Chicken Kung Pao

Filipino Style Recipe: Chicken Kung Pao is a popular Chinese dish made from chicken fillet, peanut, and dried chili cooked in a rich sauce with hints of Asian spices. This recipe is easy and simple but mouth-watering chicken dish.

Ingredients:
300 grams chicken fillet, cut into serving pieces
1/4 cup peanut, unsalted
1 thumb-sized ginger, cut into strips
5 cloves garlic, minced
1 onion, chopped
1 small-sized red bell pepper, diced
2 tablespoons spring onion, chopped
1/2 cup onion leeks, sliced diagonally
3 pieces dried chili(optional)
salt and pepper to taste
2 tablespoons sesame oil

Sauce Mixture:
1/2 cup chicken broth
3 tablespoons oyster sauce
2 tablespoons soy sauce
1/2 teaspoon cornstarch
sugar

Procedures:
Part 1
1. In a bowl, combine sauce mixture until well blended.

Part 2
1. In a pan, heat oil then stir fry chicken until well-browned.
2. Add peanut then stir fry, add ginger, garlic, and onion.
3. Add bell pepper then continue sauteing for a few seconds.
4. Add sauce mixture then cover and simmer until thickens.
5. Add dried chili and onion leeks then adjust seasoning according to taste.
6. Transfer to serving bowl then sprinkle with spring onion. Serve immediately. sugar

Spicy Squid

Filipino Style Recipe: Spicy Squid or pusit is an simple seafood dish consists of squid cook in tomato sauce, hot sauce and chili flakes until tender together with vegetables. Avoid to overcook the squid because it will become rubbery texture and tough.

Estimated time of cooking: 5-8 minutes
Good for 3-4 persons

Ingredients:
1/2 kilo fresh squid, cleaned and cut into serving pieces
1 carrots, sliced thinly
100 grams green beans, trimmed and sliced diagonally
100 grams tomato paste
a dash of chili flakes
2 teaspoons hot sauce
2 tablespoons oyster sauce
6 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, chopped thinly
2 pieces green chili, sliced diagonally
1/2 teaspoon sesame seeds
2 teaspoons sesame oil
salt and pepper to taste

Procedures:
1. In a pan, heat sesame oil then saute garlic, onion and ginger.
2. Add carrots and green beans then stir fry for 2 minutes.
3. Add squid, oyster sauce, tomato sauce, chili flakes, and hot sauce then continue to stir fry for a few minutes.
4. Season with salt and pepper according to taste. Add green chili and sesame seeds.
5. Transfer to serving plate then serve with steamed rice.

Sinigang na Bagnet

Filipino Style Recipe: Sinigang na Bagnet is another variety of Filipino tamarind soup using bagnet as main ingredient. Bagnet is a popular delicacy in Ilocos made from pork belly deep fried until crispy and blister on skin. This dish has a sour taste best to serve during rainy and cold season.

Ingredients:
1 kilo bagnet, cut into serving pieces
12 tamarind(sampalok) or 2 packs sampaloc mix
1 big-sized onion, chopped
5 medium-sized tomatoes, quartered
3 medium-sized taro(gabi), peeled and cut into cubes
1 bundle of string beans(sitaw), cut into 2 inches long
1 bundle of river spinach(kangkong leaves)
3 pieces green pepper(siling haba)
salt and fish Sauce(patis)
1 1/2 liters pork broth
6 pieces okra, trimmed(optional)
1 radish, sliced(optional)

Ingredients:
Part 1
1.Boil tamarind, pound and strain the juice. Set aside.

Part 2
1. In a casserole, pour pork broth, onion, tomatoes then bring to boil.
2. Add tamarind juice then bring to boil. Add gabi then simmer until tender.
3. Add radish, okra, green pepper, and string beans then simmer for another 5 minutes.
4. Adjust seasoning with fish sauce then add bagnet and kangkong.
5. Turn off the heat then let it sit for 1-2 minutes or until kangkong is cooked.
6. Transfer to serving bowl then serve hot with steamed rice.

Pansit Bihon Canton Guisado

Filipino Style Recipe: Pansit bihon canton guisado is a popular noodle dish that is consists of a mixed of rice noodles and flour noodles. This dish was originated from Chinese and become very popular in Filipino cuisine. Pansit bihon canton guisado is similar to other pansit dish that is commonly served in different occasions.

