Sinigang na Pork Ribs sa Pakwan


Ingredients:
1 kilo pork ribs, cut into serving pieces
12 tamarind(sampalok) Or sampaloc mix
1 big onion(diced)
6 tomatoes(quartered)
1 regular sized watermelon, peeled, seeded, sliced
6 pieces okra, cut diagonally
1 bundle of stringbeans(sitaw), cut into 2 inches long
1 bundle of river spinach(kangkong leaves)
4 pieces taro(gabi), peeled and cut into cubes
Salt and Fish Sauce(patis)
2 litres of water

Procedures:
Part 1
1.Boil tamarind, pound and strain the juice. Set aside.

Part 2
1. In a casserole, add pork ribs, onion and tomatoes to boil until tender.
2. Add tamarind juice, watermelon and gabi, continue simmering for 30 minutes or until gabi is tender.
3. Add okra and string beans then simmer for another 5 minutes.
4. Season with salt or fish sauce according to taste.
5. When tender, add kangkong leaves then serve hot immediately.

Watermelon Lemonade


Ingredients:
Watermelon, seeds removed, cut into chunks (for 2 cups juice)
Lemons (for 1 cup lemonade)
1/2 cup white sugar
1 cup water
ice
mint for garnishing (optional)

Procedures:
Part 1 (Syrup)
1. Dissolve sugar in a boiling water. Transfer into glass container and let it cool in an ice bath. Set aside.

Part 2 (watermelon juice)
1. In a blender, puree watermelon until smooth. Transfer into a separate bottle.

Part 3 (lemonade)
1. Squeeze lemons and strain into a pitcher. Add syrup and stir until well blended.

Part 4 (Assembly)
1. In a tall glass, add ice then pour lemonade (half of the glass).
2. Place spoon over the edge then pour slowly the watermelon juice over the spoon.
3. Garnish with mint and serve.

Sinigang na Baka sa Pakwan


Ingredients:
1 kilo beef brisket, cut into serving pieces
2 cups tamarind juice or 1 pack sampaloc mix
1 big-sized onion, chopped
1 thumb-sized ginger, julienned
1 regular sized watermelon(pakwan), seeded and sliced into cubes
3 medium-sized taro(gabi), peeled and cut into cubes
1 bundle of string beans(sitaw), cut into 2 inches long
1 bundle of river spinach(kangkong leaves)
3 pieces green pepper(siling haba)
fish sauce and ground pepper to taste
1 1/2 liters water

Procedures:
Part 1
1. In a casserole, heat oil then place beef and cook in batches until browned. Remove.

Part 2
1. In same casserole, saute garlic, onion and ginger.
2. Add watermelon slices then cook for 5 minutes.
3. Put back beef then cover and simmer in a low heat for 1 1/2 hours or until beef is tender. Add more water if necessary. (Pressure cooker takes less time.)
4. Add gabi and tamarind juice then simmer for 15 minutes or until tender.
5. Add green pepper and string beans then simmer for another 5 minutes.
6. Adjust seasoning with fish sauce, ground pepper then add kangkong.
7. Turn off the heat then let it sit for 1-2 minutes or until kangkong is cooked.
8. Transfer to serving bowl then serve hot with steamed rice.

Watermelon Salad

Ingredients:
1/2 head green ice Lettuce, remove leaves and tear into serving pieces
2 slices watermelon, cut into cubes
200 grams grilled meat(pork, beef or lamb), cut into small pieces
6 pieces cherry tomatoes, halved
2 tablespoons olives(optional)
2 tablespoons capers(optional)
1/2 cup balsamic dressing

Procedures:
1. In a large bowl, arrange lettuce, watermelon, cherry tomatoes, olives and capers.
2. Add grilled meat then drizzle with balsamic dressing. Serve immediately.

Watermelon Shake

Filipino Style Recipe: watermelon shake or milkshake is another sweet, creamy and refreshing beverage. This beverage is made of watermelon slices, milk, sugar and cubed ice. Best to served during summer season.

Estimated time of preparation: 5-8 minutes

Ingredients:
3 cups fresh cubed watermelon(pakwan)
1 cup powdered milk(optional)
3 tablespoons sugar or other sweetener to taste
1 cup ice cubes

Procedures:
1. In a blender, process watermelon, milk, and sugar until blended.
2. Add ice and blend until smooth, add more sugar if needed.
3. Pour into glasses then served cold.
