Bacon Wrapped Hotdogs

Filipino Style Recipe: Bacon wrapped hotdogs is another simple yet delicious appetizer. Usually the cocktail hotdogs wrapped in bacon strips then bake until crisp. This is commonly serve in any occasion specially during holidays and birthdays. Definitely, the kids will love this!

Estimated time of preparation: 15 minutes

Ingredients:
300 grams honeycured bacon
400 grams cocktail hotdogs
toothpick

Procedures:
1. Wrap a piece of bacon around each cocktail hotdog then secure ends with toothpick.
2. Repeat the step for remaining pieces then arrange in a baking pan.
3. Bake in a preheat oven over 300 degrees Fahrenheit for 10 minutes.
4. Transfer to serving plate then serve immediately.

Braised Beef and Tendon

Filipino Style Recipe: braised beef and tendon is a popular beef dish which was originate in Chinese cuisine. Usually the beef and tendon cooked in beef stock, soy sauce, oyster sauce, sugar and star anise until tender. Some add dissolved cornstarch to thickens the sauce and commonly serve with noodles or as main dish.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 2 hours and 40 minutes
Good for 5-6 persons

Ingredients:
500 grams beef brisket
500 grams beef tendons
1 thumb-sized ginger, grated
6 cloves garlic, minced
2 small onions, chopped
7 cups beef stock
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
2 pieces star anise
a bunch of bok choy, trimmed
3 stalks spring onions, chopped
3 tablespoons olive oil
fish sauce and pepper to taste
1/4 cup cooking wine(optional)

Procedures:
Part 1
1. In a big pot, boil water then blanch beef and tendon for 10 minutes. Drain and let it cool.
2. Cut beef and tendon to small cubes. Set aside.

Part 2
1. In a large wok, heat oil then stir fry beef and tendon until brown.
2. Pour cooking wine then toss and let it evaporate.
3. Remove everything from the wok and set aside.

Part 3
1. In a same wok, heat oil then saute ginger, garlic and onion.
2. Pour beef stock, soy sauce, oyster sauce, star anise and sugar then stir and bring to boil.
3. Add tendon then cover and simmer in a low heat for an hour.
4. Add beef then simmer for another hour or until tendon and beef are tender. Add more water if necessary.
5. Adjust seasoning according to taste then add bok choy, spring onions then simmer for 3 minutes.
6. Turn off the heat then transfer to serving bowl. Enjoy!

Notes:
1. You may add 3 teaspoons of cornstarch dissolved in 1/4 cup water to thicken the sauce.

Chocolate Cupcakes

Filipino Style Recipe: Chocolate cupcakes is a small cake that is usually bake in paper liner or aluminum cup. The cupcakes is designed to one person and have many varieties or flavor then topped with frosting or other cake decorations.

Estimated time of baking: 20-25 minutes
Good for 22 cupcakes

Ingredients:
1 & 1/2 cups flour
1 & 1/2 teaspoons baking powder
3 tablespoons cocoa powder
3/4 cup unsalted butter, softened
1 cup granulated sugar
3 raw eggs
1 & 3/4 cup fresh milk
1 teaspoon vanilla
1/4 cup dark chocolate chips(optional)

Procedures:
Part 1
1. In a mixing bowl, combine flour, baking powder, cocoa powder and dark chocolate chips then mix well. Set aside.

Part 2
1. In an electric mixer, combine butter and sugar until well blended.
2. Add eggs, milk and vanilla then mix until to blended.
3. Gradually add the flour mixture then mix until well combined.

Part 3
1. In a muffin pan, grease with cooking spray or place paper cups.
2. Pour batter into each cups until 2/3 full.
3. Preheat oven to 350 degrees Fahrenheit then bake for 20 minutes or until golden brown.(Cupcakes is done when a toothpick inserted in the center comes out clean.)
4. Remove from the oven and let it cool before serving.

Baked Hickory Smoked Chicken

Filipino Style Recipe: baked hickory smoked chicken is another variety of mouth-watering chicken barbecue dish. Instead of cooking the chicken in hot charcoal, we parboil, marinate in hickory smoked barbecue sauce and bake the chicken until tender.

