Oysters in Adobo Sauce


Ingredients:
500 grams fresh oysters(talaba), cleaned and drained
3 tablespoons canola oil
5 cloves garlic, minced
1 onion, chopped
12 pieces peppercorns
1/4 cup light soy sauce
1/2 cup vinegar
1/4 cup water
1 green chili(siling haba), sliced
salt and pepper to taste

Procedures:
Part 1
1. In a pan, heat oil then saute garlic, onion and peppercorns.
2. Add oysters and vinegar then cook until almost dry and brownish.
3. Remove from the pan and set aside.

Part 2
1. In a same pan, pour soy sauce and water then bring to boil.
2. Add green chili and simmer until liquid is reduced.
3. Put back the oysters then adjust seasoning according to taste.
4. Simmer for a minute then turn off the heat. Serve with steamed rice.

Basil Chicken

Filipino Style Recipe: Basil Chicken is another simple yet delicious chicken dish inspired by Thai cuisine. The chicken sauteed and cooked in spicy thick sauce and spices together with basil leaves.

Ingredients:
500 grams chicken fillet, cut into serving pieces
12-15 basil leaves
1 red bell pepper, diced
3 cloves garlic, minced
1 onion, chopped
3 bird’s eye chili (labuyo), chopped
2 tablespoons soy sauce
3 tablespoons oyster sauce
1 tablespoons hoisin sauce
1/2 teaspoon brown sugar
fish sauce and ground pepper to taste

Procedures:
Part 1
1. In a bowl, combine soy sauce, oyster sauce, hoisin sauce, brown sugar and ground pepper. Mix and set aside.

Part 2
1. In a pan, heat oil then sauce garlic and onion.
2. Add chicken then continue sauteing until almost cooked.
3. Add bell pepper and stir cook until chicken is tender.
4. Pour then sauce then toss until well distributed.
5. Add chili then adjust seasoning according to taste.
6. Add basil then cook for half a minute.
7. Remove from heat then transfer to serving plate. Serve with steamed rice.

Steamed Cream Dory with Ginger Light Soy Sauce

Filipino Style Recipe: Steamed Cream Dory with Ginger Light Soy Sauce is another simple and quick fish dish that consists of steamed cream dory cooked in ginger light soy sauce drizzle with sesame oil.

Ingredients:
1 kilo cream dory fillets, slice into serving pieces
salt and pepper to taste
1 teaspoon grated ginger
1/2 teaspoon sesame oil
toasted garlic for garnishing

Light Soy Sauce:
1/4 cup light soy sauce
2 1/2 cups water
1 teaspoon grated ginger
1 1/2 tablespoons brown sugar
1 tablespoons oyster sauce
1 tablespoons chopped spring onions

Procedures:
Part 1
1. Rub fish fillets with salt, pepper and ginger.
2. Arrange in a steamer then steam for 10-15 minutes. Set aside.

Part 2
1. In a sauce pan, combine ingredients then simmer to boil. Turn off the heat.
2. In a large serving plate, arrange steamed fish then pour sauce.
3. Drizzle with sesame oil then garnish with toasted garlic.
4. Serve with steamed bok choy.

Pork Adobo with Sweet Pea Beans

Filipino Style Recipe: Pork Adobo with Sweet Pea Beans is another variety of Filipino pork adobo, we just add sweet pea beans (sitsaro) which gives a contrast color and crunchy texture.

Ingredients:
1/2 kilo pork, cut in serving pieces
150 grams sweet pea beans, trimmed
1/4 cup soy sauce
1/4 cup vinegar
6 gloves garlic, crushed
1 teaspoon peppercorns
2-3 pieces bay leaves
1 teaspoon sugar
salt to taste
1 cup water

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns and soy sauce. Marinate for at least 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add more water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Simmer until the sauce thickens then add sweet pea beans.
4. cook for another 3 minutes then remove from heat.
5. Transfer to serving bowl then serve with steamed rice.

a bunch of kangkong (water spinach), cut into serving pieces
1/4 cup soy sauce
1/4 cup vinegar
6 gloves garlic, crushed
1 teaspoon peppercorns
2-3 pieces bay leaves
1 teaspoon sugar
salt to taste
1 cup water

Procedures:
Part 1

California Maki

Filipino Style Recipe: California Maki is the most common type of sushi. Sushi is generally made with either nori(seaweed sheets), rice and can be filled with any desire ingredients inside the roll.

