Sweet and Sour Sauce

Filipino Style Recipe: sweet and sour sauce is a quick and easy recipe. It can be poured over a dish or used as a dipping sauce. Normally it’s a combination of sugar, vinegar, soy sauce and catsup. Simmer over low heat then pour cornstarch or flour mixture.

Ingredients:
1/2 cup sugar
1/2 cup water
1/4 cup vinegar
2 tablespoons soy sauce
2 tablespoons catsup
2 tablespoons cornstarch(dissolved in 2 tablespoons water)

Procedures:
1. In a saucepan, combine sugar, vinegar, soy sauce, catsup and water. Bring to boil over low heat.
2. Pour cornstarch mixture and stir until thickened.
3. Transfer the sauce to bowl. Done.

Ingredients:
400 grams fresh button mushrooms, whole or sliced
4 gloves garlic, minced
4 tablespoons olive oil
4 tablespooons calamansi or lemon juice
salt and pepper to taste
1/2 teaspoon chili flakes(optional)
2 tablespoons parsley, chopped(optional)

Procedures:
1. In a pan, heat olive oil and saute garlic and chili.
2. Add mushrooms, salt and pepper. Stir fry for 5 minutes or until mushrooms release its own juice.
3. Add lemon juice and simmer until oil is sizzling.
4. Add parsley and stir well. Transfer to serving plate and serve.

Mango Float Graham

Filipino Style Recipe: Mango Float is one of the easiest and most favorite dessert of Filipinos specially during Holidays. It is usually made with a layer of graham crackers and a blend of ripe mangoes slices, condensed milk and cream.

Ingredients:
3 large ripe mangoes, sliced into thin and small pieces.
200 grams graham crackers
50 grams crushed graham crackers
1 big can condensed milk
1 big can all purpose cream

Procedures:
Part 1
1. In bowl, combine all purpose cream, condensed milk and sliced mangoes. Mix well.

Part 2
1. Prepare a rectangular container.
2. Dip the graham cracker into cold water and arrange a layer at the bottom.
3. Spread a layer of mango-cream mixture.
4. Repeat step 2 and 3 up to the desired thickness.
5. Add a final layer of mango-cream mixture then sprinkle with crushed graham crackers on top.
6. Store in refrigerator for 3 hours or overnight. Served cold.

Creamy Braised Pork

Filipino Style Recipe: creamy braised pork is another low carbohydrate dish. The pork comes out very tender and juicy while the milk reduces down to create a savory brown sauce.

Ingredients:
4 slices boneless pork chops or pork loin
2 tablespoons all purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper

1 & 1/2 cup non-fat milk
250 grams grated Parmesan cheese(optional)

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper.
2. Trim fat from pork chops then add to flour mixture, stir to coat evenly. Set aside.
3. Add 1/2 cup milk to flour mixture and stir until well blended.

Part 2
1. In a pan, melt butter and fry pork chops about 3 minutes each side or until brown.
2. Pour milk mixture, cover and simmer in a low heat until meat is tender, stir occasionally.
3. Pour the remaining milk and cook until the liquid reduced and thicken. stir occasionally.
4. Transfer to serving plate, sprinkle with grated Parmesan cheese. Serve.

Pork Spareribs with Black Beans

Filipino Style Recipe: Pork spareribs with black beans is a popular among Chinese restaurant. Normally the spareribs marinade and steamed until the meat is tender.

Good for 4-6 persons

Ingredients:
1 kilo pork spareribs, cut into serving pieces
1/2 cup black beans, sauteed
1/2 cup cornstarch
4 teaspoons garlic, chopped and fried
2 teaspoons oyster sauce
3 pieces green pepper, cut into strips
4 teaspoons sesame oil
2 teaspoons sugar
2 teaspoons salt
1 teaspoons white pepper
1 piece raw egg, beaten(optional)
spring onions for garnishing(optional)

Procedures:
Part 1
1. In a bowl, combine all the ingredients except green pepper.
2. Marinate spareribs, covered in the fridge for at least 2-3 hours.