Estimated time of preparation and cooking: 40-60 minutes
Good for 8-10 persons

Ingredients:
300 grams rice noodles(bihon), I used HOBE Special Bihon
200 grams flour noodles(canton)
200 grams pork, sliced in small pieces
1 chicken breast, cooked and shredded
4 cups chicken broth from chicken breast
4 tablespoons soy sauce
1/4 kilo snow peas(sitsaro)
2 cups cabbage, sliced into strips
1 carrot, julienned
1 cup celery(kintsay), sliced
4 tablespoons cooking oil
1 onion, chopped
4 cloves garlic, minced
salt and pepper to taste
10 pieces calamansi
100 grams pork or chicken liver(optional)
100 grams shrimps, shelled and deveined(optional)
1 chicken cube(bouillon cube)(optional)

Procedures:
Part 1
1. In a big bowl with water, soak bihon and canton noodles until soft. Drain and set aside.

Part 2
1. In a wok, saute the garlic and onions.
2. Add pork and liver, then cooked until color turns to brown.
3. Add broth, soy sauce, and bouillon cube then simmer for 3 minutes.
4. Add vegetables and the remaining ingredients then season with salt and pepper. Simmer for 5 minutes or until half cooked.
5. Remove and set aside all the ingredients except for the liquid.(Make sure the liquid is enough for the noodles to cook and absorb).
6. Add bihon and canton noodles then toss until the the liquid absorb.
7. Put back all the ingredients then cooked 2 minutes. Mix well.
8. Adjust seasoning according to taste then remove from heat. Serve hot with calamansi.

Pork Guisantes

Filipino Style Recipe: Pork Guisantes is a simple yet delicious tomato-based pork dish cooked in tomato sauce together with green peas. This dish can be served together with steamed rice during lunch time.

Ingredients:
500 grams pork, cut into serving pieces
1 small pack tomato sauce
1 cup water
2 tablespoons green peas
4 cloves garlic, minced

2 tablespoons fish sauce

Procedures:
1. In a pan, heat oil then saute garlic and onion until translucent.
2. Add pork then continue sauteing until light brown.
3. Add fish sauce, bay leaves, water and tomato sauce then simmer in a low heat for 20 minutes or until tender.
4. Add green peas, cover and cook for another 2 minutes. Season with salt and pepper.
5. Transfer to serving plate then serve with steamed rice. Enjoy!

Spicy Wings in Tomato Sauce

Filipino Style Recipe: Spicy Wings in Tomato Sauce is another mouth-watering dish that consists of a chicken wings cooked in tomato sauce together with potatoes, carrots, herbs and seasonings.

500 grams chicken wings, cut into serving pieces
1 large-sized carrot, cut into serving pieces

a dash of dried rosemary
a dash of dried chili flakes
a dash of dried basil
1/4 teaspoon cumin powder
6 cloves garlic, minced
1 tablespoons butter
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Season chicken wings with salt and pepper.
2. In a frying pan, heat oil then fry chicken wings until golden brown. Remove from pan and set aside.
3. In a same pan, fry potatoes and carrots until light brown. Drain and set aside.

Part 2
1. In a sauce pan, heat oil then melt butter. Saute garlic, rosemary, and tomatoes until soft.
2. Pour chicken stock, tomato sauce, cumin, chili flakes and basil then simmer for 5 minutes.
3. Adjust seasoning with salt and pepper according to taste.
4. Add chicken wings, carrots and potatoes then simmer for another 2 minutes.
5. Transfer to serving plate then serve with steamed rice.

Broccoli and Shiitake Mushroom in Oyster Sauce

Filipino Style Recipe: Broccoli and Shiitake Mushroonm in Oyster Sauce is another healthy vegetable dish yet easy and simple to prepare. The broccoli and mushroom sauteed and stir cooked in a blend of oyster sauce and chicken stock.

Ingredients:
1 medium-sized Broccoli, cut into serving pieces
115 grams Shiitake Mushroom, sliced
3 cloves garlic, minced
3 tablespoons oyster sauce
1/4 cup chicken stock or chicken bouillon dissolved in hot water
a dash of dried chili flakes
2 tablespoons vegetable oil
salt and pepper to taste

Procedures:
1. In a pan, heat oil then saute garlic and shiitake mushrooms until light brown.
2. Add broccoli, chili flakes, and chicken stock then simmer for 2 minutes.
3. Add oyster sauce then adjust seasoning according to taste.
4. Simmer for another minute then transfer to serving plate. Serve immediately.

