Potato Salad

Filipino Style Recipe: potato salad is comprises a potato as main ingredient. Combine with mayonnaise, mustard, hard-boiled eggs, lemon juice, chives, salt and pepper for salad dressing.

Estimated time of preparation: 20-30 minutes. Good for 3-4 persons

Ingredients:
1 kilo potatoes, cleaned
1 cup mayonnaise
1 tablespoon mustard
1/2 cup spring onion or chives, chopped
1 tablespoon lemon or calamansi juice
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper

3 hard-boiled eggs, peeled and chopped(optional)
1 cup cheddar cheese, grated (optional)
1 teaspoon dried thyme(optional)
1/2 cup celery, chopped(optional)
1/4 cup parsley, chopped(optional)
1/2 cup chicken breast flakes or smokey bacon tidbits(optional)

Procedures:
Part 1
1. In a large pot, boil water with salt then cooked potatoes for 15-20 minutes or until tender.
2. Let it cool then peel and chop the potatoes into cubes.
3. Place in a large bowl and set aside.

Part 2
1. In a bowl, combine the remaining ingredients and stir until well blended.
2. Pour over potatoes then toss gently to coat. Cover and refrigerate for 3 hours before serving.

Chili Cheese Sticks(Dynamite)

Filipino Style Recipe: Chili cheese sticks AKA dynamite is a simple and popular cheese sticks in Bacolod. Chili cheese stick is made of finger chili(siling haba) stuffed with cheese strips then wrapped in spring roll wrapper, deep fried until golden brown and crisp and served with your favorite dipping sauce.

Estimated time of preparation and cooking: 20-30 minutes

Ingredients:
20 pieces finger chili(siling haba)
1 block cheddar cheese , sliced into small strips
Spring rolls or lumpia wrappers
cooking oil for deep frying

Procedures:
Part 1
1. Using a sharp knife, slit each chili vertical cut then scrape out the seeds. Rinse and drain.
2. Stuff the chili with cheese then wrap and roll the wrapper, use a bit of water to seal the edges.

Part 2
1. In a frying pan, heat enough oil then deep fry the rolls for 2-3 minutes until golden brown and crisp.
2. Drain on paper towel then serve with preferred dressing.

Notes:
1. You may also add strips of ham together with cheese if you prefer.

Hardinera

Filipino Style Recipe: Hardinera is a special and popular dish in Lucban Quezon. It is made up of chunk pork cooked in tomato sauce, then mixed with beaten eggs together with other ingredients. Place in a glass or aluminum molds then steamed or baked until firm. This is similar to pork everlasting of Marikina and looks like meatloaf or embutido.

Estimated total time of cooking: 60 minutes

Ingredients:
1/4 kilo pork, cut into small cubes
1/2 cup tomato sauce
3 cloves garlic, minced
1 onion, chopped
200 grams luncheon meat or sausages, cut into small cubes
1/2 cup pineapple chunks
1 small size carrot, cut into small cubes
2 tablespoons sweet pickled relish
1/4 cup raisins
2 eggs, beaten
1/2 cup pork broth
2 tablespoons cooking oil
salt and pepper to taste

1 small red bell pepper, cut into diced(optional)
1/4 cup liver spread(optional)
1/4 cup grated cheddar cheese(optional)
1/2 cup bread crumbs(optional)

Procedures:
Part 1
1. In a casserole, heat oil then saute garlic, onion and pork for 3-5 minutes.
2. Add pork broth and tomato sauce then stir and simmer for 20 minutes or until tender and the liquid is absorb and sizzle. Remove from heat and set aside.

Part 2
In a bowl, combine cooked pork and the rest of the ingredients. Mix until well combined.

Part 3
1. In a glass or grease aluminum molds, put the mixture and spread evenly.
2. Cover with aluminum foil then steam or bake for at least 45 minutes or until firm.
3. Remove the molds then transfer to serving plate. Serve hot.

