Classic Potato Salad

Filipino Style Recipe: Classic potato salad is one of the popular salad that usually serve in any occasions. It is consists of boiled potato chunks tossed in mayonnaise, bacon tidbits, parsley, spring onion, lemon juice, salt and pepper for salad dressing. This is usually serve as side dish together with your favorite pasta.

Estimated time of preparation: 20-30 minutes. Good for 3-4 persons

Ingredients:
1 kilo potatoes, peeled and cut into chunks
1/2 cup ham or smokey bacon tidbits
1/4 cup parsley, chopped
1/2 cup spring onion, chopped
3 tablespoons lemon or calamansi juice
1/2 cup mayonnaise
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 tablespoon mustard(optional)
3 hard-boiled eggs, peeled and chopped(optional)
1/2 cup celery, chopped(optional)

Procedures:
Part 1
1. In a large pot, boil water with salt then cook potatoes for 10-15 minutes or until tender.
2. Drain and Let it cool then place in a large bowl. Set aside.

Part 2
1. In a bowl, combine all the remaining ingredients and stir until well blended.
2. Pour over potatoes then toss gently to coat. Cover and refrigerate for 3 hours before serving.

Strawberry Milk Gulaman

Filipino Style Recipe: strawberry milk gulaman is another refreshing beverage and usually serve during afternoon or summer season. This drink is consists of strawberries, syrup, milk, sugar and gulaman then stir with ice.

Estimated time of preparation: 10 minutes

Ingredients:
250 grams fresh strawberries, halves
1/4 cup strawberry syrup
1 cup full cream milk
1 tablespoon strawberry gelatin powder
2 cups boiling water
sugar to taste
crashed ice or ice cubes

Procedures:
Part 1
1. In a square container, dissolved strawberry gelatin powder in boiling water then stir until completely dissolved. Let it cool and place in fridge until firm.
2. Cut into small cubes. Set aside.

Part 2
1. In a blender, process strawberry, strawberry syrup, milk and sugar until smooth.
2. Pour in tall glasses then add strawberry gulaman and some ice. Serve.

Note:
1. You may garnish the drinks with fresh strawberry before serving.

Fruit Cocktail Sa Malamig

Filipino Style Recipe: fruit cocktail “sa malamig” or fruit salad drink is another refreshing beverage and usually serve during afternoon or summer season. This drink is inspired to fruit salad dessert and commonly sold along the street. It is consists of condensed milk, fruit cocktail and other fruits then stir with lots of ice cubes.

Estimated time of preparation: 10 minutes

Ingredients:
1 can(800grams) fruit cocktail, reserve the juice
1 can(150ml) condensed milk
2 cups red gelatin, diced
ice cubes
2 cups tapioca pearls, (optional)
8-10 pieces strawberry, diced(optional)
1 small melon, shred meat(optional)

Procedures:
1. In a pitcher, combine all the ingredients.
2. Stir in lots of ice then let stand for a while until some ice is melted.
3. Don’t put too much water or it will dilute the taste of the drink.
4. Pour in tall glasses then serve chilled.

Ensaladang Talong

Filipino Style Recipe: ensaladang talong or eggplant salad is another easy and simple salad that usually served as side dish. It is consists of broiled eggplants then peel off the skin and stem. Toss with tomatoes and onions then serve with bagoong isda or toyo-mansi.

Estimated time of preparation and cooking: 20 minutes
Good for 4-5 servings

Ingredients:
4 large eggplants(talong)
2 onions, cubed
4 medium-sized tomatoes, cubed
2 tablespoons bagoong isda or fish sauce

Procedures:
Part 1
1. Broil eggplants until skin are charred and blister.
2. Let it cool then peel off the skin and remove the crown and the stem.

Part 2
1. In a bowl, mash lightly the eggplants with a fork then add onions and tomatoes.
2. Serve with bagoong isda or fish sauce(patis).

Notes:
1. You may also used the combination of garlic, soy sauce, vinegar, chili flakes, salt and pepper instead of bagoong isda.

Kinilaw na Tuna

Filipino Style Recipe: kinilaw na tuna is a raw fish salad made of fresh tuna mixed with vinegar, garlic, onion, ginger, calamansi juice, salt and pepper. This dish is another Filipino delicacy and usually served as appetizer or pulutan. Make sure it is fresh because the taste of kinilaw is depends on the freshness of the fish.

Estimated time of preparation: 10 minutes(plus chilling time)

Ingredients:
500 grams fresh yellow fin tuna fillet, cut into cubed
1/3 cup spiced vinegar
4 gloves garlic, finely minced
1 white onion, chopped
2 tablespoons minced ginger
4 tablespoons calamansi or lime juice
salt and pepper to taste
3/4 cup vinegar for washing

1 red onion, chopped(optional)
3 pieces birds eye chili(siling labuyo), chopped(optional)
1 tablespoon sugar(optional)
2 tomatoes, diced(optional)
1/2 cup pork cracklings(chicharon), crushed

Procedures:
1. In a bowl, combine cubed tuna and vinegar then mix well.
2. Let stand for 2 minutes then drain vinegar.
3. Add the remaining ingredients then mix well.
4. Cover and refrigerate for 30 minutes. Serve chilled with beer.

Kinilaw na Tanigue

Filipino Style Recipe: kinilaw na tanigue is a raw fish salad made of fresh tanigue mixed with vinegar, garlic, onion, ginger, calamansi juice, salt and pepper. This dish is another Filipino delicacy and usually served as appetizer or pulutan. Make sure it is fresh because the taste of kinilaw is depends on the freshness of the fish.