Seafood Pansit Bihon Guisado

Filipino Style Recipe: Seafood pansit bihon guisado is another variety of popular Filipino dish consists of cornstarch noodles(bihon). The bihon is usually soak and cook together with squid, shrimp, mussels and vegetables in broth and soy sauce. This is commonly serve in any occasions or in mid-afternoon snacks.

12-15 pieces shrimp, peeled and deveined
12 pieces squid, cleaned and cut into rings
12-15 pieces mussels, boiled and removed from shells
100 grams fish balls, quartered(optional)
1/4 kilo snow peas(sitsaro)
2 cups cabbage, sliced into strips
1 carrot, julienned
1 red bell pepper, sliced into strips
6 cloves garlic, minced
1 onion, chopped
4 cups shrimp broth(shrimp heads mashed then boiled in water with salt)
4 tablespoons soy sauce
fish sauce, salt and pepper to taste
200 grams calamansi

Procedures:
Part 1
1. In a big bowl with water, soak noodles for 10 minutes or until soft. Drain and set aside.

Part 2
1. In a large wok, heat oil then stir fry fish balls until color turns to light brown. Remove and set aside.
2. In a same wok, saute garlic and onions then add shrimp, mussels and squid. Saute until shrimp color turns to pink. Remove and set aside.
3. In a same work, pour broth, soy sauce, salt and pepper then simmer for 3 minutes.
4. Add vegetables then simmer for 5 minutes or until half cooked. Remove and set aside except for the liquid.
5. Add soaked noodles then toss until the liquid absorb.(Make sure the liquid is enough for the noodles to cook and absorb).
6. Put back all the ingredients then cooked 2 minutes. Mix well.
7. Adjust seasoning according to taste then remove from heat. Serve hot with calamansi.

Chicken Mechado

Filipino Style Recipe: Chicken mechado is another chicken stew that consists of a chicken meat cooked in tomato sauce together with potatoes, carrots and bell peppers then seasoned with soy sauce, bay leaves and vinegar. This dish is similar to other tomato-based dishes such as kalderata, menudo and afritada.

Ingredients:
750 grams chicken, cut into serving pieces
150 grams tomato sauce
1 onion, chopped
6 cloves garlic, minced
3 bay leaves(laurel)
2 large potatoes, quartered
1 bell pepper, sliced
4 cups chicken stock or chicken bouillon dissolved in water
4 tablespoons soy sauce
2 tablespoons fish sauce
salt and pepper to taste
3 tablespoons vegetable oil

1 carrot, cut into cubes(optional)
1/4 cup green peas(optional)
2 tablespoons vinegar(optional)

Procedures:
Part 1
1. In a pan, heat oil then fry potatoes and carrots until golden brown. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onions.
2. Add chicken and fish sauce then continue sauteing until color turns to brown.
3. Pour tomato sauce, soy sauce, bay leaves and chicken stock then simmer until tender. Add water if necessary.
4. Add vinegar and boil again for 2-3 minutes. Do not stir.
5. Add carrots, potatoes and bell pepper then simmer for 3 minutes.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to serving plate and serve with steamed rice.

Fish Fingers

Filipino Style Recipe: Fish fingers is another popular finger food or snack that consists of fish fillets coated into flour, egg and breadcrumbs then deep fry until golden brown. This is usually serve together with dipping sauce and beer.

Ingredients:
750 grams fish fillets(I used cream dory), cut into serving pieces
1/2 cup flour
2 raw eggs, beaten
1 cup breadcrumbs(optional)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs into a separate bowls.
3. Dredge fish fillet into flour mixture then shake off to remove excess flour.
4. Dip in beaten eggs and dredge into flour mixture or breadcrumbs to coat all sides.
5. Repeat the steps for remaining fish fillets. Set aside.

Part 2
1. In a pan, heat enough oil then deep fry each fish fillets for 3-5 minutes or until golden brown.
Drain on paper towel and set aside.
2. Transfer fish fillets into serving plate then serve with garlic-mayo dip.
