Braised Pork Ribs Adobo


Ingredients:
1 kilo pork ribs, cut into serving pieces
2 tablespoons oil
1 head garlic, peeled and chopped

Marinade:
6 cloves garlic, crushed
1 large onion, chopped
1 1/2 tablespoon peppercorns
1 cup cide vinegar
1/2 cup soy sauce
2 cups water
6 pieces bay leaves
1/4 cup brown sugar
salt and pepper to taste

Procedures:
Part 1
1. In pan, heat oil and saute the garlic until golden brown, drain and set aside.

Part 2
1. In a large pot, combine pork ribs and marinade. Marinate for at least 30 minutes.
2. Cook in a low heat for about 1-2 hours or until the pork ribs is tender. Add water if necessary.
3. Adjust seasoning according to taste. Simmer until the sauce thicken and start rendered oil.
4. Transfer to serving plate then sprinkle with toasted garlic. Serve with spicy vinegar.

Braised Pork Spare Ribs with Coca-Cola


Ingredients:
1 kilo pork spareribs, cut into serving pieces
2 pieces carrots, cut into serving pieces
2 cups Coca-Cola (or just enough to cover the meat)
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 onion, chopped
2 tablespoons cooking oil
chopped spring onions for garnishing
salt and pepper to taste

Procedures:
Part 1
1. In a cooking pan, heat oil then saute onion until transluncent.
2. Add spareribs then continue sauteing until light brown.
3. Pour coca cola, soy sauce and oyster sauce then simmer over low heat for 30 minutes or until tender. Add water if necessary.
4. Add carrots then cook for another 5 minutes. Adjust seasoning according to taste.
5. Transfer to serving plate then sprinkle with spring onions. Serve with steamed rice.

Braised Pork Barbecue


Ingredients:
6 slices pork belly
1 cup barbecue sauce
2 pieces bay leaves
salt and pepper to taste

Procedures:
1. In a pot, place pork then pour enough water to cover the meat.
2. Add bay leaf, salt and peppercorn then bring to boil for 15 minutes. Remove and reserve the broth.
3. Add barbecue sauce then stir cook pork for another 15 minutes. Add a bit of broth if needed.
4. Add beans then cook for a few minutes.
5. Transfer into serving plate then serve immediately with steamed rice.

Braised Chicken Feet


Ingredients:
1 kilo chicken feet
8 cloves garlic, peeled and crushed
1 large onion, peeled and sliced
1 tablespoon ginger, peeled and minced
4 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons Hoisin sauce
3 cups water
1 tablespoon brown sugar
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1/2 teaspoon dried chili flakes
salt to taste
1 teaspoon sesame oil
2 star anise
oil for frying
parsley for garnishing

Procedures:
Part 1
1. Cut off chicken feet claws then scrub well with salt.
2. Rinse chicken feet thoroughly and drain.

Part 2
1. In a bowl, marinate chicken in soy sauce for 30 minutes. Drain and discard the marinade.

Part 3
1. In a frying pan, heat oil then fry chicken feet until golden brown. Drain.

Part 4
1. In a pot, heat oil then saute ginger, onion, and garlic.
2. Add chicken feet then stir fry for 2 minutes.
3. Add soy sauce, peppercorns, bay leaves, sugar and water.
4. Cover and simmer in a low heat for 30-40 minutes or until tender. Add water in necessary.
5. Add oyster sauce, Hoisin sauce, and chili flakes then simmer for 5 minutes.
6. Add start anise, sesame oil then adjust seasoning according to taste.
7. Cook and simmer until the sauce is almost dry. Toss frequently.
8. Garnish with parsley.

Tender Braised Beef and Tendon


Ingredients:
500 grams beef brisket, cut into serving pieces
500 grams beef tendons, cut into serving pieces
1 thumb-sized ginger, grated
6 cloves garlic, minced
2 small onions, chopped
7 cups beef stock
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
3 pieces star anise
a bunch of bok choy, trimmed
3 stalks spring onions, chopped
3 tablespoons olive oil
fish sauce and pepper to taste
1/4 cup cooking wine(optional)

Procedures:
Part 1
1. In a large wok, heat oil then stir fry beef and tendon until brown.
2. Pour cooking wine then toss and let it evaporate.
3. Remove everything from the wok and set aside.

Part 2
1. In a same wok, heat oil then saute ginger, garlic and onion.
2. Pour beef stock, soy sauce, oyster sauce, star anise and sugar then stir and bring to boil.
3. Add tendon then cover and simmer in a low heat for an hour.
4. Add beef then simmer for another hour or until tendon and beef are tender. Add more water if necessary.
5. Adjust seasoning according to taste then add bok choy, spring onions then simmer for a minute.
6. Turn off the heat then transfer to serving bowl. Enjoy!

Notes:
1. You may add 3 teaspoons of cornstarch dissolved in 1/4 cup water to thicken the sauce.

