Hawaiian Pizza


Ingredients:
2 pieces pizza crust(10-12 inch diameter)
1 1/2 cup pizza sauce or tomato sauce
150 grams mozzarella cheese or quick melt, grated
dried herb(basil, oregano, rosemary)

Toppings:
1/2 white onion, finely chopped
3 pineapple slices, cut into cubes
5 black forest ham, cut into small squares

Procedures:
Part 1
1. Place pizza crust in a flat surface, ladle enough pizza sauce into the center and spread it out in a spiral motion. Leave about 1/2 inch of unsauce pizza at the edges.
2. Spread grated cheese on top then arrange toppings evenly.
3. Sprinkle grated cheese and dried herb on top of the toppings. Repeat for the other crust.

Part 2
1. Preheat oven over 350 degrees Fahrenheit then bake for 15-20 minutes or until the crust are crisp and the cheese is melted.
2. Remove from the oven then transfer to round sheet. Cut into 8-12 serving slices then serve with hot sauce.

Pork Spareribs


Ingredients:
500 grams pork spareribs, cut in serving pieces
1 cup pineapple chunks or tidbits
5 cloves garlic, minced
1 large onion, chopped
1 1/2 cups water
2 tablespoons oil
salt and pepper to taste

Marinade:
1/2 cup pineapple juice
1/2 teaspoon ginger powder
2 tablespoons soy sauce
1/4 cup ketchup

Procedures:
Part 1
1. In a bowl, combine marinade and set aside.

Part 2
1. In a container, add spareribs then season with salt and pepper.
2. Pour marinade then toss to combine. Marinate for at least 30 minutes inside the fridge.
3. When ready, remove spareribs and reserve the marinade.

Part 3
1. In a pan, heat oil then saute garlic and onion.
2. Add spareribs then continue sauteing until light brown.
3. Pour marinade and water then simmer over low heat for 45 minutes or until tender. Add water if necessary.
4. Add pineapple then cook for 3 minutes. Adjust seasoning according to taste.
5. Transfer to serving plate then serve with steamed rice.

Pork Caldereta with Pineapple


Ingredients:
500 grams pork(liempo or spareribs), cut into serving pieces
1 cup pineapple chunks
2 large carrots, cubed
250 grams tomato sauce
1 large onions, minced
3 cloves garlic, minced
2 red and green bell peppers, diced
3-4 cups water
1 can (85 grams)liver spread or peanut butter
1/4 cup vegetable oil
2-3 hot chili(labuyo), chopped(optional)
1/4 cup cheese, grated or cubed(optional)
1 cup soda(7-up or soda)(optional)

Procedures:
Part 1
1. In a pot, heat oil and saute garlic and onions.
2. Add pork, continue sauteing until color turns to light brown.
3. Add tomato sauce, soda, bay leaves and water then simmer until tender. Add water if necessary.
4. Add carrots, pineapple, bell pepper, liver spread and chili. Simmer for 5 minutes.
5. Adjust seasoning with salt and pepper according to taste.
6. Add cheese and simmer for another 2 minutes or until the sauce thickens.
7. Transfer to serving plate and serve with steamed rice.

Adobong Bagnet with Pineapple

Filipino Style Recipe: Adobong bagnet with pineapple is another variety Filipino adobo together with popular Ilocano delicacy “Bagnet”. Bagnet is a popular delicacy in Ilocos made from pork belly deep fried until crispy and blister on skin. Similar to usual adobo dish, bagnet cooked in a blend of garlic, soy sauce and vinegar. I also used oyster sauce and pineapple for salty and sweet flavorful taste.

Ingredients:
1/4 kilo bagnet, cut into serving pieces
3 tablespoons oyster sauce
2 tablespoons soy sauce
1/8 cup vinegar
1 1/4 cup water
1/2 cup pineapple chunks
5 cloves garlic, minced
1 onion, chopped
3 pieces laurel
1 teaspoon peppercorn
salt to taste

Procedures:
Part 1
1. In a bowl, combine oyster sauce, soy sauce, vinegar and oil. Set aside.

