Halo-Halo

Filipino Style Recipe: Halo-halo is a famous Filipino dessert consists of shaved ice, milk and various sweet ingredients then mixed together. Top with ice cream, ube halaya or leche flan makes the halo-halo’s special and delicious. This dessert is easy and simple to prepared and usually served during meryenda(mid-afternoon snack) that is commonly sold along the streets and usually served during summer season. The famous Halo-halo that I’ve tried so far are from Razons and Chowking, the kids really love this dessert.

Estimated time of preparation: 5-8 minutes

Ingredients:
shaved ice
evaporated milk
white sugar
leche flan(optional)
ice cream, any flavor(optional)
rice crispy(optional)

Choose at least 5 sweets you want:
*coconut sport(macapuno)
*colored gelatin(red/green)
*coconut gel(nata de coco)
*sugar palm(kaong)
*sweetened red beans
*ripe jackfruit(langka)
*tapioca pearls(sago)
*sweetened bananas(minatamis na saging)
*ube halaya or leche flan

Procedures:
1. In a bowl or tall glass, combine 1 tablespoon of each sweets and sugar.
2. Add shaved ice then pour evaporated milk top with leche flan, ice cream and rice crispy. Serve immediately.

Black Forest Cake

Filipino Style Recipe: black forest cake is another sweet cake that is usually serve during special occasion or Holiday season. It is usually made with a layer of chocolate sponge cake, cherry syrup and whipping cream. Garnish with chocolate shavings and cherry then chilled before serving.

Estimated time of preparation: 20 minutes(plus chilling time)
Estimated time of baking: 40 minutes

Ingredients:
Chocolate Sponge
1/2 cup all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup unsweetened cocoa powder
1 cup evaporated milk
3 eggs
1 cup granulated white sugar
3/4 cup olive oil

Whipping Cream
2 1/2 cup heavy whipping cream
1/2 cup granulated white sugar
1 teaspoon vanilla extract

Garnishing
chocolate shavings
1 jar of cherries in syrup, drain and reserve the syrup
4 teaspoons brandy(optional)

Procedures:
Part 1(Chocolate Sponge)
1. In a bowl, combine milk, eggs, sugar and olive oil. Mix well until sugar dissolves.
2. In a separate bowl, combine flour, baking soda, baking powder and cocoa powder. Mix until well blended.
3. Combine the two mixtures then whisk very well.

Part 2(Baking)
4. In a 9inch round cake pan, grease with melted butter then dust with flour.
5. Pour mixture then bake over 350 degrees Fahrenheit for about 40 minutes.
6. Remove from the oven and let it cool then slice into 3 equal layers. Set aside.

Part 3(Whipping Cream)
1. In a bowl, combine whipping cream, sugar and vanilla essence then whisk until well blended. Set aside.

Part 4(Cherry Syrup and Brandy)
1. In a bowl, combine cherry syrup and brandy. Mix well and set aside.

Part 5(Assembly)
1. Take the bottom layer of the cake then spread a layer of cherry-brandy syrup then a layer of cream mixture.
2. Place the middle layer of the cake then repeat the procedure until the final layer.
3. Add a final layer of cream mixture all over the cake then sprinkle with chocolate shavings.
4. In a pastry bag, place the remaining cream mixture then decorate the cake and then top with fresh cherries.
5. Refrigerate for several hours or overnight before serving.

Banana-Cream Crepes

Filipino Style Recipe: Banana cream crepes is a popular dessert made of very thin pancakes originated from France. It is consists of flour, eggs, milk, vanilla and salt whisk together then chilled overnight. Cooked and swirl in hot pan with butter until almost set. I got this idea from one of the stall somewhere in Boracay last month, they served crepes with different variety of fillings. I used banana slices and vanilla ice cream in this recipe, but you may choose your own combination of fillings.

Estimated time of preparation: 10 minutes(plus chilling time)
Estimated time of cooking: 5 minutes
Good for 6 crepes

Ingredients:
1 cup all-purpose flour
2 eggs, beaten
1/2 cup evaporated milk
1/4 teaspoon salt
2 tablespoons butter, melted
1/2 teaspoon vanilla extract(optional)
1 ripe plantain, sliced
vanilla ice cream

Procedures:
Part 1
1. In a bowl, combine flour and eggs. Whisk well.
2. Add milk, vanilla extract, butter and salt. Mix until well combine.
3. Cover and refrigerate for 4 hours or overnight.

