Relyenong Bangus

Filipino Style Recipe: Relyenong bangus or stuffed milkfish is one of the most delicious and popular Filipino dish. This dish is considered as special dish because it requires a lot of patience, effort and time. The fish meat sauteed and then cooked with other ingredients and seasonings. The bangus skin stuffed with meat mixture until resembled to original shape then fry until golden brown.

Estimated time of cooking: 40 minutes
Good for 5-6 servings

Ingredients:
1 large-sized bangus(milkfish), scales removed
4 cloves garlic, minced
1 onion, finely chopped
1 small sized carrot, cut into small cubes
2 tablespoons raisins
1 large-sized egg, beaten
2 tablespoons soy sauce
2 tablespoons calamansi or lime juice
salt and pepper to taste
1/4 cup water
2 tablespoons flour
cooking oil for frying

Procedures:
Part 1
1. Using flat side of a knife, gently pound fish then break the spine near the head and on the tail.
2. Insert the spoon through the neck then gently scrape the meat off without breaking the skin.

Part 2
1. In a bowl, marinate the head and skin with soy sauce and calamansi juice for 30 minutes. Drain and set aside.
2. In a pot, boil fish meat in water for 5 minutes. Drain
3. Remove remaining bones then flakes the meat. Set aside.

Part 3
1. In a pan, heat oil then saute garlic, onion and carrot.
2. Add fish meat, soy sauce then season with salt and pepper according to taste.
3. Add raisins then cook for 5 minutes while keep stirring. Let it cool then add egg and mix well.

Part 4
1. Stuff the bangus with mixture until it resembles to original shape.
2. Dredge the fish with flour then fry in a low heat until golden brown.
3. Let it cool before slicing.

Note:
1. You may also cook relyenong bangus into oven by wrapping it with wilted banana leaves or aluminum foil then bake for 350 degrees Fahrenheit for 40 minutes.

Afritadang Bangus

Filipino Style Recipe: Afritadang bangus or milkfish is another variety of popular Filipino tomato-based stew. Afritada is commonly consist of chicken but we will use milkfish(bangus) for this recipe. The fish comes fried then cooked in tomato sauce together with potatoes, carrots and bell pepper. This dish is usually serve as main dish together with steamed rice.

Estimated time of preparation and cooking: 40-50 minutes
Good for 4-6 persons

Ingredients:
1 big sized milkfish(bangus), slice diagonally into 1 inch thick
1 green bell pepper, slice into strips
1 large potato, sliced
3 cloves garlic, minced
1 onion, chopped
1 pack(115 grams) tomato sauce
1 cup water
salt and pepper to taste
1 carrots, sliced(optional)

Procedures:
Part 1
1. In a frying pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.
2. Sprinkle milkfish with salt then fry until golden brown. Drain and set aside.

Part 2
1. In a pan, heat oil then saute ginger, garlic and onion.
2. Add bell pepper then continue sauteing for 2 minutes.
3. Pour tomato sauce and water then bring to boil. Season with salt and pepper.
4. Add potatoes, carrots and fried fish then simmer for 2 minutes.
5. Remove from heat then transfer to serving plate. Serve with steamed rice.

Baked Bangus Teriyaki

Filipino Style Recipe: Baked bangus teriyaki or baked milkfish teriyaki is another low-carbohydrate dish. It is usually consists of bangus fillet marinated in a blend of teriyaki sauce and other seasonings then baked until tender.

Estimated time of preparation and cooking: 30 minutes(plus marinating time)
Good for 2-3 persons

Ingredients:
500 grams boneless milkfish(bangus) fillet

Marinade:
1 cup Teriyaki sauce
1 tablespoon grated ginger or ginger powder
3 cloves garlic, minced
1/4 cup lime or calamansi juice
1 teaspoon rosemary
3 tablespoons brown sugar
2 tablespoons olive oil
1 tablespoon grind black pepper

Procedures:
Part 1
1. In a bowl, combine marinade ingredients then mix well.
2. Add fish then cover and marinate for 30 minutes or overnight inside the fridge.
3. Pre-heat oven to 350 degrees Fahrenheit for 10 minutes.

Part 2
1. In a non-stick pan, grease with olive oil then place marinated fish skin side down.
2. Bake over 350 degrees Fahrenheit for about 15-20 minutes or until fish flakes with fork. Brush with remaining marinade from time to time.
3. Remove from the oven then transfer to serving plate. Serve hot with steamed veggies. Enjoy!

