Pesang Tilapia

Filipino Style Recipe: Pesang tilapia is an easy and simple fish dish similar to nilaga. Commonly the fish boiled until tender then add onion, leeks, peppercorn, salt, potatoes, bok choy or cabbage.

Estimated time of preparation and cooking: 20 minutes
Good for 2-3 servings

Ingredients:
1 big-sized tilapia or any fish, cleaned and cut into serving pieces
1 onion, chopped
1 thumb-sized ginger, slice thinly
2 onion leeks, chopped
1 teaspoon peppercorns
4 tablespoons fish sauce
1/4 head cabbage or a bunch of pechay
3/4 liter rice washing or water
salt to taste
1 medium-sized potatoes, quartered(optional)

Procedures:
1. In a pot, heat oil then saute ginger, onion and onion leeks.
2. Add potatoes and peppercorns then continue sauteing for a minute.
3. Pour rice washing and bring to boil then season with fish sauce.
4. Add fish then simmer for 3 minutes. Adjust seasoning according to taste.
5. Add cabbage then simmer for another 2 minutes. Turn off the heat.
6. Transfer to serving bowl then serve immediately.

Bulalo

Filipino Style Recipe: bulalo or bone marrow stew is another easy yet delicious Filipino soup dish. Bulalo is similar to beef stew(nilagang baka) instead we use beef shank or bone marrow. This is considered as one of the favorite dish of most Filipinos. Preparing this dish is so simple but time consuming because the beef simmered for at least an hour until tender then cooked with corn cobs, potatoes, bananas and veggies. This is so popular and can be served anytime or the best during rainy season.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 70 – 90 minutes

Ingredients:
1 kilo of beef shank/bone marrow(bulalo), cut into serving pieces
3 medium-sized potatoes, cut into quarter
1 small bundle green beans(baguio beans), trimmed
1 bundle bok choy(Pechay), cut the 2 pieces
1 onion, chopped
1 tablespoon peppercorn
fish sauce(patis) or salt to taste
1 liter of water

3 Japanese corn cobs, cut into 3-4 pieces(optional)
1/2 small cabbage, cut into quarter(optional)
5 pieces cardava banana(saging na saba), sliced(optional)
2 thumb-sized ginger, chopped(optional)

Procedures:
Part 1
1. In a large casserole, place the meat, ginger and add water. Set over medium heat and bring to a boil and simmer for at least about 1 hour or until meat is tender. Remove the scum as it rises. Add more water if necessary. Pressure cooker takes less time.

Part 2
1. Add corn and onion. then season with fish sauce and sprinkle some salt. Simmer for another 10 minutes or until the corn is tender.
2. Add potatoes and continue cooking until potatoes are cooked.
3. Add cardava banana and all the vegetables. Do not cover and simmer for about 5 minutes or until vegetables are done.(Do not overcooked the vegetables)
5. Adjust seasoning with fish sauce and salt according to taste.
6. Serve hot with fish sauce and birds eye chili(siling labuyo) for condiments.

Notes:
1. You may also add anise or cinnamon powder if you prefer.

Pesang Manok Recipe

Filipino Style Recipe: pesang manok or boiled chicken recipe is another simple chicken dish. This is similar to Tinolang Manok but the procedures are the same in Nilagang Baka. Normally the chicken boiled until tender then add onion, peppercorn, salt, potatoes, bok choy or cabbage.

Estimated time of preparation and cooking: 30-40 minutes
Good for 4-5 servings

Ingredients:
1 kilo chicken, cut into serving pieces
7 cups water(depends on your preference)
1 onion, sliced
1 tablespoon peppercorns
2 medium-sized potatoes, quartered
1 head bok choy(petchay) or cabbage leaves(repolyo)
1 teaspoon salt
1 bunch green onions(optional)
1 piece chicken broth cubes(optional)

Procedures:
Part 1
1. In a large pot, add chicken, water, ginger, onions, peppercorns and salt.
2. Cover and simmer for 20 minutes or until chicken is tender. Remove the scum as it rises.

Part 2
1. Add potatoes then cook until the potatoes is almost tender.
2. Add bok choy, cabbage and green onions then adjust seasoning according to taste.
3. Cook until vegetables are tender then remove from heat. Serve hot with steamed rice.

Ginataang Hito

Filipino style recipe: Ginataang hito or catfish in coconut cream recipe is another simple and easy recipe. Usually the catfish cooked in coconut milk, vinegar and other seasonings for 10 minutes.

Ingredients:
1 whole catfish(hito), cleaned and cut into 2 inches
3/4 cup coconut vinegar
3 tsps. annatto powder(achuete),(optional)
1 can coconut milk(gata)
2 tablespoons olive oil
2 tablespoons fish sauce(patis)
3 pieces bay leaves(laurel)
4 cloves garlic, crushed and chopped
2 red onions, chopped
3 tablespoos ginger, chopped
1 tablespoon black pepper corns
salt and pepper to taste
1 stalk fresh spring onions, chopped(optional)
3 pieces red hot chili peppers(optional)

Procedures:
Part 1
1. In a large pot, arrange garlic, onions and ginger at the bottom.
2. Arrange sliced catfish then pour vinegar, coconut milk, olive oil and fish sauce.
3. Sprinkle annatto powder, pepper corns and add bay leaves.

Part 2
1. Cook in medium heat until sauce thickens. Carefully turn each side of fish after the sauce started boiling.
2. Season salt and pepper to taste then add hot chili peppers when it is about to finish cooking.
3. Transfer in serving plate and garnish with spring onions.
4. Serve hot with rice. Enjoy

Nilagang Baboy

500 grams pork(choices of belly, ribs or any bony parts of pork), cut into serving pieces
7 cups water(depends on your preference)
1 onion, sliced
1/4 teaspoon peppercorn
1 piece pork bouillon cube(optional)
2 potatoes, quartered
1 bundle bok choy(Pechay) or cabbage leaves(repolyo), cut into serving pieces
3 pieces cardava banana(saging na saba), cut into 3-4 pieces(optional)
1 bundle green beans(optional)
fish sauce or salt to taste

Procedures:
Part 1

7. Add pechay or cabbage leaves. Then remove from heat and leave for about 3 minutes. Do not overcook the green vegetables.
8. Serve hot with steamed rice. Enjoy

1. You may also add 1-2 Japanese corn, cut into 3-4 pieces.

Vegetable Curry Stew

Filipino style recipe: vegetable curry stew recipe is another vegetable dish. This stew sauteed with cubes of sweet potato and other vegetables. You may also serve this meal during Lenten season.

Estimated time of preparation and cooking: 30-40 minutes
Good for 4 servings

Ingredients:
1 1/2 teaspoons curry powder
2 teaspoons olive oil
1 large sweet potato, peeled and cut into cubes
1 green pepper, cut into cubes
1 can diced tomatoes
1 small zucchini, cut into cubes
1 can garbanzo beans or any beans, rinsed and drained
1 onion, chopped
1/2 teaspoon salt
3/4 cup vegetable broth
1 teaspoon ground cumin(optional)

Procedures:
1. In a sauce pan, heat olive oil then add onion, green pepper, sweet potato and zucchini.
2. Stir occasionally, cook for 10 minutes or until vegetables are golden.
3. Add curry and cumin then continue cooking for 1 minute.
4. Add garbanzo beans, tomatoes, vegetable broth and salt.
Cover and simmer for 10 minutes or until vegetables are done.

Tips:
1. You also use vegetable soup mix dissolve in warm water as vegetable broth.
2. You may also add carrots and other green leafy vegetables.
