Mojito

Filipino Style Recipe: Mojito is a popular cocktail drink from Cuba. This beverage is also known as Cuban highball and become a popular summer drink. Mojito is a combination of sweetness, refreshing citrus and mint flavors made of mashed mint leaves, lime juice, white rum, simple syrup and club soda.

Good for 1 serving

Ingredients:
6 pieces mint leaves
1 1/2 tablespoons simple syrup(1 tablespoon sugar dissolved in 2 tablespoons cold water)
1 1/2 tablespoons lime juice
3 tablespoons white rum
3 tablespoons club soda or sparkling water
ice cubes

Garnishing:
mint sprig
2 lime slices

Procedures:
1. In a container with lid, lightly mashed mint leaves with lime juice.
2. Add white rum, simple syrup and ice cubes. Cover and shake well for 15 seconds.
3. In a serving glass, add ice then pour mixture then club soda. Garnish with lime slices and mint sprig then serve cold with straw.

Pina Colada Smoothie

Filipino Style Recipe: Pina colada smoothie is a popular beverage from Puerto Rico and most Filipinos are starting to love this beverage. This drink is consists of coconut cream and pineapple then blended in ice cubes together with light rum then garnish with pineapple slices and cherries.

Good for 4 servings

Ingredients:
3/4 cup coconut cream
1 cup pineapple juice
1 cup light rum(optional)
2 cups ice cubes

Garnishing:
4 pineapple slices(optional)
8 maraschino cherries(optional)

Procedures:
1. In a blender, process pineapple slices, coconut cream, light rum and ice cubes for 15 seconds or until smooth.
2. Pour into glasses then garnish with pineapple slices and cherries. Serve cold.

Notes:
1. You may also add condensed milk for sweeter taste.

Tuna and Mushroom Omelet

Filipino Style Recipe: Tuna and mushroom omelet or omelette is an easy yet delicious breakfast recipe. It is consists of beaten eggs, tuna flakes and mushrooms then cooked until set. Then usually serve during breakfast with fried rice.

Estimated time of preparation and cooking: 10-20 minutes
Good for 1 servings

Ingredients:
4 eggs, beaten
1/2 cup butter or margarine
1 can(115 grams) mushrooms, pieces and stems
1 can(155 grams) tuna flakes(spicy/oil), drained
1 onion, chopped
2 tomatoes, diced
salt and ground pepper to taste
1/2 cup cheese, grated

1/4 cup evaporated milk(optional)
1 tablespoon parsley, chopped(optional for garnishing)

Procedures:
Part 1
1. In a bowl, beat the eggs and milk together until frothy then season with salt and ground pepper. Set aside.

Part 2
1. In a nonstick frying pan, heat butter over medium heat.
2. Saute onions, mushrooms and tomatoes for 3 minutes or until soft.
3. Add tuna flakes and ground pepper, continue sauteing for another 3 minutes. Strain and set aside.

Part 3
1. In a same pan, add butter, half of tuna-mushroom mix then pour half of egg mixture.
2. Sprinkle with grated cheese then cook until bottom is golden.
3. Gently fold omelet over then carefully slide omelette onto a serving plate.
4. Garnish with parsley then serve with hot sauce!

Tips:
1. You may include bell peppers and zucchini sliced thinly in omelette filling.

Glazed Mackerel with Water Spinach

Filipino Style Recipe: glazed mackerel with water spinach is a low-carbohydrate dish. It is usually consists of mackerel fillet marinade in a blend of honey, brown sugar and soy sauce. Stir fried until tender then served with wilted water spinach as side dish.

Estimated time of preparation and cooking: 50 minutes
Good for 4-6 servings

Ingredients:
2 slices mackerel(tanigue) fillets, 1 inch thick
1 lemon, juice
1 tablespoon butter or margarine
2 gloves garlic, minced
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon olive oil
salt and pepper to taste
2 bunches fresh water spinach, trimmed
2 tablespoons white wine(optional)

Procedures:
Part 1
1. In a bowl, marinate mackerel fillets in lemon juice for 10-15 minutes. Drain and set aside.

