Ginataang Labong

Filipino Style Recipe: ginataang labong or bamboo shoots in coconut milk is another easy yet healthy food. Normally the bamboo shoots sliced and boiled. Then cooked with coconut milk together with shrimps and vegetable leaves.

Ingredients:
250 grams bamboo shoots(labong),sliced
2 cups coconut milk
250 grams medium shrimp, peeled and deveined
3 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, sliced thinkly
salt and pepper to taste

1 bundle chili leaves or jute leaves(saluyot)(optional)
3 pieces green chili(siling haba), chopped(optional)
1 small can tomato sardines(optional)

Procedures:
Part 1
1. In a pot, pour water and add bamboo shoots, uncover and bring to boil for 20-30 minutes or until soften. Drain and set aside.

Part 2
1. In a pan, heat oil and saute garlic, onion and ginger.
2. Pour coconut milk and bring to boil over low heat. Stir constantly.
2. Add cooked bamboo shoots, cover and simmer for 5 minutes or until tender.
3. Add shrimp and simmer for 2 minutes.
3. Season with salt and pepper. Add chopped chili and vegetables.
4. Simmer for another minute or until thicken, turn off the heat. Serve hot.

Tips:
1. Cooked bamboo shoots can be purchased at some market or grocery, skip Part 1.

Spicy Mixed Seafood Soup

Filipino Style Recipe: spicy mixed seafood soup is another seafood dish that usually served by Filipinos mostly during rainy season. Another simple recipe but very healthy dish.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 10-15 minutes
Good for 3-5 persons.

Ingredients:
1/2 kilo mixed seafood(fish balls, kikiam, squid, scallops, shrimps, etc)
2 thumb-sized ginger, sliced
1 onion, quartered
1 tomato, quartered
2 pieces red chili pepper, sliced diagonally
salt and pepper to taste
5 cups water
1 stalk lemongrass, crashed and tied(optional)
1 Chinese Cabbage, quartered(optional)

Procedures:
1. in a saucepan, pour water and bring to boil.
2. Add ginger, onion, tomato and lemongrass. Cover and simmer for 5 minutes.
3. Add mixed seafood and red chili pepper. Simmer for 3 minutes or until seafood is tender.
5. Season with salt and pepper.
6. Add Chinese cabbage and simmer for a minute.
7. Transfer to serving bowl, garnish with celery then serve.

Tips:
1. You may also used kimchi to add color and spicy flavor.
2. You may also add mushrooms and other seafood if you desired.

Sinabawang Tahong

Filipino Style Recipe: Sinabawang Tahong or Mussel Soup is another seafood dish that usually served by Filipinos. This is similar to Halaan Soup. Another simple recipe but very healthy.

Estimated time of cooking: 10-15 minutes
Good for 3-5 persons.

Ingredients:
500 grams fresh mussels(tahong)
3 cloves garlic, minced
1 onion, sliced
1 thumb-sized ginger, finely sliced
3 fresh tomatoes, chopped
8 oz Sprite Cola
1 tablespoon vegetable oil
2 tablespoons fish sauce(patis)
salt and pepper to taste
1-2 bundle water spinach(kangkong)

Procedures:
Part 1
1. Wash the mussel thoroughly and drain.
2. Place the mussel in a bowl with water and salt.
3. Cover for several hours or overnight. This will allow the clams to expel sand.

Part 2
1. In a pot, heat oil and saute garlic, onion and ginger.
2. Add tomatoes and saute until soften.
3. Add mussel and stir fry for 2 minutes.
4. Add sprite soda and simmer until shells are opened. Add water if necessary.
5. Add fish sauce and adjust seasoning with salt and pepper.
6. Add water spinach and simmer for 2 minutes.
7. Remove from heat then serve.

Notes:
1. You may also used petchay(bok choy) or chili leaves

Stir Fry Fish Fillet and Bok Choy in Oyster Sauce

Filipino Style Recipe: Stir fried fish fillet and bok choy in oyster sauce is another easy yet healthy food. Normally the fish fillet comes stir fried together with bok choy then cooked in oyster sauce.

