Easy Dinakdakan


Ingredients:
3/4 kilo hog head(cheek, nose and ear), cut into 2-3 pieces
1 thumb-sized ginger, chopped
4 medium-sized onions, chopped
4 pieces red chili(siling labuyo), chopped
1/4 cup vinegar
1 tablespoon peppercorn
3 pieces bay leaves(laurel)
1/2 cup mayonnaise
salt and ground pepper to taste

Procedures:
Part 1
1. In a big cooking pot, place water and bring to a boil.
2. Add pork belly then add peppercorn, bay leaves and salt. Simmer for 30 minutes or until tender. Drain and let it cool for a few minutes.

Part 2
1. Cut the hog head into grilling size and grill until color turns to brown and crispy.
2. Remove from heat then cut into small slices.

Part 3
1. In a big bowl, put the sliced pork belly with ginger, onions, red chili, ground pepper, vinegar and mayonnaise. Mix well and adjust seasoning with salt according to taste.
2. Serve and enjoy!

Quick and Easy Fried Rice


Ingredients:
8 cups cooked rice(preferably leftover)
1 carrot, grated
2 raw eggs, beaten
2 teaspoons soy sauce
4 cloves garlic, minced
3 stalks green onions, chopped
1/2 cup butter
salt and white pepper to taste
1 tablespoon sesame oil(optional)

Procedures:
1. In a wok, melt butter then saute garlic, green onion and carrots for a minute.
2. Add cooked rice, soy sauce and sesame oil then mix until rice is well coated.
3. Pour beaten egg then continue stirring until the egg is cooked.
4. Season with salt and pepper according to taste.
5. Transfer to serving plate and garnish with chopped green onions.

Quick and Easy Tahong Sisig


Ingredients:
2 kilo mussels(tahong), cleaned with beard removed
1 thumb-sized ginger, minced
3 cloves garlic, minced
1 red onion, minced
2-3 pieces green chili pepper(siling haba), chopped
2 pieces red chili(labuyo), chopped
1/4 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 tablespoon unsalted butter
1-2 raw eggs (optional)

Procedures:
Part 1
1. In a pan, place ginger and mussels with enough water. Bring to boil until the shells open.
2. Drain then remove the mussels from the shell. Chop and set aside.

Part2
1. In a pan, melt butter the saute garlic and onion.
2. Add mussels, green chili, and labuyo then season with paprika, salt and pepper.
3. Transfer into hot sizzling plate then add egg on top.
4. Toss and serve immediately.

Easy Chicken Lollipop


Ingredients:
12 pieces chicken wings
2 eggs, beaten
1/4 cup all purpose flour
2 cups bread crumbs
1/4 cup calamansi juice
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Using a sharp knife, cut the chicken wings through the soft joints.
2. Carefully sliding a sharp knife around the tip of the bone.
3. Separate the meat from the bone and gently push down the meat until a lollipop shape is formed.
4. Repeat the procedures for remaining pieces.

Part 2
1. In a bowl, combine chicken, calamansi, salt and pepper then marinate for 15 minutes.
2. In a separate bowl, combine beaten eggs and flour then mix well.
3. Dip the chicken lollipop until well coated then roll in bread crumbs.

Part 3
1. In a frying pan, heat oil over a medium heat.
2. Deep fry then chicken for about 10 minutes or until colors turn to golden brown and tender.
3. Drain on paper towels and transfer to serving plate. Serve chicken lollipop with your favorite dip.

Easy Shrimp Aglio Olio


Ingredients:
400 grams spaghetti pasta
1/4 cup olive oil
8 cloves garlic, peeled and chopped
250 grams shrimp, peeled and deveined
2 tablespoons dried basil
2 tablespoons capers
1/4 teaspoon dried chili flakes(optional)
basil leaves for garnishing (optional)
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a nonstick pan, heat 1 tablespoon olive oil then stir fry shrimps until color turns to pink. Remove from the pan and set aside

Part 3
1. In a same pan, saute garlic, dried basil, capers and chili flakes then saute for a minute.
2. Put back shrimp then season with salt and pepper.
3. Add remaining olive oil and pasta then toss until coat evenly.
4. Transfer to serving plate, garnish with basil leaves then serve.

