Buttered Garlic Chicken

Ingredients:
500 grams chicken, cut into serving pieces
1/2 cup olive oil
2 heads of garlic, chopped
1/4 cup unsalted butter
1/4 cup chicken stock
salt and pepper to taste

Procedures:
Part 1
1. Pat dry chicken then season with salt and pepper.
2. In a container, combine olive oil, garlic and chicken.
3. Marinate for an hour or overnight inside the fridge. Reserve olive oil.

Part 2
1. In a frying pan, heat olive oil from marinade then fry garlic until light brown. Remove and set aside.
2. In a same frying pan, fry marinated chicken until golden brown. Drain.

Part 3
1. In a baking pan, arrange fried chicken then add butter, chicken stock and a teaspoon of olive oil.
2. Cover with aluminum foil then bake in a preheat oven over 350 degrees Fahrenheit for 20 minutes.
3. Remove cover then baste chicken and bake again for another 10 minutes.
4. Transfer to serving plate together with toasted garlic. Serve.

Garlic Beef Ribs Adobo

Filipino Style Recipe: garlic beef ribs adobo or braised beef ribs is another mouth-watering beef dish. Normally the beef spare ribs marinate and cooked in a blend of soy sauce, lime juice, brown sugar, star anise, peppercorns, bay leaves, salt and pepper until absorb and sizzle.

Ingredients:
500 grams beef spare ribs, cut into serving pieces
1/2 teaspoon chili flakes
1 head garlic, minced

Marinade:
1/2 cup soy sauce

1/2 cup brown sugar
1 tablespoon peppercorn
2 pieces star anise
3 pieces bay leaves
2 cups water
salt and pepper to taste

Procedures:
Part 1
1. In pan, heat oil and saute the garlic until golden brown, drain and set aside.

Part 2
1. In a large pot, combine spare ribs and marinade. Marinate for at least 30 minutes.
2. Cook in a low heat for about 1-2 hours or until the beef is tender. Add water if necessary.
3. Adjust seasoning according to taste. Simmer until the sauce thicken and start rendered oil.
4. Transfer to serving bowl then sprinkle with toasted garlic and chili flakes. Serve.

Baked Rosemary Garlic Chicken

Ingredients:
6 pieces chicken legs and thighs

Procedures:
Part 1
1. In a bowl, combine beef and marinate ingredients. Marinate the beef for 2 hours.

Part 2
1. In a pan, heat 1 tablespoons olive oil and toast the garlic until colors turn to golden brown and crispy. Drain and set aside.

Part 3
1. In the same pan, cook the beef for 5 minutes or until brown and start to render oil.
2. Add butter then stir cook for 2 minutes.(Don’t overcooked, beef will become tough).

Part 4.
1. Remove from heat and transfer the beef to serving plate.
2. Sprinkle with fried garlic then serve with streamed rice.

Crispy Garlic Chicken Recipe

1. Dip each chicken pieces to egg mixture, then thoroughly coat to flour mixture. Set aside.

1. In a frying pan, heat vegetable oil and deep fry chicken for 5 minutes or until color turns to golden brown.
2. Drain on paper towel.

1. Transfer the chicken to serving plate serve with desired dip such ketchup, mayonnaise or  mustard.
