Sinantolan

Filipino Style Recipe: Sinantolan is another popular side dish from Southern part of Luzon specially in Laguna and Bicol region. This dish is made of grated santol meat cooked in shrimp paste and coconut cream and usually serve with fried and grilled food.

Estimated time of preparation: 20 minutes
Estimated time of cooking: 30 minutes

Ingredients:
8 pieces santol, peeled and grated the meat
2 tablespoons vegetable oil
3 cloves garlic, minced
1 onion, chopped
2 tablespoons sauteed shrimp paste
2 pieces red chili(siling labuyo), chopped
4 cup coconut cream
salt and pepper to taste

Procedures:
1. In a pan, heat oil then saute garlic and onion.
2. Add sauteed shirmp paste, chili and santol meat.
3. Stir cook for 5 minutes then pour coconut cream.
4. Simmer for 20-30 minutes or until start to render oil.
5. Adjust seasoning according to taste.
6. Remove from heat then transfer to serving plate. Serve with steamed rice.

Hawaiian Pizza Pandesal

Filipino Style Recipe: Hawaiian Pizza Pandesal is inspire to typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and various toppings. We have several left-over pandesal this morning, I want to use it before it expire. Since I am craving for pizza and I already have some ingredients, I decided to use pandesal as alternative to pizza crust. The outcome is very good and the kids love it.

Estimated time of preparation: 15 minutes
Estimated time of baking: 8-10 minutes
Good for 8 servings

Ingredients:
8 big-sized pandesal, cut in half
140 grams pizza sauce or tomato sauce
100 grams mozzarella cheese or quick melt, grated

Toppings:
100 grams pineapple tidbits, drained
100 grams sweet ham, cooked and cut into cubes

Procedures:
1. Place pandesal in a flat surface, ladle enough pizza sauce into the center and spread it out at the edges.
2. Sprinkle shredded cheese on top then arrange toppings evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.
4. Pre-heat oven over 200 degrees Fahrenheit then bake pandesal for 8-10 minutes or until the cheese is melted.
5. Remove from the oven then transfer to serving sheet. Serve hot.

MangoTortilla Rolls

Filipino Style Recipe: Mango tortilla rolls is another simple and easy Filipino meryenda(mid-afternoon snack). Mango Tortilla rolls is made of tortilla bread filled with ripe mangoes, carrots, cucumber and mayonnaise.

Estimated time of preparation: 30 minutes
Good for 10 pieces

Ingredients:
10 pieces tortillas
1 carrot, cut into strips
1 cucumber, cut into strips with skin intact
2 pieces ripe mangoes, cut into strips
3/4 cup mayonnaise

Procedures:
1. In a hot dry pan, heat tortilla for a few seconds then place in a flat surface.
2. Arrange 3-4 pieces each of cucumber, carrot, mango and fill with mayonnaise then roll.
3. Repeat the procedures for remaining pieces.
4. Cut into serving pieces before serve.

Tofu and Pechay in Oyster Sauce

Filipino Style Recipe: tofu and pechay in oyster sauce is another simple and easy dish that inspired by Chinese cuisine. This dish is made of fried tofu cooked in oyster sauce, soy sauce, water, chopped peanut and dried chili flakes together with pechay.

Estimated time of preparation and cooking: 30-40 minutes

Good for 3-4 servings

Ingredients:
300 grams tofu, cut into cubes
100 grams pork belly, cut into small pieces(optional)
a bunch of pechay, trimmed
1 red bell pepper, cut into
4 tablespoons oyster sauce
2 tablespoons soy sauce
1/2 cup water
4 tablespoons cooking oil
fish sauce, salt and pepper to taste
a dash of chili flakes(optional)
1 1/2 tablespoons peanuts, chopped(optional)
1 tablespoons spring onion, chopped(optional)

Procedures:
Part 1
1. In a pan, heat oil then fry tofu until golden brown. Drain and set aside.
2. In a same pan, stir fry pork until brown then season with fish sauce. Set aside.

