Graham Balls

Filipino Style Recipe: Graham balls is another simple and easy dessert made of graham crackers. It consists of crushed graham crackers, condensed milk, evaporated milk and cinnamon powder mixed together until well combined. Mold into a ball shapes then roll in sprinkles and refrigerate before serving.

Estimated time of preparation: 30 minutes(plus refrigerating time)
Good for 24 pieces

Ingredients:
3 cups crushed graham crackers
1 cup condensed milk
1/4 cup evaporated milk
1/2 teaspoon cinnamon powder
sprinkles (rice crispy, crushed nuts, chocolate sprinkles, rainbow sprinkles, etc)

Procedures:
1. In a mixing bowl, combine crushed graham, condensed milk, evaporated milk and cinnamon powder then mix well.
2. Scoop a spoonful of mixture then mold into a ball shapes and roll in sprinkles.
3. Place into paper cups then refrigerate for at least 3 hours before serving.

Chocolate Crinkles

Filipino Style Recipe: Chocolate Crinkles is a kind of chocolate-flavored cookie covered in white powdered sugar. It is consists of chocolate, flour, baking powder, butter, eggs, sugar and vanilla extract mixed together until well blended. The mixture molds into balls then roll into powdered or confectioner’s sugar. Baked for 10 minutes over 450 degrees Fahrenheit or until done.

Good for 50 pieces

Ingredients:
1/2 cup butter, melted
100 grams chocolate, melted
3 teaspoons vanilla extract
4 pieces raw eggs
1 1/4 cups sugar
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup confectioners’ sugar
1 cup cocoa powder (optional)

Procedures:
Part 1
1. In a electric mixer, combine butter, chocolate, cocoa powder, eggs, sugar and vanilla until well blended.
2. In a bowl, combine flour, baking powder and salt then pour into mixture.
3. Continue mixing until well combined then cover and refrigerate for at least 4 hours.

Part 2
1. Scoop a spoonful of mixture, mold into balls then roll in confectioners’ sugar.
2. In a greased baking pan, arrange the mixture about 2 inches apart.
3. Bake in a preheat oven over 450 degrees Fahrenheit for 8-10 minutes or until done.
4. Remove from the oven then let it cool before serve.

Chocolate Cupcakes

Filipino Style Recipe: Chocolate cupcakes is a small cake that is usually bake in paper liner or aluminum cup. The cupcakes is designed to one person and have many varieties or flavor then topped with frosting or other cake decorations.

Estimated time of baking: 20-25 minutes
Good for 22 cupcakes

Ingredients:
1 & 1/2 cups flour
1 & 1/2 teaspoons baking powder
3 tablespoons cocoa powder
3/4 cup unsalted butter, softened
1 cup granulated sugar
3 raw eggs
1 & 3/4 cup fresh milk
1 teaspoon vanilla
1/4 cup dark chocolate chips(optional)

Procedures:
Part 1
1. In a mixing bowl, combine flour, baking powder, cocoa powder and dark chocolate chips then mix well. Set aside.

Part 2
1. In an electric mixer, combine butter and sugar until well blended.
2. Add eggs, milk and vanilla then mix until to blended.
3. Gradually add the flour mixture then mix until well combined.

Part 3
1. In a muffin pan, grease with cooking spray or place paper cups.
2. Pour batter into each cups until 2/3 full.
3. Preheat oven to 350 degrees Fahrenheit then bake for 20 minutes or until golden brown.(Cupcakes is done when a toothpick inserted in the center comes out clean.)
4. Remove from the oven and let it cool before serving.

Chocolate Brownies

Filipino Style Recipe: Chocolate brownies is another popular dessert specially in United States which is most likely between cake and cookie in texture. Brownie comes in different varieties and may include nuts, chocolate chips, frosting, whipped cream and other ingredients. This is usually serve together with coffee or milk.

Good for 30 brownies

Ingredients:
3/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup butter
1 teaspoon vanilla extract
2 cups white sugar
4 eggs

1 cup chopped nuts or chocolate chips (optional)
nutella or other chocolate spread for frosting(optional)

Ingredients:
Part 1
1. In a mixing bowl, combine cocoa, flour, baking powder and salt then mix until well combined. Set aside.
2. Grease baking pan(9x13inch) with melted butter. Set aside.

Part 2
1. In a large separate bowl, Add melted butter, vanilla and sugar then mix well.
2. Add eggs one at a time, whisk well after each egg.
3. Gradually add cocoa mixture then mix until well blended.
4. Add nuts and stir using spatula then pour in a grease baking pan.
5. Preheat oven to 350 degrees Fahrenheit then bake for 40 minutes or until done.(Brownies is done when a toothpick inserted in the center comes out clean.)
6. Remove from the oven and let it cool then spread nutella on top. Cut into bars then serve.

Bibingka

Filipino Style Recipe: Bibingka is another Filipino delicacy that is traditionally served during Christmas season. This dish is commonly sold along the streets during Simbang gabi. Bibingka is consists of rice flour, coconut milk and baking powder then place in a round pan lined with banana leaf and topped with salted eggs and cheese. Traditionally this is cooked over and top of preheated charcoals or preheated oven. Brush with butter and sugar then served with freshly grated coconut.

Ingredients:
1 cup rice flour
2 teaspoons baking powder
1/4 teaspoon salt
3 eggs, beaten
1 cup coconut milk
1/4 cup evaporated milk
1 cup brown sugar
3 tablespoons butter, melted
banana leaves

Toppings:
1 salted eggs, sliced
30 grams cheddar cheese, sliced(optional)
butter or margarine
brown sugar(muscovado)
freshly grated coconut(optional)

Procedures:
Part 1
1. In a bowl, mix rice flour, baking powder and salt until well combined. Set aside.