Ingredients:
1 kilo fresh tanigue fillet, cut into cubed
1/4 cup vinegar
6 gloves garlic, finely minced
1 large white onion, chopped
3 tablespoons minced ginger
6 tablespoons calamansi or lime juice
salt and pepper to taste
3/4 cup vinegar for washing

3 tomatoes, diced(optional)
1 tablespoon sugar(optional)
1 red bell pepper, slice thinly(optional)
3 pieces red chili(siling labuyo), chopped(optional)
spring onion for garnishing(optional)

Ingredients:
1. In a bowl, combine cubed tanigue and vinegar then mix well.
2. Let stand for 2 minutes then drain vinegar.
3. Add the remaining ingredients then mix well.
4. Cover and refrigerate for 30 minutes. Serve chilled.

Notes:
1. You may also add coconut cream if you prefer.

Potato Salad

Filipino Style Recipe: potato salad is comprises a potato as main ingredient. Combine with mayonnaise, mustard, hard-boiled eggs, lemon juice, chives, salt and pepper for salad dressing.

Estimated time of preparation: 20-30 minutes. Good for 3-4 persons

Ingredients:
1 kilo potatoes, cleaned
1 cup mayonnaise
1 tablespoon mustard
1/2 cup spring onion or chives, chopped
1 tablespoon lemon or calamansi juice
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper

3 hard-boiled eggs, peeled and chopped(optional)
1 cup cheddar cheese, grated (optional)
1 teaspoon dried thyme(optional)
1/2 cup celery, chopped(optional)
1/4 cup parsley, chopped(optional)
1/2 cup chicken breast flakes or smokey bacon tidbits(optional)

Procedures:
Part 1
1. In a large pot, boil water with salt then cooked potatoes for 15-20 minutes or until tender.
2. Let it cool then peel and chop the potatoes into cubes.
3. Place in a large bowl and set aside.

Part 2
1. In a bowl, combine the remaining ingredients and stir until well blended.
2. Pour over potatoes then toss gently to coat. Cover and refrigerate for 3 hours before serving.

Ampalaya Salad

Filipino Style Recipe: Ampalaya salad or ensaladang ampalaya(bitter gourd salad) is another easy yet healthy dish. The ampalaya and radish were marinated in salt then mash until all juice has been removed. Then combine with radish, white onion, tomatoes, vinegar, sugar, salt and pepper.

Estimated time of preparation: 8-10 minutes(plus marinating time)

Ingredients:
1 large bitter gourd(ampalaya), remove seeds and sliced thinly
1 radish(labanos), peeled and sliced thinly
1 large white onion, sliced
3 large tomatoes, sliced
1/2 cup vinegar
1/4 cup sugar
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, put sliced ampalaya then sprinkle with salt. Let stand for at least 15 minutes.
2. Squeeze out excess water from the bitter gourd with the hand. Rinse and drain well.
3. In a separate bowl, do the same procedure to radish.

Part 2
1. In a bowl, combine vinegar, sugar, salt and pepper. Mix until well blended.
2. In a large bowl, combine ampalaya, radish, onion and tomatoes then pour vinegar mixture.
3. Mash with hand and toss. Serve.

Notes:
1. You may also add hard-boiled eggs and boiled shrimp in this recipe.

Seaweeds Salad(Lato)

Filipino Style Recipe: Seaweeds salad(lato) or kinilaw na lato is another Filipino delicacy. Lato AKA(also known as) ar-arosip is a type of seaweed that has a translucently green tiny wilted bulb like grapes. Normally, lato mixed with chopped onions and tomatoes then season with spicy vinegar, salt and pepper. This is commonly served during breakfast together with fried fish.

Estimated time of preparation: 5-8 minutes(plus refrigerating time)

Ingredients:
2 cups fresh lato
1/4 cup onions, chopped
1/4 cup tomatoes, chopped
2 tablespoons spicy vinegar or calamansi juice
1/2 teaspoon salt
1/4 teaspoon black pepper, ground
1/2 teaspoon sugar(optional)

Procedures:
1. Wash lato thoroughly then drain. Refrigerate for 15 minutes.
2. In a bowl, combine lato, onions and tomatoes.
3. In a small bowl, combine spicy vinegar, salt, pepper and sugar. Serve as dipping sauce or combine in lato salad.
4. Serve immediately top with sliced salted eggs or grated green mangoes.

Buko Salad

Filipino Style Recipe: buko salad is another variety of popular Filipino salad that usually served in every occasion specially during Christmas and New Year. The typical buko salad is consist of young coconut strips and various fruits blend in condensed milk, heavy cream and cheese. Refrigerate and serve cold.

Estimated time of preparation: 20-40 minutes(plus chilling time)

Ingredients:
4 cups young coconut strips(buko)
2 cans (15oz) fruit cocktail
1 jar(12 oz) Nata de coco
1 can(14 oz) condensed milk
1 pack(7 oz) all-purpose cream

1 small bottle sugar palm fruit(kaong)(optional)
1 can(8 oz) pineapple tidbits(optional)
1/2 cup jackfruit(langka)(optional)
100 grams raisins(optional)

Procedures:
Part 1
1. In a strainer, drain all the fruits thoroughly for at least 30 minutes.

Part 2
1. In a bowl, combine all the ingredients and mix till well blended.
2. Cover and refrigerate for several hours. Served cold.
