Shrimp Carbonara


Ingredients:
500 grams Fettucine noodles(or any desired pasta)
1 can evaporated milk
250 ml all purpose cream
1 can creamed of mushroom soup
300 grams shrimps, pelled and deveined
1 red bell pepper, sliced
1 head garlic, minced
1 onion, minced
1 teaspoon ground pepper
2 tablespoons olive oil
250 grams grated Parmesan cheese
2 tablespoon chopped spring onion(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. Fry shrimps until starts to turn pink. Remove and set aside.

Part 3
1. In a pan, heat oil and saute garlic and onion.
2. Add evaporated milk and creamed mushroom soup.
3. Add the all purpose cream and grated Parmesan cheese. Stir and bring to boil. Season with ground pepper. (Add more evaporated milk or a cup of water if the sauce is too creamy or salty.)
4. Put back the shrimp and add bell pepper, simmer until beginning to thicken. Remove from heat.
5. Prepare pasta on pasta tray, top with grated Parmesan cheese and chopped spring onion.Serve and enjoy.

Spaghetti and Meatballs


Ingredients:
350 grams spaghetti(any prefer pasta)

Sauce:
1/4 cup tomato paste
1 can(28 oz) crushed tomatoes
2 tablespoons olive oil
1 yellow onion, chopped
3 cloves garlic, chopped
1/4 cup Parmesan cheese, grated
1/4 cup parsley, finely chopped
1/4 cup basil, finely chopped
1/4 cup red wine
1 beef bouillon
1 tablespoon sugar
salt and pepper to taste

Meatballs:
500 grams lean ground beef
1 raw egg
2 tablespoons bread crumbs
2 tablespoons Parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
1 tablespoon dried oregano flakes

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions until aldente. Drain and set aside.

Part 2
1. In a large bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, salt, pepper, and oregano. Mixed well.
2. Scoop about 2 tablespoons of the mixture and roll and compress to form 1 1/2″ round meat balls. Continue this step until the mixture is consumed.
3. In a frying pan, heat olive oil and fry meatballs for about 5-10 minutes depending on the size or until color turns to golden brown. Drain and set aside.

Part 3
1. In a sauce pan, heat olive oil on medium heat. Saute onions and garlic.
2. Add crushed tomatoes, tomato paste, basil and parsley then stir to blend.
3. Reduce heat and simmer for about 10 minutes. Stirring occasionally.
4. Add red wine, beef bouillon, Parmesan cheese, adjust seasoning with salt, pepper and sugar according to taste.
5. Add meatballs and gently stir then simmer for another 5 minutes. Stirring occasionally.

Part 4
1. Prepare pasta on pasta tray, add sauce and meatballs, sprinkle with grated Parmesan cheese. Garnish with parsley then serve with garlic bread.

Rigatoni and Meatballs


Ingredients:
350 grams rigatoni pasta
18 pieces beef meatballs

Sauce:
1/4 cup tomato paste
1 can(28 oz) crushed tomatoes
2 tablespoons olive oil
1 yellow onion, chopped
3 cloves garlic, chopped
1/4 cup Parmesan cheese, grated
1/4 cup parsley, finely chopped
1/4 cup basil, finely chopped
1/4 cup red wine
1 beef bouillon
1 tablespoon sugar
salt and pepper to taste

Procedures:

5. Add meatballs and gently stir then simmer for another 5 minutes. Stirring occasionally.

Part 4
1. Prepare pasta on pasta tray, add sauce and meatballs, sprinkle with grated Parmesan cheese, garnish with remaining parsley. Serve.

Tuna and Corn Pasta


Ingredients:
400 grams fusilli or spiral pasta
1 big can spicy tuna flakes in oil, drained
1 Can corn kernel (whole)
1/4 cup mayonnaise
1/4 cup all purpose cream
1 onion, minced
olive oil
2 cups Parmesan cheese, grated
1 tablespoon sugar
sugar salt and pepper

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Drain well and put in a large bowl. Drizzle with the olive oil and mix to distribute the oil evenly. This will prevent the pasta from sticking together.
2. Drain the tuna and corn kernel. Add to the pasta. Add the mayonnaise, all purpose cream, sugar,onion, and Parmesan cheese. Mix all ingredients.
3.Season with salt and pepper according to taste.

Shrimp and Chicken Alfredo Pasta

Ingredients:
350 grams fresh shrimp, peeled and deveined
3 pieces Chicken fillet
350 grams fettuccine, cooked according to package instruction
1/4 cup butter
1 red bell pepper, cut into cubes
salt and pepper to taste
grated Parmesan cheese
chopped spring onion

Alfredo Sauce:
1/2 cup butter
1/2 cup cornstarch
1 pack all-purpose cream
1/2 cup full cream milk
1/2 cup grated Parmesan cheese

Procedures:
Part 1
1. Rub chicken fillet with salt and pepper then grill until cook.
2. Cut into serving pieces and set aside.

Part 2
1. In a pan, melt butter then add shrimp.
2. Season with salt and pepper then cook until starts to turn pink. Remove and set aside.

Part 3
1. In a same pan, melt butter and add cornstarch. Mix until well blended.
2. Add all purpose cream, full cream milk, grated Parmesan cheese.
3. Mix well until thickens. Stir into pasta then add red bell pepper, chicken and shrimp.
4. Transfer into serving plate then sprinkle with grated cheese and chopped spring onion.

Note: Alfredo sauce is also available in grocery stores.

