Cheese Stick

Filipino Style Recipe: cheese stick is another simple and easy Filipino meryenda(mid-afternoon snack) that is commonly sold along the streets. Cheese stick is made of cheese strips wrapped in spring roll wrapper then deep fried until golden brown. Then served with your favorite dipping sauce.

Estimated time of preparation and cooking: 20-30 minutes

Ingredients:
1 block cheddar cheese (I Used PROCHIZ Gold) , sliced into small strips
1 pack spring roll wrapper
1 cup cooking oil
mayonnaise & ketchup for dipping sauce
powdered cheese(optional)

Procedures:
Part 1
1. Wrap the cheese in a wrapper, sealed the edges with water.

Part 2
1. In a frying pan, heat oil then deep fried cheese sticks for 3 minutes or until golden brown. Drain on paper towel
2. In a container, add powdered cheese and fried cheese sticks then cover and shake until coat evenly.
3. Serve with mayo-ketchup dip.

Paksiw na Tilapia

Filipino Style Recipe: Paksiw na tilapia is a quick and easy fish dish by Filipinos. The fish and vegetables cooked in a blend of vinegar and some spices like garlic, onion and ginger. Here is my Mom’s recipe on how to cook the usual paksiw na tilapia. Enjoy cooking!

Estimated time of preparation and cooking: 20-30 minutes. Good for 3-4 persons.

Ingredients:
4 pieces medium-sized tilapia, cleaned, scales removed and cut diagonally into half
1 small garlic, pounded
1 onion, sliced
1 thumb-sized ginger, sliced and pounded
1/2 cup vinegar
1 cup water
1 teaspoon cooking oil
1 teaspoon peppercorn
2 teaspoon salt
3 green chili(siling haba)
5 small okra, heads removed

Procedures:
Part 1
1. In a pan, arrange tilapia, garlic, onion, ginger, salt and peppercorn.
2. Pour water, vinegar and cooking oil then add vegetable and green chili.
3. Cover and simmer in a medium heat for 10-15 minutes or until tender.
4. Remove from heat and Serve.

Notes:
1. You may also used eggplants or bitter gourd(ampalaya) as alternative vegetable.

Adobong Tahong

Filipino Style Recipe: Adobong tahong is another way of cooking mussels. This seafood dish is simple and easy recipe. Like the usual adobo recipe, the mussels stir fried in garlic, onion and ginger. Then cooked in soy sauce, vinegar season with salt.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 10-15 minutes
Good for 3-4 persons.

Ingredients:
1 kilo mussels(tahong), cleaned with beard removed
1/4 cup soy sauce
4 tablespoons vinegar
3 cloves garlic, chopped
1 onion, chopped
1 thumb-sized ginger, cut in strips
2 pieces bay leaf
1 teaspoon peppercorns
1/2 cup mussels broth
1 tablespoon vegetable oil
sugar, salt to taste

chopped spring onion for garnishing(optional)

Procedures:
Part 1
1. In a pot, place mussels and ginger then pour enough water. Bring to boil until the shells open.
2. Remove the mussels from the shell. Set aside mussels and the broth.

Part 2
1. In a pan, heat oil and saute onion, garlic and ginger.
2. Add mussels, soy sauce, vinegar, bay leaf, peppercorns and chili flakes.
3. Pour broth and simmer for 5 minutes or until the sauce is almost absorb.
4. Season with sugar, salt according to taste.
5. Transfer to serving plate then sprinkle with spring onion. Serve with steamed rice.

Stir Fry Snow Peas and Mushrooms

Filipino Style Recipe: Stir fry snow peas and mushrooms is another easy yet healthy food. Normally the snow peas and mushrooms comes stir fried then cooked in a blend of cornstarch, water and soy sauce.

Estimated time preparation and cooking: 5 minutes
Good for 4 persons

Ingredients:
2 cups fresh snow peas(sitsaro), trimmed
1 1/2 cups sliced mushrooms
1 1/2 teaspoons cornstarch
1/2 cup water
1 tablespoon soy sauce
1 chicken cube(bouillon cube)
2 olive oil

Procedures:
1. In a pan, heat olive oil and stir fry snowpeas and mushrooms.
2. In a bowl, combine cornstarch, water, soy sauce and chicken cube. Mix until well blended.
3. Pour the mixture in a pan, simmer for 2 minutes or until thickens. Serve hot.

Polvoron

Filipino Style Recipe: Polvoron is another popular and easy Filipino sweet delicacy that is made up of toasted flour, powdered milk and sugar. Some add flavoring like toasted pinipig which is the most common flavor, ground cookies and cream.

