Ingredients:
500 grams fresh shrimps, peeled and discard heads
1/4 cup flour
1 egg, beaten
1 teaspoon garlic powder
1 teaspoon ginger powder
a dash of dried chili flakes
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons red wine
1/4 cup water
1/4 cup brown sugar
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, egg, salt and pepper then mix until well blended.
2. Add shrimps then toss to coat.

Part 2
1. In a frying pan, heat oil then fry shrimps for 5 minutes or until light brown. Drain on paper towels.
2. In a same pan, reduce oil then stir cook the garlic, ginger and chili flakes.
3. Add the remaining ingredients then simmer until reduce in half and start to thickens.

Part 3
1. In a bowl, combine fried shrimps and the sauce then toss to coat. Serve with steamed rice then sprinkle with spring onions.

Kakiage Tempura

Filipino Style Recipe: Kakiage tempura is another popular Japanese dish made of deep fried battered vegetables. Normally the vegetables peeled and cut into strips then dip into the batter to coat. Deep fried until golden brown then serve with your favorite dipping sauce.

Estimated time of preparation: 20-30 minutes
Estimated time of cooking: 5-10 minutes
Good for 5-6 fritters

Ingredients:
2 medium carrots
2 pieces sweet potato
2 large white onions
2 green capsicum
cooking oil for deep frying

Batter:
1 cup flour
2 tablespoons baking powder or cornstarch
1/4 teaspoon salt
1 egg yolk
1 1/2 cups iced water

Procedures:
Part 1
1. Cut into vegetables into strips, 3-4 inches long.
1. Combine all vegetables and mix well. Set aside.

Part 2
1. In a large bowl, combine flour, baking powder and salt then mix well.
2. In a separate bowl, mix egg yolk and iced water then pour into flour mixture.
3. Stir slightly and leave some flour unmixed. Add some ice to keep the batter icy cold.
4. Add vegetables and combine well into the batter.

Part 3
1. In a frying pan, heat enough oil then take a scoop of vegetable mixture using wire mesh strainer.
2. Deep fry for 5 minutes or until crisp and golden brown. Repeat until all the mixture are consumed.
3. Drain on paper towels then serve with dipping sauce.

Crispy Fried Luncheon Meat and Tofu

Filipino Style Recipe: Crispy fried luncheon meat and tofu is another simple and easy dish that is usually serve as appetizer or pulutan together with your favorite dip. Luncheon meat and tofu were coated in flour mixture then dip in eggs. Roll luncheon meat and tofu in breadcrumbs then deep fry until golden brown.

Estimated time of cooking: 10-12 minutes
Good for 3-4 persons

Ingredients:
300 grams spicy luncheon meat, cut into serving pieces
200 grams firm tofu, cut into serving pieces
1 1/2 cups flour
1 1/2 cups breadcrumbs
2 eggs, beaten
salt and pepper to taste
oil for frying

Procedures:
Part 1
1. In a pan, heat oil then fry tofu until golden brown. Drain and set aside.

Part 2
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs and breadcrumbs into a separate bowls. Set aside.
3. Dredge the luncheon meat into flour mixture then shake off to remove excess flour.
4. Dip in beaten eggs and press into bread crumbs to coat all sides.
5. Repeat the steps for remaining luncheon meat and tofu.

Part 3
1. In a pan, heat oil then fry each luncheon meat and tofu for 5 minutes or until light brown.
2. Drain on paper towel then serve with garlic-mayo dip.

Salt and Pepper Crab

Filipino Style Recipe: Salt and pepper crab is another simple and easy seafood dish that is commonly served in Chinese restaurant. The crabs deep fried and stir cooked in scallion, butter, salt and pepper. This is usually served as appertizer or pulutan together with dipping sauce.