Part 2
1. In a same pan, reduce oil then saute garlic and onion.
2. Put back the pork and tofu then add oyster sauce, soy sauce, water, chili flakes and peanuts.
3. Add bell peppers then cook for 2 minutes then adjust seasoning according to taste.
4. Add pechay then simmer for another minute.
5. Transfer to serving plate then sprinkle with remaining chopped peanuts and spring onion. Serve with steamed rice.

Beef Kebabs

Filipino Style Recipe: Beef kebabs(kebobs) is a popular middle eastern dish that is made up of meat and/or vegetables grilled on a skewers or spit. The traditional meat for kebab is made of lamb meat, but some used beef, goat, chicken, pork and fish. This dish was adopted in Central and South-east Asian regions specially in the Philippines.

Estimated time of preparation: 30 minutes(plus marinating time)
Estimated time of cooking: 10-15 minutes
Good for 10-12 sticks

Ingredients:
1/2 kilo beef sirloin, cut into cubes
1 green bell pepper, sliced
1 red bell pepper, sliced
1 white onion, sliced
1 tomato, sliced
100 grams pineapple chunks(optional)
1/4 cup ketchup
1 tablespoon cooking oil
10-12 pieces metal or bamboo skewers

Marinade:
1/2 cup soy sauce
2/3 cup pineapple juice
1/8 cup calamansi or lime juice
1/2 teaspoon grind black pepper
1 teaspoon salt
2 tablespoons brown sugar

Procedures:
Part 1
1. In a bowl, combine beef and marinade then cover and marinate for overnight inside the fridge.
2. Soak bamboo skewers in water for 15 minutes. Set aside.

Part 2
1. Drain beef from marinade. Combine ketchup and oil in marinade then mix well for basting.
2. Arrange beef and vegetables as desired on skewers then brush with marinade mixture.
3. Repeat the steps from remaining pieces.

Part 3
1. Grill kebabs over hot charcoal for 10-15 minutes or until tender while basting with marinade mixture.
2. Transfer serving plate and serve.

Stir Fry Chicken

Filipino Style Recipe: Stir fry chicken is another easy and simple way of cooking chicken. Chicken meat was marinated then stir fried together with marinade and vegetables until tender.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 8-10 minutes
Good for 2-3 persons

Ingredients:
500 grams chicken fillets, cut into serving pieces
100 grams snow peas, trimmed
1 red bell pepper, diced
3 cloves garlic, minced
1 onion, chopped
3 tablespoons canola oil
a dash of dried chili flakes(optional)

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 teaspoon salt
1/2 teaspoon sesame oil
1/8 teaspoon cayenne pepper(optional)
1/4 teaspoon dried basil(optional)

Procedures:
Part 1
1. In a bowl, combine chicken and marinade then stir together.Set aside for 15 minutes.

Part 2
1. In a sauce pan, heat cooking oil and saute garlic and onion.
2. Add bell peppers then saute for a minute.
3. Add snow peas then continue sauteing for another minute.
4. Transfer to bowl and set aside.

Part 3
1. In a same pan, add oil then add marinated chicken and marinade.
2. Stir fry for 2 minutes then put back then vegetables.
3. Cook for another minute then transfer to serving plate.
4. Serve immediately with steamed rice.

Potatoes and Chives

Filipino Style Recipe: Potatoes and chives is one of the simple and easy to prepare recipe. The potatoes boiled then tossed in butter, chives, salt and pepper. I also included Cheddar cheese to add more flavor to our dish, this is usually serve as side dish.

Estimated time of cooking: 15 minutes
Good for 3-4 persons

Ingredients:
400 grams baby potatoes, halves
a bunch of fresh onion chives, chopped thinly
80 grams unsalted butter
1/4 cup Cheddar cheese,cut into small pieces(optional)
salt and pepper to taste

Procedures:
Part 1
1. In a pot, place potatoes then sprinkle with salt.
2. Pour enough water until submerge then bring to boil for 10-15 minutes or until tender. Drain and set aside.

