Tomato Salsa

Filipino Style Recipe: Tomato salsa is a popular Mexican dipping sauce and become popular in any restaurants. Salsa is a Spanish word for “sauce” and basically made of tomatoes, onion, cilantro and jalapeno. This dipping sauce has a mixed taste of sour, salty, sweet and spicy flavor. Mostly, this is commonly serve with chips together with cold beer.

Estimated time of preparation: 15 minutes

Ingredients:
2 big-sized canned whole tomatoes
1 big-sized white onion, diced
1 green bell pepper, diced
1 cup cilantro, chopped
1 cup basil, chopped
2 pieces bird’s eye chili or 1 jalapeno, deseeded and diced
1 small-sized lime or 4 calamansi, deseeded and juice
1 teaspoon sugar
1/2 teaspoon salt or 2 teaspoons fish sauce

Procedures:
1. In a blender or food processor, place all the ingredients then pulse it a few times or until the right consistency is achieve.
2. Adjust seasoning according to taste then transfer to serving bowl. Serve with chips.

Baked Macaroni

Filipino Style Recipe: Baked macaroni is one of the popular pasta dish that is commonly serve in any occasions. This dish is consists of macaroni pasta mixed together with meat sauce then topped with creamy white cheese. Baked until the topped cheese starts to light brown.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 20-25 minutes
Estimated time of baking: 15 minutes
Good for 2 baking pan(8x6inch)

Ingredients:
500 grams macaroni pasta

Meat Sauce:
500 grams ground beef
1 pack(150 grams) tomato paste
3 large-sized tomatoes, diced
2 red bell peppers, diced
4 tablespoons butter
2 tablespoons olive oil
5 cloves garlic, minced
1 large onion, minced
1 cup beef broth
1 teaspoon Spanish paprika
sugar, salt and pepper to taste

White Toppings:
5 tablespoons butter
3 tablespoons flour
1 big can(380 grams) evaporated milk
80 grams Cheddar Cheese
40 grams Parmesan Cheese
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat olive oil then add butter, ground beef and cook until starts to brown. Set aside.
2. In a same pan, saute garlic, onions, tomatoes and bell peppers until soft.
3. Add ground beef, beef broth, tomato paste and paprika then stir and simmer for 15 minutes or until meat is tender.
4. Season with sugar, salt and pepper to taste then cook for a minute.
5. Add cooked pasta then toss until well combined. Set aside.

Part 3
1. In a separate pan, melt butter then add flour and stir until well blended.
2. Pour milk then bring to boil. Season with salt and pepper then stir until starts to thickens.
3. Add cheddar and Parmesan cheese then stir until melted and well blended. Set aside.

Part 4
1. In a baking pan, add macaroni mixture then spread evenly.
2. Pour cheese mixture on top then spread evenly and make sure to secure the edges.
3. Bake in a preheated oven over 350 degrees Fahrenheit for 15 minutes or until the top is light brown.
4. Remove from oven then let it cool for a while before serving. Enjoy!

Choco Float

Filipino Style Recipe: Choco float or chocolate float is another sweet and refreshing beverage. This beverage is made of chocolate powder, sugar and cubed ice then topped with vanilla ice cream and sprinkles. Best to served during summer season.

Estimated time of preparation: 8-10 minutes

Ingredients:
3/4 cup chocolate powder(milo, ovaltine..etc)
3 tablespoons sugar
3-4 cup ice cubes
1/2 cup water
vanilla ice cream
toppings(rice crispy, chocolate or rainbow sprinkles, marshmallow)

Procedures:
1. In a blender, process chocolate powder, sugar and water until blended.
2. Add ice and blend until smooth, add more sugar if needed.
3. Pour into glasses then top with a scoop of vanilla ice cream.
4. Sprinkle with remaining chocolate powder and rainbow sprinkle. Enjoy!

Sapin Sapin

Filipino Style Recipe: Sapin sapin is another popular Filipino delicacy and pasalubong that is commonly sold along the streets which is similar to other sticky rice cake. This delicacy is composed of several layers “sapin” with different colours and usually serve as dessert or snack in any special occasions.