Milkfish Steak(Bistek)

Filipino Style Recipe: milkfish steak or bistek tagalog na bangus is another variety of steak(bistek) dish. The fish marinade and fry until golden brown. Then re-cooked in marinade together with onion rings.

Estimated time of preparation and cooking: 20-30 minutes(plus marinating time)
Good for 3-4 persons

Ingredients:
4 slices milkfish(bangus) belly, deboned
1 large white onion, cut into rings
1/4 cup cooking oil

Marinade:
6 calamansi, juice
4 tablespoons soy sauce
4 cloves garlic, minced
1 thumb-sized ginger, julienned
salt and pepper to taste

Procedures:
Part 1
1. Marinate milkfish in calamansi juice, soy sauce, garlic, ginger, salt and pepper for 30 minutes.

Part 2
1. In a pan, heat oil then lightly fry onions for a minute. Drain and set aside.
2. In a same pan, fry marinated fish until crisp and golden brown. Drain and set aside.
3. In a same pan, reduce oil then saute garlic and ginger.
4. Pour marinade then adjust seasoning according to taste.
5. Put back fried fish and fried onions then simmer for a few seconds.
6. Remove from heat then transfer to serving plate. Serve with garlic rice.

Bangus Sisig

Filipino Style Recipe: bangus sisig is another variety of Filipino sisig that usually served as finger food(pulutan). Normally the fish comes fried or steamed then debone and flake. Marinade with soy sauce, vinegar, sugar, salt and pepper. Stir fried until the sauce is absorb then add green chili and transfer to sizzling plate with egg and calamansi.

Estimated time of cooking: 15-20 minutes
Good for 4-5 persons

Ingredients:
1 kilo boneless milk fish(bangus), cleaned
3 gloves garlic, chopped
3 red onions, chopped
4 tablespoons vinegar
4 pieces green chili(siling haba), chopped
1 tablespoon cooking oil
calamansi
3 pieces red chili(siling labuyo), chopped(optional)
1/2 tablespoon mayonnaise(optional)
1 raw egg(optional)

Marinade:
3 tablespoons soy sauce
2 tablespoons oyster sauce
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon Pepper

Procedures:
Part 1
1. Fry or steam the boneless milk fish. Flake the fish and discard bones. Chop and set aside.

Part 2
1. In a bowl, combine soy sauce, oyster sauce, sugar, salt and pepper.
2. Add the fish then mix well. Marinate for 30 minutes.

Part 3
1. In a pan, heat oil and saute garlic and onions.
2. Add marinated fish including the marinade then pour vinegar.
3. Add green and red chili and adjust seasoning according to taste.
3. Stir fry until the sauce is almost absorb then add mayonnaise. Stir well.
3. Transfer to hot sizzling plate and add fresh egg on top. Serve immediately with calamansi.

Sinigang na Bangus

Filipino Style Recipe: sinigang na bangus or milkfish in tamarind is another simple and easy Filipino dish. This is similar to sinigang na hipon and sinigang na baboy that has a sour broth. Normally the milkfish cooked in a combination of rice washing, onions, tomatoes, vegetables and tamarind which gives a sour taste.

Estimated time of preparation and cooking: 20-30 minutes
Good for 3-4 persons

Ingredients:
1 medium-sized milk fish(bangus), cut in about 4-5 slices
6 tamarind(sampaloc) or 1 pack(22grams) sampaloc mix
6 cups water or rice washing
3 pieces tomatoes, quartered
1 onion, chopped
1 bundle kangkong leaves or sweet potato leaves
1 cup string beans(sitaw), cut into 2 inches long
2 pieces green pepper(siling haba)
Salt or Fish Sauce(patis) to taste

Procedures:
Part 1
1. In a pot, pour water and add onion and tomatoes. Bring to boil.
2. Add milk fish, cook and simmer for 10 minutes.
3. Add tamarind juice or sampaloc mix. Simmer for 5 minutes.
4. Add green chili, string beans then kangkong leaves.
6. Season with salt or fish sauce according to taste.
7. Serve hot.

Notes:
If using tamarind instead of sinigang mix, here’s the procedure:
1. Boil tamarind until soften.
2. Pound and extract the juices.