Part 2
1. In a non-stick pan, melt butter then scoop and pour 1/4 cup of batter.
2. Swirl the batter then cook for 20 seconds or until almost set. Flip and cook the other side.
3.Transfer to serving plate then place the banana slices and a scoop of vanilla ice cream in the center.
4. Fold both side to form a triangle then serve.

Carioca(Karioka)

Filipino Style Recipe: Carioca or Karioka is another typical Filipino meryenda(mid-afternoon snack). It is usually made up of sticky rice balls filled with sweet red bean paste. Deep fried until goldent brown then coated in brown sugar glaze.

Ingredients:
cooking oil for frying
bamboo sticks

Dough:
2 cups sweet rice flour
1 1/2 cups coconut milk

Glaze:
1 cup light brown sugar
1/4 cup coconut milk

Fillings:(optional)
sweet red beans paste

Ingredients:
Part 1
1. In a bowl, combine rice flour and coconut milk. Mix well until dough like.
2. Take 2 tablespoons of dough and make a ball shape.
3. Flatten the center of the dough using your thumb and scoop in at least 1 tablespoon of filling.
4. Fill in the center of dough, seal then roll into a ball and flatten into a patty.

Part 2
1.In a pan, heat oil and deep fry the dough for 5 minutes or until golden brown.
2. Drain on paper towel then set aside.

Part 3
1. In a sauce pan, combine brown sugar and coconut milk then bring to a boil until glaze.
2. Dip the carioca in the mixture until completely coated.
3. Remove the carioca one by one then skew each carioca on bamboo sticks, 2-3 carioca per stick.

Mango Pie

Filipino Style Recipe: Mango pie is another popular Filipino dessert or snack. This dessert is usually made of pie crust that contains a filling of ripe mango slices then baked until crisp. I used pie crust that I bought from the grocery store and it’s a good idea because it lessen my time. I got this idea when I went to boracay for summer vacation, one of the restaurant offered this kind of dessert and it was really good!

Estimated time of preparation: 10 minutes
Estimated time of baking: 20 minutes

Ingredients:
2 pieces pie crusts
4-5 ripe mangoes, sliced thinly

Procedures:
1. Line a layer mango strips on the pie crust then bake over 350 degrees Fahrenheit for about 15 to 20 minutes.
2. Remove from oven and let it cool before serving.

Mais con Yelo

Filipino Style Recipe: mais con yelo is another sweet and refreshing beverage. This beverage is made of corn kernels, milk, sugar and cubed ice. Mais conyelo is an easy Filipino meryenda(mid-afternoon snack) that is commonly sold along the streets and usually served during summer season.

Estimated time of preparation: 5 minutes

Ingredients:
corn kernels
evaporated milk
sugar or condensed milk
shaved ice
corn flakes or crispy pinipig(optional)

Procedures:
1. In a tall glass, put 2 tablespoons of corn kernels
2. Add 1 tablespoon sugar then add shaved ice.
3. Pour 1/4 cup of evaporated milk then top with 1 tablespoon corn kernels.
4. Sprinkle with corn flakes then serve chilled.

Brazo de Mercedes

Filipino Style Recipe: Brazo de Mercedes is another popular Filipino dessert or snack that is mostly available in bakeries. Brazo de Mercedes is a rolled cake filled with custard made of egg yolks and condensed milk. This is usually served in any occasion specially during holidays.

Estimated time of baking: 20 minutes

Ingredients:
Meringue:
8 egg whites
1 teaspoon cream of tartar
3/4 cup white refined sugar
3 tablespoons confectioners sugar

Filling:
8 egg yolks
1 tsp vanilla extract
1-1/4 cups condensed milk

Procedures:
Part 1
1. In a electric mixer or mixing bowl, combine eggs and cream of tartar until soft.
2. Gradually add sugar while mixing then continue stirring until well blended.
3. In a large baking pan, lined a wax paper then grease with butter.
4. Spread the mixture evenly then bake over 350 degrees Fahrenheit for about 20 minutes or until medium brown. Set aside and Let it cool.