Ingredients:
3 cups glutinous rice flour
1 cups white sugar
6 cups coconut milk
1 big can condensed milk
1/2 teaspoon purple or ube food coloring
1/2 teaspoon yellow food coloring
1/2 cup purple yam, mashed(optional)
1/2 cup jackfruit strips(optional)
toasted coconut or latik for toppings(optional)

Procedures:
Part 1
1. In a large bowl, combine glutinous rice flour, coconut milk, condensed milk and sugar then mix until well blended.
2. Divide the mixture into 3 equal parts then place in a separate bowls.

Part 2
1. In a first mixture, add purple yam and purple food coloring then mix well.
2. In a second mixture, add jackfruit and yellow food coloring then mix well.
3. The third mixture will remain white color.

Part 3.
1. In a pan, brush with oil or place plastic wrap then pour purple mixture and steam for 15 minutes.
2. Add yellow mixture then steam for another 15 minutes.
3. Add white mixture then steam for another 15 minutes or until fully cooked.
4. Remove from the steamer and let it cool before slicing into serving pieces.
5. Transfer to serving plate then top with toasted coconut or latik.

Spaghetti Aglio Olio

Filipino Style Recipe: Spaghetti aglio olio or spaghetti pasta with garlic and oil is a traditional Italian dish. This dish is made of sauteed garlic in olive oil then toss in spaghetti pasta. Sometimes we add chili flakes, clams and basil to contribute an extra-ordinary taste. Aglio olio is usually serve as meryenda(mid-afternoon snack) or in any special occasion.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 6-8 minutes
Good for 3-4 persons

Ingredients:
400 grams spaghetti pasta
1/4 cup olive oil
8 cloves garlic, peeled and chopped
750 grams clams or shrimps(peeled and deveined)
1/4 teaspoon dried chili flakes(optional)
1/4 cup white wine
10 leaves basil, chopped
salt and pepper to taste
grated Parmesan cheese

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat 1 tablespoon olive oil then saute garlic, chili flakes until light brown.
2. Add clams and cover and cook until shells open then season with salt and pepper.
3. Add white wine and simmer for 2-3 minutes or until sauce reduce in half.
4. Add remaining olive oil, pasta and basil then toss until coat evenly.
5. Transfer to serving plate, top with grated cheese and garnish with basil leaves. Serve.

Binallay

Filipino Style Recipe: Binallay is another popular Filipino delicacy from northern part of Luzon specially in Isabela Province. Like other suman we will use glutinous rice, but we grind the rice into flour and mix with water. Wrap the rice mixture in banana leaves and cook in a boiling water until done then serve with latik sauce.

Estimated time of preparation: 20 minutes(plus soaking and grinding time)
Estimated time of cooking: 1-2 hours

Ingredients:
4 cups glutinous rice(malagkit)
1/2 cup water
banana leaves, cleaned and cut into bigger sized(8×11 inch)
banana or cotton strings
coconut oil

Procedures:
Part 1
1. In a bowl, place glutinous rice and water then soak for at least 3 hours. Drain.
2. Grind soaked rice into flour then mix with water until well blended.

Part 2
1. Singe the banana leaves into flames for a few seconds but do not burn. Let it cool then wipe with clean cloth.
2. Grease banana leaves with coconut oil then scoop 3 tablespoons of rice mixture, fold the leaf to wrap the rice mixture.
3. Grab 2 pieces of wrapped rice mixture then tie with folded sides together using a string.

Part 3
1. In a steamer, pour enough water then steam the wrapped rice mixture for 1 1/2 hours or until done.
2. Unwrap the binallay and transfer to serving plate. Serve with latik.

Latik (Sweetened Coconut Sauce)

Filipino Style Recipe: Latik or sweetened coconut sauce is another variety of latik made from coconut milk and panocha made of sugar cane. This version of latik is popular in Visayas region. The sauce has a sweet and oily taste that usually serve together with suman or biko as dipping sauce.