Ingredients:
1 Nori sheet(Dried Seaweed Sheet)
6 crab sticks
1 large mango, sliced
1 small cucumber, sliced
Masago (Capelin roe)
Mayonnaise

Rice:
Sushi Rice
sugar and salt
rice vinegar(optional)

Sauce:
Soy Sauce
Wasabi

Utensils:
Bamboo rolling Mat
Sharp knife

Procedures:
Part 1
1. Cook sushi rice with a little salt added.
2. Dissolve sugar into a rice vinegar.
3. When the rice has cooked, add the dissolved sugar and mix thoroughly. The rice will now become even more sticky and clumpy.
4. Let it cool and set aside.

Part 2
1. Wrap bamboo rolling mat with plastic wrap, this is to prevent rice from sticking to the mat.
2. Place 1 sheet of nori into the bamboo rolling mat.
3. Cover the nori of rice about 5/6 of the way up, just enough to cover the nori.
4. Sprinkle with Masago evenly over the top of rice then flip facing down.
5. Add a row of fruit and meat on a small portion on one side of the sheet.
6. Add a little mayonnaise over the fillings to hold meat together.
7. Then roll the nori sheet. Add enough pressure on the bamboo mat to make sure sushi is firm. Don’t include the bamboo mat when you roll the nori sheet.

Part 3
1. Place the roll on a cutting board. Then slice 1-inch interval using a wet sharp knife.
2. Transfer into serving plate then serve with mayonnaise or dipping sauce.

Crispy Soy Garlic Squid

3 tablespoons soy sauce
1 tablespoon brown sugar
3 stalks onion leeks, sliced diagonally

Procedures:
Part 1
1. In a small bowl, combine soy sauce and brown sugar. Mix well and set aside.
2. In a pan, heat oil then fry garlic until light brown. Drain and set aside.
3. In a same pan, add butter, soy-sugar mixture and onion leeks. Simmer then remove from heat.

Part 2
1. In a bowl, combine flour, cayenne powder, salt and pepper. Mix well.
2. Add squid then dip in beaten egg then roll in breadcrumbs. Set aside.

Part 3
1. In a frying pan, heat oil and fry the squid for 1 minute or until golden brown. Do not overcooked.
2. Remove squids and drain on paper towels.
3. Transfer the squid in serving plate then pour the sauce on top. Mix to coat then sprinkle with toasted garlic. Serve.

Adobong Talong at Baboy

Filipino Style Recipe: Adobong talong at baboy or pork and eggplant adobo is another variety of Filipino adobo. The procedures is simple, we fried eggplant until brown and marinate pork then cooked and simmered soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar until tender.

2 pieces eggplants (talong), cut into serving pieces
1/3 cup vinegar

cooking oil for frying
3 tablespoons oyster sauce

Marinade:
1/2 cup soy sauce
3 gloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1 tablespoon sugar

Procedures:
Part 1
1. In a bowl, combine pork, garlic, bay leaves, peppercorns, sugar and soy sauce. Marinate for 30 minutes.
2. In a pan, heat oil then fry eggplant until golden brown. Drain and set aside.
3. In a same pan, fry marinated pork until brown. Drain and set aside.

Part 2
1. In a pot, Add pork, marinade, oyster sauce and water then simmer until tender. Add water if necessary.
2. Pour vinegar and simmer for 5 minutes then adjust seasoning according to taste.
3. Add fried eggplant then stir cook for 2 minutes or until sauce is reduce.
4. Remove from heat then transfer to serving plate. Serve with steamed rice. Enjoy!

Asian Style Steamed Cream Dory

Part 3
1. In a serving plate, arrange fish then pour the sauce on top then garnish with remaining onion leeks. Serve with steamed rice.

1 thumb-sized ginger, chopped thinly
2 pieces green chili, sliced diagonally
1/2 teaspoon sesame seeds
2 teaspoons sesame oil
salt and pepper to taste

Procedures:
1. In a pan, heat sesame oil then saute garlic, onion and ginger.
2. Add carrots and green beans then stir fry for 2 minutes.
3. Add squid, oyster sauce, tomato sauce, chili flakes, and hot sauce then continue to stir fry for a few minutes.
4. Season with salt and pepper according to taste. Add green chili and sesame seeds.
5. Transfer to serving plate then serve with steamed rice.