Easy Chicken Teriyaki


Ingredients:
500 grams chicken thighs deboned, skin-on
salt to taste
sesame seeds for garnishing
fresh spring onions, chopped (optional)

Marinade:
1/4 cup soy sauce
1/3 cup orange juice
3 tablespoons honey
1 teaspoon grated ginger
1 teaspoon sesame oil

Procedures:
Part 1
1. Lightly rub chicken thighs with a little salt.
2. In a non-stick pan over medium heat, pan-fry chicken thighs(skin-side down first) until both sides are light brown and tender. The skin should be almost crispy. Drain and set aside.

Part 2
1. Combine all marinade ingredients in a bowl.
2. In a sauce pan over low heat, pour marinade then bring to boil.
3. Add chicken thighs then stir to combine. Simmer until the sauce thickens.
4. In a serving plate, transfer and slice then chicken thighs then drizzle with the sauce. Sprinkle sesame seeds and fresh spring onions.
5. Serve immediately with steamed rice.

Easy Tuna Sisig


Ingredients:
1 can tuna flakes in oil, drained
1 white onion, minced
3 pieces chili, chopped
2 tablespoons crushed chicharon
1/2 tablespoon mayonnaise
1/2 tablespoon margarine
liquid seasoning
1 raw egg (optional)
calamansi (optional)

Procedures:
1. In bowl, combine tuna flakes, chicharon, mayonnaise, onion and chili.
2. Heat sizzling plate over low flame then grease with margarine.
3. Add tuna mixture then season with liquid seasoning. Mix well.
4. Add raw egg then mix again until cooked.
5. Remove from heat then serve immediately with calamansi and steamed rice. Enjoy.

Easy Teriyaki Chicken


Ingredients:
1/2 kilo chicken fillet, cut into serving pieces
2 tablespoons teriyaki sauce
1 tablespoon water
1 tablespoon cooking oil
1 tablespoon cornstarch

Marinade:
3 tablespoons teriyaki sauce
1 tablespoon sesame oil
1 tablespoon sugar
salt and pepper to taste

For Garnishing:
1 teaspoon sesame seeds, toasted (optional)
onion leeks, chopped

Procedures:
Part 1
1. In a bowl, combine chicken and marinade then set aside for an hour.
2. Add cornstarch then mix well. Remove chicken from marinade.

Part 2
1. In a pan, heat oil then stir cook chicken over low heat for 5 minutes or until golden and cooked.
2. Add teriyaki sauce and water then adjust seasoning according to taste.
3. Simmer a few seconds then remove from heat.
4. Transfer the chicken to serving plate and pour thickened sauce over chicken.
5. Sprinkle with toasted sesame seeds and onion leeks. Serve hot immediately with steamed rice.

Easy Pork Stew


Ingredients:
500 grams pork loin, sliced into strips
3 cups water
1 carrot, cut into strips
2 potatoes, cut into strips
1/2 cup green peas
4 cloves garlic, crushed
1 large onion, chopped
2 tablespoons cooking oil
1/2 teaspoon ground pepper
fish sauce or salt to taste

Procedures:
Part 1
1. In a pot, heat oil then saute garlic and onion.
2. Add pork meat and continue sauteing until color turns to light brown.
3. Pour water and simmer for 25 minutes or until pork is tender.
4. Add green peas, carrot and potatoes then simmer for 3 minutes. Seasoned with fish sauce and ground pepper according to taste.
5. Simmer for another 5 minutes or until sauce is reduced and thickened.
6. Transfer to serving plate and serve.

Easy Chicken Cordon Bleu


Ingredients:
10 pieces chicken fillet
10 slices cheddar cheese
10 slices sweet ham, sliced halves
2 raw eggs, beaten
1/2 cup all-purpose flour
salt and pepper to taste
1 cup bread crumbs
Cooking oil for frying

Procedures:
Part 1
1. Pound the meat using meat pounder, season with salt and pepper.
2. Arrange ham and cheese over the meat and then roll, secure with a thread or toothpick.
4. Dredge the meat in flour, dip again in egg-milk mixture then roll in bread crumbs. Set aside.
5. Repeat the procedures for remaining slices.

Part 2
1. Deep fry over low heat for 15 minutes or until golden brown and tender. Drain.
2. Slice the chicken cordon bleu and arrange on a platter. Serve with dipping sauce.