Part 2
1. Using steam boiler, transfer spareribs in a deep steaming plate then top with green pepper.
2. Steam over high heat for about 25 minutes or until spareribs are cooked and tender.
3. Remove and garnish with spring onions. Serve hot.

Tips:
1. You may also fry the spareribs instead of steaming.

Chicken and Green Beans with Spicy Peanut Sauce

1. In bowl, combine peanut butter, honey, soy sauce, chili paste, lemon juice and chicken broth. Mix well.

Part 3
1. In a pan, heat oil and cook chicken until golden brown and tender.
2. Pour the peanut mixture, simmer until sauce is slightly thickened.
3. Add steamed green beans, adjust seasoning according to taste.
4. Continue cooking until sauce is almost absorb.
5. Remove from heat. Transfer to serving bowl then garnish with toasted peanut. Done!

Stir Fry Chicken and Broccoli

1 tablespoon olive oil
1 cup broccoli florets
salt and pepper to taste
1/4 teaspoon chili flakes(optional)
1/4 cup toasted peanut or almonds(optional)

Procedures:
Part 1
1. In a bowl, marinate chicken with garlic, ginger, soy sauce, sugar, salt and pepper for 15 minutes.

Part 2
1. In a pot, boil water with salt. Once boiling, add broccoli and cook for 1 minutes.
2. Drain and rinse with cold water.

Part 3.
1. In a pan, heat olive oil and saute chili flakes.
2. Add chicken and marinate, cook until chicken is tender and color turns to golden brown.
3. Pour cornstarch mixture and bring to boil until thicken.
4. Add broccoli and toasted peanut.
5. Adjust seasoning according to taste.
6. Remove from heat then serve.

Procedures:
Part 1
1. In a bowl, marinate beef with garlic, paprika, salt and pepper for 30 minutes.
2. In a pan, heat olive oil then stir fry beef for 5 minutes or until brown.
3. Remove from the pan and set aside.

Part 2
1. In a pan, melt butter and saute garlic and onion.
2. Add mushrooms and saute for 3 minutes.
3. Pour water and cream of mushroom then cover and simmer until the sauce is creamy. Stir constantly.
4. Put the meat back into the pan then add grated Parmesan cheese.
5. Adjust seasoning according to taste. Simmer for a while and turn off the heat.
6. Transfer to serving plate then sprinkle with parsley and serve immediately.

Tokwa’t Baboy

cooking oil for frying
3 pieces red pepper(siling labuyo), chopped(optional)
1 onion for garnishing(diced or rings)(optional)

Procedures:
Part 1
1. In a pot, pour water then add salt and pork.
2. Bring to boil over lower heat until pork is tender. Set aside.

Part 2
1. In frying pan, heat oil and deep fry tofu until golden brown.
2. Drain on paper towel then cut into cubes. Set aside.

Part 3
In a bowl, mix vinegar, soy sauce, salt, sugar, red pepper, ground pepper, onions and garlic.

Part 4
1. In a serving bowl, combine pork and fried tofu. Pour sauce mixture and garnish with onions.

100grams fresh tofu
3 gloves garlic, minced
2 pieces red chili, chopped
1 tablespoon spring onion, chopped
vegetable oil for frying
salt and pepper to taste
1/2 cup cornstarch

Procedures:
Part 1
1. In a bowl, pour water with salt and soak tofu for 15 minutes.
2. In another bowl, add cornstarch and add tofu. Coat evenly.

Part 2
1. In a frying pan, heat oil and deep fry tofu for 2-3 minutes or until golden brown.
2. Drain and set aside.

Part 3
1. In a pan, heat oil and saute garlic, spring onions and red chili.
2. Add fried tofu and season with salt and pepper. Saute for 1-2 minutes.
3. Remove form heat then transfer to serving plate. Serve.

Tips:
1. You may also add green bell pepper if desired.
