Ingredients:
1/2 kilo boneless chicken breasts, cut into serving pieces

Coating:
1 egg white
1/4 teaspoon salt
cornstarch
canola oil

Sauce:
1 green bell pepper, cut into cubes
1 can pineapple chunks(reserve juice)
1 medium onion, cut into cubes
3 tablespoon vinegar
4 tablespoons brown sugar
4 tablespoons ketchup
2 tablespoons cornstarch(dissolve in 5 tablespoons water)
1/2 teaspoon sesame oil(optional)

Procedures:
Part 1
1. In a bowl, combine the chicken, egg white, salt and then cornstarch. Stir to coat the chicken evenly.
2. Let sit for 15 minutes at room temperature or up to overnight in the refrigerator.

Part 2
1. In a frying pan, heat cooking oil and deep fry chicken until it’s half-done.
2. Drain and set aside.

Part 3
1. In a sauce pan, heat 1 tablespoon cooking oil over a medium-heat.
2. Add the bell pepper and onion.
3. Add the pineapple chunks, pineapple juice, vinegar, ketchup, salt and brown sugar. Simmer over a high-heat.
4. Add the chicken pieces then simmer for 1-2 minutes or until the chicken is tender.
5. Add cornstarch mixture and simmer for another minute.
5. Adjust seasoning according to taste.
6. Serve and enjoy!

Honey Lemon Chicken Recipe

Ingredients:
4 chicken breast, cut into serving pieces

Coating:
1 egg
1 tablespoon soy sauce
1/4 teaspoon white pepper
canola oil
cornstarch

Sauce:
2 tablespoons honey
3 tablespoons lemon juice
1/2 cup water
1/2 teaspoon salt
1 teaspoon sesame oil
2 teaspoons cornstarch(dissolve in 1 tablespoon cold water)

Procedures:
Part 1(Marinating)
1. In a bowl, mix the egg, soy sauce and white pepper together.
2. Add the chicken breast and soak for 30 minutes.

Part 2(Frying)
1. Remove the chicken from mixture. Coat the chicken with cornstarch.
2. In a pan, heat canola oil and fry chicken for about 3-4 minutes or until the chicken is crisp and tender. Drain on paper towels and transfer on a serving plate. Set aside.

Part 3(Sauce)
1. In a sauce pan, mix sesame oil, water, ginger, honey, lemon juice and salt together.
2. Heat over low flame, cover and bring to boil for 1-2 minutes or until fragrant and all the mixtures are dissolved and mixed well. Discard the ginger.
3. Add the cornstarch mixture into a honey-lemon sauce and bring to boil in a medium heat. Simmer for 1 minute or until the sauce thickens. Remove from heat. (If the sauce is too thick, add a small amount of water. )
4. Pour the honey-lemon sauce over chicken. Garnish with sliced lemon.
5. Serve and Enjoy!

Lechon Paksiw Recipe

3 cloves garlic, crushed

1/4 cup liver spread(optional)
1/4 cup water
1 tablespoon cooking oil
salt to taste

Procedures:
1. In a cooking pot, heat lechon meat until start to render oil then saute garlic and onions.
2. Pour water then add peppercorn and bay leaf then bring to boil.
3. Add the vinegar and simmer for 5 minutes.
6. Add the sugar, liver spread and lechon sauce then simmer for another 5 minutes.
7. Adjust seasoning with salt then stir.
8. Remove from heat and serve with steamed rice. Enjoy!

Burger Steak with Mushroom Gravy

Ingredients:
Burger Patties
1/2 kilo ground beef
1/2 egg, beaten
4 cloves garlic, minced
1/4 cup breadcrumbs
1/4 teaspoon salt
1/2 teaspoon ground pepper
2 tablespoons canola oil

Mushroom Gravy
1/2 onion, peeled and diced
3 cups sliced button mushrooms
3 tablespoons soy sauce
2 tablespoons flour
3 cups beef stock
1 tablespoon butter

Procedures:
Part 1
1. In a bowl, combine ground beef, egg, garlic, breadcrumbs, salt and pepper. Mix thoroughly.
2. To create a burger patty, divide the mixture into serving pieces. Roll the mixture into balls and flatten on an even surface.
3. In a frying pan, heat oil and fry patties each side for 3 minutes or until color turn to brown. Drain and set aside.

Part 2
1. In a same pan, remove excess oil and saute onions over medium heat.
2. Add mushrooms and cook for another 3 minutes.
3. Add beef stock and soy sauce then simmer and bring to boil.
4. Add flour then stir constantly until the sauce becomes thick.
5. Add butter to make the sauce shiny and more flavorful and cook for another minute.

