Oyster Sisig

Filipino Style Recipe: oyster sisig is another variety of popular Filipino sisig. This dish is spicy and sour appetizer that usually served as finger food(pulutan). Normally the oyster meat comes fried and sauteed in garlic, onions, liquid seasoning and red hot chili. Serve in sizzling plate with calamansi.

Ingredients:
1 kilo oyster, remove from the shell
5 gloves garlic, minced
3 onions, chopped
3-5 red hot chili(labuyo), chopped
1/2 cup cornstarch
1 raw egg, beaten
1/2 cup butter
salt and pepper to taste
3 tablespoons soy sauce or liquid seasoning
3 tablespoons mayonnaise(optional)
4-5 pieces calamansi

Procedures:
Part 1
1. In a bowl, combine cornstarch, salt and pepper.
2. Dip oyster on beaten egg then dredge with cornstarch mixture.
3. In a pan, heat oil and fry coated oyster for 5 minutes or until colors turn to golden brown.
4. Drain on paper towel. Set aside.

Part 2
1. In a pan, melt butter then saute garlic and onions.
2. Add fried oyster, liquid seasoning, ground pepper, chili and mayonnaise. Mix well.
5. Transfer to sizzling plate, serve with calamansi. Done

Gising Gising

Filipino Style Recipe: gising gising is an easy and simple Filipino dish. It is made up of chopped green beans cooked in shrimp paste and coconut milk. This dish is popular in Bicol region. Like bicol express, gising gising has a spicy and salty taste.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4-5 servings

Ingredients:
500 grams green beans, sliced into small pieces
300 grams ground pork or pork meat with fat, sliced into small pieces
2 tbsp sauteed shrimp paste(bagoong alamang)
1 cup coconut cream(1st extract)
2 cups coconut milk(2nd extract)
3 cloves garlic, minced
1 onion, chopped
salt and pepper to taste
4-5 pieces red hot chillies(labuyo), sliced into small pieces(optional)

Part 1
1. In a saucepan, cook pork meat until color turns to light brown and start to render oil.
2. Add garlic and onion then saute until translucent.
3. Add shrimp paste and continue sauteing for a minute or until it’s cooked.
4. Pour coconut milk, simmer for 15 minutes or until reduced and thick.
5. Pour coconut cream, green beans and chopped chili, cook for 3 minutes or until tender and crisp.
6. Adjust seasoning with salt and pepper then transfer to serving plate then serve.

Chicken Tapa

Filipino style recipe: chicken tapa or tapang manok is another variety of popular Filipino tapa. Normally we use beef but in this recipe we will use chicken. The chicken meat prepare in thin slices and marinated for an hour then fry until done. Often served with fried rice and egg, together with achara(picked papaya strips).

Estimated time of cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
500 grams chicken fillet, cut into serving pieces
1/4 cup cooking oil

Marinade:
4 cloves garlic, minced
1/2 cup soy sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon oyster sauce
1 teaspoon cayenne pepper(optional)
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine chicken and all ingredients except cooking oil. Mix well then marinate for at least an hour inside the fridge.

Part 2
2. In a pan, heat cooking oil over low heat. Fry marinated chicken for 15 minutes or until golden brown.
3. Drain and transfer to serving plate. Serve with fried rice.

Sinigang na Ulo ng Salmon

Filipino Style Recipe: sinigang na ulo ng salmon or salmon head tamarind soup is another simple and easy Filipino dish. This is similar to other sinigang that has a sour broth. Normally the salmon head cooked in a combination of rice washing, onions, tomatoes, vegetables and tamarind which gives a sour taste.

Estimated time of preparation and cooking: 15-20 minutes
Good for 2-3 persons

Ingredients:
2 pieces salmon head
1 pack sinigang sa sampaloc mix
6 cups water or rice washing
4 cloves garlic, minced
1 onion, sliced
1 thumb-sized ginger, sliced thinly
3 tomatoes, diced
1/2 bunch of string beans(sitaw), cut into 3inch
a bunch of kangkong or pechay
3 tablespoons olive oil
salt or fish sauce to taste
1 teaspoon ground pepper

Procedures:
1. In a pot, heat olive oil and saute garlic, onion, ginger and tomatoes.
2. Add salmon head and pour water. Cover and simmer for about 10 minutes.
3. Add tamarind juice or sampaloc mix. Simmer for 3 minutes.
4. Add vegetables then season with salt or fish sauce according to taste.
5. Add kangkong and simmer for another 1 minute.
6. Transfer to serving bowl and serve hot.

Notes:
1. You may add other kind of vegetables.

Chicken Steak

Filipino style recipe: chicken steak or chicken bistek tagalog is normally the chicken marinade and stir fried until tender and garnish with onion rings. This is similar to beef steak and pork steak.

Estimated time of preparation and cooking: 40 minutes.
Good for 3-4 persons.

Ingredients:
1/2 kilo chicken fillet
1 tablespoon calamansi juice
3 gloves garlic, minced
1 onion, sliced in rings
2 tablespoons soy sauce
1 teaspoon salt
1 teaspoon ground pepper
3 tablespoons cooking oil

Procedures:
Part 1
1. In a bowl, combine chicken, calamansi, garlic, soy sauce, salt and pepper. Marinate for 30 minutes inside the fridge.

Part 2
2. In a pan, heat cooking oil over medium heat. Lighty fry the onion rings. Remove from pan and drain. Set aside

Part 3.
3. In the same pan, Add the marinated chicken, stir-fry until tender and start to sizzle.
4. Transfer to a serving platter including the oil and sauce.
5. Garnish with onion rings.
6. Serve hot and enjoy!

