Sauteed Vegetables


Ingredients:
1 small size cabbage, cut into serving pieces
1 small carrot, cut into serving pieces
1/4 kilo pork, cut into small pieces
3 tablespoons oyster sauce
3 cloves garlic, minced
1 onion chopped
2 cups water
2 tablespoons vegetable oil
fish sauce or salt and pepper to taste

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add pork then continue sauteing until brown.
3. Add vegetables and stir cook for a minute then pour water and oyster sauce.
4. Simmer for 2-3 minutes then season with salt and pepper.
5. Transfer to serving plate then serve immediately with steamed rice.

Pork Giniling with Mixed Vegetables


Ingredients:
1/4 kilo ground pork(giniling)
1 1/2 cup mix vegetables (carrots, sweet peas, corn)
2 teaspoons raisins
1/4 cup soy sauce
5 cloves garlic, minced
1 onion, sliced
2 bay leaves
1/4 cup water or pork broth
5 pieces hard boiled quail eggs (optional)
sugar, salt and pepper to taste
2 tablespoons vegetable oil

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add ground pork and soy sauce then simmer for 5 minutes.
3. Add mix vegetables, raisins, bay leaves, quail eggs, and water. Bring to boil.
4. Season with sugar, salt and pepper then simmer for 3 minutes or until tender.
5. Remove from heat and serve hot.

Spicy Hoisin Chicken

Filipino Style Recipe: Spicy Hoisin Chicken is a popular chicken dish originate from China that has become popular in Filipino cuisine. The chicken cooked in hoisin sauce, thick sauce and spices together broccoli and carrot.

Ingredients:
500 grams chicken fillet, cut into serving pieces
2 cups broccoli florets
1 carrot, sliced
110 grams shiitake mushrooms
3 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, minced
1 tablespoon rice wine
1/2 teaspoon cornstarch
1/4 teaspoon dried chili flakes
salt and pepper to taste

Hoisin Mixture:
3 tablespoons hoisin sauce
1 teaspoon sesame oil
2 tablespoons soy sauce
1/2 teaspoon cornstarch
1/2 teaspoon ground pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon spanish paprika
1 cup water

Procedures:
Part 1
1. In bowl, marinate chicken in rice wine and cornstarch for 10 minutes.
2. In a separate bowl, combine hoisin mixture then stir until well blended.

Part 2
1. In a pot, boil water with salt. Add carrots then pre-cooked for 3 minutes.
2. Add broccoli and boil for another minute. Drain and wash on running water to stop the cooking process. Set aside.

Part 3
1. In a wok, heat oil then saute garlic, onion and ginger.
2. Add mushroom then stir fry until brown.
3. Add chicken then continue to stir fry until light brown.
4. Pour the hoisin mixture and chili flakes then adjust seasoning according taste.
5. Add carrot and broccoli then simmer until begins to thicken.
6. Transfer to serving bowl then serve immediately with steamed rice.

Higadillo

Filipino Style Recipe: Higadillo is a common Filipino stew made from pork meat and liver cook and simmer in a thicken sauce together with desired vegetables and ingredients. This can be served as main dish together with steamed rice.

Ingredients:
500 grams pork, cut into strips
250 grams pork liver, cut similar to pork
2 potatoes, cut similar to pork
1 medium-sized carrots, cut similar to pork
1 cup lechon sauce
2 tablespoons soy sauce
2 tablespoons vinegar
1 cup water
3 cloves garlic, minced
1 onion, chopped
1/2 teaspoon ginger powder
salt and pepper to taste

Procedures:
Part 1
1. In a skillet, heat oil then fry potatoes and carrots until light brown. Remove and set aside.

Part 2
1. In a same skillet, reduce oil then saute garlic and onion.
2. Add pork then continue sauteing for 3 minutes.
3. Add pork liver and ginger powder then stir cook for another 3 minutes or until light brown.
4. Add soy sauce, lechon sauce and water then cover and simmer for 20 minutes or until meat is tender. Add more water if necessary.
5. Put back potatoes and carrots then add vinegar, bring to boil.
6. Adjust seasoning with salt and pepper according to taste then simmer until thickens.
7. Remove from heat then transfer to serving bowl. Serve immediately with steamed rice.

Note.
1. Alternative to lechon sauce, you may use live spread or breadcrumbs to thicken the sauce.

Pineapple Pork with Coconut Milk

Filipino Style Recipe: Pineapple Pork with Coconut Milk (Pininyahang baboy sa Gata) is another delicious dish that is commonly served by Filipinos. fish sauce or salt and pepper to taste
3 tablespoons cooking oil

Procedures:
Part 1
1. In a skillet, heat cooking oil and fry carrots and potatoes until light brown. Drain and set aside.

Part 2
1. Reduce oil then saute garlic and onion.
2. Add pork then continue sauteing until light brown. Season with fish sauce and pepper.
3. Pour coconut milk and pineapple juice then simmer for 20 minutes or until the meat is tender. Add water if necessary.
4. Add carrots, potatoes and bell pepper then simmer for 3 minutes.
5. Add pineapple chunks, soy sauce and fish sauce according to taste then simmer for another minute.
6. Remove from the heat then transfer to serving bowl. Serve with steamed rice.

Beef Estofado

Filipino Style Recipe: Beef Estofado is another mouth-watering beef dish that is commonly served by Filipinos. Similar to adobo and patatim, this dish has a sweet and salty taste. The beef marinated then cooked together with peas, potatoes and carrots in a blend of soy sauce, vinegar and sugar.

