Binagoongang Pork Adobo

Filipino Style Recipe: Binagoongang pork adobo is easy and simple Filipino pork dish. This dish is another variety of pork adobo and binagoongang baboy. Normally the meat marinated then cooked in garlic, chili, shrimp paste, soy sauce, vinegar and sugar until tender and start to render oil.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 50-60 minutes
Good for 3-4 persons

Ingredients:
1 kilo pork belly or ribs, cut into serving pieces
3 tablespoons sauteed shrimp paste
6 gloves garlic, chopped
2 tomatoes, chopped
2 pieces bay leaves
1 teaspoon black peppercorn
1/4 cup soy sauce
1/4 cup vinegar
1/4 cup water
2 pieces green chili, chopped
1 tablespoon brown sugar
3 tablespoons cooking oil
1/2 cup soda(optional)

Procedures:
Part 1
1. Marinate pork in soy sauce, soda and sugar for 30 minutes.

Part 2
1. In a pan, heat oil then saute garlic and tomatoes until soft.
2. Add bay leaf, peppercorn and shrimp paste then continue sauteing for a minute.
3. Add marinated pork then stir cook for 3 minutes.
4. Add marinade, water and chili then simmer for 50 minutes or until tender. Add water if necessary.
5. Add vinegar then simmer for 5 minutes or until start to render oil.
6. Transfer to serving plate then garnish with remaining toasted garlic and chili slices. Serve with steamed rice.

Beef Adobo

Filipino Style Recipe: Beef adobo or adobong baka is another variety of popular Filipino adobo. The beef marinated in a blend of soy sauce, garlic, bay leaves, peppercorns, salt and sugar then cook and simmer with vinegar until meat is tender and the sauce is almost absorb.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 50-60 minutes
Good for 3-4 persons

Ingredients:
500 grams beef, cut into thin slices
1/2 cup soy sauce
1/3 cup vinegar
3 gloves garlic, chopped
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
2 tablespoons brown sugar
1/2 cup water
salt to taste

Procedures:
Part 1
1. In a pot, combine beef, garlic, bay leaves, peppercorns brown sugar, and soy sauce. Marinate for an hour or overnight inside the fridge.

Part 2
1. Pour water then simmer in a low heat for 40 minutes or until beef is tender.
2. Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.
3. Cook until the sauce is almost absorb and start to render oil.
4. Transfer to serving plate then serve with rice.

Paksiw na Salmonete

Filipino Style Recipe: Paksiw na salmonete or red mullet is another quick and easy fish dish by Filipinos. Salmonete is a Spanish word for red mullet. Red mullet is a Mediterranean fish with a mix of orange, red and pink colored skin. I used striped red mullet in this recipe and the procedure is similar to other paksiw. Normally the fish and vegetables cook in a blend of vinegar and some spices like garlic, onion and ginger then cover and simmer for 10 minutes or until tender.

Estimated time of preparation and cooking: 20-30 minutes.
Good for 3-4 persons.

Ingredients:
500 grams red mullet(salmonete), cleaned
1 small garlic, pounded
1 onion, sliced
1 thumb-sized ginger, sliced and pounded
1/2 cup vinegar
1 cup water
1 teaspoon cooking oil
1 teaspoon grind black pepper
2 teaspoon salt
3 green chili(siling haba)
5 small okra, heads removed

Procedures:
Part 1
1. In a pan, arrange salmonete, garlic, onion, ginger, salt and black pepper.
2. Pour water, vinegar and cooking oil then add okra and green chili.
3. Cover and simmer in a medium heat for 10-15 minutes or until tender.
4. Remove from heat and Serve.

Notes:
1. You may also used eggplants or bitter gourd(ampalaya) as alternative vegetable.

Daludal

Filipino Style Recipe: daludal is a quick and easy vegetable dish popular in northern part of Luzon. The way of cooking is similar to paksiw, the vegetable cooked in a blend of bagoong, vinegar and other ingredients until tender. I used leftover fried tilapia as one of ingredients, the Ilocanos really love this dish.

Estimated time of preparation and cooking: 20-30 minutes. Good for 4-5 persons.

Ingredients:
1 bunch daludal, cleaned
6 gloves garlic, peeled and pounded
1 onion, chopped
1 thumb-sized ginger, sliced and pounded
1 tomato, chopped
2 tablespoons vinegar
1/4 cup bagoong(anchovies)
1 1/2 cups water
salt and pepper to taste
1 fried fish, slice into 2-3 pieces

Procedures:
Part 1
1. In a pan, arrange daludal, garlic, onion, ginger, tomatoes, salt and peppercorn.
2. Pour bagoong, water and vinegar then place fish on top.
3. Cover and simmer in a medium heat for 10 minutes or until tender.
4. Toss and simmer for another 5 minutes. Remove from heat then serve hot.