Ingredients:
1 kilo fresh mud crabs, cleaned
5 tablespoons cornstarch
5 cloves garlic, minced
2 tablespoons chopped scallion
3 tablespoons olive oil
cooking oil for deep frying
salt and pepper to taste
2 tablespoons butter(optional)
1/8 teaspoon dried chili flakes(optional)

Procedures:
Part 1
1. Sprinkle cornstarch over crabs then deep fry for 5 minutes. Drain on paper towel.

Part 2
1. In a pan, heat olive oil and butter then saute garlic, scallion and chili flakes.
2. Add fried crabs then sprinkle with salt and pepper. Stir cook for a minute.
3. Remove from heat then transfer to serving plate and serve with spicy vinegar.

Crispy Fried Shrimps

Filipino Style Recipe: Crispy fried shrimps is a simple and easy shrimp dish that consists of medium shrimps coated in batter and seasoned flour then deep fried until brown. This can be served as appetizer or pulutan together with spicy vinegar.

500 medium shrimp, cleaned
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
2 tablespoons butter, melted
1/4 teaspoon paprika
salt and pepper to taste

Part 1
1. In a bowl, combine egg, milk, 1/2 cup flour and butter then mix well. Set aside.
2. In another bowl, combine remaining flour, paprika and salt and pepper then mix well. Set aside.

Part 2
1. Dip shrimp into batter then hold it up to drain well.
2. Roll into seasoned flour then shake off to remove excess flour.

Part 3
1. In a deep pan, heat oil then deep fry shrimps until light brown.
2. Drain on paper towels then serve with spicy vinegar.

Crispy Fried Pechay Stalks

Filipino Style Recipe: Crispy fried pechay stalks is another easy and quick recipe. This dish is consists of pechay stalks coated in flour mixture, eggs and bread crumbs then deep fried until light brown. The stalks was trimmed from my previous recipe(stuffed pechay). Crispy fried pechay stalks is usually served as appetizer together with mayo-ketchup dipping sauce.

Ingredients:
3 cups pechay(bok choy) stalks, cut into biting size
1 1/2 cups all purpose flour
1/2 teaspoon fine salt
1/2 teaspoon ground pepper
2 cups bread crumbs
2 eggs, beaten
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. In another bowl, beat eggs then whisk well. Set aside.

Part 2.
1. Dredge each stalk in flour mixture and shake off to remove excess flour.
2. Dip in egg mixture and press into bread crumbs to coat.
3. Repeat then procedure for remaining pieces.

Part 3
1. In a deep pan, heat oil then deep fry coated stalks for a minute or until light brown.
2. Drain on paper towels then serve with mayo-ketchup sauce.

Crispy Fried Fishkatsu

Filipino Style Recipe: crispy fried fishkatsu is another low-carbohydrate fish dish. This dish is similar to Japabese pork tonkatsu. Fish fillet is usually marinated then dredge in flour, eggs and breadcrumbs. Dip fry the fish until golden brown then serve with dipping sauce.

Estimated time of preparation and cooking: 20 minutes(plus marinating time)
Good for 2-3 persons

Ingredients:
3/4 kilo boneless fish fillet(tilapia, milkfish, salmon, snapper)
1 1/2 cup all purpose flour
1 1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon sesame oil

Marinade:
3 cloves garlic, minced
4 tablespoons calamansi or lime juice
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Marinate fish in calamansi juice, garlic, salt and pepper for 10 minutes.
2. In a bowl, add beaten eggs and sesame oil. whisk well and set aside.
3. Dredge the fish in flour and shake off to remove excess flour.
4. Dip fish in egg mixture and press into bread crumbs to coat both sides.

Part 2
1. In a frying pan, heat oil over a low heat.
2. Deep fry both sides of breaded fish for 3-5 minutes or until colors turn to golden brown and tender.
3. Drain on paper towels and cut each fishkatsu into bite-size strips.
4. Transfer the fishkatsu into serving plate with sour cream or katsu sauce and shredded cabbage on the side. Enjoy!