Part 2
1. In a sauce pan, melt butter then saute garlic.
2. Add brown sugar, honey and soy sauce then bring to boil until reduces in half. Keep stirring.
3. Pour the sugar mixture over the mackerel then sprinkle with salt and pepper. Set aside for 10 minutes.

Part 3
1. In a frying pan, heat olive oil and fry mackerel fillets while basting with sugar mixture.
2. Brushing the top with mixture so the fish begins to caramelize.
3. Cook until the side turns to golden brown and begins to caramelize both sides.
4. Remove from the pan and set aside.

Part 4
1. In a sauce pan, melt the butter then add spinach, salt and pepper.
2. Pour wine then cook for a minute or until the leaves begin to wilt. Drain.
3. Drain then transfer to serving plate and arrange mackerel on top. Serve immediately!

Baked Stuffed Bell Peppers

Filipino Style Recipe: Baked stuffed bell peppers is another special dish made of bell peppers filled with ground meat then topped with grated cheese. The stuffed bell peppers cooked in a oven until the cheese melts. You may also used leftover ground meat to lessen the time of preparation.

Estimated time of cooking and baking: 30 minutes
Good for 5 servings

Ingredients:
5-6 pieces bell peppers, large sized
1/2 cup water
1/2 teaspoon salt
1 egg, beaten(optional)
1/3 cup grated Parmesan or cheddar cheese(optional)

Filling:
300 grams ground beef/pork with fat
2 cloves garlic, minced
1 onion, minced
1 tomatoes, diced
salt and pepper to taste

Procedures:
Part 1
1. Cut each bell pepper in half, wash and remove seeds and membranes.
2. In a pan, boil water with salt then add bell peppers. Cook for 3 minutes then drain and set aside.

Part 2
1. In a pan, cook beef until color turns to light brown and start to render oil.
2. Add garlic, onion and tomatoes then stir cook for 3-5 minutes or until soft.
3. Season with salt and pepper according to taste. Let it cool and set aside.

Part 3
1. In a bowl, beat egg then add beef mixture. Mix well.
2. Fill each bell peppers with beef mixture then sprinkle with grated cheese on top.
3. Arrange bell peppers in a baking pan then bake over 350 degrees Fahrenheit for about 10 minutes or until cheese melts. Serve while hot.

Shrimp Tempura

Filipino Style Recipe: Shrimp tempura is another popular Japanese dish made of deep fried battered shrimps. Normally the shrimps peeled but keep the tails intact then dip into the batter to coat. Deep fried until golden brown then serve with your favorite dipping sauce.

Estimated time of preparation: 30-40 minutes
Estimated time of cooking: 2 minutes

Ingredients:
10 pieces large-sized shrimps
cooking oil for deep frying

Batter:
1 cup flour
2 tablespoons baking powder or cornstarch
1/4 teaspoon salt
1 egg yolk
1 cup iced water

Procedures:
Part 1
1. Clean the shrimps, remove the head and peel the shell. Keep the tails intact.
2. Fold the tail then cut the tip diagonally to form a “V” shape.
3. Devein the back of shrimps and make a couple of slit underside.
4. Arrange and straighten the shrimps in a flat surface then sprinkle with baking powder. Set aside.

Part 2
1. In a bowl, combine flour, baking powder and salt then mix well.
2. In a separate bowl, mix egg yolk and iced water then pour into flour mixture.
3. Stir slightly and leave some flour unmixed. Add some ice to keep the batter icy cold.
4. Dip the shrimp one at a time into the batter to coat. Do not coat the tails.

Part 3
1. In a frying pan, heat enough oil then deep fry shrimps for 1-2 minutes or until golden brown.
2. Drain on paper towels then serve with dipping sauce.

Cookies and Cream Smoothie

Filipino Style Recipe: cookies and cream smoothie is another sweet, creamy and refreshing beverage. This is made up of crumbled chocolate cookies, vanilla ice cream, low-fat milk and chocolate syrup. Best to served during summer season.