Estimated time of preparation and cooking: 30-40 minutes

Ingredients:
4 cups all purpose flour
2 cups powdered milk
1 1/2 cup white sugar
1 1/8 cup butter, melted

3/4 cup flavoring(crushed toasted pinipig, ground cookies and cream(Oreo), chocolate powder, etc…)
* japanese paper or or cellophane
* polvoron moulder

Procedures:
Part 1
1. In a pan over medium heat, toast flour for about 15 minutes or until color turns to light brown. Stir constantly.
2. Transfer to a bowl and let it cool. Set aside.

Part 2
1. Add powdered milk and sugar then mix until well combined.
2. Pour melted butter then mix well until smooth.
3. Add the flavoring you choose then stir well.

Part 3
1. In a polvoron mold, scoop and press the mixture until compact.
2. Wrap the molded polvoron with japanese paper then secure by twisting both ends.
3. Repeat until all the mixture are consumed. Done!

Mango Shake

Filipino Style Recipe: mango shake is another sweet and refreshing beverage. This beverage is made of mango slices, milk, sugar and cubed ice. Best to served during summer season.

Ingredients:
4 pieces ripe mango, peeled and sliced
2 cups ice cubes
1 cup evaporated milk(optional)
sugar or other sweetener to taste

Procedures:
1. In a blender, process mango, milk, sugar and some ice until blended.
2. Add more ice until smooth then pour into glasses then served cold.

Adobong Baboy(Ilocano Style)

Filipino Style Recipe: Adobo is the most popular yet easy Filipino dish. Adobo have lots of variations such as pork, chicken, combination of pork and chicken, other meats, vegetables and seafood. Normally the meat marinated in a blend of soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar then simmer until meat is tender and the sauce thickens.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 40-60 minutes
Good for 3-4 persons

Ingredients:
500 grams pork belly, cut into serving pieces
1/2 cup soy sauce
1/3 cup vinegar
3 gloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1 tablespoon sugar
salt to taste
cooking oil for frying

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns and soy sauce. Marinate for 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Drain pork and reserve the sauce. Set aside.

Part 3
1. In a pan, heat oil and fry pork until brown. Drain and return the meat to reserved sauce.
2. Simmer and toss for a minute or until the sauce is almost absorb and thicken. Transfer to serving bowl then serve.

Filipino Style Recipe: watermelon smoothie or watermelon shake is another sweet and refreshing beverage. This beverage is made of watermelon chunks, milk, sugar and cubed ice. Best to served during summer season.

Ingredients:
watermelon chunks, discard seeds
ice cubes
evaporated milk(optional)
sugar or other sweetener to taste

Procedures:
1. In a blender, process watermelon, milk, sugar and some ice until blended.
2. Add more ice until smooth then pour into glasses then served cold.

Beef Tapa

Filipino style recipe: beef tapa is another popular Filipino dish that is usually served during breakfast with fried rice and egg together with acahara(picked papaya strips). This is similar to chicken tapa and pork tapa. Normally the meat prepared in thin slices and marinated overnight then fry until tender.

Estimated time of cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
500 grams beef sirloin, sliced thinly
3 tablespoons cooking oil
2 cups water

Marinade:
4 cloves garlic, minced
1/2 cup soy sauce
3 tablespoons lime or calamansi juice
3 tablespoons brown sugar
salt and pepper to taste
1 tablespoon oyster sauce(optional)
1 teaspoon cayenne pepper(optional)

Procedures:
Part 1
1. In a bowl, combine beef and marinade. Mix well then cover and marinate overnight inside the fridge.

Part 2
1. In a pan, pour water and bring to boil.
2. Add cooking oil and marinated beef, cook until water evaporates and beef color turns to golden brown and tender.
3. Transfer to serving plate. Serve with fried rice and egg.

Bread Roll

Filipino Style Recipe: bread roll is another simple and easy Filipino meryenda(mid-afternoon snack). Bread roll is made of loaf bread slices stuffed with ham, cheese and bell pepper. Dip in beaten egg and roll over bread crumbs then fry until brown.

Estimated time of cooking: 15 minutes

Ingredients:
12 slices of loaf bread
2 eggs, beaten
3 cups bread crumbs
cooking oil for frying

Filling:
12 strips of cooked ham
12 strips of cheddar cheese
12 strips of bell peppers(optional)

Procedures:
Part 1
1. Cut off the outer layer of the bread then flatten using a rolling pin.
2. Arrange the filling over the bread then roll.
3. Dip the roll in beaten egg then roll in bread crumbs. Set aside.
4. Repeat the procedures for remaining slices.

Part 2
1. In a frying pan, heat oil then fry each roll for 1-2 minutes or until browned.
2. Drain on paper towels then cut into half and arrange in a serving plate. Serve.
