Relyenong Pusit

Ingredients:
1 kilo large size squid, wash and clean
3 tablespoons soy sauce
2 tablespoons lemon juice
2 raw eggs
1/4 cup flour
oil for frying

Stuffing:
200 grams ground pork
3 cloves garlic, minced
1 onion, minced
2 tablespoons soy sauce
1 small carrots, minced
sugar, salt and ground pepper to taste

Procedures:
Part 1
1. In a bowl, combine soy sauce and lemon juice then marinate squid for at least 30 minutes.

Part 2
1.In a pan, heat oil then saute garlic, onion and tomato.
2. Add ground pork then stir cook for 5 minutes or until light brown.
3. Add soy sauce and ground pepper then cook for 10 minutes. Add a little water if necessary.
4. Add carrots then simmer for another 3 minutes.
5. Adjust seasoning with sugar and salt according to taste then cook until nearly dry. Set aside.

Part 3
1. Stuff squid with ground pork mixture then close the ends with toothpicks.
2. Dip stuffed squid into beaten egg then roll in flour.

Part 4
1. In a frying pan, heat oil then deep fry each squid until golden brown. Drain.
2. Transfer into serving plate then glaze with your favorite sauce.

Baked Bacon Oysters

Filipino Style Recipe: Baked Bacon Oysters is another easy and simple dish made of fresh oysters, steamed until the shells open then baked together with bacon and cheese.

Ingredients:
24 fresh oysters
8 bacon strips
1 tablespoons chopped parsley
100 grams cheddar or mozzarella cheese

Procedures:
Part 1
1. In a pan, cook bacon over medium heat until shrunk but not crisp. Drain on paper towel.
2. Chop bacon into pieces and tidbits. Set aside.

Part 2
1. Rinse and brush oysters to remove dirt.
2. Steam oysters for 3-5 minutes or until shells open.
3. Remove top shells using a knife.

Part 3
1. Arrange oysters in a baking pan, add bacon tidbits then cover each oyster with cheese.
2. Bake in a preheated oven over 300 degrees Fahrenheit for 20-30 minutes or until cheese is melted.
3. Transfer to serving plate, top with bacon pieces then sprinkle with parsley.
4. Serve immediately.

Baked Cream Dory

Filipino Style Recipe: Baked Cream Dory is a simple yet mouth-watering healthy dish. This recipe consists of cream dory marinated in herbs and lemon juice then baked in butter until tender.

Ingredients:
2 medium slabs creamy dory
3 tablespoons lemon/calamansi juice
1/2 teaspoon dried basil flakes
1/2 teaspoon dried oregano flakes
1/2 teaspoon paprika powder
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
salt and pepper to taste
1/2 cup unsalted butter
1 tablespoon chopped celery leaves
1 celery stalk, sliced
3-4 pieces tomatoes, halves
2-3 pieces potatoes, quartered

Procedures:
Part 1
1. In a bowl, combine paprika powder, basil, oregano, ginger powder, garlic powder, salt and pepper.

Part 2
1. Grease baking pan with butter then arrange cream dory.
2. Sprinkle fish with powdered mixture then garnish with celery leaves.
3. Pour lemon juice then marinate for 15 minutes.
4. Add tomatoes, potatoes and celery stalks on the side. Add some butter slices in between and on top of the fish.
5. Bake in a preheated oven over 300 degrees Fahrenheit for 20-30 minutes or until tender.
6. Transfer to serving plate then serve immediately with steamed rice.

Sinigang na Danggit sa Kamias

Filipino Style Recipe: Sinigang na danggit sa kamias is another simple and easy Filipino dish. The procedure is similar to other sinigang, but we used kamias as alternative to tamarind.

Ingredients:
1/2 kilo rabbitfish(Danggit), cleaned
12 pieces fresn kamias (bilimbi)
4 cups water or rice washing
4 cloves garlic, minced
1 onion, sliced
1 thumb-sized ginger, sliced thinly
2 tomatoes, halves
a bunch mustard greens (optional)
3 tablespoons olive oil
salt or fish sauce to taste
1 teaspoon ground pepper

Procedures:
1. In a pot, heat olive oil and saute garlic, onion, ginger, tomatoes and kamias.
2. Pour water and bring to boil. Add fish then cover and simmer for 10 minutes. Add more water if needed.
3. Season with ground pepper, salt or fish sauce according to taste.
4. Add green chili and mustard greens and simmer for another 3 minutes.
5. Transfer to serving bowl and serve hot.

Sinigang sa Miso (Tilapia)

Filipino Style Recipe: Sinigang sa miso (Tilapia) or tilapia in miso-tamarind soup is another Filipino soup dish. This is similar to other sinigang that has a sour broth. The fish cooked in a combination in rice washing, tomatoes, vegetables, miso paste and tamarind which gives a sour taste.

Ingredients:
1 kilo tilapia, cut into 2-3 pieces
3 tablespoons miso paste
1 pack of tamarind powder or tamarind(sampalok)
3 tablespoon garlic, minced
1 medium-sized onion, chopped
1 thumb-sized ginger, chopped
2 large tomatoes, chopped
a bunch of mustard greens(mustasa)
3 green pepper(siling haba)
1 liter water or rice washing
cooking oil
fish sauce, salt and ground pepper to taste

Procedures:
Part 1(Optional)
1. In a frying pan, heat oil then fry tilapia until light brown. Drain and set aside.

Part 2
1. In a casserole, heat oil and saute garlic, onion, ginger and tomatoes.
2. Add miso paste and fish sauce then stir cook for a minute.
3. Pour water then bring to boil. Add sinigang mix then bring to boil.
4. Add fried tilapia and green pepper then cook for another 2 minutes.
5. Season with salt and ground pepper according to taste.
6. Add mustard greens then simmer for a minute. Serve hot!

