Creamy Bacon Carbonara


Ingredients:
500 grams linguine pasta
400 grams bacon
100 grams sliced button mushroom
1 can evaporated milk
250 ml all purpose cream
1 can creamed of mushroom soup
1 head garlic, minced
1 onion, minced
1 teaspoon ground pepper
2 tablespoons olive oil
250 grams grated Parmesan cheese
2 tablespoon parsley, chopped(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. Fry the bacon but not too crispy. drain and cut into small pieces. Set aside.

Part 3
1. In a pan, heat oil and saute garlic and onion. Add mushroom and 3/4 of fried bacon.
2. Add evaporated milk and creamed mushroom soup.
3. Add the all purpose cream and grated Parmesan cheese. Stir and bring to boil. Season with ground pepper. (Add more evaporated milk or a cup of water if the sauce is too creamy or salty.)
4. Simmer until beginning to thicken. Remove from heat.
5. Prepare pasta into serving plate, top with grated Parmesan cheese together with the remaining bacon and chopped parsley.
6. Serve with garlic bread. Enjoy

Creamy Chicken Mushroom


Ingredients:
350 grams chicken fillet, cut into serving pieces
1 cup shiitake mushrooms, sliced
1/4 cup cream of mushroom
1/2 cup chicken stock
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
3 cloves garlic, minced
1 white onion,chopped
salt and pepper to taste
3 tablespoons vegetable oil
Cooking oil for frying
2 tablespoons spring onions

Procedures:
Part 1
1. Season chicken fillet with ginger powder, garlic powder, salt and ground pepper. Set aside for 10 minutes.
2. In a pan, heat oil then fry chicken fillet over medium heat until light brown. Remove and set aside.

Part 2
1. Saute garlic and onions. Add shiitake mushrooms then cook for 3 minutes.
2. Pour chicken stock then bring to boil.
3. Put back chicken then add cream of mushroom and spring onions.
4. Season with salt and pepper, keep stirring then continue cooking until almost thicken.
5. Transfer to serving plate then sprinkle with remaining spring onions. Serve.

Baguio Beans Gising Gising


Ingredients:
450 grams baguio beans, cleaned and chopped thinly
300 grams ground pork
1 cup coconut cream(1st extract)
1 teaspoon sauteed shrimp paste(bagoong alamang)
3 cloves garlic, minced
1 onion, chopped
1/4 teaspoon cumin powder
salt and pepper to taste
4 pieces red hot chillies(labuyo), sliced into small pieces
1 cup coconut milk(2nd extract) (optional)

Procedures:
1. In a saucepan, cook pork meat until color turns to light brown and start to render oil.
2. Add garlic and onion then saute until translucent.
3. Add shrimp paste, cumin powder and continue sauteing for a minute or until cooked.
4. Pour coconut milk, simmer until reduced and thick.
5. Pour coconut cream, baguio beans and chopped chili, cook for 3 minutes or until tender and crisp.
6. Adjust seasoning with salt and pepper then transfer to serving plate then serve.

Creamy Chicken Sopas


Ingredients:
3 cups uncooked macaroni(elbow or shell)
2 pieces chicken breast
2 cups evaporated milk
3 cloves garlic, minced
1 large onions, minced
3 pieces hot dogs, sliced
1 medium carrot, sliced into strips
8 cups water
1 tablespoon vegetable oil
1 small cabbage, roughly shredded
1 piece chicken bouillon(optional)
salt and pepper to taste

Procedures:
Part 1
1. In a pot, pour water and boil chicken, chicken bouillon and onion until chicken is tender.
2. Remove the chicken and let it cool down. Save the broth.
3. Shred the chicken into small pieces using your fingers. Set aside.