Shrimp Marinara


Ingredients:
500 fresh shrimp, peeled and deveined
350 grams spaghetti pasta
Parmesan cheese for garnishing
Fresh chopped basil for garnishing
Garlic bread

Marinara Sauce:
3 cups crushed tomatoes
3 cups tomato sauce
2 teaspoons garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon chili flakes/powder
1/2 cup grated Parmesan cheese
3 tablespoons olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a saucepan, heat oil then saute garlic until golden brown.
2. Add shrimp then sprinkle with salt, cook until color turns to pink.
3. Transfer half of shrimp to a plate and set aside.

Part 3
1. In a same pan, add crushed tomatoes and tomato sauce. Bring to boil.
2. Add dried oregano, basil, parsley, chili, and Parmesan cheese.
3. Adjust seasoning according to taste then stir cook over low heat until mixture thickens.
4. Put back remaining shrimp then stir. Remove from heat.

Part 4
1. Toss marinara sauce with the cooked pasta.
2. Transfer to serving plate then sprinkle with Parmesan cheese and chopped basil.
3. Serve with garlic bread.

Spicy Shrimp Fettucine

Filipino Style Recipe: Spicy Shrimp Fettuccine is an easy and simple pasta dish consist of fettuccine pasta and shrimp cooked in spicy red sauce.

Ingredients:
1 medium white onion,minced
3 cloves garlic, minced
4 pieces tomatoes, minced
2 pieces green chilies, cut diagonally
1/4 kilo shrimps
1 can shiitake mushrooms, halved
1/2 cup tomato sauce
1/2 kilo fettuccine, cooked according to package instruction
oil for sauteing
salt and pepper to taste
4 tablespoon Parmesan cheese

Procedures:
1. In a sauce pan over medium heat, saute onion and garlic until translucent and fragrant.
2. Add tomatoes and cook until soft. Add the chilies and mushrooms and cook for 5 more minutes.
3. Add the shrimps and cook until color tuns orange. Add the tomato sauce and let it simmer. Season with salt and pepper.
4. Add the cooked fettuccine and mix. Remove from heat and transfer to serving dish. Top with Parmesan cheese.

Mushroom and Tomato Pasta

Filipino Style Recipe: Mushroom and Tomato Pasta is an easy and simple pasta dish consist of linguine pasta and a creamy white sauce with mushrooms, tomatoes and cheese.

Ingredients:
250 grams linguine
2 tablespoon butter
5 cloves garlic, miced
5 pieces tomatoes, chopped
1 cups oyster mushroom, torn into 2-3 pieces
1 pack (250 ml) all purpose cream
1 piece chicken bullion dissolved in 1/2 cup water
1/4 cup Parmesan or Cheddar cheese
1 tablespoon oil
salt and pepper to taste
1 teaspoon dried basil flakes (optional)

Procedures:
Part 1
1. Cook pasta according to package instruction. Drain.
2. Sprinkle with oil to avoid from sticking and set aside.

Part 2
1. In a pan over medium heat, saute garlic in butter until translucent.
2. Add tomatoes and cook for 5 minutes or until the tomatoes are soft and the juices comes out.
3. Add the mushrooms and cook for about 3 minutes.
4. Add the all purpose cream and chicken broth, reduce heat and let it simmer uncovered until liquid is reduced and the sauce is a bit thickened.
5. Add the cheese and season with salt and pepper.
6. Scoop the sauce over pasta, top with cheese and basil.

Beef Mami

Filipino Style Recipe: Beef Mami is one of the most popular noodle soup dish that can be served during rainy or cold season, because of its hot and delicious soup and the tender of beef brisket gives warmth and comfort.

Ingredients:
500 grams beef brisket, cut into serving pieces
200 grams Asian or egg noodles
1 water or beef stock
3 cloves garlic, minced
1 red onion, chopped
1 beef bouillon cube
3-5 pieces star anise
a bunch of Chinese cabbage or baby bok choy, cleaned and chopped
small handful of spring onion, chopped
3 tablespoons vegetable oil
salt and pepper to taste

Choices of toppings:
steamed dumplings
hard-boiled eggs

1. In a large bowl, arrange noodles and Chinese cabbage.

Broccoli Fussili Pesto Pasta

Filipino Style Recipe:This is a very healthy dish that will surely fill up your tummy. The spice from the tuna and freshness of pesto and basil is a very nice contrast.

Ingredients:
200 grams whole wheat Fusilli pasta
1 head broccoli
2 tablespoon Olive oil
3 cloves garlic, minced
1 head onion, minced
1 can spicy tuna, drained
3 tablespoon sliced black olives
10 pieces cherry tomatoes, cut in half
180 grams pesto sauce
Handful fresh basil,chopped
Parmesan cheese
Fish sauce to taste

Procedures:
Part 1
1. Cook fusilli according to package instruction. Drain and reserve water. Set aside.
2. Using then water from the pasta, boil again and blanch broccoli for 1 minute or until the color green becomes bright. Drain and dip into a bowl of ice water to stop the cooking.
Part 2
1. In a big pan, heat olive oil and saute garlic and onion until translucent. Add sliced black olives and tuna and cook for 3 minutes. Add cherry tomatoes and cook again until it is slightly softened.
2. Add the pasta on the pan then pour the pesto sauce. Mix until the pesto is evenly combined with the pasta.Add the broccoli.
3. Season with fish sauce according to taste.
4. Remove from heat. Top with fresh basil and Parmesan cheese. Serve and enjoy.