Part 3.
1. Transfer the burger patties to a serving plate and top with mushroom gravy.
2. Serve and enjoy!

Dinakdakan Recipe

Filipino Style Recipe: dinakdakan recipe is a popular Filipino dish especially in Ilocos and northern part of Luzon. 3 pieces bay leaves(laurel)
1/2 cup mayonnaise
salt and ground pepper to taste

Procedures:
Part 1
1. In a big cooking pot, place water and bring to a boil.
2. Add hog head then add peppercorn, bay leaves and salt. Simmer for 30 minutes or until tender.
3. Place the hog brain into plastic bag then boil in the same cooking pot for 5 minutes.
4. Remove the meat and brain from the cooking pot, drain and let it cool for a few minutes.
Part 2
1. Cut the hog head into grilling size and grill until color turns to brown and crispy.
2. Remove from heat then cut into small slices.
Part 3
1. In a big bowl, put the sliced hog head with ginger, onions, red chili, ground pepper, vinegar, mayonnaise and brain. Mix well and adjust seasoning with salt according to taste.
2. Serve and enjoy!

Lechon Kawali

3. Remove the meat, drain and let it cool a little then slice into serving pieces

Kinamatisang Baka Recipe

Filipino Style Recipe: Kinamatisang baka recipe or beef tomato recipe is a another simple tomato-based dish that’s common in northern part of Luzon. This dish consisting of lean beef in tomatoes with some spices.

Ingredients:
1/4 kilo lean beef or any part with fat, cut into small-sized
4 large tomatoes, sliced or tomato sauce
1 small onion, chopped

1 knorr beef cube(optional)
1 tablespoon sugar
salt and pepper to taste

Preparation
1. In a pot, combine all the ingredients then mix and crush the tomatoes using hand.
2. Bring to boil for 30 minutes or until beef is tender. Add water as needed.
3. Adjust seasoning with salt and fish sauce according to taste.
4. Remove from heat, serve and enjoy!

3 tablespoons butter or margarine

1/2 cup green bell pepper, diced(optional)

Procedures:
1. In a saucepan, melt butter the saute onion, mushrooms and bell pepper for 5 minutes.
2. Add flour, milk and chicken both then stir constantly until smooth.
3. Add sweet peas and carrots then stir cook for 3 minutes.
4. Add chicken, salt and pepper then continue cooking until thick and begins to bubble.
5. Transfer to serving bowl then serving with steamed rice. Serve hot!

Tips:
1. If you’d like a thicker sauce: dissolve 2 tablespoons cornstarch in 1/4 cup water, add to sauce a little at a time, until desired thickness is reached.

Paksiw na Pata Recipe

1 small onion, sliced
1 teaspoon peppercorn
2 cups water
salt to taste

Procedures:
Part 1
1. In a pot, place pork leg with water(just enough to cover the meat) then bring to a boil. Strain the meat and discard the water.
Part 2
1. In a same pot, Put back the pork leg and add enough water to cover the meat. Bring to boil.
2. Add soy sauce, peppercorn, onion and garlic.
3. Simmer over low heat for 1 to 1 1/2 hours or until pata is tender and sauce is thickens. Add water if necessary.(Cook in pressure cooker takes 30 minutes).
4. Add vinegar and simmer for another 10 minutes.
5. Add the banana blossom and simmer for another 5 minutes.
6. Add brown sugar and salt to taste. Simmer for another 2 minutes.
7. Remove from heat. Serve and enjoy!

Lumpiang Sariwa Recipe

1 cup baguio beans, shredded(optional)

Lettuce leaves
Lumpia wrapper
butter or cooking oil
Salt to taste

Lumpia Sariwa Sauce:
1/2 cup sugar
1 tablespoon cornstarch
1 cup chicken broth or water
2 tablespoons soy sauce
2 cloves garlic; minced

Procedures:
Cook the Filling:
1. In a saucepan, heat butter and saute garlic and onion.
2. Add ground pork, ham and shrimp. Simmer until it changes color.
3. Season with soy sauce and sugar.
4. Add vegetables and continue cooking until it is half-done.
5. Adjust seasoning with salt according to taste. Set aside.

How to make the Lumpia Sariwa Sauce:
1. In a saucepan, pour chicken broth and bring to boil.
2. Add sugar and soy sauce then mix well.
3. Dilute the cornstarch in water and pour in the saucepan.
2. Boil in a very low fire, stirring occasionally until the sauce thickens.
3. Add the garlic. Set aside.

To Wrap the Filling:
1. On top of the lumpia wrapper, place a leaf of lettuce and 3 tablespoons of the mixture.
2. You may roll up folding one end and leaving other open or just roll up and place in the platter.
3. Garnish with sauce and minced peanuts.