Part 2
1. In a large soup pot, heat vegetable oil and saute garlic and onion.
2. Add the sliced hot dogs and the shredded chicken meat and saute for about a minute. Stir constantly.
3. Pour the chicken broth and bring to boil. Add water if needed.
4. Add celery, carrots and macaroni pasta. Simmer until the macaroni is almost done.
5. Add evaporated milk and cabbage and continue stirring until simmering.
6. Season with salt and pepper according to taste.
7. Remove from heat and transfer to serving bowl. Serve hot!

Ginataang Laing


Ingredients:
25 pieces taro(gabi) leaves, dried and shredded
1/2 kilo pork, diced
1/4 cup shrimp paste(bagoong alamang)
1 cup 1st extract coconut milk(kakang gata)
2 cups 2nd extract coconut milk(gata)
3 pieces green chili pepper(siling haba), sliced
5 cloves garlic, minced
2 onions, chopped
2 tablespoons ginger, chopped
3 tablespoons vegetable oil
2-3 pieces red chili(labuyo)
1/4 kilo shrimp, boiled and peeled(optional)
salt and pepper to taste

Procedures:
1. In a casserole, saute garlic, ginger and onions.
2. Then add the pork, continue sauteing until color turns to light brown.
3. Add in the taro leaves. Pour in the coconut milk(2nd extract) but do not stir. Bring to a boil then simmer for 15 minutes.
4. Add green chili pepper, red chili, shrimp and shrimp paste.
5. Season with salt and pepper then cook for 2 minutes.
6. Add the remaining coconut milk(1st extract) and continue to simmer until oil comes out.
7. Transfer to serving bowl then serve with steamed rice.

Creamy Clams Carbonara


Ingredients:
500 grams spaghetti or any pasta
800 grams clams(halaan)
3 tablespoons vegetable oil
1/2 head garlic, peeled and chopped
4 strips bacon, cut into cubes and fried
1 onion, chopped
1/4 cup sliced shiitake mushroom
1 big can evaporated milk
2 x 250 ml all purpose cream
1/2 cup Parmesan cheese, grated
salt and pepper to taste
parsley for garnishing(optional)

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat oil then saute garlic, onion and mushroom then saute for 2-3 minutes.
2. In a same pan, add clams then cover and simmer until shells open.
3. Add the evaporated milk and all purpose cream then bring to boil while keep stirring.
4. Add the grated cheese then keep stirring for about 3-5 minutes or until beginning to thicken.
5. Add fried bacon then adjust seasoning with salt and pepper.
6. In a serving plate, arrange pasta then add the sauce on top. Sprinkle with grated cheese and garnish with parsley. Serve!

Pork Chops Stroganoff

Ingredients:
4 pieces pork chops
a dash of salt and pepper
1 cup cream of mushroom soup
3 tablespoons unsalted butter
Chopped parsley for garnishing

Mushroom Gravy:
1 tablespoon unsalted butter
1/2 white onion, diced
1 cup mushrooms, sliced
2 tablespoons soy sauce or oyster sauce
1 tablespoon cornstarch (dissolved in 4 tablespoons water)
2 cups beef stock

Procedures:
Part 1
1. Season pork chops with a dash of salt and ground pepper. Set aside.

Part 2
1. In a pan, melt butter then saute onions over medium heat.
2. Add mushrooms then stir cook for 3 minutes until light brown.
3. Add beef stock and soy sauce then bring to boil.
4. Add dissolved cornstarch, stir constantly until the sauce becomes thick.
5. Add cream of mushroom soup then mix until well blended. Keep warm and set aside.

Part 3
1. In a pan, melt butter then fry pork chops until brown and tender.
2. Transfer into serving plate then pour sauce on top. Sprinkle with chopped parsley.

Creamy Chopsuey

Filipino Style Recipe: Creamy Chopsuey is another variety of popular vegetable dish. Similar to typically chopsuey, it is consists of different vegetables. Instead of dissolved cornstarch, we used cream of mushroom soup for creamier and tastier dish.