Part 2
1. In a pan, melt butter then add potatoes, cheese and salt and pepper.
2. Transfer to serving bowl then sprinkle with chives. Toss well then serve.

Notes:
1. You may also use olive oil as alternative to butter.

Mango Salad

Filipino Style Recipe: mango salad is another type of salad made of unripe green mangoes, tomatoes, onion and cilantro then dressed with fish sauce and lime juice. Mango salad is a simple and easy to prepare that is commonly serve as appetizer or side dish specially during summer season.

Estimated time of preparation: 15 minutes
Good for 3-4 persons

Ingredients:
2 pieces unripe green mangoes, peeled and cut into strips
2 tomatoes, deseeded and chopped
2 red onions, chopped
1/2 cup fresh cilantro, chopped
2 teaspoon toasted peanut, chopped(optional)
1/4 cup fresh mint leaves, chopped(optional)
a dash of dried chili flakes(optional)
1 teaspoon cumin ground(optional)

Salad Dressing:
2 tablespoons fresh lime or calamansi juice
3 tablespoons fermented fish sauce
2 tablespoons honey(dissolved in 2 tablespoons water)

Procedures:
1. In a bowl, combine salad dressing until well blended. Set aside.
2. In a large bowl, mix all ingredients then pour salad dressing. Toss to combine then serve.

Kakiage Tempura

Filipino Style Recipe: Kakiage tempura is another popular Japanese dish made of deep fried battered vegetables. Normally the vegetables peeled and cut into strips then dip into the batter to coat. Deep fried until golden brown then serve with your favorite dipping sauce.

Estimated time of cooking: 5-10 minutes
Good for 5-6 fritters

Ingredients:
2 medium carrots
2 pieces sweet potato
2 large white onions
2 green capsicum
cooking oil for deep frying

Batter:
1 cup flour
2 tablespoons baking powder or cornstarch
1/4 teaspoon salt
1 egg yolk
1 1/2 cups iced water

Procedures:
Part 1
1. Cut into vegetables into strips, 3-4 inches long.
1. Combine all vegetables and mix well. Set aside.

Part 2
1. In a large bowl, combine flour, baking powder and salt then mix well.
2. In a separate bowl, mix egg yolk and iced water then pour into flour mixture.
3. Stir slightly and leave some flour unmixed. Add some ice to keep the batter icy cold.
4. Add vegetables and combine well into the batter.

Part 3
1. In a frying pan, heat enough oil then take a scoop of vegetable mixture using wire mesh strainer.
2. Deep fry for 5 minutes or until crisp and golden brown. Repeat until all the mixture are consumed.
3. Drain on paper towels then serve with dipping sauce.

Sauteed Beans and Corned Beef

Filipino Style Recipe: sauteed beans and corned beef is an easy, simple and affordable Filipino dish. It consists of corned beef and green beans cooked and simmered in oyster sauce. I also added soy sauce and dried chili flakes to add more flavor and spicy taste.

Ingredients:
250 grams green beans, cut into 2 inch diagonally
1 small can corned beef
4 cloves garlic, minced
1 onion, chopped
1/8 teaspoon dried chili flakes
4 tablespoons oyster sauce
2 tablespoons soy sauce
1 1/2 cups water
2 tablespoons fish sauce
salt and pepper to taste

Procedures:
Part 1
1. In a saucepan, heat oil then saute garlic and onion until soft.
2. Add corned beef then continue sauteing until slightly toasted.
3. Add beans then pour water and simmer for 3 minutes.
4. Add oyster sauce, soy sauce and chili flakes then simmer for another 2 minutes.
5. Adjust seasoning according to taste then transfer to serving plate. Serve with steamed rice.
