Adobong Hito

Filipino Style Recipe: Adobong Hito or catfish is another variety of popular Filipino adobo. The procedure is almost the same, normally the fish cooked in a blend of soy sauce, vinegar, garlic, peppercorn, salt and soda to add sweetness to our dish. Covered and simmered until the fish is tender and a little sauce is left. This delicious dish commonly served main dish or sometimes as pulutan.

Ingredients:
2 pieces medium-sized catfish (hito), cleaned
1 1/2 cup soda or lemonade
1/4 cup soy sauce
1/3 cup vinegar
1/2 head garlic, peeled and crushed
1 large onion, peeled and sliced
1 thumb-sized ginger, chopped and crushed
1 tablespoon peppercorns
salt to taste
4 pieces red chili peppers(labuyo), chopped(optional)

Procedures:
Part 1
1. Clean the fish by removing the fins, innards and chop off the tails.
2. Slice into serving pieces then rub with salt and wash on running water.

Part 2
1. In a cooking pot, arrange the fish and all the ingredients.
2. Cover and simmer in a medium heat until tender and a little sauce is left.
3. Adjust seasoning according to taste, add water if necessary then simmer for a few minutes.
4. Remove from heat then transfer on a serving plate. Serve with steamed rice.

Pork Adobo with Pineapple

Filipino Style Recipe: Pork Adobo with Pineapple is another variety of Filipino pork adobo, we just add pineapple chunks or tidbits which gives a sweeter and flavorful taste to our dish.

Ingredients:
1/2 kilo pork, cut in serving pieces
1 cup pineapple chunks or tidbits
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup pineapple juice
6 gloves garlic, crushed
1 white onion, sliced in rings
1 teaspoon peppercorns
2-3 pieces bay leaves
1 teaspoon sugar
salt to taste

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns, soy sauce and pineapple juice. Marinate for 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Add onions, pineapple then simmer for 2 minutes or until the sauce thickened.
3. Remove from heat then transfer to serving bowl then serve with steamed rice.

Pork Mechado

Filipino Style Recipe: mechado recipe is a beef stew originally from Spanish that has become very popular in Filipino cuisine. A typical mechado dish consists of a beef but we will used pork in this recipe. The meat cooked in tomato sauce with potatoes, carrots and bell peppers then usually seasoned with soy sauce, bay leaves and vinegar. It is similar to several other tomato-based dishes such as kalderata, menudo and afritada.

Ingredients:
500 grams pork with fat, cut into chunk
2 cups tomato sauce or 1/2 cup tomato paste
1 onion, chopped
5 cloves garlic
3 bay leaves(laurel)
4 medium potatoes, quartered
1 bell pepper, sliced
2 cups beef stock or beef cubes dissolved in water
1/4 cup soy sauce
1 tablespoon fish sauce
salt and pepper to taste
3 tablespoons vegetable oil

1 carrot, cut into cubes(optional)
1/2 cup green peas(optional)
1/8 cup vinegar(optional)

Procedures:
Part 1
1. In a pan heat oil and fry potatoes and carrots until golden brown.
2. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onions.
2. Add pork and fish sauce then continue sauteing until color turns to brown.
3. Pour tomato sauce, soy sauce, bay leaves and beef stock then simmer until tender. Add water if necessary.
4. Add vinegar and boil again for 2-3 minutes. Do not stir.
5. Add carrots, potatoes, green peas and bell pepper. Simmer for 3 minutes.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to serving plate and serve with steamed rice.

Chicken Adobo(Adobong Manok)

1/3 cup vinegar

1 cup water

Procedures:
Part 1

2. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 3 minutes or until golden brown.
2. Pour marinade and add water. Simmer for 20 minutes or until chicken is tender.
3. Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.
4. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Garlic Beef Ribs Adobo

Filipino Style Recipe: garlic beef ribs adobo or braised beef ribs is another mouth-watering beef dish. Normally the beef spare ribs marinate and cooked in a blend of soy sauce, lime juice, brown sugar, star anise, peppercorns, bay leaves, salt and pepper until absorb and sizzle.

Ingredients:
500 grams beef spare ribs, cut into serving pieces
1/2 teaspoon chili flakes
1 head garlic, minced

Marinade:
1/2 cup soy sauce
1/4 cup lime juice
1/2 cup brown sugar
1 tablespoon peppercorn
2 pieces star anise
3 pieces bay leaves
2 cups water
salt and pepper to taste

Procedures:
Part 1
1. In pan, heat oil and saute the garlic until golden brown, drain and set aside.

Part 2
1. In a large pot, combine spare ribs and marinade. Marinate for at least 30 minutes.
2. Cook in a low heat for about 1-2 hours or until the beef is tender. Add water if necessary.
3. Adjust seasoning according to taste. Simmer until the sauce thicken and start rendered oil.
4. Transfer to serving bowl then sprinkle with toasted garlic and chili flakes. Serve.

