Beef Stroganoff

Filipino Style Recipe: beef stroganoff is a Russian dish consists of beef strips and mushrooms served with sour cream. It became popular to Filipino cuisine and some other countries. Normally the beef sauteed and cooked with mushrooms in a blend of sour cream and seasonings.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 20 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef tenderloin or sirloin, cut into large strips
1/2 cup sliced button mushrooms
1/2 cup sour cream
1/2 cup butter
1/2 cup chopped onions
1 tablespoon garlic powder
2 tablespoons cornstarch(dissolved in 1/4 cup water)
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine beef, garlic powder, salt and pepper. Marinate for 30 minutes.

Part 2
1. In a pan, melt butter and stir fry marinated beef for 3 minutes or until brown and tender. Drain and set aside.
2. In a same pan, add butter and saute onion and mushroom until golden brown.
3. Add stir-fried beef, sour cream, salt and pepper. Simmer in a low heat for 3 minutes. Stir constantly.
4. Add dissolved cornstarch and stir for another minute or until thicken.
5. Remove from heat then serve hot with bread, pasta or rice.

Notes:
1. You may also add condensed cream of mushroom soup if you prefer.
2. You may also used yogurt instead of sour cream.

Garlic Beef Ribs Adobo

Filipino Style Recipe: garlic beef ribs adobo or braised beef ribs is another mouth-watering beef dish. Normally the beef spare ribs marinate and cooked in a blend of soy sauce, lime juice, brown sugar, star anise, peppercorns, bay leaves, salt and pepper until absorb and sizzle.

Estimated time of cooking: 2 hours

Good for 4-6 servings

Ingredients:
500 grams beef spare ribs, cut into serving pieces
1/2 teaspoon chili flakes
1 head garlic, minced

Marinade:
1/2 cup soy sauce
1/4 cup lime juice
1/2 cup brown sugar
1 tablespoon peppercorn
2 pieces star anise
3 pieces bay leaves
2 cups water
salt and pepper to taste

Procedures:
Part 1
1. In pan, heat oil and saute the garlic until golden brown, drain and set aside.

Part 2
1. In a large pot, combine spare ribs and marinade. Marinate for at least 30 minutes.
2. Cook in a low heat for about 1-2 hours or until the beef is tender. Add water if necessary.
3. Adjust seasoning according to taste. Simmer until the sauce thicken and start rendered oil.
4. Transfer to serving bowl then sprinkle with toasted garlic and chili flakes. Serve.

Beef Tapa

Filipino style recipe: beef tapa is another popular Filipino dish that is usually served during breakfast with fried rice and egg together with acahara(picked papaya strips). This is similar to chicken tapa and pork tapa. Normally the meat prepared in thin slices and marinated overnight then fry until tender.

Good for 3-4 persons

Ingredients:
500 grams beef sirloin, sliced thinly
3 tablespoons cooking oil
2 cups water

Marinade:
4 cloves garlic, minced
1/2 cup soy sauce
3 tablespoons lime or calamansi juice
3 tablespoons brown sugar
salt and pepper to taste
1 tablespoon oyster sauce(optional)
1 teaspoon cayenne pepper(optional)

Procedures:
Part 1
1. In a bowl, combine beef and marinade. Mix well then cover and marinate overnight inside the fridge.

Part 2
1. In a pan, pour water and bring to boil.
2. Add cooking oil and marinated beef, cook until water evaporates and beef color turns to golden brown and tender.
3. Transfer to serving plate. Serve with fried rice and egg.

No-Bake Beef Lasagna

Filipino Style Recipe: Lasagna is one of the popular Italian dish but the word Lasagna is a Greek word which refer to cooking pot rather than the pasta dish. This dish is made with a layer of wide-flat pasta shape, meat sauce and creamy white sauce and normally cooked through baking. But in this recipe, we will cooked lasagna quick, easy and no baking is required.

Estimated time of preparation and cooking: 25-30 minutes

Ingredients:
1/2 kilo Lasagna pasta (cooked according to package direction)

Meat Sauce:
1 kilo ground lean beef
6 gloves garlic, minced
1 onion, chopped
1 big can four cheese pasta sauce(del monte) or spaghetti sauce
1 tablespoon brown sugar
3 tablespoons olive oil
salt and pepper to taste
1 cup fresh basil, chopped(optional)

White Sauce:
1/2 cup butter
1/2 cup cornstarch
1 pack all-purpose cream
1/2 cup full cream milk
1 cup grated mozzarella cheese

Toppings:
grated cheddar cheese
dried basil

Procedures:
Part 1
1. In a large pot, prepare lasagna pasta based on cooking instructions. Make sure to cooked it well then set aside.

