Salt and Pepper Pork Ribs


Ingredients:
1 kilo pork ribs, cut into serving pieces
4 cloves garlic, minced
1 onion, chopped
2 green chili peppers(siling haba), sliced
1 red chili pepper, chopped
salt and grind pepper
cooking oil for frying

Marinade:
2 teaspoon salt
2 teaspoons sesame oil
1/2 teaspoon five-spice powder
2 tablespoons rice wine

Coating:
1/2 cup cornstarch
1/2 teaspoon black pepper, grind
1/2 teaspoon five-spice powder

Procedures:
Part 1
1. In a large bowl, combine marinade then add ribs, marinate for 2 hours inside the fridge.
2. Add coating then toss until well coated.

Part 2
1. In a deep cooking pot, heat oil then deep fry ribs for 5 minutes or until golden brown. Remove and drain.

Part 3
1.In a pan, heat oil then saute garlic, onion, and chili over low heat. 2. Add fried ribs the toss to combined. Adjust seasoning with salt and pepper according to taste. Remove from heat and serve.

Beef Curry

Filipino Style Recipe: Beef curry is another mouth-watering dish inspired to Indian and Islamic cuisine. This dish is another variety of typical Filipino curry dish which is similar to chicken curry. Beef curry is usually made of beef cooked in coconut milk, curry powder and chilies until tender. Curry is one of the popular spices that gives a spicy and strong flavor.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 30-40 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef sirloin, cut into serving pieces
3 potatoes, quartered
2 carrots, cut into cubes
2 bell peppers(red & green), cut into cubes
1 cup coconut milk or evaporated milk
3 tablespoons curry powder(dissolved in 1/2 cup hot water)
1 onion, chopped
3 cloves garlic, minced
1 1/2 cup water
2 tablespoons fish sauce(patis)
1/4 teaspoon chili flakes(optional)
3 tablespoons vegetable oil
salt and pepper to taste

Procedures:
Part 1
1. In a pan, fry potatoes and carrots until color turns to light brown. Drain and set aside.

Part 2
1. In the same pan, saute garlic and onion until soft.
2. Add beef then stir cook until color turns to light brown.
3. Add fish sauce, dissolved curry powder and water then simmer until meat is tender. Add more water if needed.
4. Add bell peppers, fried potatoes and carrots then simmer for another minute.
5. Add coconut milk, salt and ground pepper then simmer for another 3-5 minutes or until slightly thickens. Keep stirring.
6. Remove from heat and transfer to serving plate. Serve hot with steamed rice.

Salted Caramel and Pecan Cupcakes

Filipino Style Recipe: The salted caramel sauce is very easy to prepare compared to the usual cupcake frosting. The salt balances the sweetness of the cupcakes and the pecan gives it a crunch. The cupcakes are also moist and creamy. I would say this is one of my favorite combination for a cupcake.

Estimated time of preparation: 20 minutes
Estimated time of baking: 18 minutes (plus preheating time)
Good for 16-18 medium cupcakes

Ingredients:
For the cupcakes:
2 egg whites
1 teaspoon cream of tartar
5 tablespoon butter, softened
2 tablespoon vegetable oil
1 cup sugar
2 teaspoon vanilla extract
2 egg yolks
1 3/4 all purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder
1 cup sour cream

For the toppings:
1/4 cup caramel sauce
1 teaspoon salt
18 pieces glaze pecans

Procedures:
Part 1
1. In a mixing bowl, combine egg whites and cream of tartar and mix with hand mixer until stiff peaks form. Set aside.
2. Using a stand mixer, mix the butter, vegetable oil, and sugar until well combined, around 3 minutes. Add the egg yolks and vanilla until well blended.
3.Combine the flour, baking soda, baking powder and salt. Alternate adding the sour cream and dry ingredients in 3 parts in to the butter mixture until just blended.Do not overmix. Fold in the egg whites to the batter until evenly combined.
4. Fill cupcake liners until 1/2 full and bake into preheated oven at 350 Fahrenheit for 15 -18 minutes or until toothpick inserted at the middle of cupcake comes out clean. Remove from the oven and let it cool before piping the frosting

Part 2
1. In a pan over low heat, put the caramel sauce and continuously stir until it starts to rapidly bubble and thickens. Remove from heat and stir salt. Let it cool. Scoop about 1/2 teaspoon into the top of each cupcake then top with pecan.

Spicy Salt and Pepper Tofu

Filipino Style Recipe: Spicy Salt and Pepper Tofu is another easy and simple dish inspired by Chinese cuisine. The tofu was coated in cornstarch then fried until golden brown. The sauce was made up of sauteed garlic, spring onions, dried chili flakes and other seasonings then tossed together with fried tofu. This can be serve as side dish or appetizer.