Part 2
1. In a separate bowl, dissolved sugar in melted butter.
2. Add beaten eggs, coconut milk, and evaporated milk then whisk well.
3. Add flour mixture then whisk again until well blended.

Part 3
1. In a round baking pan, arrange banana leaf then pour mixture.
2. Bake in a preheated oven over 375 degrees Fahrenheit.
3. Remove after 15 minutes then top with slices of salted egg and cheese.
4. Bake for another 20 minutes or until top turns to medium brown.
5. Remove from the oven then brush top with butter and sprinkle with sugar.
6. Cut into serving slices then serve with grated coconut. Enjoy!

Buko Tart

Filipino Style Recipe: Buko tart is another popular Filipino delicacy and pasalubong from southern Luzon specially in the province of Laguna . Buko tart is a smaller version of buko pie or custard pie, the filling is made up of coconut meat, coconut juice milk, sugar and cornstarch then mix until well blended. Pour the mixture into a pie crust and cover with top crust then bake until firm and done.

Estimated time of preparation: 15-20 minutes
Estimated time of baking: 60-70 minutes

Ingredients:
Pie Filling:
2 cups coconut meat, shredded
1/2 cup coconut water
3/4 cup white sugar
1/2 cup evaporated milk
1/2 cup cornstarch

Pie Crust:
2 cups all purpose flour, sifted
1/2 cup unsalted butter
1 teaspoon salt
3-4 tablespoons ice-cold water

Procedures:
Part 1
1. In a deep pan, combine filling ingredients then simmer and stir in a low heat until thickens. Set aside.

Part 2
1. In a mixing bowl, combine flour and salt then mix well.
2. Add butter then mix thoroughly. Gradually pour cold water then mix until well blended.
3. Gather the dough into a ball shape then refrigerate for 30 minutes.
4. In a clean flat surface, place dough in wax paper then flatten using a rolling pin until 1/8 inch thick.

Part 3
1. Cut out a circle shape in a flat dough then arrange and press down in a tartlet or muffin pan.
2. Prick dough with a fork then pour with coconut filling.
3. Place top cover dough over the filling then seal the edges and prick with fork.
4. Bake in a preheated oven over 400 degrees Fahrenheit then bake for 40-50 minutes or until golden brown.

Notes:
1. You may brush the top cover with egg-water mixture before baking to produce a glossy and brown color to the crust.

Apple Bread Pudding

Filipino Style Recipe: apple bread pudding is a bread-based dessert popular in many countries including the Philippines. There are several ways to make bread pudding, normally the bread(leftover) break and then soak in milk, egg, sugar and other fruits. Ingredients:
6 slices white bread(leftover), break into pieces
1/2 apple, diced
1/2 apple, sliced(optional)
2 tablespoons butter or margarine, melted
4 eggs, beaten
2 cups evaporated milk
3/4 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla

Procedures:
1. In a 8 inch baking pan, toss bread and apples then drizzle the melted butter.
2. In a bowl, combine beaten eggs, milk, sugar, cinnamon and vanilla. Mix well.
3. Pour the egg mixture over the bread then push with fork until the bread is fully soaked.
4. Arrange apple slices on top then bake in a preheated oven over 300 degrees Fahrenheit for 30 minutes or until the knife comes out clean when inserted.
5. Remove from oven and let it cool. Slice into serving pieces then serve.

Classic Bread Pudding

Filipino Style Recipe: Classic bread pudding is a bread-based dessert popular in many countries including the Philippines. There are several ways to make bread pudding, normally the bread(leftover) break and then soak in milk, egg, sugar and other fruits. Bake for 30 minutes or until the knife comes out clean when inserted. Most of my ingredients were delivered by Walter Mart – City Delivery.

Estimated time of cooking: 30 minutes

Ingredients:

2 tablespoons butter or margarine, melted
4 eggs, beaten
2 cups evaporated milk
3/4 cup white sugar
1 teaspoon ground cinnamon

1/2 cup raisins

Procedures:
1. In a 8 inch baking pan, break bread into small pieces then drizzle the melted butter and sprinkle the raisins.
2. In a bowl, combine beaten eggs, milk, sugar, cinnamon and vanilla. Mix well.
3. Pour the egg mixture over the bread then push with fork until the bread is fully soaked.
4. Bake in a preheated oven over 300 degrees Fahrenheit for 30 minutes or until the knife comes out clean when inserted.
5. Remove from oven and let it cool. Slice into serving pieces then serve.

Filipino Style Recipe: Muffin is popular pastry bread specially in United States. This bread is similar to cupcakes and usually serve during breakfast together with coffee, tea or other meals.

Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 raw eggs
3/4 cup fresh milk
1 teaspoon vanilla

2 pieces ready made pie crust

Filling:
3/4 cup evaporated or coconut milk
2 cups young coconut meat, sliced
3/4 cup coconut juice
3/4 cup sugar
1/2 cup cornstarch

Procedures:
Part 1
1. Heat a pan over low heat, combine milk and sugar then stir constantly until sugar is dissolved.
2. Add coconut meat then cook for 2 minutes.
3. Pour coconut juice and cornstarch then stir until well blended and thickens. Remove from heat and set aside.

Part 2
1. Pour the coconut filling on the pie crust
2. Place the top crust over the filling then seal the edges
3. Pre-heat oven over 350 degrees Fahrenheit for 10 minutes then bake the buko pie for 50 minutes or until golden brown.
4. Remove from oven and let it cool before serving.