Meat Sauce:
1. In a sauce pan, heat oil and saute garlic and onion
2. Add ground beef, salt and pepper. Cook for 5-8 minutes or until tender.
3. Add four cheese pasta sauce, basil and brown sugar. Cook for 10 minutes.
4. Adjust seasoning according to taste. Remove from heat. Set aside.

White Sauce:
1. In a separate pan, melt butter and add cornstarch. Mix until well blended.
2. Add all purpose cream, full cream milk, grated mozzarella cheese.
3. Mix well until thickens. Keep warm and set aside.

Assembly:
1. In a rectangular(12x8inch) baking dish, arrange pasta sheets at the bottom.
2. Spread a layer of meat sauce then a layer of white sauce.
3. Repeat alternate layering up to 4 layers is formed.
4. top with grated cheddar cheese and dried basil.
5. Let it cool for about 5 minutes before serving.

Beef Morcon

Filipino Style Recipe: beef morcon is a special meat roll dish that usually served during Holidays or any special occasion. Normally the meat rolls stuffed with sausages, carrots, pickles and hard-boiled eggs then cooked until tender.

Estimated time of preparation: 20 minutes(plus marinating time)
Estimated time of cooking: 80 minutes
Good for 6-8 servings

Ingredients:
1 kilo beef sirloin, cut morcon style(1/4 inch thick)
3 tablespoons flour(optional)
1/4 cup vegetable oil

Filling:
3 piece hard-boiled eggs, sliced into quarters
4 pieces hot dogs, ham or sausages, sliced into strips
1 piece carrot, sliced into strips
2 pickles or cucumber, sliced into strips

Marinade:
2 tablespoons calamansi juice
1/2 cup soy sauce

Sauce:
2 cups beef stock(water + beef cube)
1 piece bay leaf
2 tablespoons tomato paste
1 can liver spread
salt and pepper to taste

Procedures:
Part 1
1. Pound the meat using meat pounder to help the meat to become tender easily.
2. In a bowl, marinate meat in calamansi juice, soy sauce, salt and pepper for 3 hours. Reserve marinade.
3. Flatten meat and arrange the filling over the meat.
4. Roll the meat with the filling inside and secure with a thread or string. Repeat for remaining slices.

Part 2(Optional)
1. Dredge the meat in flour until coat evenly.
2. In a frying pan, heat oil and fry the meat until brown.

Part 3
1. In a pot, arrange meat, bay leaves, tomato paste, liver spread, marinade, beef stock salt and pepper.
2. Simmer for at least 1 hours or until the beef is tender.(Cook in pressure cooker takes 20 minutes).
3. Slice the beef morcon and arrange on a platter then pour the sauce on top. Serve hot!

Notes:
You may also used pork fat, pickles or cheddar cheese as alternative filling.

Lengua Estofada

Filipino Style Recipe: lengua estofada or lengua estofado is originally from Spanish that has become very popular in Filipino cuisine. Lengua estofada is a stewed ox tongue cooked in tomato sauce then serve with fried potatoes.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 2 hours and 10 minutes

Good for 8 persons

Ingredients:
1 kilo ox tongue
2 large potato, peeled and sliced crosswise
3 cloves garlic, minced
1 onion, chopped
1 cup tomato paste
1 bay leaf
1/2 teaspoon peppercorns
1/4 cup oyster sauce
1 cup brown sugar
3 cups water
1/4 cooking oil
salt to taste
1/2 cup white wine(optional)
1 piece beef cube(optional)

Procedures:
Part 1
1. In a bowl, mix vinegar and salt. Rub tongue with mixture to remove the shiny substance then rinse well.
2. In a pot, pour water and arrange tongue. Bring to boil for 10 minutes.
3. Drain the tongue and scrape the white surface using knife. Rinse well.

Part 2
1. In a frying pan, heat oil and fry tongue until brown. Drain and set aside.
2. Fry potatoes. Drain and set aside.

Part 3
1. In a sauce pan, heat oil and saute garlic and onion.
2. Add tongue, 2 cups water, tomato paste, bay leaf, white wine, oyster sauce, sugar, peppercorns and salt.
3. Simmer for 2 hours or until tongue is tender. Add more water if necessary.
4. Adjust seasoning according to taste.
5. Take out the tongue and slice 1/2 inch diagonally.
6. Transfer to serving plate with fried potatoes. Pour the sauce on top. Serve

Beef Pares

Filipino Style Recipe: beef pares is a Filipino dish popular as street food. Pares means “pair” which is traditionally served with fried garlic rice and beef soup. Normally the beef boiled and cooked with soy sauce, sugar, star anise and cornstarch to thickens the sauce.

