Banana Chocolate Pops

Filipino Style Recipe: Banana Chocolate Pops is an easy and sweet and healthy frozen dessert. This dessert has a sweet flavor of frozen banana coated with melted chocolate and rolled in sprinkles. Making this dessert with your kids is a fun way and they will surely love it.

Estimated time of preparation and cooking: 10-15 minutes(plus chilling time)
Good for 6 Pops

Ingredients:
3 large bananas, peeled and cut in half
1/2 cup chocolate chips
1 tablespoon olive oil
6 bamboo or popsicle sticks
1/4 cup choice of sprinkles(rice crispy, crushed nuts, chocolate sprinkles, rainbow sprinkles)

Procedures:
1. Skew each banana on bamboo sticks and wrap with plastic wrap then freeze for an hour.
2. In a sauce pan, heat oil olive then melt chocolate chips.
3. Dip bananas in the melted chocolate until completely covered then decorate with the desired sprinkles.
4. Set aside for a minute then place in a freezer for an hour before serving. Enjoy.

Notes:
1. You may also melt chocolate using microwave oven.
2. You may use cocoa powder and sugar dissolve in water if chocolate chips is not available.

Squash Yema

Filipino Style Recipe: Squash Yema is another popular and easy Filipino sweet delicacy that is made up of mashed squash(kalabasa) then mixed and cooked with condensed milk and egg yolks. Some added flavor like jack fruit, ground nuts or just roll it into sugar.

Estimated time of cooking: 10-15 minutes

Ingredients:
1/3 cup squash(kalabasa), boiled then mashed
1 big can condensed milk
3 egg yolks
1 tablespoon butter
1 Tablespoon vanilla(optional)
1/2 cup white sugar for coating(optional)

Procedures:
1. In a bowl, combine condensed milk, squash, egg yolks and vanilla. Mix well.
2. In a saucepan, melt butter over low heat. Add milk mixture.
3. Keep stirring for 15 minutes or until thick. Remove from heat and let it cool.
4. Shape the mixture into balls and roll in granulated sugar.
5. Repeat until all the mixture are consumed. Wrap into cellophane or put in fluted baking cups.

Notes:
1. You may also add flavored like ground nuts or jack fruit.

Pancit Miki Guisado

Filipino Style Recipe: pancit miki guisado is a stir fried noodle dish similar to pancit canton. Like other noodle dish, this recipe is made of pork meat, vegetables and miki noodles which is thinner compared to Lomi noodles. We added shrimps, squid balls and more vegetables to enhance the taste.

Good for 5-8 persons

Ingredients:
500 grams miki noodles
200 grams pork belly, slice into small pieces
200 grams shrimp, peeled
2 pieces carrots, sliced
1 cabbage, chopped
1/4 kilo green beans or snow peas(sitsaro)
1 cup celery(kintsay), sliced
6 gloves garlic, minced
1 onion, chopped
3 tablespoons oyster sauce
2 cups hot water or chicken broth
2 tablespoons cooking oil
salt and pepper to taste

100 grams squid balls, cut into half(optional)
100 grams mushrooms(taingang daga)(optional)
100 grams chicken breast or liver(optional)
1/4 cup spring onions, diced(optional)

Procedures:
Part 1
1. Wash miki noodles in running water. Drain and set aside.

Part 2
1. In a wok, heat oil then saute the garlic and onions.
2. Add pork, liver and squid balls then cooked until color turns to brown.
5. Add oyster sauce and hot water then stir and bring to boil.
4. Add shrimps and vegetables then stir fry until the vegetables are half-cooked.
5. Add miki noodles then stir and cook for 3 minutes or until the liquid has been absorbed.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to a serving plate then garnish with spring onion. Serve and enjoy.

Deep Fried Prawns

Filipino Style Recipe: deep fried prawns is comprises a prawns as main ingredient. Normally the prawns mix with batter and coated with bread crumbs then deep fried until golden brown. It is usually served plain with mayonnaise or sweet and sour sauce.

Estimated time of preparation: 10-15 minutes
Estimated time of cooking: 20-25 minutes

Ingredients:
1 kilo prawn, peeled(tails left on and deveined)
4 eggs, beaten
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
1 cup bread crumbs
vegetable oil for frying
1/2 teaspoon paprika(optional)

Procedures:
Part 1
1. In a bowl, combine flour, paprika, salt and pepper. Mix well.
2. Add prawn and deep in beaten egg then coated onto breadcrumbs.

Part 2
1. In a frying pan, heat oil and fry the prawn for 3 minutes until golden brown. Do not overcooked.
2. Remove prawn and drain on paper towels.
3. Serve with dip.