Adobong Balut

Filipino Style Recipe: Adobong Balut or Boiled Fertilized Duck Egg Adobo is an exotic Filipino dish. Balut is commonly sold along the street, usually during nighttime and served as finger food or pulutan. Some said that duck egg is considered as aphrodisiac and help to increase the stamina. Normally the boiled balut cooked in a blend of soy sauce and vinegar, season with sugar, salt and pepper. This dish is similar to other adobo dish.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 15-20 minutes

Ingredients:
12 pieces balut(boiled fertilized duck egg)
1/2 head garlic, minced
1 onion, chopped
1 thumb-sized ginger, peeled and minced
1/2 cup soy sauce
1/4 cup vinegar
1/4 cup water
3 bay leaves(laurel)
4 tablespoons olive oil
1 teaspoon peppercorns
salt and sugar to taste
1/2 teaspoon chili flakes(optional)

Procedures:
Part 1
1. Remove balut shells then set aside. Reserve the broth.

Part 2
1. In a pan, heat oil then saute ginger, garlic and onion.
2. Add balut and stir fry to a minute.
3. Add soy sauce, balut broth, water, bay leaf and peppercorns then bring to boil.
4. Add vinegar and simmer for a few minutes. Add water if necessary.
5. Add chili flakes, salt and sugar according to taste then simmer for a minute.
6. Transfer to serving plate then serve with steamed rice. Enjoy:)

Adobong Hito

Filipino Style Recipe: Adobong Hito or catfish is another variety of popular Filipino adobo. The procedure is almost the same, normally the fish cooked in a blend of soy sauce, vinegar, garlic, peppercorn, salt and soda to add sweetness to our dish. Covered and simmered until the fish is tender and a little sauce is left. This delicious dish commonly served main dish or sometimes as pulutan.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 25 minutes
Good for 3-4 persons

Ingredients:
2 pieces medium-sized catfish (hito), cleaned
1 1/2 cup soda or lemonade
1/4 cup soy sauce
1/3 cup vinegar
1/2 head garlic, peeled and crushed
1 large onion, peeled and sliced
1 thumb-sized ginger, chopped and crushed
1 tablespoon peppercorns
salt to taste
4 pieces red chili peppers(labuyo), chopped(optional)

Procedures:
Part 1
1. Clean the fish by removing the fins, innards and chop off the tails.
2. Slice into serving pieces then rub with salt and wash on running water.

Part 2
1. In a cooking pot, arrange the fish and all the ingredients.
2. Cover and simmer in a medium heat until tender and a little sauce is left.
3. Adjust seasoning according to taste, add water if necessary then simmer for a few minutes.
4. Remove from heat then transfer on a serving plate. Serve with steamed rice.

Pork Adobo with Pineapple

Filipino Style Recipe: Pork Adobo with Pineapple is another variety of Filipino pork adobo, we just add pineapple chunks or tidbits which gives a sweeter and flavorful taste to our dish.

Estimated time of cooking: 40-50 minutes
Good for 4-5 persons

Ingredients:
1/2 kilo pork, cut in serving pieces
1 cup pineapple chunks or tidbits
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup pineapple juice
6 gloves garlic, crushed
1 white onion, sliced in rings
1 teaspoon peppercorns
2-3 pieces bay leaves
1 teaspoon sugar
salt to taste

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns, soy sauce and pineapple juice. Marinate for 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Add onions, pineapple then simmer for 2 minutes or until the sauce thickened.
3. Remove from heat then transfer to serving bowl then serve with steamed rice.

Chicken Adobo(Adobong Manok)

Filipino Style Recipe: Chicken adobo or adobong manok is the another popular yet easy Filipino dish. Adobo have lots of variations such as pork, chicken, combination of pork and chicken, other meats, vegetables and seafood. In this recipe, we will used chicken then marinated and cooked in a blend of soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar until chicken is tender and the sauce thickens.

Estimated time of cooking: 30 minutes
Good for 3-4 persons

Ingredients:

2. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 3 minutes or until golden brown.
2. Pour marinade and add water. Simmer for 20 minutes or until chicken is tender.
3. Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.
4. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Paksiw na Tilapia

Filipino Style Recipe: Paksiw na tilapia is a quick and easy fish dish by Filipinos. The fish and vegetables cooked in a blend of vinegar and some spices like garlic, onion and ginger. Here is my Mom’s recipe on how to cook the usual paksiw na tilapia. Enjoy cooking!

1 onion, sliced

3 green chili(siling haba)
5 small okra, heads removed

Procedures:
Part 1

1. In a pan, heat oil and fry pork until brown. Drain and return the meat to reserved sauce.
2. Simmer and toss for a minute or until the sauce is almost absorb and thicken. Transfer to serving bowl then serve.