Deep Fried Prawns

Filipino Style Recipe: deep fried prawns is comprises a prawns as main ingredient. Normally the prawns mix with batter and coated with bread crumbs then deep fried until golden brown. It is usually served plain with mayonnaise or sweet and sour sauce.

Estimated time of preparation: 10-15 minutes
Estimated time of cooking: 20-25 minutes

Ingredients:
1 kilo prawn, peeled(tails left on and deveined)
4 eggs, beaten
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
1 cup bread crumbs
vegetable oil for frying
1/2 teaspoon paprika(optional)

Procedures:
Part 1
1. In a bowl, combine flour, paprika, salt and pepper. Mix well.
2. Add prawn and deep in beaten egg then coated onto breadcrumbs.

Part 2
1. In a frying pan, heat oil and fry the prawn for 3 minutes until golden brown. Do not overcooked.
2. Remove prawn and drain on paper towels.
3. Serve with dip.

Hot and Spicy Chicken Wings

Filipino Style Recipe: Hot and Spicy Chicken Wings is another easy and mouth-watering chicken dish. This is usually made of chicken wings marinated then fry until golden brown. The fried chicken wings coated in a blend of spicy sauce and seasonings then usually served as appetizer or pulutan.

Estimated time of preparation: 15 minutes(plus marinating time)
Estimated time of cooking: 30-40 minutes

Good for 3-5 persons

Ingredients:
500 grams chicken wings, tips removed
1 tablespoon salt
1 tablespoon ground pepper
1 tablespoon cayenne pepper
1 cup flour
1/2 cup butter or margarine
1/2 cup ketchup
1/4 cup red hot chili sauce
1 teaspoon chili flakes
1/4 cup brown sugar
cooking oil for deep frying

Procedures:
1. In a bowl, combine chicken wings, cayenne pepper, salt and pepper. Marinate for 30 minutes.
2. In a frying pan, heat oil then dredge the chicken wings in flour then deep fry until golden brown. Drain and set aside.
3. In a pan, melt butter then add ketchup, hot sauce, chili flakes and brown sugar. Stir well.
4. Add chicken wings then toss until well coated. Transfer to a platter then serve.

Cheese Stick

Filipino Style Recipe: cheese stick is another simple and easy Filipino meryenda(mid-afternoon snack) that is commonly sold along the streets. Cheese stick is made of cheese strips wrapped in spring roll wrapper then deep fried until golden brown. Then served with your favorite dipping sauce.

Estimated time of preparation and cooking: 20-30 minutes

Ingredients:
1 block cheddar cheese (I Used PROCHIZ Gold) , sliced into small strips
1 pack spring roll wrapper
1 cup cooking oil
mayonnaise & ketchup for dipping sauce
powdered cheese(optional)

Procedures:
Part 1
1. Wrap the cheese in a wrapper, sealed the edges with water.

Part 2
1. In a frying pan, heat oil then deep fried cheese sticks for 3 minutes or until golden brown. Drain on paper towel
2. In a container, add powdered cheese and fried cheese sticks then cover and shake until coat evenly.
3. Serve with mayo-ketchup dip.

Ampalaya Salad

Filipino Style Recipe: Ampalaya salad or ensaladang ampalaya(bitter gourd salad) is another easy yet healthy dish. The ampalaya and radish were marinated in salt then mash until all juice has been removed. Then combine with radish, white onion, tomatoes, vinegar, sugar, salt and pepper.

Estimated time of preparation: 8-10 minutes(plus marinating time)

Ingredients:
1 large bitter gourd(ampalaya), remove seeds and sliced thinly
1 radish(labanos), peeled and sliced thinly
1 large white onion, sliced
3 large tomatoes, sliced
1/2 cup vinegar
1/4 cup sugar
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, put sliced ampalaya then sprinkle with salt. Let stand for at least 15 minutes.
2. Squeeze out excess water from the bitter gourd with the hand. Rinse and drain well.
3. In a separate bowl, do the same procedure to radish.

