Beef Mechado Recipe

Filipino Style Recipe: beef mechado is another tomato based dish consists of a beef, potatoes, and tomato sauce. This dish is usually seasoned with onion, soy sauce, bay leaves and vinegar. Beef mechado is almost similar to several other beef dishes such as kalderata, adobo and kare-kare.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 70-80 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef with fat, cut into cubes
2 1/2 cups tomato sauce
2 onions, quartered
3 bay leaves(laurel)
3 medium potatoes, quartered
1 red bell pepper, sliced
1 cup soy sauce
3 cups beef stock or beef cubes dissolved in water
salt and pepper to taste
cooking oil for frying
2 carrots, cut into cubes(optional)
1/4 cup vinegar(optional)

Procedures:
Part 1
1. In a frying pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.

Part 2
1. In a casserole, combine the beef, onions, tomato sauce, soy sauce, bay leaves and beef stock.
2. Boil for at least 1 hour or until beef is tender, Add water as needed.
3. Add vinegar and simmer for 2-3 minutes. Do not stir.
4. Add bell pepper, potatoes and carrots then cook for 3 minutes or until tender.
5. Adjust seasoning with salt and pepper according to taste. Add sugar if you prefer.
6. Remove from heat and transfer to serving plate then serve with steamed rice.

Spicy Buffalo Wings Recipe

Filipino Style Recipe: Spicy Buffalo Wings are considered as an American dish. It is traditionally fried unbreaded and then coated in sauce. The classic buffalo style chicken wings is composed of vinegar-based cayenne pepper hot sauce and butter.

Estimated time of preparation and cooking: 30 minutes. Good for 3-5 persons.

INGREDIENTS:
For Breading Mix
1 kilo chicken wings, tips removed
1 cup Flour
1 tablespoon Paprika
1 tablespoon Cayenne Pepper
1 tablespoon Salt
1 tablespoon Ground Pepper
1 tablespoon Thyme(optional)

For Buffalo Sauce
3/4 cup Hot Sauce
1/4 cup Brown Sugar
1/2 cup Butter or margarine
1 tsp Ground Pepper
2 tsp Garlic Powder
1 tsp Cayenne Pepper(optional)
2 tbsp Honey(optional)

For Cheese Dip(optional)
1/2 cup Mayonnaise
1 tablespoon Garlic Powder
2 tablespoon Cheese Spread
2 tablespoon Parmesan Cheese
1/2 teaspoon ground black pepper

Procedures:
Part 1
1. In a small bowl, combine all the ingredients for breading mix.
2. Coated the wings with the breading mix evenly.
3. In a deep pan, heat enough oil to cover the wings entirely.
4. Fry wings for about 8-10 minutes in medium heat or until color turns to golder brown.
5. Drain and set aside.
Part 2
1. In a small pan, heat butter in a low heat until melted.
2. Add all the remaining ingredients for buffalo sauce, stir well to keep it from curdling. Cook for 2-3 minutes.
3. Place the fried chicken wings in a large bowl, add the buffalo sauce and mix until all the wings coated evenly.
4. Serve with celery sticks.

For Cheese Dip:
1. In a small bowl, combine all the ingredients for cheese dip.

Tinolang Manok

Filipino Style Recipe: Tinolang Manok(Chicken Tinola) or Filipino chicken ginger soup is one of the common dish in the Philippines. A simple Filipino recipe that is relatively easy to cook. Here is the basic and easy to follow recipe. Happy cooking!

Estimated time of preparation and cooking: 45-50 minutes.
Good for 4-6 persons.

Ingredients :
1 kilo chicken, cut into serving pieces
2 pieces chayote squash(sayote) or green papaya, cut into small pieces
1 cup chili leaves or malunggay leaves
1 thumb-sized ginger, cut into strips
4 cloves garlic, crushed
1 onion, chopped
2 tablespoon fish sauce(patis)
1 litre of water or rice washing
4 tablespoon vegetable oil
salt to taste

Procedures :
1. In a sauce pan, heat oil over medium heat then saute ginger, garlic and onion.
2. Add chicken, fish sauce, ground pepper and continue sauteing until the color chicken turn to light brown.
3. Pour water then simmer for 10 minutes or until chicken is tender.
4. Add in chayote then continue simmering for another 5 minutes.
5. Adjust seasoning according to taste then add chili leaves then turn off the heat.
6. Let stand for a few minutes to cook the leaves then transfer to a serving dish and serve. Enjoy!

Beef Caldereta

Filipino style recipe: beef caldereta or kalderetang baka is another tomato-based dish and commonly served by Filipinos. Normally the beef boiled until tender, then cooked in tomato sauce, bell pepper, carrots and potatoes. Some may add liver spread and cheese to make the sauce creamy. This is another mouth-watering dish and one of my favorite.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 80-120 minutes
Good for 4-6 person

INGREDIENTS:
500 grams beef, cut into chunks
1 can (85 grams)liver spread
1 large onions, minced
3 cloves garlic, minced
250 grams tomato sauce
3 large potatoes, cubed
2 large carrots, cubed
2 red and green bell peppers, diced
4-5 cups water or beef stock
1/4 cup vegetable oil
2-3 hot chili(labuyo), chopped(optional)
1/4 cup cheese, grated or cubed(optional)

PROCEDURES:
Part 1
1. In a pan heat oil and fry potatoes and carrots until golden brown.
2. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onions.
2. Add beef, continue sauteing for 5 minutes.
3. Add water and simmer for at least 1-2 hour or until beef is tender. Add water if necessary.
4. Add tomato sauce,liver spread and bay leaves, simmer for 5-8 minutes.
5. Add carrots, potatoes, bell pepper and chili. Simmer for 5 minutes or until vegetables are cooked.
6. Adjust seasoning with sugar, salt and pepper according to taste.
7. Add cheese and simmer for another 2 minutes or until the sauce thickens.
8. Transfer to serving plate and serve with steamed rice.

Variations:
1, Goat and chicken meat can also be used instead of beef.
2. You may also add green olives and green peas.

Pork Pochero

Filipino Style Recipe: Pork pochero is a classic tomato-based Filipino dish. Pochero have lots of variations such as pork, chicken, or beef. In this dish the pork cooked with tomato sauce together with cardava bananas(saba), green beans, cabbage and other vegetables.

Estimated time of cooking: 40-50 minutes
Good for 4-6 persons

Ingredients:
1 kilo pork liempo, cut into serving pieces
1/2 head garlic, chopped
1 medium size onion, chopped
4 pieces saba, sliced diagonally
1 small bundle, green beans, trimmed
1/2 small cabbage, quartered
1/2 cup tomato sauce
3-4 cups water
1 tbsp. peppercorns
salt and sugar to taste
1/4 cup cooking oil

1/4 cup fish sauce(patis)(optional)
1 red bell pepper, cut into cubed(optional)
2 potatoes, quartered(optional)
1 bundle pechay, trimmed(optional)

Procedures:
Part 1
1. In a sauce pan, heat oil and saute garlic and onion.
2. Add pork and stir cook until color changes and start to sizzle.
3. Add tomato sauce, water and peppercorns then stir and simmer for 20-30 minutes or until pork is tender.(Add more water as necessary).
4. Add potato and simmer for another 3-5 minutes or until potato are tender.
5. Add in banana and the other vegetables, cook for 3-5 minutes or until vegetables are cooked.
6. Adjust seasoning with fish sauce, salt and sugar according to taste.
7. Remove from heat then transfer to serving plate. Serve with steamed rice.

Notes:
1. You may also add Hunt’s Pork & Beans.