Pesto Pasta

Filipino Style Recipe: pesto pasta is an easy and healthy Italian pasta dish. Pesto is made of processed basil, pine nuts, extra virgin olive oil, salt and pepper then usually served with pasta or bread.

Estimated time of preparation and cooking: 15-30 minutes.
Good for 3-4 person

Ingredients:
200 grams Penne pasta or any pasta
3/4 cups fresh basil leaves, chopped
3 tablespoons pine nuts or roasted pili nuts or walnuts
1/3 cup extra virgin olive oil
1/2 cup grated Parmesan cheese or feta cheese
salt And pepper to taste
2 chicken breast fillet, fried and flakes(optional)
2 whole tomatoes, diced(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a food processor or blender, process chopped basil, pine nuts, salt and pepper until blended.
2. Add extra-virgin olive oil then continue blending until combined. Add more olive oil if needed. Set aside.
3. Prepare pasta on pasta tray, pour the pesto sauce on top then add chicken flakes, tomatoes and grated cheese. Toss together then Serve!

Notes:
1. You may also used peeled and deveined shrimps instead of chicken.
2. You may also used pesto pasta sauce mix which is available in grocery stores instead of doing the pesto sauce by yourself.

Fruit Cake

Filipino Style Recipe: Fruit cake is a sweet cake that is usually serve during Holiday season. This is cake is made of butter, sugar, salt, eggs, flour and baking powder mixed with candied fruits and chopped nuts soaked in liquors like brandy or rum then baked until golden brown.

Estimated time of preparation: 15-20 minutes(plus soaking time)
Estimated time of cooking: 50 minutes

Ingredients:
1/2 cup raisins
1/2 cup red and green maraschino cherries, drained
1/2 cup walnuts, chopped
1/2 cup candied pineapple chunks
1/2 cup brandy or rum
2 cups sugar(plus 1 cup sugar for caramel syrup)
2 cups flour
2 teaspoons baking powder
250 grams butter, melted
6 eggs
1/2 cup water
1 teaspoon salt
2 teaspoons vanilla essence(optional)

Procedures:
Part 1(Soaking Fruits)
1. In a stainless steel bowl, pour brandy then soak fruits.
2. Cover and let stand overnight at room temperature. Set aside.

Part 2(Caramel Syrup)
1. In a heated pan, pour 1/2 cup water then dissolved 1 cup sugar until caramelized. Let it cool and set aside

Part 3(Batter Mixture)
1. In a large bowl, combine flour, baking powder, sugar and salt. Mix well.
2. Add butter, sugar and eggs, vanilla essence then mix well.
3. Add caramel syrup and half of soaked fruits then mix well.

Part 4(Baking)
1. In a loaf pan, grease with melted butter then dust with flour.
2. Pour mixture then bake over 300 degrees Fahrenheit for about 20 minutes then remove from the oven.
3. Sprinkle the remaining soaked fruits on top then put back in the oven.
4. Bake for another 40 minutes or until golden brown.
(Fruit cake is done when a toothpick inserted in the center comes out clean.)
5. Remove from the oven then brush top with remaining brandy from soaked fruits.
6. Let it cool then refrigerate before slicing. Enjoy!

Cassava Cake

Filipino Style Recipe: cassava cake is another sweet Filipino delicacies. It is made of grated cassava(Kamoteng Kahoy) as main ingredients then mixed with condensed milk, coconut milk, eggs, butter and macapuno or young coconut strips. Topped with creamy milk mixture then baked until firm and golden brown. This cake has a thick and soft consistency and chewy and spongy texture.

Estimated time of preparation and cooking: 60-80 minutes

Ingredients:
Cassava Cake:
2 packs(16 oz.) grated cassava
1 can(14 oz.) condensed milk
1 can(14 oz.) coconut milk
1/4 cup melted butter
2 pieces eggs, beaten
1/2 bottle macapuno
2 cups brown sugar
1/2 teaspoon salt

Topping:
1/2 can condensed milk
1/2 can coconut milk
1 egg yolk
1/2 bottle macapuno

Procedures:
Part 1
1. In a large bowl, combine cake ingredients. Mix well
2. In a baking pan, grease with butter then pour the mixture.

Part 2
1. Bake over 350 degrees Fahrenheit for about 45 minutes or until firm.
2. In a bowl, mix topping ingredients then spread evenly over cake.
3. Bake again for another 15 minutes or until top turns to golden brown.
4. Remove from the oven and let it cool before slicing. Enjoy!

Notes:
1. grated cassava is available in grocery stores under frozen section.