Part 2
1. In a pan, combine condensed milk, vanilla extract and egg yolk in a low heat. Keep stirring until thickens.
2. Sprinkle the top of meringue with confectioners sugar then top with wax paper.
3. Flip the meringue then spread the filling on top.
4. Roll the meringue into a log. Transfer into serving pan then slice and serve.

Banana Chips

Filipino Style Recipe: banana chips is a deep fried slices of bananas until crisp then coated with sugar syrup to have a sweet taste. This is a common homecoming gift(pasalubong) by most Filipinos and usually served as mid-afternoon snack(meryenda).

Estimated time of preparation: 15-20 minutes
Estimated time of cooking: 20 minutes

Ingredients:
6 pieces plantains, peeled and slice thinly
1 teaspoon salt
1/2 teaspoon turmeric powder
2 cups ice water
1/2 cup water
1/2 cup sugar
cooking oil for frying

Procedures:
1. In a bowl, combine turmeric powder and salt then dissolved in ice water. Set aside.
2. Soak the sliced bananas in a ice water mixture for 5 minutes. Drain.
3. In a frying pan, heat cooking oil then deep fry bananas for 2 minutes or until crisp. Drain on paper towel.

Part 2
1. In a saucepan, boil water then dissolved sugar. Stir until dissolved then let it cool.
2. Dip the fried bananas then drain and let it cool until almost dry. Serve.

Kalamay Ube

Filipino Style Recipe: Kalamay ube is another Filipino dessert and meryenda(mid-afternoon snack) that is commonly sold along the streets. Kalamay ube is a chewy rice purple cake made of purple yum(ube). Purple yum comes boiled, peeled and grated then cook with coconut milk, rice flour and sugar until thick. Sprinkle with coconut curd(latik) then serve warm.

Ingredients:
1 kilo purple yam(ube)
3 cups glutinous rice flour
4 cans(400ml each) coconut milk
2 cans coconut milk for curd(latik)
3 cups brown sugar
1 tablespoon pandan or vanilla extract

Procedures:
Part 1
1. On a pot, boil water then cook purple yam for 30 minutes or until soft. Drain and let cool.
2. Peel the purple yam and grate. Set aside.

Part 2
1. In a pan, pour coconut milk then cook in a low heat. Keep stirring until curdles. Set aside.

Part 3
1. In a large pan, combine the grated purple yam, sweet rice flour, coconut milk, sugar and vanilla then cook in a low heat. Keep stirring until well combined and thickened.
2. In a shallow pan or woven basket, lined a wilted banana leaves then grease with the coconut oil.
3. Transfer the mixture and spread evenly then sprinkle with coconut curd. Slice and serve warm.

Egg Pie

Filipino Style Recipe: Egg pie is another popular Filipino dessert or snack that is almost available in all bakeries. Egg pie is similar to egg custard tart, it is made up of eggs, milk, sugar and then mix until well blended. Pour the mixture into a pie crust then bake until firm and done.

Estimated time of preparation: 10-15 minutes
Estimated time of baking: 60-70 minutes

Ingredients:
2 pieces pie crust

Filling:
1 can(375 ml) evaporated milk
1/4 cup water
3 pieces raw eggs + 1 raw egg, separate egg yolk and egg white
1 cup sugar
1 teaspoon vanilla extract(optional)

Procedures:
Filling
1. In a “microwave safe” bowl, combine evaporated milk and water then heat in microwave for 2 minutes.
2. In a large bowl, combine hot milk, 3 eggs, 1 egg yolk, vanilla then gradually add sugar while mixing.
3. Using an electric mixer, beat the egg white until soft peaks then fold into the mixture until the foams separate.(this will give a brown color on top of egg pie after baking)

Baking
1. Pour the filling on the pie crust then bake over 350 degrees Fahrenheit for about 15 minutes.
2. Lower the heat to 325 degrees Fahrenheit then continue baking for 40 minutes or until toothpick inserted in the filling comes out clean.
3. Remove from oven and let it cool for 2 hours before serving.