Good for 3-4 servings

Ingredients:
500 grams beef brisket, cut into cubes
1/4 cup soy sauce
4-5 cups water
2 pieces star anise
1/4 cup sugar
2 tablespoons ginger, minced
2 cloves garlic, crushed
1 onion, chopped
1 teaspoon ground pepper
1 teaspoon cornstarch(dissolved in 1/4 cup water)

Procedures:
Part 1
1. In a large pot, pour water and bring to boil.
2. Add beef and boil in a medium heat for 1-2 hours or until meat is tender.
3. Remove from heat and let it cool. Reserve the stock.

Part 2
1. In a bowl, combine soy sauce, black pepper and sugar. Marinate beef for 30 minutes.
2. Drain meat and reserve the marinade.

Part 3
1. In a sauce pan, heat oil and saute garlic, garlic and onions.
2. Add marinated beef and saute for 3-5 minutes.
3. Pour 4 cups of beef stock and marinade, simmer for another 5 minutes.
4. Add star anise and simmer until meat is very tender.
5. Pour dissolved cornstarch and simmer for another 10 minutes or until the sauce thickens. Stir constantly.
6. Adjust seasoning according to taste. Serve with fried garlic rice and beef soup.

Beef Pochero

Filipino Style Recipe: beef pochero is another beef dish that commonly served by Filipinos. This is similar to pork pochero. Normally beef boiled and cooked with tomato sauce together with cardava bananas(saba), potatoes, green beans, cabbage and bok choy. This is a mouth-watering dish that my family loves so much.

Estimated time of cooking: 50-70 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef, cut into cubes
200 grams tomato sauce
1/2 cup soy sauce
4 garlic gloves, chopped
1 small onion, quartered
4 tablespoons fish sauce(patis)
4 pieces banana(saba), sliced diagonally
1 small bundle, green beans, sliced diagonally
1 small chinese cabbage, quartered
salt and pepper to taste
cooking oil

1 bundle bok choy or pechay(optional)
1 red bell peppers, cut into stips(optional)
6 potatoes, cut into cubes(optional)

Procedures:
Part 1
1. In a pot, arrange beef with 1 liter of water. Bring to boil and simmer for an hour or until the beef is tender.
2. Remove the scum as it rises. Add more water if necessary. Pressure cooker takes less time.

Part 2(optional)
1. In a pan, heat oil and fry potatoes. Drain and set aside.

Part 3
1. In a same pan, saute garlic and onion, add in beef and stir cook until light brown.
2. Add tomato sauce, soy sauce and fish sauce then stir cook for 2-3 minutes.
3. Pour beef stock then simmer until 5 minutes, add more water as necessary.
4. Add potato and banana then simmer for 3 minutes.
5. Add other vegetables, cook for 3-5 minutes or until vegetables are cooked.
6. Season with salt and pepper according taste and bring to boil.
7. Transfer to serving plate, serve with steamed rice.

Creamy Beef and Mushrooms

200 grams mushrooms, sliced
1 onion, chopped
3 cloves garlic, minced
1 can cream of mushroom
1/2 cup hot water
1 tablespoon butter or margarine
3 tablespoons olive oil
salt and pepper to taste

1/2 cup Parmesan cheese, grated(optional)
1/4 teaspoon paprika or chili flakes(optional)
chopped parsley for garnishing(optional)

Procedures:
Part 1
1. In a bowl, marinate beef with garlic, paprika, salt and pepper for 30 minutes.
2. In a pan, heat olive oil then stir fry beef for 5 minutes or until brown.
3. Remove from the pan and set aside.

Part 2
1. In a pan, melt butter and saute garlic and onion.
2. Add mushrooms and saute for 3 minutes.
3. Pour water and cream of mushroom then cover and simmer until the sauce is creamy. Stir constantly.
4. Put the meat back into the pan then add grated Parmesan cheese.
5. Adjust seasoning according to taste. Simmer for a while and turn off the heat.
6. Transfer to serving plate then sprinkle with parsley and serve immediately.

Braised Beef

1 medium-sized carrots, cut into cubes(optional)
1 medium-sized red bell pepper, sliced(optional)
1 cup green beans, trimmed and sliced(optional)
spring onions for garnishing(optional)

Procedures:
1. In a large pot, arrange beef and add garlic, onion, soy sauce, sugar, peppercorns, star anise, bay leaves and water.
2. Cover and bring to boil for about 1-2 hours or until the beef is tender. Add water if necessary.
3. Add cornstarch mixture and adjust seasoning with salt and pepper.
4. Add carrots, green beans and bell pepper, simmer for 3 minutes or until sauce has thickened.
5. Remove from heat then garnish with spring onions. Serve with steamed rice.
