Filipino Style Recipe: Vegetable Omelet recipe is an easy healthy breakfast recipe. Instead of going with the usual eggs and cheese, add a little bit milk and extra vegetables.

Estimated time of preparation and cooking: 10-20 minutes
Good for 1 servings

Ingredients:
3 eggs, beaten
1 tablespoon butter or margarine
2 small button mushrooms, sliced thinly
1/4 red or green bell pepper, sliced thinly
1 onion, sliced thinly
1/2 large tomato, sliced thinly
Salt and ground pepper to taste
1/2 cup grated tasty cheese
1/4 cup milk(optional)
1 tablespoon parsley, chopped(optional for garnishing)

Procedures:
Part 1
In a bowl, beat the eggs and milk together until frothy. Season with salt and ground pepper. Set aside.

Part 2
1. In a nonstick frying pan, heat butter over medium heat.
2. Saute mushrooms for 2 minutes or until nice and browned.
3. Add onion, tomato and bell pepper, continue sauteing until softened.

Part 3
1. Pour egg mixture into vegetables, Sprinkle with grated cheese.
2. Cook until bottom is golden. Gently fold omelet over.
3. Carefully slide omelet onto a serving plate. Garnish with parsley.
4. Serve immediately!

Tips:
1. You may include 1/2 small zucchini sliced thinly in omelet filling.

Salmon with Tomatoes Recipe

Filipino Style Recipe: salmon with tomatoes recipe is another low-carbohydrate dish. It is usually consists of salmon fillets cooked with diced tomatoes, onions, garlic, peppers and lemon juice.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4 servings

Ingredients:
1/2 kilo salmon fillets, cut into serving pieces
1 medium onion, chopped
2 cloves garlic, peeled and diced
2 large tomatoes, diced
3 tablespoons olive oil
1 lemon, juice
2 teaspoons freshly grated lemon zest
1 teaspoon pickled jalapeño peppers, chopped
1/3 cup white wine(I prefer chardonnay)
1/4 cup water
1 teaspoon sugar
Salt and pepper to taste
1 tablespoon fresh thyme leaves, chopped(optional)
2 tablespoons capers, drained(optional)

Procedures:
Part 1
1. In a bowl, marinate salmon fillets with lemon juice for 10-15 minutes. Drain and set aside.

Part 2
1. In a saucepan, heat olive oil on medium heat. Saute onion and garlic.
2. Add the tomatoes, lemon juice, lemon zest, sugar, thyme, capers and jalapeño peppers.
3. Simmer on high heat for 5 minutes, add a little water if necessary.
4. Adjust seasoning with salt and pepper.

Part 3
1. Add white wine and water. Bring to boil.
2. Place the salmon fillets, cover and cook for  another 5-10 minutes or until done on low heat.
3. Transfer salmon fillets to serving plate with the sauce.
4. Serve hot.

Filipino Style Oriental Chicken Noodle Soup

Filipino Style Recipe: oriental chicken noodle soup is a nutritious recipe. It consists of whole wheat noodles simmer with chicken stock and shredded chicken meat then add some spices that bring taste and aroma to the soup.

Estimated time of preparation and cooking: 10-15 minutes
Good for 4 servings

Ingredients:
250 grams thin-flat noodles or rice noodles(I prefer whole wheat noodles)
2 cups shredded Barbecue chicken
1 liter chicken stock
2 teaspoons ginger, minced
1 clove garlic, minced
2 tablespoons soy sauce
2 teaspoons sesame oil
1 egg, beaten
2 spring onions, chopped
1 red chili
2 stalks baby bok choy(petchay), chopped
1 medium carrots, halved crosswise(optional)

Procedures:
1. In a pot, heat chicken stock, ginger and garlic and bring to boil.
2. Add sesame oil, soy sauce and noodles. Simmer for 5 minutes.
3. Add shredded chicken, bok choy, carrots and a few spring onions and chili. Simmer until vegetables are tender.
4. Remove from heat and add beaten egg, stirring consistently for 30 seconds.
5. Serve hot into bowls, garnish with remaining spring onions and chili.

Tips
1. You may add canned corn kernel while simmering.