Estimated time of preparation: 5-10 minutes(plus marinating time)
Estimated time of parboil: 15-20 minutes
Estimated time of baking: 45 minutes
Good for 3-4 persons

Ingredients:
3 pieces chicken leg quarter
1 bottle hickory smoked barbecue sauce
salt and pepper to taste
olive oil

Procedures:
Part 1
1. In a pan, arrange chicken then season with salt and pepper.
2. Parboil for 15-20 minutes. Drain and pat dry.
3. Prick the chicken several times with a knife.
4. Brush with hickory smoked barbecue sauce then refrigerate for at least 4 hours or overnight.

Part 2
1. Preheat oven at 350 degrees Fahrenheit.
2. In a baking pan, drizzle with olive oil then arrange marinated chicken.
3. Bake chicken for 45 minutes, basting with barbecue sauce every 15 minutes.
4. Remove chicken from the oven and brush again with the barbecue sauce.
5. Transfer to serving plate then serve with steamed broccoli.

Buttered Garlic Chicken

Filipino Style Recipe: buttered garlic chicken is another delicious chicken dish. Chicken is marinated in olive oil and garlic fried and baked in chicken stock and butter until tender.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 10-15 minutes(plus baking time)
Good for 2-3 persons

Ingredients:
500 grams chicken, cut into serving pieces
1/2 cup olive oil
2 heads of garlic, chopped
1/4 cup unsalted butter
1/4 cup chicken stock
salt and pepper to taste

Procedures:
Part 1
1. Pat dry chicken then season with salt and pepper.
2. In a container, combine olive oil, garlic and chicken.
3. Marinate for an hour or overnight inside the fridge. Reserve olive oil.

Part 2
1. In a frying pan, heat olive oil from marinade then fry garlic until light brown. Remove and set aside.
2. In a same frying pan, fry marinated chicken until golden brown. Drain.

Part 3
1. In a baking pan, arrange fried chicken then add butter, chicken stock and a teaspoon of olive oil.
2. Cover with aluminum foil then bake in a preheat oven over 350 degrees Fahrenheit for 20 minutes.
3. Remove cover then baste chicken and bake again for another 10 minutes.
4. Transfer to serving plate together with toasted garlic. Serve.

Crispy Fried Shrimps

Filipino Style Recipe: Crispy fried shrimps is a simple and easy shrimp dish that consists of medium shrimps coated in batter and seasoned flour then deep fried until brown. This can be served as appetizer or pulutan together with spicy vinegar.

Ingredients:
500 medium shrimp, cleaned
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
2 tablespoons butter, melted
1/4 teaspoon paprika
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine egg, milk, 1/2 cup flour and butter then mix well. Set aside.
2. In another bowl, combine remaining flour, paprika and salt and pepper then mix well. Set aside.

Part 2
1. Dip shrimp into batter then hold it up to drain well.
2. Roll into seasoned flour then shake off to remove excess flour.

Part 3
1. In a deep pan, heat oil then deep fry shrimps until light brown.
2. Drain on paper towels then serve with spicy vinegar.

Pasta Negra

Filipino Style Recipe: Pasta negra or ink pasta is another seafood-pasta dish that commonly served in restaurant. This dish is made of spaghetti pasta, squid and ink sac cooked and toss together until blend. Sometimes we add chili flakes, clams, shrimps and basil.

Estimated time of cooking: 10-12 minutes
Good for 4-5 persons

Ingredients:
400 grams spaghetti pasta
500 grams fresh squid, cleaned and cut into rings then reserve ink sac
8 cloves garlic, minced
1 thumb-sized ginger, grated
1 tablespoon cornstarch(dissolved in 1 tablespoon water)
salt and pepper to taste
3 tablespoons olive oil
1 cup Parmesan cheese, grated
3 tablespoons vinegar
1/2 teaspoon salt

1/2 cup parsley, chopped(optional)
2 tablespoons soy sauce(optional)
1/4 teaspoon dried chili flakes(optional)
mussels and shrimps, cooked(optional)

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.
2. In a bowl, add squid, vinegar and salt then set aside.