Part 2
1. In a pan, heat bagnet until start to render oil. Remove from pan and set aside.
2. In same pan, saute garlic and onion.
3. Pour oyster sauce mixture then bring to boil.
4. Add laurel and peppercorn then adjust seasoning according to taste.
5. Add bagnet and pineapple then simmer until almost thick.
6. Transfer to serving plate then serve with steamed rice.

Pineapple Pork with Coconut Milk

Filipino Style Recipe: Pineapple Pork with Coconut Milk (Pininyahang baboy sa Gata) is another delicious dish that is commonly served by Filipinos. The pork is simmer and cook in coconut milk and pineapple juice together with pineapple chunks, fresh vegetables, and spices. Ingredients:

1 cup coconut milk
1 green bell pepper, cut into cubes

1/4 cup pineapple juice
1 medium onion, chopped
3 cloves garlic, minced
3 tablespoons soy sauce
fish sauce or salt and pepper to taste
3 tablespoons cooking oil

Procedures:
Part 1
1. In a skillet, heat cooking oil and fry carrots and potatoes until light brown. Drain and set aside.

Part 2
1. Reduce oil then saute garlic and onion.
2. Add pork then continue sauteing until light brown. Season with fish sauce and pepper.
3. Pour coconut milk and pineapple juice then simmer for 20 minutes or until the meat is tender. Add water if necessary.
4. Add carrots, potatoes and bell pepper then simmer for 3 minutes.
5. Add pineapple chunks, soy sauce and fish sauce according to taste then simmer for another minute.
6. Remove from the heat then transfer to serving bowl. Serve with steamed rice.

Homemade Ham

Filipino Style Recipe: Homemade Ham or hamonado is a popular and special dish during Christmas season. Normally the meat cured and cooked in a special sweet broth until glazed and roasted.

Ingredients:
3 kilos pig’s leg without bones
7 cups pineapple juice
1 cup brown sugar
2 tablespoon salt
3 pieces bay leaves
1 head garlic, pounded

Pineapple Glaze:
1 cup pineapple juice
1/2 cup brown sugar

Procedures:
Part 1
1. In a deep pot, combine pineapple juice, brown sugar, bay leaves and garlic. Stir until dissolved.
2. Add meat then cover and simmer over low heat for an hour. Let it cool then refrigerate inside the fridge overnight.

Part 2
1. Let stand the meat for an hour or until reaches room temperature.
2. Score the meat surface in a diamond pattern.

Part 3 (Pineapple Glaze)
1. In a sauce pan, combine pineapple juice and brown sugar then simmer until thickened. Keep stirring.

Part 4
1. Using a pastry brush, brush the meat with pineapple glaze then bake in a preheated oven over 325 degrees Fahrenheit for at least an hour or until nicely browned. (basting every 15 minutes with remaining glaze)
2. Remove from oven then brush with remaining juices. Slice and serve.

Caramelized Beef with Spinach

Filipino Style Recipe: Caramelized Beef with Spinach is simple yet delicious and mouth-watering beef dish. The beef marinated then cooked and simmered together until caramelized and thicken. This is usually served together with steamed spinach.

1/2 kilo beef, cut into serving pieces
120 grams pineapple(chunks or tidbits), reserve juice

1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon cayenne powder(optional)
salt and ground pepper to taste
a bunch of spinach, steamed

Procedures:
Part 1
1. In a bowl, combine, soy sauce, oyster sauce, pineapple juice, brown sugar, sesame oil, garlic powder, ginger powder, cayenne pepper and ground pepper then mix well.
2. Add beef then marinate for 2 hours or overnight inside the fridge. Drain and reserve the marinade.

Part 2
1. In pan, pour marinade then simmer over medium heat until reduce in half.
2. Add beef then stir cook for 5 minutes or until caramelize and thicken.
3. Adjust seasoning according to taste. Add pineapple then cook for another minute.
4. Transfer to serving plate together with steamed spinach. Serve immediately.

