Pork and Beans with Alugbati

Filipino Style Recipe: Pork and beans with alugbati is high protein dish that consists of beans boiled until tender then cooked along with pork, tomato sauce, other ingredients and alugbati.

Ingredients:
1/4 kilo white beans(bitsuelas)
1/2 kilo pork, cut into small pieces
4 gloves garlic, peeled and crushed
1 onion, chopped
3 pieces tomatoes, discard seeds and diced
1 cup tomato sauce
1/4 cup tomato ketchup(optional)
1 liter water
sugar, salt and pepper to taste
a bunch of alugbati(basella)

Procedures:
Part 1
1. In a bowl, soak beans in water overnight. Wash on running water then drain. Set aside.
2. In a pot, boil water then cook beans for an hour or until tender. Add water if necessary then set aside.

Part 2
1. In another pot, heat oil then saute garlic, onion and tomatoes.
2. Add pork and cook until light brown and tender.
3. Add boiled beans, tomato sauce, ketchup, sugar, salt and pepper according to taste.
4. Simmer until well blended and thicken. Add water if necessary.
5. Add alugbati then simmer for another 3 minutes. Remove from heat then serve with steamed rice.

Porkchop Salisbury

Filipino Style Recipe: Porkchop Salisbury is another variety of popular Salisbury dish from United States. The dish is consist of marinated fried porkchop cooked in Salisbury sauce. This is commonly serve as main dish together with steamed rice and vegetable.

Ingredients:
4 pieces pork chops(thick-cut), skin removed
2 white onions, sliced in rings
1/4 cup cooking oil
1 tablespoon butter

Marinade:
3 tablespoons calamansi or lemon juice
1/4 cup soy sauce
4 cloves garlic, minced
1 teaspoon sugar
salt and pepper to taste

Gravy Sauce:
1 large white onion, slice into rings
2 cups beef stock
1 teaspoon flour
2 tablespoons soy sauce
1 tablespoon butter
1 tablespoon brown sugar
1/4 teaspoon ground pepper

Procedures:
Part 1
1. Pound the meat with a meat pounder then marinate in calamansi, soy sauce, garlic, sugar, salt and pepper for at least 3 hours or overnight inside the fridge.

Part 2
1. In a pan, heat oil then melt butter over medium heat. Lightly fry the onion rings for a few seconds then drain and set aside.

Part 3.
1. In the same pan, heat oil then fry marinated pork chops for 5-8 minutes each side. Drain and set aside.

Part 4
1. In a sauce pan, pour soy sauce and beef stock then bring to boil.
2. Add flour then stir constantly until the sauce becomes thick.
3. Add butter, sugar and ground pepper then stir until well blended.
4. Add pork chops and onion then simmer for another minute.
5. Transfer to serving plate then serve with steamed beans.

Sichuan Stir-Fried Chinese Long Beans

Filipino Style Recipe: Stir-fried Chinese long beans is another simple and quick recipe. It is consist of Chinese beans and ground meat cooked together in soy sauce, Sichuan peppercorns, and spices.

Good for 2-3 persons

Ingredients:
300 grams Chinese beans, trimmed and cut into serving pieces
200 grams ground pork
3 cloves garlic, minced
1 white onion, chopped
3 tablespoons soy sauce
1/4 teaspoon dried chili flakes
4 tablespoons vegetable or peanut oil
1/2 teaspoon Sichuan peppercorns, crushed
fish sauce or salt to taste

Procedures:
Part 1
1. In a pan, heat oil then saute garlic and onion.
2. Add ground pork, fish sauce then stir cook until light brown. Remove and set aside.

Part 2
1. In a same pan, add beans then stir-fry for 5 minutes or until outsides begins to blister and wilted. Add oil if needed.
2. Return the ground meat then add soy sauce, chili flakes and Sichuan peppers.
3. Adjust seasoning with fish sauce then simmer for another minute.
4. Transfer to serving plate then serve immediately.

Stir Fry French Beans and Shrimps

1 red bell pepper, diced

1 teaspoon brown sugar
1/4 teaspoon dried chili flakes
3 tablespoons vegetable oil

Procedures:
Part 1
1. In a pan, heat oil then saute ginger, garlic, onion and red bell pepper.
2. Add shrimps then stir cook until colors turns to pink. Remove from the pan and set aside.

Part 2
1. In a same pan, add oil if needed then add french beans then stir cook for a minute.
2. Add soy sauce, oyster sauce and sugar then continue cooking for another 3 minutes.
3. Add sauteed shrimps, chili flakes, salt and pepper according to taste then cook for another minute.
4. Transfer to serving plate then serve immediately.

Nilagang Buto-buto ng Baka

Procedures:
Part 1
1. In a large casserole, place the beef and add water. Set over medium heat and bring to a boil and simmer for about 1 1/2 hours or until meat is tender. (Remove the scum as it rises.)
2. Add more water if necessary. Pressure cooker only takes 30 minutes.

Part 2
1. Add onion, peppercorn, beef bouillon cube and sprinkle some salt.
2. Add corn, potatoes, and carrots then continue cooking until cooked.
3. Add the green beans then simmer for 3-5 minutes. Adjust seasoning according to taste.
4. Add cabbage and pechay then simmer for another minute.
5. Transfer to serving bowl then serve hot with steamed rice. Enjoy

3. Add the green beans. Simmer for 3-5 minutes then adjust seasoning according to taste.
4. Add pechay then turn off the heat and leave for about 3 minutes before serving.

This is considered as one of the favorite dish of most Filipinos. Preparing this dish is so simple but time consuming because the beef simmered for at least an hour until tender then cooked with corn cobs, potatoes, bananas and veggies. This is so popular and can be served anytime or the best during rainy season.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 70 – 90 minutes

Ingredients:
1 kilo of beef shank/bone marrow(bulalo), cut into serving pieces
3 medium-sized potatoes, cut into quarter
1 small bundle green beans(baguio beans), trimmed
1 bundle bok choy(Pechay), cut the 2 pieces
1 onion, chopped
1 tablespoon peppercorn
fish sauce(patis) or salt to taste
1 liter of water

3 Japanese corn cobs, cut into 3-4 pieces(optional)
1/2 small cabbage, cut into quarter(optional)
5 pieces cardava banana(saging na saba), sliced(optional)
2 thumb-sized ginger, chopped(optional)

Procedures:
Part 1
1. In a large casserole, place the meat, ginger and add water. Set over medium heat and bring to a boil and simmer for at least about 1 hour or until meat is tender. Remove the scum as it rises. Add more water if necessary. Pressure cooker takes less time.

Part 2
1. Add corn and onion. then season with fish sauce and sprinkle some salt. Simmer for another 10 minutes or until the corn is tender.
2. Add potatoes and continue cooking until potatoes are cooked.
3. Add cardava banana and all the vegetables. Do not cover and simmer for about 5 minutes or until vegetables are done.(Do not overcooked the vegetables)
5. Adjust seasoning with fish sauce and salt according to taste.
6. Serve hot with fish sauce and birds eye chili(siling labuyo) for condiments.

Notes:
1. You may also add anise or cinnamon powder if you prefer.