Part 2
1. In a bowl, combine vinegar, sugar, salt and pepper. Mix until well blended.
2. In a large bowl, combine ampalaya, radish, onion and tomatoes then pour vinegar mixture.
3. Mash with hand and toss. Serve.

Notes:
1. You may also add hard-boiled eggs and boiled shrimp in this recipe.

Chicken Sisig

Filipino Style Recipe: chicken sisig is another variety of Filipino sisig that usually served as finger food(pulutan). Normally the chicken fillet and liver comes fried then chopped into small pieces. Stir fry soy sauce, oyster sauce, salt and pepper. Stir fried until the sauce is absorb then add green chili and transfer to sizzling plate with egg and calamansi.

Estimated time of cooking: 20-30 minutes
Good for 4-5 persons

Ingredients:
1 kilo chicken fillet
300 grams chicken liver
3 gloves garlic, chopped
2 onions, chopped
4 pieces green chili(siling haba), chopped
1 tablespoon olive oil
3 tablespoons soy sauce
2 tablespoons oyster sauce
Salt and pepper to taste
calamansi
3 pieces red chili(siling labuyo), chopped(optional)
1/2 tablespoon mayonnaise(optional)
1 raw egg(optional)

Procedures:
Part 1
1. In a bowl, season chicken fillet and liver with salt and pepper.
2. In a pan, heat oil then fry fillet and liver until color turns to golden brown.
3. Let it cool then chopped into small pieces. Set aside.

Part 2
1. In a same pan, heat oil then saute garlic and onions.
2. Add chicken fillet and liver, crush the liver while cooking.
3. Add chopped chili, soy sauce, oyster sauce and ground pepper. Mix well.
4. Stir fry until the sauce is almost absorb then add mayonnaise. Stir well.
5. Transfer to sizzling plate and add fresh egg on top then serve with calamansi. Done

Stir Fry Shrimp in Tomato Paste

Filipino Style Recipe: Stir fry shrimp in tomato paste is another easy and quick shrimp dish. It usually consists of shrimp fried and cooked in tomato paste, soda and vinegar then season with salt and pepper.

Estimated time of preparation and cooking: 20-30 minutes
Good for 2-3 servings

Ingredients:
12 large shrimps, peeled and deveined
1/2 egg white
1 tablespoons cornstarch
3/4 tablespoon tomato paste
1/4 cup vinegar
1 1/2 cups soda(sprite or 7-up)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, mix cornstarch, egg white and salt. Toss shrimp to coat evenly.
2. In a frying pan, heat oil and fry shrimp until color turns to golden brown. Drain and set aside.

Part 2
1. In a sauce pan, pour tomato paste, soda, vinegar, salt and pepper.
2. Bring to boil until slightly reduced and thicken. Stir constantly.
3. Add fried shrimp and toss to coat. Remove from heat.
4. Transfer to serving plate then serve hot.

Tokneneng

Filipino Style Recipe: Tokneneng is another popular Filipino meryenda(mid-afternoon snack) that is commonly sold along the streets. Tokneneng is a hard-boiled chicken eggs wrapped in orange batter then deep fried until golden brown. This is similar to kwek-kwek which is made up of quail eggs instead of chicken or duck eggs.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 20 minutes

Ingredients:
12 pieces chicken eggs, hard-boiled
2 cups flour
1 tablespoon baking powder
3/4 cup water
salt and ground pepper to taste
1 teaspoon orange food coloring
cooking oil for frying

Procedures:
1. In a mixing bowl, combine flour,salt, pepper, water and food coloring. Mix until well blended.
2. Add baking powder, stir to smooth batter and set aside for 15 minutes.
3. Place the hard-boiled eggs in the mixing bowl and coat with batter.
4. Spoon out the eggs from the batter and deep fry in hot cooking oil for a minute or until the coating is crispy.
5. Drain and serve with spicy vinegar or sweet and sour sauce. Enjoy!

Notes:
1. You may also used anatto water instead of food coloring.
2. You may used duck eggs or quail eggs instead of chicken eggs.
