Banana Raisin Bread


Ingredients:
4 ripe bananas, mashed
1/4 cup raisins, set aside some for toppings
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoon ground cinnamon
2 pieces egg
1 cup white sugar
1/2 teaspoon salt
1 tablespoon vinegar dissolved in 1/2 cup evaporated milk
1/2 cup vegetable oil
2 tablespoon banana flavoring or vanilla extract

Procedures:
Part 1
1. In a bowl, combine the sugar, eggs, vegetable oil, milk, and flavoring. Mix together until well combined. In another bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Add dry ingredients to the wet ingredients until well combined. Fold in the mashed banana and raisins.

2. Pour batter in prepared loaf pan until 3/4 full. Top with remaining raisins.

3. Bake in preheated oven at 150 degrees F for 40-45 minutes or until toothpick inserted at the middle comes out with few crumbs (not wet batter). Remove from oven and let cool. Run a knife around the pan to remove the bread.

Dulce De Leche Banana Bread


Ingredients:
4 ripe bananas, mashed

1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoon ground cinnamon
2 pieces eggs
1 cup white sugar
1/2 cup vegetable oil
2 tablespoon buttermilk dissolved in 1/2 cup water
2 tablespoon banana flavoring or vanilla extract

Dulce de Leche:
1/2 cup condensed milk
1 cup evaporated milk
1 piece egg yolk
1 tablespoon cornstarch
1/2 teaspoon vanilla
1 tablespoon butter

Procedures:
Part 1(banana bread)
1. In a bowl, combine the sugar, eggs, vegetable oil, buttermilk, and flavoring. Mix together until well combined. In another bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Add dry ingredients to the wet ingredients until well combined. Fold in the mashed banana.

2. Pour batter in prepared loaf pan until 3/4 full.

Part 2(dulce de leche):
1. In a saucepan combine the condensed milk, evaporated milk, egg yolk, and cornstarch. Mix until the egg and cornstarch as well blended.

2. Cook over medium heat while stirring consistently until mixture becomes thick around 20-30 minutes.

3. Remove from heat. Stir in vanilla and butter.Let it cool.

4. Top banana bread with dulce de leche. Serve and enjoy.

Banana Nut Bread


Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoon ground cinnamon
2 pieces egg
1 cup white sugar
2 tablespoon buttermilk dissolved in 1/2 cup water
1/2 cup vegetable oil
4 ripe bananas, mashed
2 tablespoon banana flavoring or vanilla extract
1/4 cup nuts,chopped (in this recipe we used candied cashew nuts) optional

Note:you can substitute then buttermilk mixture with 1/2 cup milk mixed with 1 tablespoon vinegar.

Toast Stuffed Bread


Ingredients:
4 slices loaf bread
1 green/red bell pepper, diced
2 slices ham, diced
2 raw eggs, beaten
grated cheese
vegetable oil

Procedures:
Part 1
1. Slice each bread to make a hole, leaving the outer layer intact. Set aside.

Part 2
1. In a pan, heat oil then fry ham and bell peppers. Remove and set aside.

Part 3
1. In a same pan, Add oil then place outer layer bread.
2. Add 1 tablespoon sauteed ham and bell peppers inside the bread.
3. Pour 2 tablespoons beaten eggs then sprinkle with grated cheese.
4. Top the inner layer bread, wait for a minute until set.
5. Flip and fry the other side until toast.
6. Repeat the procedures for the remaining pieces.

Lemon Zucchini Bread

Filipino Style Recipe: This recipe makes a moist zucchini bread. You may also opt to add some nuts for some crunch. Enjoy it with your coffee or tea.


Ingredients:
3 1/2 cups all purpose flour
1 teaspoon salt
2 teaspoons baking soda
4 eggs
1 1/2 cups sugar
1 cup vegetable oil
1/2 cup plain yogurt
1 teaspoon lemon zest
1 tablespoon lemon juice
2 teaspoon vanilla extract
2 cups grated zucchini, juices squeezed out

Procedures:
1. In a bowl, sift together the flour, salt, and baking soda.
2. In another bowl, beat the eggs, sugar and vegetable oil. Stir in yogurt, lemon zest and lemon juice. Gradually pour the flour mixture until just moistened.Fold in the grated zucchini.
3. Line 2 loaf pans with parchment paper. Pour the mixture to each of the loaf pans and bake in preheated oven at 350 degrees F for 50-55 minutes or when a toothpick inserted at the center comes out clean.
4. Open the oven and let it cool for about 10 minutes. Remove from the oven and let it cool completely. Slice, serve, and enjoy.