NOTES:
1. To extract tamarind juice instead of sinigang mix, boil unripe tamarind until soften then pound and extract the juice.

Spicy Shrimp Fettucine

Filipino Style Recipe: Spicy Shrimp Fettuccine is an easy and simple pasta dish consist of fettuccine pasta and shrimp cooked in spicy red sauce.

Ingredients:
1 medium white onion,minced
3 cloves garlic, minced
4 pieces tomatoes, minced
2 pieces green chilies, cut diagonally
1/4 kilo shrimps
1 can shiitake mushrooms, halved
1/2 cup tomato sauce
1/2 kilo fettuccine, cooked according to package instruction
oil for sauteing
salt and pepper to taste
4 tablespoon Parmesan cheese

Procedures:
1. In a sauce pan over medium heat, saute onion and garlic until translucent and fragrant.
2. Add tomatoes and cook until soft. Add the chilies and mushrooms and cook for 5 more minutes.
3. Add the shrimps and cook until color tuns orange. Add the tomato sauce and let it simmer. Season with salt and pepper.
4. Add the cooked fettuccine and mix. Remove from heat and transfer to serving dish. Top with Parmesan cheese.

Stir Fry Shrimp in Tomato Sauce

Filipino Style Recipe: Stir Fry Shrimp in Tomato Sauce is a simple yet mouth-watering seafood dish. The dish is consist of shrimp stir fry then cooked in tomato sauce.

Ingredients:
500 grams shrimp, head removed
1 onion, chopped
3 cloves garlic, minced
1 tomato, chopped
1 cup tomato sauce
1/2 cup broth
1/2 teaspoon sugar
3 tablespoons olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a sauce pan, heat olive oil then saute garlic and onion.
2. Add shrimp then cook until bright pink. Remove from the pan and set aside.

Part 2
1. In a same pan, add tomato then cook until soft.
2. Add tomato sauce and broth then simmer until reduced.
3. Season with salt and pepper according to taste.
4. Add shrimp then cook for another minute.
5. Transfer to serving plate then serve with steamed rice.

Pinaksiw na Hito sa Soda

Filipino Style Recipe: Pinaksiw na hito sa soda is another quick and easy fish dish by Filipinos. Instead of traditional paksiw which has a sour and salty taste. This version of paksiw has an additional sweet flavor coming from soda. The dish can be served together with steamed rice or sometimes as pulutan(appetizer or finger food) with cold beer.

Ingredients:
2 pieces large-sized catfish
6 gloves garlic, pounded
1 onion, chopped
1 thumb-sized ginger, sliced and pounded
4 tablespoons vinegar
3 cups soda(sprite or 7-up)
1 teaspoon olive oil
salt and pepper to taste
salt and vinegar for washing

Procedures:
Part 1
1. Rub catfish with salt then wash in vinegar.
2. Cut into 3-4 slices then rinse in running water. Set aside.

Part 1
1. In a large pot, arrange garlic, onions and ginger at the bottom.
2. Arrange sliced catfish then pour vinegar, soda, olive oil, salt and ground pepper.
3. Cover and simmer over medium heat for 8-10 minutes or until the sauce reduced.
4. Remove from heat then serve hot with steamed rice. Enjoy

Ginataang Halaan with Sigarilyas

Filipino Style Recipe: Ginataang Halaan with Sigarilyas is a simple yet delicious seafood dish that’s commonly served by Filipinos. The usual way of eating clams is by using your hands then scoop the meat out of the shell using your mouth. This is usually served during rainy season and it’s a good source of energy for lactating mothers.

Ingredients:
1/2 kilo fresh clams(halaan), Wash thoroughly and drain
1 cup coconut cream (1st extract)
1 cup coconut milk (2nd extract)
5 pieces sigarilyas (winged bean), chopped
3 cloves garlic, crushed
1 thumb-sized ginger, thinly sliced
1 onion, sliced
1 tomato, chopped (optional)
1-2 siling labuyo (bird’s eye chili), chopped (optional)
2 pieces green chili (siling haba)
fish sauce(patis) or salt and ground pepper to taste
butter or cooking oil

Procedures:
Part 1
1. In a large bowl, place clams with water and salt. Cover and set aside for several hours or overnight. (This will allow the clams to expel sand).

Part 2
1. In a wok, melt butter then saute ginger, garlic and onion until translucent.
2. Add labuyo and tomatoes then continue sauteing for 3 minutes.
3. Pour coconut milk and simmer for 5 minutes until reduced. Keep stirring.
4. POur coconut cream and bring to boil then add in clams. Cook for 3 minutes.
5. Add in green chili and sigarilyas then cook for another 3 minutes.
6. Adjust seasoning with salt and ground pepper.
7. Continue cooking over a high heat until all clams shells are open.
8. Transfer to serving bowl then serve with steamed rice.

Pinangat na Galunggong

Filipino Style Recipe: Pinangat na Galunggong is another simple and easy Filipino dish. It is usually consist of fish cooked in a combination of calamansi, tomatoes and some spices.

Ingredients:
500 grams galunggong, cleaned and trimmed
2 medium size tomatoes, sliced
1 onion, chopped
1 thumb-sized ginger, chopped
3 pieces green chili
5 pieces calamansi, juice
2 cups water
salt and pepper to taste

Procedures:
1. In a pot, arrange half of tomatoes, ginger and onion.
2. Arrange galunggong over then add the remaining tomatoes, ginger, onion and green chili.
3. Sprinkle with salt and pepper then pour calamansi juice and water.
4. Cover and simmer over medium heat for 15 minutes or until cooked.
5. Remove from heat then serve with steamed rice.
