Breaded Butterfly Shrimp

Filipino Style Recipe: Breaded Butterfly Shrimp is another simple yet special shrimp dish that is usually serve as appetizer or pulutan together with your favorite dip. The shrimp were butterflied then coated into flour mixture, eggs and breadcrumbs. Deep fried until golden brown then serve with dipping sauce.

Ingredients:
500 grams large-sized shrimp
2 pieces raw eggs, beaten
2 cups panko breadcrumbs
1 tablespoon fresh parsley, chopped (optional)
1 1/2 cups all purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon paprika powder (optional)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Remove head, peel, and devein the shrimp. Tail intact.
2. Using a knife, slice lengthwise then open the cut to butterfly the shrimp.

Part 2.
1. In a bowl, combine flour, paprika, garlic powder, ginger powder, salt and pepper.
2. In a separate bowl, pour beaten eggs then add a littler water.
3. In another bowl, combine panko breadcrumbs and chopped parsley.

Part 3
1. Holding the tail, dredge the shrimp into flour mixture then dip in egg mixture.
2. Dredge again the shrimp into flour mixture then dip in egg mixture.
3. Press into breadcrumbs to coat evenly. Repeat for the remaining shrimp.

Part 4.
1. In a skillet, heat oil then deep fry breaded shrimp for 2 minutes or until golden brown.
2. Drain on paper towel. Serve with dipping sauce.

Fish Fingers

Filipino Style Recipe: Fish fingers is another popular finger food or snack that consists of fish fillets coated into flour, egg and breadcrumbs then deep fry until golden brown. This is usually serve together with dipping sauce and beer.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 10 minutes
Good for 2-3 persons

Ingredients:
750 grams fish fillets(I used cream dory), cut into serving pieces
1/2 cup flour
2 raw eggs, beaten
1 cup breadcrumbs(optional)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs into a separate bowls.
3. Dredge fish fillet into flour mixture then shake off to remove excess flour.
4. Dip in beaten eggs and dredge into flour mixture or breadcrumbs to coat all sides.
5. Repeat the steps for remaining fish fillets. Set aside.

Part 2
1. In a pan, heat enough oil then deep fry each fish fillets for 3-5 minutes or until golden brown.
Drain on paper towel and set aside.
2. Transfer fish fillets into serving plate then serve with garlic-mayo dip.

Crispy Fried Luncheon Meat and Tofu

Luncheon meat and tofu were coated in flour mixture then dip in eggs. Roll luncheon meat and tofu in breadcrumbs then deep fry until golden brown.

Good for 3-4 persons

Ingredients:
300 grams spicy luncheon meat, cut into serving pieces
200 grams firm tofu, cut into serving pieces
1 1/2 cups flour
1 1/2 cups breadcrumbs
2 eggs, beaten
salt and pepper to taste
oil for frying

Procedures:
Part 1
1. In a pan, heat oil then fry tofu until golden brown. Drain and set aside.

Part 2

1. In a pan, heat oil then fry each luncheon meat and tofu for 5 minutes or until light brown.
2. Drain on paper towel then serve with garlic-mayo dip.

Baked Breaded Fish Fillet

Filipino Style Recipe: Baked breaded fish fillet is another easy and simple fish dish. The fish fillet is usually marinated then dredge in flour, eggs and breadcrumbs. Bake until golden brown then serve with dipping sauce.

Estimated time of baking: 25-30 minutes
Good for 3-4 persons

Ingredients:
1 kilo boneless fish fillet(tilapia, milkfish, salmon, snapper)
1 1/2 cup all purpose flour
1 1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon sesame oil

Marinade:
3 cloves garlic, minced
4 tablespoons calamansi or lime juice
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Marinate fish in calamansi juice, paprika, salt and pepper for 10 minutes.
2. In a bowl, add beaten eggs and sesame oil. whisk well and set aside.
3. Dredge the fish in flour and shake off to remove excess flour.
4. Dip fish in egg mixture and press into bread crumbs to coat both sides.

Part 2
1. Preheat oven to 375 degrees Fahrenheit.
2. Arrange breaded fish fillet in a baking pan then drizzle with olive oil.
3. Bake for 25-30 minutes or until golden brown.
4. Remove from the oven then transfer into serving plate with sour cream.

Crispy Fried Fishkatsu

Filipino Style Recipe: crispy fried fishkatsu is another low-carbohydrate fish dish. This dish is similar to Japabese pork tonkatsu. Fish fillet is usually marinated then dredge in flour, eggs and breadcrumbs. Dip fry the fish until golden brown then serve with dipping sauce.

Estimated time of preparation and cooking: 20 minutes(plus marinating time)
Good for 2-3 persons

Ingredients:
3/4 kilo boneless fish fillet(tilapia, milkfish, salmon, snapper)
1 1/2 cup all purpose flour
1 1/2 cup bread crumbs

1 tablespoon sesame oil

Marinade:

4 tablespoons calamansi or lime juice

4. Transfer the fishkatsu into serving plate with sour cream or katsu sauce and shredded cabbage on the side. Enjoy!