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns and soy sauce. Marinate for 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Drain pork and reserve the sauce. Set aside.

Part 3
1. In a pan, heat oil and fry pork until brown. Drain and return the meat to reserved sauce.
2. Simmer and toss for a minute or until the sauce is almost absorb and thicken. Transfer to serving bowl then serve.

Pork Humba Recipe

1/2 cup dried banana blossoms(puso ng saging)
salt to taste

Procedures:
1. In a big pot, combine pork belly, water, soy sauce and garlic.
2. Simmer and bring to boil over low heat until pork belly is tender.
3. Add vinegar and simmer for another 3 minutes.
4. Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.
5. Adjust seasoning according to taste. Remove from heat and Serve. Enjoy!

Notes:
1. You may also add potatoes, hard-boiled eggs or salted black beans.

Hainanese Chicken Recipe

Filipino style hainanese chicken recipe is popular among chi. It is mainly made up of marinade fish then steamed until done.

Good for 4-5 servings

Ingredients:
1 (800grams)whole chicken
1 tablespoon rock salt
75 grams ginger, sliced
2 pieces onions, quartered
6 stalks lemon grass, pounded
1/2 tablespoon pepper
salt to taste
3 liters water
1 tablespoon cornstarch(dissolved in 1 tablespoon water)

Hainanese Rice:(Optional)
2 cups rice, washed
5 cloves garlic, minced
1/3 cup white onion, sliced
1/4 cup margarine
3 cups chicken broth or 2 chicken cubes dissolved in 3 cups of water

Dipping Sauces:(Optional)
200 grams ginger
1/3 cup olive oil
2 tablespoons coriander
1/2 cup sweet soy sauce
1/4 cup light soy sauce
1/4 cup chili sauce

Procedures:
Part 1
1. Rub and massage chicken with rock salt for 5 minutes.
2. In a stock pot, add half of the sliced ginger, onions, lemon grass, salt, pepper and water. Bring to boil.
3. Stuff the other half inside the chicken and add into stock pot. Let boil for 40 minutes over medium heat.
4. When the chicken is done, remove from heat and stand for 30 minutes. Reserved the chicken broth.

Part 2(Hainanese Rice)
1. In pan, heat margarine and saute garlic and onion. Add washed rice and continue sauteing for 5 minutes.
2. Transfer the rice to rice cooker and add chicken broth. Continue cooking until rice is done.

Part 3(Dipping Sauce-Ginger Mixture)
1. In a blender, place ginger, coriander and olive oil. Pulse until a paste like mixture is formed.

Part 4
1. In a pan, boil 3/4 cup of chicken broth and dissolved cornstarch. Adjust seasoning with salt.
2. Debone the chicken and transfer to serving plate. Pour the chicken with thickened stock.
3. Served with hainanese rice, ginger mixture, sweet soy sauce, light soy sauce & chili sauce.
4. Served the remaining chicken broth as soup and adjust seasoning according to taste.

Filipino-Style Steamed Snapper Recipe

Filipino style steamed snapper recipe is another easy and healthy meal dish. It is mainly made up of marinade fish then steamed until done.

Ingredients:
1 (3/4 kilo)whole snapper, scaled, gutted
1 thumb-sized ginger, shredded
4 green onions, thinly sliced diagonally
1 piece red chili(siling labuyo), deseeded and sliced thinly
1 1/2 tablespoons soy sauce
1/2 teaspoon oil(olive, sesame)
1 teaspoon sugar
fresh coriander leaves, chopped(optional)

Procedures:
Part 1
1. In a bowl, combine green onion, ginger, red chili, soy sauce, sesame oil and sugar.
2. Place the fish on large heatproof plate. Pour the mixtures evenly over the fish. Marinate for 15-30 minutes.

Part 2
1. In a wok, add enough water for about 5cm depth. Place the steaming rack over the wok.
2. Place the plate with marinade fish on steaming rack.
3. Bring to boil over medium heat. Steam for 15 minutes or until fish is done.
4. Remove the plate from the wok and drizzle the fish with sesame or olive oil. Sprinkle with coriander.
5. Serve hot and enjoy!

Filipino Style Chicken with Hoisin Sauce Recipe

1. In a bowl, mix the cornstarch, sugar ,soy sauce and chicken.
2. Marinate in refrigerator for 30 minutes.

Part 2
1. In a frying pan, heat olive oil and stir fry chicken until chicken is done. Drain and set aside.
2. In a same pan, add 1 tablespoon olive oil and stir fry the mushrooms and bell pepper until slightly cooked.
3. Add chicken, spicy peanuts and hoisin sauce. Stir until heated through.
4. Adjust seasoning then transfer the chicken to serving plate with sauce on top.
5. Garnish with sesame seeds and spring onions if using. Enjoy!