Ginataang Tilapia

Filipino Style Recipe: ginataang tilapia recipe is another simple and easy Filipino dish. It is usually consist of tilapia fish cooked in a combination of coconut milk and some spices. I used tumeric or luyang dilaw to add more flavor and color to our dish.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4 servings

Ingredients:
4 medium-sized tilapia
1 piece onion, sliced
1 thumb-sized ginger or tumeric(luyang dilaw), diced
2 pieces green chili(siling haba)
a cup of pure coconut milk
1 eggplant(talong), cut in halves and sliced diagonally
1/2 cup of vinegar
salt and pepper to taste

a bunch of pechay(bok choy), (optional)
2 pieces small tomatoes, diced(optional)
3 pieces red chili(siling labuyo)(optional)

Procedures:
1. In a saucepan, arrange tilapia and eggplant.
2. Add the green chili, onion, tomatoes and ginger.
3. Pour in the vinegar and season with salt and pepper.
4. Let it boil for a few minutes and add the coconut milk.
5. Let it simmer or until the coconut is creamy and oily.
6. Adjust seasoning according to taste.
7. Serve and Enjoy!

Biko Recipe

Filipino Style Recipe: Biko recipe is a Filipino sweet rice delicacy that’s traditionally served on every occasion specially during New Year’s Eve. It consist of sticky rice(malagkit), coconut milk(gata) and brown sugar.

Estimated time of preparation and cooking: 70-80 minutes
Good for 8-10 servings

Ingredients:
2 cups sticky rice(malagkit)
4 cups coconut milk(gata)
2 cups brown sugar
1 1/2 cups water

Procedures:
Part 1
1. In a cooking pot, boil sticky rice and water and cook until the rice is done and almost dry. Set aside.
Part 2
1. In a big wok, boil the coconut milk in low heat, stir occasionally until most of the liquid evaporates and the oil separating from the milk. Continue stirring until brownish residues are formed. Drain the brownish residues and set aside. This will serve as toppings(latik) for biko.
Part 3
1. Then dilute brown sugar in the remaining oil, keep stirring until the texture becomes thick.
2. Add the cooked sticky rice in the mixture then mix well, continue cooking until all the liquid evaporates but do not overcook. Remove from heat.
3. Transfer the cooked biko in a serving plate then flatten the surface.
4. Spread the toppings over the surface and slice into serving pieces. Enjoy!

Lechon Paksiw Recipe

Filipino Style Recipe: lechon paksiw is another simple and easy Filipino pork dish. This dish is a way to re-cook leftover roasted pork(lechon) in a blend of lechon sauce, vinegar, garlic and some spices.

Estimated time of preparation and cooking: 20 minutes
Good for 3-4 persons

Ingredients:
1/2 kilo lechon meat, cut into serving pieces
1/4 cup lechon sauce
3 cloves garlic, crushed
1 medium onion, chopped
1 teaspoon peppercorn
1 bay leaf(laurel)
2 tablespoon vinegar
1/4 cup brown sugar
1/4 cup liver spread(optional)
1/4 cup water
1 tablespoon cooking oil
salt to taste

Procedures:
1. In a cooking pot, heat lechon meat until start to render oil then saute garlic and onions.
2. Pour water then add peppercorn and bay leaf then bring to boil.
3. Add the vinegar and simmer for 5 minutes.
6. Add the sugar, liver spread and lechon sauce then simmer for another 5 minutes.
7. Adjust seasoning with salt then stir.
8. Remove from heat and serve with steamed rice. Enjoy!

Sarciadong Isda

Filipino Style Recipe: sarciadong isda recipe or fish sarciado is another simple and easy Filipino dish. This dish is a way to re-cooked left over fish. It is usually consist of fried fish cooked in a combination of tomatoes and beaten eggs.

Good for 2-3 persons

Ingredients:
2 medium-sized fish, cleaned
2 pieces eggs, beaten
4 medium-sized tomatoes, diced
1 medium-sized onions, diced
3 cloves garlic, minced
2 tablespoons fish sauce(patis)
1/2 cup water
1/2 teaspoon ground pepper
cooking oil
2 tablespoons chopped spring onion(optional)

Procedures:
Part 1
1. Wash and clean the fish. Make a slit on both sides and ensure that salt has been rubbed over the fish.
2. In a pan, heat cooking oil and fry fish until brown. Drain and set aside.