Nilasing na Hipon

Filipino Style Recipe: nilasing na hipon is a simple but tasty shrimp dish, the shrimps marinated in wine or liquor then sauteed in butter with onion and pepper.

Estimated time of cooking: 5-7 minutes

Good for 3-4 persons

Ingredients:
500 grams prawns
1 onion chopped
1 bell pepper, chopped
1 tablespoon butter
2 cups white wine(you may also use sake, tequila, gin, vodka or beer)
salt and pepper to taste
4 tablespoon olive oil

2 red hot chili(siling labuyo),chopped(optional)
1 tablespoon rosemary(optional)

Procedures:
Part 1
1. In a bowl, combine 1 tablespoon olive oil, wine, rosemary, salt and pepper. Marinate shrimps for 1 hour.
2. Drain on paper towel.

Part 2
1. In a pan, heat olive oil and melt butter.
2. Saute onion, bell pepper and red chili.
3. Add shrimps and stir fry for 3-5 minutes. Drain on paper towel.
4. Serve with spicy vinegar.

Poqui Poqui

Filipino Style Recipe: poqui poqui is a native vegetable ilocano dish. Normally the eggplants comes grilled then peel off. Sauteed with onions, tomatoes and eggs.

Estimated time of preparation and cooking: 30-40 minutes. Good for 4-5 persons.

Ingredients:
4 medium-size eggplants
4 gloves garlic, minced
1 onion, diced
2 medium-size tomatoes, diced
3 pieces egg, beaten
4 tablespoons vegetable oil
salt and pepper to taste

Procedures:
Part 1
1. Grill eggplants until skin are charred and blister.
2. Let it cool then peel off the skin then chop the flesh. Set aside.

Part 2
1. In a pan, heat oil and saute garlic, onion and tomato.
2. Add chopped eggplant and season with salt and pepper. Stir and cook for 5 minutes.
3. Add beaten eggs and continue stirring for 2 minutes but egg should still wet.
4. Remove from heat, transfer to serving plate and serve.

Chicken Chop Suey

Filipino Style Recipe: Chicken chopsuey is another Chinese recipe that is popular for many Filipinos and some other countries. Normally the chicken sauteed and cooked with chicken broth, oyster sauce and cornstarch together with vegetables.

Ingredients:
1/2 kilo chicken fillet, cut into serving pieces
2 cloves garlic, minced
1 onion, chopped
2 tablespoons cornstarch(dissolved in 1/4 cup water)
100 grams baby corn, sliced diagonally in half
100 grams snow peas(sitsaro)
1 medium-sized carrots, sliced thinly
4 tablespoons oyster sauce
1.5 cup water
1 tablespoon vegetable oil
1 teaspoon sugar
salt and pepper to taste
1 chicken cube(optional)

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add chicken fillet, season with salt and pepper. Cook until golden brown.
3. Pour water, chicken cube and vegetables. Cook for 10 minutes or until vegetables are half-done.
4. Pour dissolved cornstarch, sugar and oyster sauce. Simmer until the sauce thickens.
5. Adjust seasoning according to taste.
6. Transfer to serving plate then serve.

Sinigang na Bangus

Filipino Style Recipe: sinigang na bangus or milkfish in tamarind is another simple and easy Filipino dish. This is similar to sinigang na hipon and sinigang na baboy that has a sour broth. Normally the milkfish cooked in a combination of rice washing, onions, tomatoes, vegetables and tamarind which gives a sour taste.

Good for 3-4 persons

Ingredients:
1 medium-sized milk fish(bangus), cut in about 4-5 slices
6 tamarind(sampaloc) or 1 pack(22grams) sampaloc mix
6 cups water or rice washing
3 pieces tomatoes, quartered
1 onion, chopped
1 bundle kangkong leaves or sweet potato leaves
1 cup string beans(sitaw), cut into 2 inches long
2 pieces green pepper(siling haba)
Salt or Fish Sauce(patis) to taste

Procedures:
Part 1
1. In a pot, pour water and add onion and tomatoes. Bring to boil.
2. Add milk fish, cook and simmer for 10 minutes.
3. Add tamarind juice or sampaloc mix. Simmer for 5 minutes.
4. Add green chili, string beans then kangkong leaves.
6. Season with salt or fish sauce according to taste.
7. Serve hot.

Notes:
If using tamarind instead of sinigang mix, here’s the procedure:
1. Boil tamarind until soften.
2. Pound and extract the juices.

Sauteed Sotanghon with Luffa and Ground Pork

Filipino Style Recipe: sauteed sotanghon with luffa and ground pork or ginisang patola with sotanghon is another soup dish that usually served specially during rainy season. Normally the ground pork sauteed and cooked with luffa and sotanghon noodles.

Good for 5 servings

Ingredients:
2 medium-sized luffa(patola), peeled and sliced
200 grams sotanghon noodles
250 grams ground pork, cut into small pieces
1 onion, chopped
3 cloves garlic, minced
salt and pepper to taste
1 pork broth cubes(optional)

Procedures:
Part 1
1. In a bowl, Cut the sotanghon to desired length and soak in hot water until soft.

Part 2
1. In a saucepan, heat oil and saute garlic and onion
2. Add ground pork, saute until color turns to light brown.
3. Add water and pork broth cubes. Bring to boil.
4. Add luffa and cook for 2 minutes.
5. Adjust seasoning with salt and pepper according to taste.
6. Add sotanghon and simmer for 3 minutes.
7. Remove from heat then serve.
