Almond Cookies

Filipino Style Recipe: Who doesn’t love almonds? And who could resist if those almonds were added in your pastries like your favorite cookies? Try out this recipe and you’re surely won’t regret once you’ve tasted.

Ingredients:
2 3/4 cups all-purpose flour
1 cup white sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 egg
1 teaspoon vanilla extract
1/2 cup sliced almonds, set aside some to be put on top of the cookie

Procedures:
Part 1
1. Sift flour, sugar, baking soda and salt together into a bowl.
2. Add the butter and mix until mixture resembles dry oatmeal.
3. Add egg and vanilla then mix well.
4. Add the sliced almonds then toss until it is properly distributed in the dough.

Part 2
1. Scoop about 1 teaspoon of the cookie dough
2. Using your palms, roll into ball then press down to flatten into about 1/4 inch or depending on the thickness that you want.
3. Stick some of the raining almonds outside the cookies. Place cookies 2 inches apart on an ungreased cookie sheet.
4. Bake in a pre-heated oven over 325 degrees Fahrenheit for 18-20 minutes. Cool on rack for 15 minutes then serve.

No Cook Banana Chocolate Pudding

Filipino Style Recipe: No Cook Banana Chocolate Pudding is an easy to prepare dish and does not need any cooking or baking. The pudding tastes like soft ice cream so your kids will really love it.

Ingredients:
2 1/2 cups cold milk
1 pack (5 oz) instant chocolate pudding mix
1 cup whipped cream
1 (240 grams) sour cream
1 (16 oz) cookies such as shortbread cookies
8 bananas, peeled and sliced

Procedures:
Part 1
1. In a bowl, combine the chocolate pudding mix and milk then beat together until it thickens.
2. Add the sour cream and beat again. Fold in whipped cream. Set aside.

Part 2
1. In a rectangular container, arrange a layer of cookies at the bottom.
2. Spread a layer of the pudding mixture, then a layer of slicked bananas.
3. Repeat the layers until all ingredients are consumed.
4. Refrigerate until ready to serve.

Tip: Soak bananas in orange juice or water with vit c to avoid darkening.

Cream Cheese Chocolate Chip Frosting

Filipino Style Recipe: Cream Cheese Chocolate Chip Frosting has a thick consistency similar to chocolate chip cookie dough. The sweetness of frosting is balanced by the cream cheese . This can be use to frost any cupcake specially my favorite red velvet cupcake.

Good for 30 cupcakes

Ingredients:
4 ounce (half pack) cream cheese, softened
5 tablespoon butter, softened
1 teaspoon vanilla extract
1/2 cup flour
2/3 cup brown sugar
2 tablespoon milk, can be adjusted to achieve desired consistency
3 cups confectioner’s sugar, can be adjusted to achieve desired consistency
1/2 cup mini chocolate chips

Ingredients:
1. In a mixer, cream butter and sugar at medium speed until smooth (around 4 minutes).
2. Add vanilla, flour and brown sugar then continue mixing until well blended.
3. Add the milk and confectioner’s sugar then beat until you reach the desired consistency. It will be a bit thick like a cookie dough. Add milk if you feel it is too thick or add confectioner’s sugar if it is too thin.
4. Fold in the chocolate chips.
5. Frost your cupcakes. You can use a piping bag or just scoop it on top.

Iced Squash Cookies

Filipino Style Recipe: Iced Squash Cookies is one of my favorite cookie with Filipino twist. By incorporating a local product “Squash” as main ingredient, it will satisfy your kid’s sweet tooth and give them additional nutrition. You don’t have to store it a tightly sealed container since the cookie is tend to be soft and moist.

Good for 20-24 cookies

Ingredients:
For the batter:
1 cup mashed squash (boil slices of squash for 15 minutes or until soft then mash with fork)
1 1/2 cup granulated sugar
1/2 cup butter, softened
1 raw egg
1 teaspoon vanilla extract
2 1/2 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg (optional)

For the Icing:
1 cup powdered sugar
2 tablespoon milk
1/2 tablespoon melted butter
1 teaspoon vanilla extract

Procedures:
Part 1
1. In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon and nutmeg then mix until blended.

Part 2
1. In a mixing bowl, cream the sugar and butter until soft.
2. Add the squash, egg, vanilla then mix until creamy.
3. Add squash mixture then mix until well blended.

Part 3
1. Drop teaspoonful of batter into cookie sheets then slightly flatten.
2. Bake in preheated oven at 350 degrees Fahrenheit for 15 minutes. Let it cool.

Part 4
1. To prepare the glaze, combine powdered sugar, butter, and vanilla extract.
2. Add milk as needed to achieve desired consistency. Drizzle to cooled cookies.

Simple Sugar Cookies

Filipino Style Recipe: This is the simplest and easiest cookies I have baked so far and they are delicious. Buttery and creamy, soft and chewy, just my kind of cookies. The ingredients in the recipe are simple, you might already have them in your kitchen.

Ingredients:
1 cup butter, softened
1 1/2 cups white sugar
1 raw egg
1 1/2 teaspoon vanilla
2 3/4 all purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
sugar to roll the batter

Procedures:
Part 1
1. In a large mixing bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla.
2. In another bowl, combine together the flour, baking powder, baking soda.
3. Gradually blend dry mixture into the butter mixture.

Part 2
1. Scoop a teaspoon of the dough then form into ball and roll into sugar.
2. Place into ungreased cookie sheets. Repeat until all the mixture are consumed.
3. Bake into preheated oven over 350 Fahrenheit for 8-10 minutes.
4. Remove from the oven and let it cool for 2 minutes before transferring them.