Estimated time preparation and cooking: 15-20 minutes
Good for 2-3 persons

Ingredients:
300 grams fish fillet, cut into serving pieces
a bunch of Vietnam pechay(bok choy)
1 onion, chopped
3 cloves garlic, minced
1 thumb-sized ginger, sliced thinly
1/4 cup oyster sauce
2 tablespoon vegetable oil
salt and pepper to taste
1 tablespoon sesame oil(optional)

Marinate:
1/4 cup soy sauce
2 tablespoon lemon or calamansi juice
1/4 cup cornstarch

Procedures:
Part 1
1. In a bowl, combine fish, soy sauce, lemon juice and cornstarch. Marinate for 10 minutes.

Part 2
1. In a pan, heat oil and saute garlic, onion and ginger until golden brown. Drain and set aside.
2. In a same pan, stir fry fish for 5 minutes or until tender. Drain and set aside.

Part 3
1. In a same pan, stir fry bok choy and add toasted garlic, onion and ginger. Cook for 1 minutes.
2. Add stir-fried fish, oyster sauce, sesame oil, salt and pepper. Mix well.
3. Transfer to serving plate then serve.

Ground Pork Menudo

Filipino Style Recipe: ground pork menudo or pork giniling is another tomato-based dish. A usual Filipino menudo is made of pork, liver, sweet peas, raisins, potatoes and carrots. This is similar to pork menudo.

Estimated time of preparation and cooking: 50 minutes. Good for 2-4 persons.

Ingredients:
1/2 kilo ground pork(giniling)
3 cloves garlic, minced
1 onion, chopped
1 large potato, cut into cubes
1 medium carrots, cut into cubes
1 small green bell pepper, diced
2 cups tomato sauce
3 tablespoons cooking oil
1 cup water
sugar, salt and pepper to taste
2 bay leaves(optional)
1 pork broth cube(optional)
1 small can sweet peas(optional)
100 grams raisins(optional)
3 pieces hotdog, sliced(optional)
2 tablespoons liver spread(optional)
4 tablespoons soy sauce(optional)
4-6 pieces hard-boiled quail eggs(optional)

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add ground pork, simmer until tender.
3. Pour tomato sauce, water and pork broth cube. Simmer for 10 minutes.
4. Add potatoes, carrots, soy sauce, bay leaves and liver spread. Simmer for another 10 minutes.
5. Add green bell pepper, raisins, sweet peas, hotdog and hard-boiled eggs.
6. Season with 1 tablespoon brown sugar, salt and pepper according to taste. Mix well.
7. Simmer for 2-3 minutes. Remove from heat and serve hot.

Adobong Kangkong

Filipino style recipe: adobong kangkong or water spinach adobo is healthy yet affordable dish. Normally the water spinach(kangkong) cooked with pork in a blend of soy sauce, vinegar, salt and pepper.

Estimated time of preparation and cooking: 15-20 minutes
Good for 2-3 servings

Ingredients:
1 bunch water spinach(kangkong), cut into 2 inches
1/4 kilo ground pork or belly, cut into small pieces
5 cloves garlic, minced
1 onion, diced
1/4 cup soy sauce
1/8 cup vinegar
salt and pepper to taste
1 pork broth cube(dissolved in 1 cup hot water)(optional)
2 bay leaves(laurel)(optional)
1/4 teaspoon chili flakes(optional)

Procedures:
Part 1
1. In a saucepan, cook pork meat until color turns to light brown and start to render oil. Add oil if necessary.
2. Saute garlic, onion and chili flakes. Add pork stock, bay leaves, soy sauce, salt and pepper. Bring to boil.
3. Pour vinegar and simmer for 5 minutes. Adjust seasoning according to taste.
4. Add kangkong stalks and cook for 1 minutes then add kangkong leaves.
5. Cook for another minute then transfer to serving plate garnish with toasted garlic. Serve immediately.

Arroz Caldo

Filipino Style Recipe: arroz caldo is another rice porridge that is popular among Filipinos. The sticky rice cook with chicken then season with fish sauce. This is usually serve with hard-boiled eggs then garnished with toasted garlic and spring onions.

