 medium-sized onions, diced
3 cloves garlic, minced
1/2 cup water
fish sauce and ground pepper to taste
cooking oil
2 tablespoons chopped spring onion(optional)

Procedures:
Part 1 (Skip if leftover fish is available)
1. Season bangus with salt. Set aside.
2. In a pan, heat cooking oil and fry fish until brown. Drain and set aside.

Part 2
1. In same pan, reduce the oil then saute onion, garlic and tomatoes until soft.
2. Add water, spring onion, fish sauce and ground pepper. Bring to boil.
3. Add beaten eggs, once the eggs curdles start stirring the mixture.
4. Add fried bangus and simmer for a minute.
5. Transfer to serving plate then sprinkle with remaining spring onion. Serve with rice. Enjoy!

Sarciadong Ampalaya

Filipino Style Recipe: Sarciadong ampalaya or bitter gourd sarciado is another healthy yet affordable dish. The bitter gourd sauteed with ground pork then cooked and simmered with tomatoes and beaten eggs.

Estimated time of preparation: 10 minutes(plus soaking time)
Estimated time of cooking: 15-20 minutes
Good for 4-6 servings

Ingredients:
2 bitter gourd(ampalaya), seeded and sliced thinly
3 medium-sized tomatoes, diced
2 pieces eggs, beaten
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon vegetable oil
salt and pepper to taste
1/2 cup water
250 grams ground pork(optional)

Procedures:
Part 1
1. Rub bitter gourd with salt and leave for 10 minutes then squeeze until the juice comes out. Rinse, drain and set aside.

Part 2
1. In a pan, heat oil and saute garlic, onion and tomatoes.
2. Add ground pork and cook until brown.
3. Add water and bring to boil then add bitter gourd. Cover and simmer for 3 minutes.
4. Add beaten eggs then stir cook until eggs are firm.
5. Season with salt and pepper according to taste. Remove from heat and serve hot!

Sarciadong Galunggong

Good for 3-5 persons

Ingredients:
6-8 pieces medium-sized galunggong, cleaned
2 pieces eggs, beaten
4 medium-sized tomatoes, diced
1 medium-sized onions, diced
3 cloves garlic, minced
1/2 cup water
fish sauce and ground pepper to taste
cooking oil
2 tablespoons chopped spring onion(optional)

Procedures:
Part 1
1. Make a slit on both sides of galunggong then sprinkle with salt.
2. In a pan, heat cooking oil and fry fish until brown. Drain and set aside.

Part 2
1. In same pan, reduce the oil then saute onion, garlic and tomatoes until soft.
2. Add water, spring onion, fish sauce and ground pepper. Bring to boil.

Pork Sarciado

Filipino Style Recipe: pork sarciado is another tomato-based dish. Normally the pork comes fried and then cooked in chopped tomatoes and tomato sauce.

Estimated time of cooking: 15-20 minutes
Good for 4 servings

Ingredients:
4 pieces pork chops
1 tablespoon of calamansi or lemon juice
1 egg, beaten
1/2 cup flour
2 cloves garlic, minced
1 onion, sliced
1 cup tomatoes, chopped
1/2 cup tomato sauce
1/2 cup water
1 tablespoon vegetable oil
cooking oil for frying
salt and pepper to taste

2 bay leaves(laurel)(optional)
2 pieces potatoes, diced(optional)
1/2 cup green peas(optional)
1 green bell pepper, diced(optional)

Procedures:
Part 1(Optional)
1. In a bowl, arrange pork and add calamansi juice, salt and pepper. Marinate for 15 minutes.
2. Dip in beaten egg and dredge the meat in flour and shake off to remove excess flour.

Part 2(Optional)
1. In a frying pan, heat cooking oil and fry potatoes until brown. Drain and set aside.

Part 3
1. In a same pan, deep fry the pork until colors turn to golden brown and tender.
2. Drain on paper towels and cut into bite-size strips. Set aside.

Part 4
1. In a pan, heat vegetable oil and saute garlic, onion, bay leaves and tomatoes. Let the tomatoes simmer gently.
2. Pour tomato sauce, water and season with salt and pepper. Bring to boil.
3. Add fried pork. Cover and simmer for another 3-5 minutes.
4. Add fried potatoes, green bell pepper and green peas.
5. Adjust seasoning according to taste.
6. Remove from heat then serve.