Part 2
1. In same pan, reduce the oil then saute onion, garlic and tomatoes until soft.
2. Add water, spring onion, fish sauce and ground pepper. Bring to boil.
3. Add beaten eggs, once the eggs curdles start stirring the mixture.
4. Adjust seasoning according to taste then add fried fish and simmer for 3 minutes.
6. Transfer to serving plate then sprinkle with remaining spring onion. Serve with rice. Enjoy!

Dinakdakan Recipe

Filipino Style Recipe: dinakdakan recipe is a popular Filipino dish especially in Ilocos and northern part of Luzon. It is consisting of hog head and brain cooked in boiling water with spices then grilled until crispy, chopped into small pieces then mix with mayonnaise, onions, salt and pepper to taste. Like sisig this dish is usually serve as appetizer.

Estimated time of preparation and cooking: 40-50 minutes
Good for 4-6 persons

Ingredients:
1/2 hog head(cheek, nose and ear), cut into 2-4 pieces
hog brain(optional)
1 thumb-sized ginger, chopped
4 medium-sized onions, chopped
4 pieces red chili(siling labuyo), chopped
1/4 cup vinegar
1 tablespoon peppercorn
3 pieces bay leaves(laurel)
1/2 cup mayonnaise
salt and ground pepper to taste

Procedures:
Part 1
1. In a big cooking pot, place water and bring to a boil.
2. Add hog head then add peppercorn, bay leaves and salt. Simmer for 30 minutes or until tender.
3. Place the hog brain into plastic bag then boil in the same cooking pot for 5 minutes.
4. Remove the meat and brain from the cooking pot, drain and let it cool for a few minutes.
Part 2
1. Cut the hog head into grilling size and grill until color turns to brown and crispy.
2. Remove from heat then cut into small slices.
Part 3
1. In a big bowl, put the sliced hog head with ginger, onions, red chili, ground pepper, vinegar, mayonnaise and brain. Mix well and adjust seasoning with salt according to taste.
2. Serve and enjoy!

Lechon Kawali

Filipino Style Recipe: Lechon kawali recipe or crispy pan-fried roasted pork is well known Filipino dish. It is consisting of pork belly cooked in boiling water with spices then deep-fried until crispy, usually serve as appetizer.

Estimated time of preparation and cooking: 40-50 minutes
Good for 4-6 persons

Ingredients:
1 kilo pork belly
2 tablespoons salt
2 tablespoons whole pepper corn
5 pieces dried bay leaves(laurel)
3 cups cooking oil
5 cups water

Procedures:
Part 1
1. In a big cooking pot, place water and bring to a boil
2. Add pork belly then add 1 tablespoon salt, pepper corn and bay leaves. Simmer for 30 minutes or until meat is tender
3. Remove the meat, drain and let it cool for a few minutes.
Part 2
1. Spread 1 tablespoon of salt on the meat, distribute it evenly on all sections.
2. In a big cooking pot, heat cooking oil and deep fry the meat. Cook side by side until colors turn to brown and texture is crispy.
3. Remove the meat, drain and let it cool a little then slice into serving pieces
4. Serve with letchon sauce. Enjoy!

Kinamatisang Baka Recipe

Filipino Style Recipe: Kinamatisang baka recipe or beef tomato recipe is a another simple tomato-based dish that’s common in northern part of Luzon. This dish consisting of lean beef in tomatoes with some spices.

Estimated time of preparation and cooking: 40-50 minutes
Good for 2-3 persons

Ingredients:
1/4 kilo lean beef or any part with fat, cut into small-sized
4 large tomatoes, sliced or tomato sauce
1 small onion, chopped
4 cloves garlic, chopped
1 tablespoon fish sauce(patis)
1 knorr beef cube(optional)
1 tablespoon sugar
salt and pepper to taste

Preparation
1. In a pot, combine all the ingredients then mix and crush the tomatoes using hand.
2. Bring to boil for 30 minutes or until beef is tender. Add water as needed.
3. Adjust seasoning with salt and fish sauce according to taste.
4. Remove from heat, serve and enjoy!