Braised Pork Belly


Ingredients:
500 grams pork belly, cut into serving pieces
1 cup water
3 cloves garlic, crushed
1/3 cup vinegar
1/4 cup brown sugar
1/4 cup soy sauce
1 bay leaf
1 teaspoon peppercorns
1/2 cup dried banana blossoms(puso ng saging)
salt to taste

Procedures:
1. In a big pot, combine pork belly, water, soy sauce and garlic.
2. Simmer and cook over low heat for 1 1/2 to 2 hours until pork belly is tender.
3. Add vinegar and simmer for another 3 minutes.
4. Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.
5. Adjust seasoning according to taste. Remove from heat and Serve. Enjoy!

Braised Pork in Oyster Sauce

Filipino Style Recipe: Braised pork in oyster sauce is another simple yet delicious pork dish similar to adobo and estofado. I usually cooked pork in a blend of soy sauce, water, sugar, garlic and peppercorn. Then simmered in oyster sauce together with fried bananas and hard-boiled eggs.

Ingredients:
3/4 kilo pork belly, cut into serving pieces
4 pieces plantain bananas(saba), sliced diagonally
4 cloves garlic, minced
1/4 cup oyster sauce
1/2 cup soy sauce
2 tablespoons brown sugar
1 tablespoon whole peppercorn
1/8 teaspoon dried chili flakes
10 pieces quail eggs, hard-boiled
1 cup water
cooking oil for frying
2 pieces star anise(optional)

Procedures:
Part 1(optional)
1. In a pan, heat oil and fry the sliced bananas until golden brown. Drain and set aside.
2. In a casserole, combine pork, garlic, soy sauce, water, sugar, star anise and peppercorn then marinate for 30 minutes.

Part 2
1. Place the casserole in a stove then cook pork for 30 minutes or until tender. Add more water if necessary.
2. Add oyster sauce, fried bananas, hard-boiled quail eggs and chili flakes then simmer for 2 minutes.
3. Adjust seasoning according to taste then continue cooking until the sauce is thicken.
4. Transfer to serving plate then serve with steamed rice.

Braised Beef and Tendon

Filipino Style Recipe: braised beef and tendon is a popular beef dish which was originate in Chinese cuisine. Usually the beef and tendon cooked in beef stock, soy sauce, oyster sauce, sugar and star anise until tender. Some add dissolved cornstarch to thickens the sauce and commonly serve with noodles or as main dish.

Ingredients:

Part 3
1. In a same wok, heat oil then saute ginger, garlic and onion.
2. Pour beef stock, soy sauce, oyster sauce, star anise and sugar then stir and bring to boil.

Braised Pork in Sweet Soy Sauce

Filipino Style Recipe: Braised pork in sweet soy sauce is similar to pork adobo and pork asado. It is consists of pork marinate and cook in a blend of sweet soy sauce, garlic, onion and peppercorn. This dish has a sweeter and more flavorful taste than the usual pork adobo.

Good for 2-3 persons

Ingredients:
1/2 kilo pork, cut in serving pieces
1/4 cup sweet soy sauce
2 gloves garlic, minced
1 onion, chopped
10 pieces peppercorns
2 cups water
1/2 teaspoon cornstarch(dissolved in 1/4 cup water),(optional)
sugar, salt to taste

Procedures:
Part 1
1. In a pot, combine pork, garlic, onion, sweet soy sauce and peppercorn for 30 minutes.

Part 2
1. Pour water then simmer in a medium heat for 30 minutes or until pork is tender. Add water if necessary.
2. Adjust seasoning according to taste then pour dissolved cornstarch.
3. Simmer until the sauce has thicken and start to render oil.
4. Remove from heat then transfer to serving plate then serve with steamed rice.

Notes:
1. If sweet soy sauce is not available, you may dissolved 1/4 cup brown sugar in 1/4 cup dark soy sauce.

Braised Chicken with Black Beans

Filipino Style Recipe: Braised chicken with black beans is another popular dish in Chinese cuisine. Normally the chicken marinated, fried and then cooked with fermented black beans(tausi), bell peppers and sauce ingredients until thickened.

Estimated time preparation and cooking: 20-30 minutes(plus marinating time)
Good for 3-5 persons

Ingredients:
1 kilo chicken, cut into serving pieces
2 tablespoon black beans(Tausi)
1 medium-sized onion
2 tablespoons garlic, minced
cooking oil for frying
salt and pepper to taste
1 piece red bell pepper, diced(optional)
spring onion for garnishing(optional)

Marinade:
1 tablespoon soy sauce
1 tablespoon cornstarch
1/4 teaspoon salt

Sauce:
2 tablespoons soy sauce
1 teaspoon sesame oil
1 cup water
1 tablespoon cornstarch

Procedures:
Part 1
1. In a bowl, combine chicken and marinade then set aside for 20 minutes.

Part 2
1. In a pan, heat oil then stir fry chicken until golden brown. Drain and set aside.
2. In a same pan, reduce oil then saute garlic and onion then add black beans.
3. Add bell pepper and chicken then cook until tender.
4. In a bowl, mix sauce ingredients until well blended then pour in a pan.
5. Simmer until thickens then season with salt and pepper to taste.
6. Remove from heat then sprinkle with spring onion. Serve hot with steamed rice. Enjoy.