Estimated time of preparation: 5 minutes.
Estimated time of cooking: 10-15 minutes.
Good for 2-3 persons

Ingredients:
400 grams medium firm tofu
3/4 cup cornstarch
3 gloves garlic, minced
1 tablespoon spring onion, chopped
1/2 teaspoon dried chili flakes
1/2 teaspoon rosemary
1/2 teaspoon dried basil
1/2 teaspoon brown sugar
1 tablespoon soy sauce
vegetable oil for frying
salt and pepper to taste

Procedures:
Part 1
1. Pat dry tofu then cut into 1 inch cubes.
2. In another bowl, combine cornstarch, salt and pepper then toss tofu until coat evenly.

Part 2
1. In a frying pan, heat oil and fry tofu for 2-3 minutes or until golden brown.
2. Drain on paper towels and set aside.

Part 3
1. In a pan, heat oil and saute garlic, spring onions, dried rosemary and chili flakes.
2. Add soy sauce, brown sugar then cook for a few seconds.
3. Add fried tofu and dried basil then toss.
4. Remove form heat then transfer to serving plate. Serve with your favorite dip.

Filipino Style Recipe: Salt and pepper crab is another simple and easy seafood dish that is commonly served in Chinese restaurant. The crabs deep fried and stir cooked in scallion, butter, salt and pepper. This is usually served as appertizer or pulutan together with dipping sauce.

Ingredients:
1 kilo fresh mud crabs, cleaned
5 tablespoons cornstarch
5 cloves garlic, minced
2 tablespoons chopped scallion
3 tablespoons olive oil
cooking oil for deep frying
salt and pepper to taste
2 tablespoons butter(optional)
1/8 teaspoon dried chili flakes(optional)

Procedures:
Part 1
1. Sprinkle cornstarch over crabs then deep fry for 5 minutes. Drain on paper towel.

Part 2
1. In a pan, heat olive oil and butter then saute garlic, scallion and chili flakes.
2. Add fried crabs then sprinkle with salt and pepper. Stir cook for a minute.
3. Remove from heat then transfer to serving plate and serve with spicy vinegar.

Filipino Style Recipe: salt and pepper fried tofu is popular in Chinese cuisine. Normally tofu coated with cornstarch then deep fried. Sauteed with garlic, spring onions and chili pepper.

Estimated time of preparation: 20 minutes. Good for 2 persons

Ingredients:
100grams fresh tofu
3 gloves garlic, minced
2 pieces red chili, chopped
1 tablespoon spring onion, chopped
vegetable oil for frying
salt and pepper to taste
1/2 cup cornstarch

Procedures:
Part 1
1. In a bowl, pour water with salt and soak tofu for 15 minutes.
2. In another bowl, add cornstarch and add tofu. Coat evenly.

Part 2
1. In a frying pan, heat oil and deep fry tofu for 2-3 minutes or until golden brown.
2. Drain and set aside.

Part 3
1. In a pan, heat oil and saute garlic, spring onions and red chili.
2. Add fried tofu and season with salt and pepper. Saute for 1-2 minutes.
3. Remove form heat then transfer to serving plate. Serve.

Tips:
1. You may also add green bell pepper if desired.

Chicken Curry

Filipino Style Recipe: Chicken curry is one of the popular chicken dish in the Philippines. This dish has a strong flavor and aroma similar to Indian and Arabian cuisines. Chicken is cook in curry powder and other spices, we also add coconut milk for creamy and more flavorful taste which most Filipinos love it.

Estimated time of preparation and cooking: 40-50 minutes.
Good for 4-6 persons.

Ingredients :
1 kilo chicken, cut into serving pieces
3 potatoes, quartered
3 bell pepper(red & green), cut into strips
1 cup coconut milk or evaporated milk
3 tablespoon curry powder
1 large onion, quartered
3 cloves garlic, minced
2 tablespoon oil
1 tablespoon fish sauce(patis)
1 cup water
salt and pepper to taste

2 medium carrots, chopped(optional)
3 celery stalks, cut into 1-1/2” long(optional)
2 pcs large hot chili peppers, sliced(optional)

Procedures :
Part 1
1. In a pan, fry potatoes until color turns to light brown. Drain and set aside.

Part 2
2. In the same pan, saute garlic and onion for a few minutes until soft
3. Add chicken and pour fish sauce, continue sauteing for 3 minutes or until color turns to light brown.
4. Season with curry powder, salt and pepper. Continue stirring for another 2 minutes.
5. Add water. Cover and simmer for 10 minutes or until chicken is half done.
6. Lower the heat, add celery, bell peppers and fried potatoes. Simmer for another 3 minutes.
7. Add milk and stir occasionally to keep it from curdling. Cook for another 3-5 minutes.
8. Adjust seasoning according to taste.
9. Remove from heat. Serve hot. Enjoy!