Ingredients:
1 cup coconut milk
1/2 cup panocha, cut into small pieces
200 grams Muscovado sugar

Procedures:
1. In a sauce pan, pour coconut milk and bring to boil.
2. Add panocha and sugar then cook in a low heat while keep stirring until melts and thickens.
3. Remove from heat then transfer into bottle. Serve with suman or biko.

Buko Tart

Filipino Style Recipe: Buko tart is another popular Filipino delicacy and pasalubong from southern Luzon specially in the province of Laguna . Buko tart is a smaller version of buko pie or custard pie, the filling is made up of coconut meat, coconut juice milk, sugar and cornstarch then mix until well blended. Pour the mixture into a pie crust and cover with top crust then bake until firm and done.

Estimated time of preparation: 15-20 minutes
Estimated time of baking: 60-70 minutes

Ingredients:
Pie Filling:
2 cups coconut meat, shredded
1/2 cup coconut water
3/4 cup white sugar
1/2 cup evaporated milk
1/2 cup cornstarch

Pie Crust:
2 cups all purpose flour, sifted
1/2 cup unsalted butter
1 teaspoon salt
3-4 tablespoons ice-cold water

Procedures:
Part 1
1. In a deep pan, combine filling ingredients then simmer and stir in a low heat until thickens. Set aside.

Part 2
1. In a mixing bowl, combine flour and salt then mix well.
2. Add butter then mix thoroughly. Gradually pour cold water then mix until well blended.
3. Gather the dough into a ball shape then refrigerate for 30 minutes.
4. In a clean flat surface, place dough in wax paper then flatten using a rolling pin until 1/8 inch thick.

Part 3
1. Cut out a circle shape in a flat dough then arrange and press down in a tartlet or muffin pan.
2. Prick dough with a fork then pour with coconut filling.
3. Place top cover dough over the filling then seal the edges and prick with fork.
4. Bake in a preheated oven over 400 degrees Fahrenheit then bake for 40-50 minutes or until golden brown.

Notes:
1. You may brush the top cover with egg-water mixture before baking to produce a glossy and brown color to the crust.

Strawberry Graham

Filipino Style Recipe: Strawberry graham is another variety of graham float dessert. It is usually made with a layer of graham crackers, condensed milk, cream, gelatin and strawberries. This dessert is one of the easiest and most favorite dessert of Filipinos specially during Holidays.

Estimated time of preparation: 25 minutes

Ingredients:
250 grams fresh strawberries, halves
2 boxes strawberry flavored gelatin
200 grams graham crackers
50 grams crushed graham crackers
1 big can condensed milk
1 big can all purpose cream

Procedures:
Part 1
1. In large bowl, combine all purpose cream and condensed milk. Mix well and set aside.
2. In a square pan, dissolve strawberry gelatin based on instruction then set aside until firm. Break into small pieces.

Part 2
1. In a rectangular container, arrange a layer of graham cracker then spread a layer of cream mixture.
2. Add a layer of strawberry gelatin and strawberry pieces.
3. Repeat steps up to the desired thickness(3-4 layer of graham crackers).
4. Add a final layer of cream mixture and sprinkle with crushed graham crackers then arrange strawberry pieces on top.
5. Store in refrigerator for 3 hours or overnight. Served cold.

Kiwi, Apple, Pineapple Smoothie

Filipino Style Recipe: kiwi, apple, pineapple smoothie is a healthy and refreshing beverage. This beverage is made of kiwi, apple, pineapple and cubed ice. This refreshing beverage is similar to other healthy shakes and best to serve during summer season.

Good for 2 glasses

Ingredients:
3 pieces kiwi, peeled and cubed
1 apple, peeled and cubed
1/2 cup pineapple juice
3 tablespoons honey or sugar
3/4 cup ice cubes

Procedures:
1. In a blender, process kiwi, apple, pineapple juice and honey until blended.
2. Add ice and blend until smooth, add more honey if needed.
3. Pour into glasses then served cold.