Ingredients:
1/4 kilo pork, cut into small cubes
1/4 kilo shrimp, boiled and peeled
1 dozen quail eggs, boiled and shelled
12 pieces baby corn, sliced diagonally in half
100 grams snow peas(sitsaro)
1 piece medium carrot, sliced thinly
1/4 kilo cabbage, chopped 1 1/2″ squares
1/4 kilo broccoli or cauliflower, break into flowerettes
2-3 stalks leeks(kutsay), chopped 2″ long(optional)
2-3 stalks celery(kinchay), chopped 1″ long
1 piece red bell pepper, cut in strips
1 piece green bell pepper. cut in strips
1 can Cream of Mushroom soup
2 to 3 tablespoons vegetable oil
5 cloves garlic, diced
1 medium onion, minced
salt and pepper to taste

Sauce Mixture:
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoons sesame seed oil(optional)
1-2 cups of water
1 teaspoon sugar

Procedures:
Part 1
1. In a small bowl, combine the soy sauce, oyster sauce, sesame seed oil, water and sugar.

Part 2
1. In a pan, Simmer pork in water just enough to cover the meat. Bring to boil and cook until water dried up.
2. Add vegetable oil and set aside the meat.
3. Saute the garlic and onion then put back the meat. Sprinkle lightly with salt and pepper.
4. Add shrimp and quail eggs. Add the carrot, baby corn and then all the vegetables. Stir cook for a minute.
5. Pour cream of mushroom and sauce mixture then adjust seasoning according to taste. Add more water if necessary.
6. Simmer over high heat 3-5 minutes or until vegetables are half-cooked.
7. Transfer to serving bowl then serve hot with rice.

Gising Gising, Sigarilyas

Filipino Style Recipe: Gising gising, sigarilyas is another variety of popular Bicolano dish. Gising gising has a spicy, salty and creamy taste similar to Bicol express. This dish is made up of chopped sigarilyas cooked in shrimp paste and coconut cream.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4-5 servings

Ingredients:
500 grams sigarilyas, sliced into small pieces
300 grams chicken meat, cut into small pieces
2 tablespoons sauteed shrimp paste(bagoong alamang)
1 cup coconut cream(1st extract)
1 cup coconut milk(2nd extract)
5 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, julienned
2 pieces tomatoes, chopped
4-5 pieces red hot chillies(labuyo), sliced into small pieces
salt and pepper to taste
2 tablespoons vegetable oil

Procedures:
1. In a sauce pan, heat oil then saute garlic, onion, ginger and tomatoes.
2. Add shrimp paste then continue sauteing for a minute or until it’s cooked.
3. Add chicken then stir cook until tender.
4. Pour coconut milk then bring to boil until reduced.
5. Pour coconut cream and chicken bouillon then bring to boil.
6. Add sigarilyas and chopped chili, cook for 3 minutes or until tender and crisp.
7. Adjust seasoning according to taste then cook for another minute or the sauce is reduced and thick
8. Transfer to serving plate then serve.

Breakfast Steaks with Creamy Mushroom

Filipino Style Recipe: Breakfast Steaks with Creamy Mushroom is a simple beef dish made of thin beef slices pan fried then served with creamy mushroom sauce.

Ingredients:
500 grams beef breakfast steak
1/2 cup sliced mushroom
2 cups full cream milk
1 beef bouillon cube
1 tablespoon flour (dissolved in 1/4 cup water)
1/4 cup unsalted butter

Marinade:
3 tablespoons oyster sauce
2 tablespoons soy sauce
2 tablespoons calamansi juice
salt and ground pepper to taste

Procedures:
1. Marinate beef in oyster sauce, soy sauce, calamansi juice, salt and ground pepper for 15 minutes. Set aside.
2. In a pan, melt butter then pan fry beef until brown. Transfer to serving plate and set aside.
3. In a same pan, stir cook mushroom until light brown.
4. Pour dissolved flour, beef bouillon, milk then bring to boil.
5. Adjust seasoning according to taste then simmer until start to thicken.
6. Pour the sauce over the beef. Serve immediately.