Pininyahang Bistek(Beef Steak with Pineapple)

Filipino Style Recipe: Pininyahang Bistek is another mouthwatering and delicious beef dish. We innovate the dish by adding pineapple for maximum flavor. The meat is marinated for several hours then stir fry until just cooked. Then topped with onion rings together with the sauce.

Estimated time of preparation: 10 minutes (plus marinating time)
Estimated time of cooking: 10 minutes
Good for 2-3 persons

Ingredients:
1/2 kilo beef(round, sirloin or tenderloin), sliced 1/4-inch think
1 small can pineapple chunks, reserved juice
1 tablespoon lemon juice or calamansi
5 tablespoons soy sauce
3 tablespoons oyster sauce
2 cloves of garlic, minced
1 large white onion, sliced in rings
salt and pepper to taste
4 tablespoons cooking oil
1/2 teaspoon cornstarch(dissolved in 1/4 cup water)(optional)

Procedures:
Part 1
1. Marinate meat in lemon juice, garlic, soy sauce and ground pepper for an hour or overnight inside the fridge.

Part 2
1. In a pan, heat cooking oil over medium heat. Lightly fry the onion rings. Remove from pan and drain. Set aside

Part 3.
1. In the same pan, add the marinated meat then stir-cook over high heat for 5 minutes or until just cook.(Don’t overcook, meat will become tough and rubbery).
2. Transfer the meat to a serving plate then set aside.
3. In the same pan, pour the marinated, onion, oyster sauce, pineapple and pineapple juice then bring to boil.
4. Add dissolved cornstarch, salt and pepper to taste then simmer until reduce in half.
5. Pour the sauce over meat then garnish with onion rings.
6. Serve hot and enjoy!

Pininyahang Pork Giniling

Filipino Style Recipe: pininyahang pork giniling or ground pork with pineapple is simple yet delicious dish. Ground pork sauteed and simmered in pineapple syrup together with pineapple tidbits and other vegetables. This is almost similar to ground pork menudo and ground pork adobo.

Estimated time of preparation and cooking: 50 minutes.
Good for 3-5 persons

Ingredients:
450 grams ground pork(giniling)
1 can(227 grams) pineapple tidbits, reserve syrup
3 teaspoons soy sauce
3 cloves garlic, minced
1 onion, sliced
1 potato, peeled and diced
1 carrot, peeled and diced
1/4 cup water
sugar, salt and pepper to taste

2 teaspoons raisins(optional)
2 bay leaves(optional)
1/4 cup sweet peas(optional)

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add ground pork and soy sauce then simmer for 5 minutes.
3. Add potatoes, carrots, raisins, sweet peas, bay leaves, water and pineapple syrup.
4. Season with sugar, salt and pepper then simmer for 8 minutes or until tender.
5. Add pineapple tidbits then cook for 3 minutes. Remove from heat and serve hot.

Hawaiian Pizza Pandesal

Filipino Style Recipe: Hawaiian Pizza Pandesal is inspire to typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and various toppings. We have several left-over pandesal this morning, I want to use it before it expire. Since I am craving for pizza and I already have some ingredients, I decided to use pandesal as alternative to pizza crust. The outcome is very good and the kids love it.

Estimated time of preparation: 15 minutes
Estimated time of baking: 8-10 minutes
Good for 8 servings

Ingredients:
8 big-sized pandesal, cut in half
140 grams pizza sauce or tomato sauce
100 grams mozzarella cheese or quick melt, grated

Toppings:
100 grams pineapple tidbits, drained
100 grams sweet ham, cooked and cut into cubes

Procedures:
1. Place pandesal in a flat surface, ladle enough pizza sauce into the center and spread it out at the edges.
2. Sprinkle shredded cheese on top then arrange toppings evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.
4. Pre-heat oven over 200 degrees Fahrenheit then bake pandesal for 8-10 minutes or until the cheese is melted.
5. Remove from the oven then transfer to serving sheet. Serve hot.