Ingredients:
10 Oreo cookies or any chocolate cookies, crumbled
2 cups vanilla ice cream, softened
1/4 cup low-fat milk
3 tablespoons chocolate syrup

Procedures:
1. In a blender, combine milk, ice cream and chocolate syrup.
2. Add 1/2 of crumbled cookies then process until blended.
3. Pour into glasses then sprinkle with remaining cookies then serve immediately.

Pork Katsudon

Filipino Style Recipe: pork katsudon is another popular Japanese dish made of deep fried pork cutlet(pork tonkatsu), egg and katsudon sauce. Katsudon is a combination of Japanese word “tonkatsu” which means pork cutlet and “donburi” means rice bowl. This is one of the best seller dish in every Japanese restaurant.

Estimated time of cooking: 5 minutes(plus tonkatsu cooking)
Good for 1 serving

Ingredients:
1 pork tonkatsu(recipe)
1/2 cup water
1 tablespoon soy sauce
1 teaspoon brown sugar
1/2 white onion, sliced
1 egg, beaten
1 cup steamed rice

Procedures:
1. In a sauce pan, combine onion, soy sauce, brown sugar and water then bring to boil.
2. Add pork tonkatsu then pour over the beaten egg. Cover and simmer until the sauce absorb and the egg is cook.
3. In a serving bowl, put hot steamed rice then place over the pork tonkatsu and egg. Spinkle with spring onion then serve immediately.

Tikoy or Nian Gao

Filipino Style Recipe: Tikoy or Nian Gao is a traditional Chinese rice cake popular during New Year. Tikoy is made of glutinous rice flour and sugar dissolved in boiling water then steam until set. This dish has a sticky texture dip in beaten egg then fry until light brown.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 60 minutes(plus frying time)

Ingredients:
4 cups glutinous rice flour
1 1/2 cups brown sugar
1 cup boiling water
olive or vegetable oil for greasing
1 teaspoon vanilla extract(optional)

Cooking:
1 egg, beaten
3 tablespoons vegetable oil
paper towels

Procedures:
Part 1
1. In a bowl, dissolve sugar in boiling water then add vanilla extract and flour. Mix until well blended.
2. In a round pan, grease with oil then pour mixture and spread evenly.
3. Steam for about an hour or until the edges separate from the pan.
4. Let it cool and remove from the pan before slicing.

Part 2
1. In a bowl, beat egg then dip tikoy slices.
2. In a frying pan, heat oil then fry until light brown then drain on paper towels. Serve.

Tips:
1. You may also add sesame seeds on top of flour mixture before steaming.
2. Tikoy can be also cook in a microwave oven or re-steam.

Pork and Beans

Filipino Style Recipe: Pork and beans is high protein dish popular the US and Mexico and also become popular in Filipino cuisine. It consists of beans boiled until tender then cooked along with pork, tomato sauce and other ingredients. This is commonly served as breakfast dish and it was amazing and delicious.

Estimated time of preparation: 10 minutes(plus soaking time)
Estimated time of cooking: 40 minutes(plus boiling time)
Good for 4 persons

Ingredients:
1/4 kilo white beans(bitsuelas)
1/2 kilo pork, cut into small pieces
4 gloves garlic, peeled and crushed
1 onion, chopped
3 pieces tomatoes, discard seeds and diced
1 cup tomato sauce
1/4 cup tomato ketchup(optional)
1 liter water
sugar, salt and pepper to taste

Procedures:
Part 1
1. In a bowl, soak beans in water overnight. Wash on running water then drain. Set aside.
2. In a pot, boil water then cook beans for an hour or until tender. Add water if necessary then set aside.

Part 2
1. In another pot, heat oil then saute garlic, onion and tomatoes.
2. Add pork and cook until light brown and tender.
3. Add boiled beans, tomato sauce, ketchup, sugar, salt and pepper according to taste.
4. Simmer until well blended and thicken. Add water if necessary.
5. Remove from heat then serve with steamed rice.

Notes:
1. You may also add some leafy vegetables like cabbage, ampalaya leaves, etc.