Corned Beef Sandwich

Ingredients:
4 buns, slice in half
200 grams corned beef
1 white onion, chopped
4 cheese slices
lettuce
salt and pepper to taste
1 tablespoon vegetable oil

Procedures:
Part 1
1. In a pan, heat oil then saute onion until translucent.
2. Add corned beef then stir cook for 3-5 minutes. Adjust seasoning according to taste. Set aside.

Part 2
1. In a slice bun, arrange lettuce then add a slice of cheese.
2. Add 2-3 tablespoons of sauteed corned beef then place another slice bun on top.
3. Serve immediately with hot sauce.

Chocolate Bread Pudding

Filipino Style Recipe: I just happened to have some leftover chocolate cupcakes from a batch I made. And since it already gotten dry after 2 days in the fridge, I reinvented into a bread pudding.It turned out great, everybody loved it, and no more leftovers!

Ingredients:
2 slices white bread, torn into small pieces
4 slices chocolate flavored bread/cupcakes, torn into small pieces
2 tablespoon butter, melted
1 1/2 cup milk
1/2 cup sugar
3 eggs
2 teaspoon vanilla extract
1/4 cup mini chocolate chips

Procedures:
1. In a loaf pan, arrange the white bread at the bottom of the pan. Put the chocolate bread on top of the the white bread. Drizzle with the butter.
2. In a mixing bowl, combine the milk, sugar and mix. Add the eggs and beat until well combined. Add the vanilla and mix again.
3. Pour the milk mixture evenly on the bread. Press down with fork to soak. Sprinkle chocolate chips on top.
4. Bake in preheated oven at 350 Fahrenheit for 30 minutes or when a toothpick inserted at the middle comes out clean.
5. Remove from the oven. Best served while still warm.

Zucchini Bread

Filipino Style Recipe: This zucchini bread recipe is very moist and flavorful. Guess my favorite part? The slightly burnt edges! So dont worry about burning it a bit on the outside, it still comes out moist on the inside.

Ingredients:
3 cups all purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup vegetable oil
2 cups sugar
3 eggs
2 teaspoon vanilla extract
sour cream
2 pieces medium zucchini, shredded

Procedures:
1. In a mixing bowl, sift together the all purpose flour, baking powder, baking soda, and salt.

2. In another bowl, combine the oil and sugar and mix until well blended. Add the eggs one at a time, beating after each addition until just combined. Add the vanilla extract and beat again.

3. Blend the wet mixture into the dry mixture alternately with the sour cream until just combined.

4. Stir in zucchini until well combined.

5. Pour batter into lightly greased 9×5 inch loaf pan. Bake in preheated oven at 350 degrees Fahrenheit for 60 minutes or a toothpick inserted into the center comes our clean.

Caramel French Toast

Filipino Style Recipe: Caramel French Toast is a popular breakfast meal that consisting of sliced bread soak in eggs-milk mixture then coated with sugar. Toast with butter over a low heat then serve with caramel syrup.

Ingredients:
8 slices bread
2 eggs
1 cup milk
1/2 teaspoon cinnamon powder(optional)
a dash of salt
2/3 cup brown sugar
unsalted butter
powdered or confectioner’s sugar(optional)
caramel syrup

Procedures:
Part 1
1. In a large bowl, combine eggs, milk, cinnamon, salt then mix until well blended
2. Soak the sliced bread for a few seconds into mixture one at a time then gently turn to coat the other side.
3. Coat with brown sugar.
Part 2
1. In a frying pan, melt 1 teaspoon butter over low heat.
2. Toast each bread until bottom turns to golden brown then turn the bread over and do the same way.
3. Repeat the procedures for remaining slices.

Part 3
1. Transfer toasted bread to serving plate, then dust with confectioners’ sugar.
2. Serve immediately with caramel syrup together with hot coffee.

Chocolate French Rolls

Filipino Style Recipe: Chocolate French Rolls is a simple yet special bread dish that can be served together with hot coffee. The bread flatten then fill with chocolate spread. Roll then dip in egg and milk mixture. Coated with sugar and cinnamon powder then fry until golden brown.

Ingredients:
10 slices white bread
1 cup chocolate spread
1 cup corned beef
1 raw egg
1/2 cup milk
1/4 cup brown sugar
1 teaspoon cinnamon powder
1/2 cup butter

Procedures:
Part 1
1. In a bowl, combine sugar and cinnamon powder then mix well.
2. In a separate bowl, combine egg and milk then whisk until combined.

Part 2
1. Remove the crusts from each slice of bread then flatten with a rolling pin.
2. Fill each slice with chocolate spread.
3. Add 1/2 teaspoon corned beef then roll the bread tightly.

Part 3
1. In a pan, melt butter. Dip each roll in egg-milk mixture then roll in sugar-cinnamon mixture.
2. Lightly fry each roll until golden brown.
3. Roll in sugar-cinnamon mixture. serve immediately with hot coffee.
