Spaghetti and Meatballs


Ingredients:
350 grams spaghetti(any prefer pasta)

Sauce:
1/4 cup tomato paste
1 can(28 oz) crushed tomatoes
2 tablespoons olive oil
1 yellow onion, chopped
3 cloves garlic, chopped
1/4 cup Parmesan cheese, grated
1/4 cup parsley, finely chopped
1/4 cup basil, finely chopped
1/4 cup red wine
1 beef bouillon
1 tablespoon sugar
salt and pepper to taste

Meatballs:
500 grams lean ground beef
1 raw egg
2 tablespoons bread crumbs
2 tablespoons Parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
1 tablespoon dried oregano flakes

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions until aldente. Drain and set aside.

Part 2
1. In a large bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, salt, pepper, and oregano. Mixed well.
2. Scoop about 2 tablespoons of the mixture and roll and compress to form 1 1/2″ round meat balls. Continue this step until the mixture is consumed.
3. In a frying pan, heat olive oil and fry meatballs for about 5-10 minutes depending on the size or until color turns to golden brown. Drain and set aside.

Part 3
1. In a sauce pan, heat olive oil on medium heat. Saute onions and garlic.
2. Add crushed tomatoes, tomato paste, basil and parsley then stir to blend.
3. Reduce heat and simmer for about 10 minutes. Stirring occasionally.
4. Add red wine, beef bouillon, Parmesan cheese, adjust seasoning with salt, pepper and sugar according to taste.
5. Add meatballs and gently stir then simmer for another 5 minutes. Stirring occasionally.

Part 4
1. Prepare pasta on pasta tray, add sauce and meatballs, sprinkle with grated Parmesan cheese. Garnish with parsley then serve with garlic bread.

Creamy Clams Carbonara


Ingredients:
500 grams spaghetti or any pasta
800 grams clams(halaan)
3 tablespoons vegetable oil
1/2 head garlic, peeled and chopped
4 strips bacon, cut into cubes and fried
1 onion, chopped
1/4 cup sliced shiitake mushroom
1 big can evaporated milk
2 x 250 ml all purpose cream
1/2 cup Parmesan cheese, grated
salt and pepper to taste
parsley for garnishing(optional)

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat oil then saute garlic, onion and mushroom then saute for 2-3 minutes.
2. In a same pan, add clams then cover and simmer until shells open.
3. Add the evaporated milk and all purpose cream then bring to boil while keep stirring.
4. Add the grated cheese then keep stirring for about 3-5 minutes or until beginning to thicken.
5. Add fried bacon then adjust seasoning with salt and pepper.
6. In a serving plate, arrange pasta then add the sauce on top. Sprinkle with grated cheese and garnish with parsley. Serve!

Shrimp Marinara


Ingredients:
500 fresh shrimp, peeled and deveined
350 grams spaghetti pasta
Parmesan cheese for garnishing
Fresh chopped basil for garnishing
Garlic bread

Marinara Sauce:
3 cups crushed tomatoes
3 cups tomato sauce
2 teaspoons garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon chili flakes/powder
1/2 cup grated Parmesan cheese
3 tablespoons olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a saucepan, heat oil then saute garlic until golden brown.
2. Add shrimp then sprinkle with salt, cook until color turns to pink.
3. Transfer half of shrimp to a plate and set aside.

Part 3
1. In a same pan, add crushed tomatoes and tomato sauce. Bring to boil.
2. Add dried oregano, basil, parsley, chili, and Parmesan cheese.
3. Adjust seasoning according to taste then stir cook over low heat until mixture thickens.
4. Put back remaining shrimp then stir. Remove from heat.

Part 4
1. Toss marinara sauce with the cooked pasta.
2. Transfer to serving plate then sprinkle with Parmesan cheese and chopped basil.
3. Serve with garlic bread.

Spaghetti Pesto with Grilled Chicken


Ingredients:
200 grams spaghetti pasta
1/4 kilo chicken breasts or fillet
1/2 teaspoon garlic powder
1/2 teaspoon cumin powder
1/2 teaspoon Spanish paprika
salt and pepper to taste

Pesto Sauce:
3/4 cups fresh basil leaves, chopped
3 tablespoons pine nuts or roasted pili nuts or walnuts
1/3 cup extra virgin olive oil
salt and pepper to taste

Procedures:
Part 1
1. Pound chicken breasts then season with salt, garlic powder, cumin, paprika and ground pepper.
2. Grill for 20 minutes or until cooked.
3. Let it cool then cut into strips. Set aside.

Part 2
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 3
1. In a food processor or blender, process chopped basil, pine nuts, salt and pepper until blended.
2. Add extra-virgin olive oil then continue blending until combined. Add more olive oil if needed.
3. Pour on spaghetti pasta the toss until coat evenly.

Part 4
1. Transfer spaghetti pesto into serving plate.
2. Top with grilled chicken slices then garnish with chopped basil.
3. Sprinkle with Parmesan cheese then serve with garlic bread. Enjoy!

Spaghetti Carbonara


Ingredients:
500 grams spaghetti noodles
1 can evaporated milk
250 ml all purpose cream
1 can creamed of mushroom soup
200 grams sweet ham
1 head garlic, minced
1 onion, minced
1 teaspoon ground pepper
2 tablespoons butter
250 grams grated Parmesan cheese
2 tablespoon parsley, chopped(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a pan, melt butter then fry the ham until crisp. Remove and set aside.

Part 3
1. In a same pan, saute garlic and onion. Add fried ham.
2. Add evaporated milk and creamed mushroom soup.
3. Add the all purpose cream and grated parmesan cheese. Sprinkle with ground pepper then stir and bring to boil. Add more evaporated milk or a cup of water if the sauce is too creamy or salty.
4. Simmer until beginning to thicken. Remove from heat.

Part 4
1. Prepare pasta on pasta tray then pour creamy sauce. Top with remaining ham, grated Parmesan cheese and parsley.

Meaty Spaghetti


Ingredients:
1 pack(500 grams) spaghetti noodles
1/2 kilo ground beef
10 regular hot dogs, sliced diagonally
5 cloves garlic, minced
4 medium-sized onions, minced
500 grams spaghetti sauce
1 1/2 cups banana ketchup
1/2 cup water
2 tablespoons butter
1 beef bouillon cube
2 tablespoons sugar
salt and pepper to taste
cheddar cheese, grated
1 small can evaporated milk(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.
2. Add cooking oil to prevents the pasta from sticking together.

Part 2
1. In a large sauce pan, melt butter and saute garlic and onion.
2. Add ground beef and cook until brown.
3. Add hot dogs, spaghetti sauce, beef bouillon cube, ketchup, and water.
4. Simmer for 20 minutes. Stir occasionally.
5. Add evaporated milk then season with sugar, salt and pepper according to taste. Stir and simmer a few more minutes.
6. Arrange pasta into serving plate, top with spaghetti sauce and grated cheese. Enjoy!

Seafood Three-Cheese Pasta