Part 2
1. In a large pan, heat 1 tablespoon olive oil then saute garlic, grated ginger and chili flakes.
2. Add squid, ink sac, soy sauce and cornstarch then simmer for 5 minutes.
3. Add mussels, shrimps and parsley then adjust seasoning according to taste.
4. Add spaghetti and half of cheese then toss.
5. Transfer to serving plate then arrange seafood and top with parsley.
6. Sprinkle with remaining grated cheese and serve immediately.

Sauteed Pork and Green Beans

Filipino Style Recipe: Sauteed pork and green beans is an easy and affordable dish. It is consist of pork and green beans(baguio beans) sauteed and cooked until tender.

Estimated time of preparation and cooking: 20-25 minutes
Good for 2-3 persons

Ingredients:
1 bunch green beans(baguio beans), discard ends then cut into small pieces
1/4 kilo pork, cut into small pieces
5 cloves garlic, minced
1 onion, chopped
1 1/2 cups water
fish sauce or salt and pepper to taste

Procedures:
1. In a pan, heat oil then saute garlic and onion until translucent.
2. Add pork and fish sauce then stir cook until light brown and tender.
3. Add green beans then stir cook for a minute.
4. Pour water then season with fish sauce and pepper then simmer for 3-5 minutes.
5. Transfer to serving bowl then serve with steamed rice. Enjoy!

Crispy Fried Pechay Stalks

Filipino Style Recipe: Crispy fried pechay stalks is another easy and quick recipe. This dish is consists of pechay stalks coated in flour mixture, eggs and bread crumbs then deep fried until light brown. The stalks was trimmed from my previous recipe(stuffed pechay). Crispy fried pechay stalks is usually served as appetizer together with mayo-ketchup dipping sauce.

Estimated time of cooking: 8-10 minutes
Good for 2-3 persons

Ingredients:
3 cups pechay(bok choy) stalks, cut into biting size
1 1/2 cups all purpose flour
1/2 teaspoon fine salt
1/2 teaspoon ground pepper
2 cups bread crumbs
2 eggs, beaten
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. In another bowl, beat eggs then whisk well. Set aside.

Part 2.
1. Dredge each stalk in flour mixture and shake off to remove excess flour.
2. Dip in egg mixture and press into bread crumbs to coat.
3. Repeat then procedure for remaining pieces.

Part 3
1. In a deep pan, heat oil then deep fry coated stalks for a minute or until light brown.
2. Drain on paper towels then serve with mayo-ketchup sauce.

Baked Hickory Smoked Baby Back Ribs

Filipino Style Recipe: Baked hickory smoked baby back ribs is a popular dish in Western and Asian Cuisine. This dish is consists of loin ribs or back ribs marinated in hickory smoked barbecue sauce then baked until tender. This is usually served as main dish together with steamed veggies and mashed potatoes or rice. RACKS is one of the best restaurant that offered this kind of dish. Their version of hickory smoked baby ribs is very tender and the meat falls off from its bone.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of baking: 190 minutes

Ingredients:
2 racks baby back ribs
1 bottle hickory smoked barbecue sauce

Equipment and Materials:
Aluminum foil
Basting brush
oven

Procedures:
Part 1
1. Remove the silvery membrane at the interior side of the rack by simply cutting a small piece at the edge and peeling it off with your finger.
2. Prick the meat several times with a knife.
2. Brush the ribs liberally with hickory smoked barbecue sauce.
3. Wrap each rack of ribs tightly in aluminum foil then refrigerate for at least 4 hours or overnight.

Part 2
1. Preheat oven at 250 degrees Fahrenheit.
2. Bake the meat in the preheated oven for 2 1/2 hours or until tender.
3. Remove the meat from oven, open foil and brush another layer of barbecue sauce.
4. Set the oven to 350 degrees Fahrenheit then put the meat back to the oven and bake for another 10 minutes.
5. Repeat the brushing and baking for four times at 10 minutes each.
6. Remove the meat from the oven and brush again with the barbecue sauce before serving.