Ingredients:
4 pieces chicken thighs or drumsticks
2 cups sticky rice(malagkit), uncooked
5 cups water or chicken stock
1 thumb-sized ginger, cut into strips
6 cloves garlic, chopped
1 onion, chopped
2 tablespoons fish sauce(patis)
1 teaspoon ground pepper

4 pieces eggs, hard-boiled(optional)
1 chicken broth cube(optional)
toasted garlic, chopped(optional)
safflower(kasubha)(optional)
spring onions for garnishing(optional)
calamansi or lemon juice(optional)

Procedures:
Part 1
1. In a pan, heat oil and saute garlic, onion and ginger.
2. Add chicken, chicken broth cubes, pepper and fish sauce.
3. Cook until chicken is tender and color turns to golden brown.
4. Transfer everything into a large bowl then set aside.

Part 2
1. In a same pan, Add rice then saute for 2 minutes.
2. Pour water then cover and simmer while stirring occasionally until the rice is cooked. Add water if necessary.
3. Adjust seasoning according to taste then simmer for a few minutes.
4. Transfer to serving bowl then add hard-boiled eggs and chicken.
5. Sprinkle with safflower, toasted garlic and spring onions then serve with calamansi.

Chicken and Green Beans with Spicy Peanut Sauce

Ingredients:
250 grams chicken fillet, cut into serving pieces
250 grams fresh green beans, trimmed
2 teaspoons olive oil
3/4 cup chicken broth
1 tablespoon peanut butter
2 teaspoons honey
1 tablespoon soy sauce
1 teaspoon chili paste or chili flakes
2 tablespoons lemon juice
2 tablespoons toasted peanuts, grind(optional)

Procedures:
Part 1
1. In a pot, cook green beans over boiling water for 5-8 minutes or until tender and crisp.

Part 2
1. In bowl, combine peanut butter, honey, soy sauce, chili paste, lemon juice and chicken broth. Mix well.

Part 3
1. In a pan, heat oil and cook chicken until golden brown and tender.
2. Pour the peanut mixture, simmer until sauce is slightly thickened.
3. Add steamed green beans, adjust seasoning according to taste.
4. Continue cooking until sauce is almost absorb.
5. Remove from heat. Transfer to serving bowl then garnish with toasted peanut. Done!

Stir Fry Chicken and Broccoli

Ingredients:
500 grams chicken breasts or fillet, cut into serving pieces
2 cloves garlic, minced
1 thumb-sized ginger, minced
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon cornstarch(dissolved in 1/4 cup water)
1 tablespoon olive oil
1 cup broccoli florets
salt and pepper to taste
1/4 teaspoon chili flakes(optional)
1/4 cup toasted peanut or almonds(optional)

Procedures:
Part 1
1. In a bowl, marinate chicken with garlic, ginger, soy sauce, sugar, salt and pepper for 15 minutes.

Part 2
1. In a pot, boil water with salt. Once boiling, add broccoli and cook for 1 minutes.
2. Drain and rinse with cold water.

Part 3.
1. In a pan, heat olive oil and saute chili flakes.
2. Add chicken and marinate, cook until chicken is tender and color turns to golden brown.
3. Pour cornstarch mixture and bring to boil until thicken.
4. Add broccoli and toasted peanut.
5. Adjust seasoning according to taste.
6. Remove from heat then serve.

Tokwa’t Baboy

cooking oil for frying
3 pieces red pepper(siling labuyo), chopped(optional)
1 onion for garnishing(diced or rings)(optional)

Procedures:
Part 1
1. In a pot, pour water then add salt and pork.
2. Bring to boil over lower heat until pork is tender. Set aside.

Part 2
1. In frying pan, heat oil and deep fry tofu until golden brown.
2. Drain on paper towel then cut into cubes. Set aside.

Part 3
In a bowl, mix vinegar, soy sauce, salt, sugar, red pepper, ground pepper, onions and garlic.

Part 4
1. In a serving bowl, combine pork and fried tofu. Pour sauce mixture and garnish with onions.