Tip:
1. The dough will expand and spread when baking so leave at least 2-3 inches in between.
2. If you want a thin cookie, you can press it a bit when putting into the cookie sheets.
3. The cookies might seem too soft when you take them out of the oven but they will firm up once they are cooled.

Chocolate Chip Oatmeal Cookies

Filipino Style Recipe: Chocolate chip oatmeal cookies is a quick and easy to prepare dish. The cookies are chewy, not too soft nor crispy. You can replace the chocolate chips with nuts or raisins for variety.

Good for 24 cookies

Ingredients:
3 eggs, beaten
1 cup chocolate chips
1 teaspoon vanilla extract
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 1/2 cups flour
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 cups quick cooking oats

Procedures:
Part 1
1. In a bowl, combine eggs, vanilla, and raisin then mix well. Set aside for an hour.
2. Sift together the flour, cinnamon, and baking soda. Set aside.
3. In a large bowl, cream the butter, white sugar, and brown sugar.
4. Add the flour mixture and mix until blended. Stir in the oats and chocolate chips.

Part2
1. In a cookie sheet, drop a spoon of mixture about 2 inches apart.
2. Bake into pre-heated oven at 350 degrees Fahrenheit for 10 minutes or until light brown.
3. Remove from oven and let it cool for about 5 minutes before transferring to wire rack to cool completely.

Mini Calamansi Cheesecake

Filipino Style Recipe: Mini Calamansi Cheesecake is another thick and soft sweetened dessert made of cream cheese, eggs, sour cream, sugar and calamansi for flavoring. This dessert has a hard biscuit crust made from finely crushed cookies or graham crackers and then baked until firm. This can be served as meryenda or mid-afternoon snack.

Estimated time of preparation: 20 minutes
Estimated time of baking: 25 minutes(plus chilling time)
Good for 6 cupcakes

Ingredients:
Crust:
1/3 cup crushed graham crackers
1 tablespoon white sugar
2 tablespoons butter, melted

Filling:
1 pack(8 oz) cream cheese, softened
1/4 cup white sugar
2 1/2 teaspoon calamansi juice
1/4 teaspoon vanilla extract
1 egg

Procedures:
Part 1
1. Grease 6-cup muffin pan and line with muffin cups.
2. For the crust, mix together the crushed grahams, sugar and butter in a bowl until well combined. Scoop a mixture and press into the the bottom of each muffin cup.
3. Bake in preheated oven at 300 degrees Fahrenheit for 5 minutes. Remove from the oven but keep the oven on.

Part 2
1. For the filling, beat together the cream cheese, sugar, calamansi juice, and vanilla until well blended. Do not over beat. Add egg then mix.
2.Pour the filling into the muffin cups. Bake for 25 minutes without opening the oven. Let it cool completely before removing from pan. Refrigerate until ready to serve.

No Bake Egg Pie

Filipino Style Recipe: No bake egg pie is another delicious pastry similar to Filipino custard pie. This dish has a simple procedure and doesn’t required to use oven. The pie crust was made of crushed graham and butter while the filling was mixed with gelatin to firm. The top layer was made of caramelize sugar then spread evenly to the top of our custard pie.

Estimated time of preparation: 10-15 minutes
Estimated time of cooking: 30-40 minutes

Ingredients:
Crust:
1 pack crushed graham
a block of butter, cut into small pieces

Filling:
1 big can condensed milk
1 cup fresh cream milk or evaporated milk
4 raw eggs, beaten
1 cup cornstarch
1 teaspoon vanilla essence(optional)
1 teaspoon jelly powder

Sugar Glaze:
2 tablespoons brown sugar
1 cup water

Procedures:
Part 1(Crust)
1. In a mixing bowl, combine crushed graham and butter then mix well until moist and clay-like consistency. Add more butter necessary.
2. In a molding plate, spread and press down the crust mixture up to 1/2 inch thick then refrigerate for at least 1 hour.

Part 2(Filling)
1. In a large bowl, combine filling ingredients except gelatin powder then mix until well blended.
2. In a pan, pour filling mixture then add gelatin powder.
3. Simmer in a low heat while keep stirring until becomes really thick.
4. Pour and spread evenly the filling into the crust.

Part 3(Topping)
1. In a pan, dissolved sugar in water then simmer in a low heat until caramelize.
2. Pour and spread evenly the sugar mixture on top of filling. Refrigerate before serving.

Notes:
1. You may also add toppings to our egg pie like crushed graham or crushed Oreo cookies.

Cookies and Cream Polvoron

Filipino Style Recipe: Cookies and Cream Polvoron is another variety of polvoron made up of toasted flour, powdered milk, sugar, butter and ground cookies and cream. This is a simple sweet delicacy and easy to prepared.

Estimated time of preparation: 20-25 minutes(plus wrapping time)
Estimated time of cooking: 15 minutes
Good for 30-35 pieces

Ingredients:
4 cups all purpose flour
2 cups powdered full cream milk
1 1/2 cup white sugar
1 1/8 cup butter, melted
1 cup cookies and cream(Oreo), ground

japanese paper or or cellophane
polvoron moulder

Procedures:
Part 1
1. In a pan over medium heat, toast flour for about 15 minutes or until color turns to light brown. Stir constantly.
2. Transfer to a bowl and let it cool. Set aside.

Part 2
1. Add powdered milk and sugar then mix until well combined.
2. Pour melted butter then mix well until smooth.
3. Add ground cookies and cream then stir well.

Part 3
1. In a polvoron mold, scoop and press the mixture until compact.
2. Wrap the molded polvoron with cellophane wrapper then secure by twisting both ends.
3. Repeat until all the mixture are consumed. Done!