Ingredients:
3/4 kilo beef sirloin, cut into cubes
1/4 cup vinegar
1 tablespoon cornstarch (dissolved in 1/4 cup water)
1 beef bouillon (optional)
4 cups water or beef stock
1/4 cup green peas, cooked
2 pieces potatoes, peeled and quartered
1 large-sized carrot, cut into cubes
salt and pepper to taste

Marinade:
5 cloves garlic, minced
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
3 pieces bay leaves
1 teaspoon whole peppercorn
1/4 cup cooking oil for frying

Procedures:
Part 1
1. In a container, combine beef, garlic, soy sauce, sugar, bay leaf and peppercorn then marinate for 30 minutes.
2. Remove beef and reserve the marinade. Set aside.

Part 2
1. In a pan, heat oil and fry potatoes and carrots until light brown. Drain and set aside.
2. Fry beef for 3-5 minutes or until light brown. Drain and set aside.

Part 3
1. In a same pan, reduce oil to 1 tablespoon then saute garlic and beef.
2. Pour marinade, water and beef bouillon then simmer in a low heat for 40 minutes or until beef is tender. Add more water if necessary.
3. Add vinegar and simmer for another 5 minutes. Do not stir.
4. Add dissolved cornstarch, green peas, potatoes and carrots then cook for another 3 minutes.
5. Adjust seasoning according to taste. Simmer until the sauce has reduced and thicken. Serve.

Beef Picadillo

Filipino Style Recipe: Picadillo is a Spanish dish similar to Arroz Ala Cubana. The dish is consists of ground beef cooked in tomato paste, sweet peas, bell peppers and carrots then season with salt and pepper. This is another simple and easy to prepare recipe.

Ingredients:
1/2 kilo ground beef, pre-boiled
1 medium carrot, cut into small cubes
1/4 cup green peas, cooked
1 green bell pepper, diced
4 cloves garlic, minced
1 onion, chopped
2 pieces bay leaves
1/2 teaspoon cumin
2 tablespoons grams tomato paste
1/4 cup water
salt and pepper to taste
1 tablespoon parsley, chopped

Procedures:
1. In a casserole, heat oil then saute garlic, onion and bell pepper.
2. Add ground beef then continue cooking until light brown.
3. Add carrots, green peas, bay leaves, cumin, salt and pepper then mix well.
4. Add tomato paste, water and parsley then simmer for 8-10 minutes. Adjust seasoning according to taste.
5. Transfer to serving bowl then garnish with parsley. Serve immediately with steamed rice.

Fish Menudo(Maya-Maya)

Filipino Style Recipe: fish menudo(maya-maya) is another variety of mouth-watering tomato-based dish. Fish should be boiled in vinegar with salt to get rid the fishy smell and taste. Then drained and cooked in tomato sauce together with potatoes, carrots and other vegetables.

3/4 kilo snapper fillets(maya-maya), cleaned and cut into cubes
2 potatoes, cut into cubes

2 cups tomato sauce
1 cup water
2 bay leaves(optional)
3 pieces calamansi, juice
3 tablespoons soy sauce
5 tablespoons cooking oil
a dash of dried chili flakes
salt and pepper to taste

Procedures:
Part 1
1. In a casserole, arrange fish then add 1/4 cup vinegar, 1/2 water and salt then bring to boil. Drain and set aside.(This will help to get rid the fishy smell and taste of the fish).

Part 2
2. In a large pot, heat cooking oil and fry potatoes and carrots until light brown. Drain and set aside.

Part 3
1. In the same pot, reduce oil then saute ginger, garlic and onion.
2. Add fish then continue sauteing for 2 minutes. Stir occasionally.
3. Pour tomato sauce, water, soy sauce and calamansi juice then simmer for 3 minutes.
4. Add potatoes, carrots, bell pepper and bay leaves then simmer for another 5 minutes or until almost cook.
5. Adjust seasoning with dried chili flakes, salt and pepper according to taste.
6. Remove from heat then transfer to serving bowl.Serve immediately with steamed rice.

Procedures:
Part 1
1. In a large bowl, marinate pork in calamansi juice and soy sauce for an hour. Set aside.
2. In a pot, boil water then cook quail eggs for 15 minutes. Drain and let it cool then remove shells and set aside.

Part 2
1. In a large pot, heat cooking oil then saute garlic and onion.
2. Add marinated pork and water, simmer for 15 minutes.
3. Add tomato sauce then simmer for 10 minutes until pork is tender.
4. Add sweet peas, bell pepper, and hard-boiled quail eggs then simmer for another 5 minutes. Stir occasionally.
5. Season with brown sugar, salt and pepper according to taste.
6. Remove from heat, Serve hot!

Chicken Menudo

Filipino Style Recipe: chicken menudo is another mouth-watering tomato-based dish. The procedure is almost the same to pork menudo and chicken afritada. The chicken marinated then cooked in tomato sauce together with vegetables and other ingredients.

brown sugar, salt and pepper to taste

1 chicken bouillon(optional)
1/2 cup sweet peas(optional)
2 tablespoons liver spread(optional)

Procedures:
Part 1
1. In a large bowl, marinate the chicken in calamansi juice and soy sauce for 15 minutes. Set aside.

Part 2
2. In a large pot, heat cooking oil and fry potatoes and carrots until light brown. Drain and set aside.

Part 3
1. In the same pot, reduce oil then saute garlic and onion.
2. Add marinated chicken then stir cook for 3 minutes.
3. Pour water, chicken bouillon and tomato sauce then simmer for 10 minutes or until chicken is tender.
4. Add potatoes, carrots, red bell pepper, raisins, hotdog, sweet peas, bay leaves and liver spread then simmer for 5 minutes. Stir occasionally.
5. Adjust seasoning with brown sugar, salt and pepper according to taste.
6. Remove from heat then transfer to serving bowl.Serve immediately with steamed rice.