Cheese Stick

Filipino Style Recipe: cheese stick is another simple and easy Filipino meryenda(mid-afternoon snack) that is commonly sold along the streets. Cheese stick is made of cheese strips wrapped in spring roll wrapper then deep fried until golden brown. Then served with your favorite dipping sauce.

Estimated time of preparation and cooking: 20-30 minutes

Ingredients:
1 block cheddar cheese (I Used PROCHIZ Gold) , sliced into small strips
1 pack spring roll wrapper
1 cup cooking oil
mayonnaise & ketchup for dipping sauce
powdered cheese(optional)

Procedures:
Part 1
1. Wrap the cheese in a wrapper, sealed the edges with water.

Part 2
1. In a frying pan, heat oil then deep fried cheese sticks for 3 minutes or until golden brown. Drain on paper towel
2. In a container, add powdered cheese and fried cheese sticks then cover and shake until coat evenly.
3. Serve with mayo-ketchup dip.

Pansit Bihon Guisado

Filipino Style Recipe: pansit bihon guisado is a noodle dish originate from Chinese that has become very popular in Filipino cuisine. Pansit bihon consists of rice noodles(bihon) mixed with pork, chicken and different vegetables. This dish is commonly served in different occasions.

Estimated time of preparation and cooking: 40-60 minutes
Good for 8-10 persons

Ingredients:
500 grams rice noodles(bihon)
100 grams pork, sliced in small pieces
1 chicken breast, cooked and shredded
4 cups chicken broth from chicken breast
4 tablespoons soy sauce
1/4 kilo snow peas(sitsaro)
2 cups cabbage, sliced into strips
1 carrot, julienned
1 cup celery(kintsay), sliced
4 tablespoons cooking oil
1 onion, chopped
4 cloves garlic, minced
salt and pepper to taste
10 pieces calamansi

100 grams pork or chicken liver(optional)
100 grams shrimps, shelled and deveined(optional)
1 chicken cube(bouillon cube)(optional)

Procedures:
Part 1
1. In a big bowl with water, soak noodles for 10 minutes or until soft. Drain and set aside.

Part 2
1. In a wok, saute the garlic and onions.
2. Add pork and liver, then cooked until color turns to brown.
3. Add broth, soy sauce, and bouillon cube then simmer for 3 minutes.
4. Add vegetables and the remaining ingredients then season with salt and pepper. Simmer for 5 minutes or until half cooked.
5. Remove and set aside all the ingredients except for the liquid.(Make sure the liquid is enough for the noodles to cook and absorb).
6. Add bihon then toss until the the liquid absorb.
7. Put back all the ingredients then cooked 2 minutes. Mix well.
6. Adjust seasoning according to taste then remove from heat. Serve hot with calamansi.

Pansit Palabok

Filipino Style Recipe: Pansit Palabok is another popular noodle dish in the Philippines. The usual pansit palabok is made of pansit bihon with palabok sauce consists of shrimp juice, annatto water, flour and fish sauce. Topped with tinapa flakes, sliced hard-boiled eggs, shrimps, squids and chicharon.

Ingredients:
500 grams rice or cornstarch noodles (bihon), I used HOBE special palabok
8 pieces calamansi, sliced
spring onions for garnishing(optional)

Sauce:
200 grams ground pork
annatto water(dilute 1 tablespoon annatto seeds in 1/4 cup hot water)
1/2 cup flour or cornstarch(dissolved in 1/2 cup water)
2 pieces onions, chopped
1 shrimp cube(Bouillon cube)
3 cups water
2 tablespoons vegetable oil
fish sauce or salt and pepper to taste

Choice of Toppings:
1 head garlic, minced(toast until light brown)
2 hard boiled eggs, sliced
2 pieces tofu(tokwa)(fried and cut into small cubes)
1/2 cup smoked fish(tinapa)(fried and flakes)
1/2 cup chicharong baboy, ground
1/2 cup shrimps, peeled(stir-fried)
1 cup squid, clean and cut into rings(stir-fried)

Procedures:
Part 1
1. In a sauce pan, heat oil saute onion then add ground pork. Cook until brown.
2. Pour water, annato water, shrimp cube and dissolved flour. Continue stirring until thicken.
3. Season with fish sauce and pepper according to taste. Keep warm and set aside.

Part 2
1. In a big bowl with water, soak noodles for 5 minutes. Drain and set aside.
2. Boil water in a pot. Place the soaked noodles in a strainer then dip in the boiling water.
3. Cook for 5 minutes or until firm and tender. Drain and transfer to a serving plate.

Part 3
1. Pour the sauce on top then arrange toppings over the sauce.
2. Sprinkle with ground chicharon, tinapa flakes and spring onions then serve with calamansi.
