Baked Kamote Fries

Filipino Style Recipe: Baked kamote fries is a popular snack that consists of slices of sweet potatoes. The sweet potatoes coated in cornstarch then seasoned with olive oil, cayenne and salt. Ingredients:
3 large-sized sweet potatoes(kamote), peeled and cut into slices
1/2 cup cornstarch
4 tablespoons olive oil
1 teaspoon salt
3/4 teaspoon cayenne powder

Procedures:
1. In a large bowl, combine potatoes and cornstarch then stir to coat evenly. Strain to remove excess cornstarch.
2. In a separate bowl, combine potatoes, olive oil, cayenne and salt then toss to coat evenly.
3. Arrange in grease baking sheet then bake in a preheated oven over 400 degrees Fahrenheit for 30 minutes. (15 minutes each side or until browned).
4. Turn off the heat then let it cool inside the oven for another 15 minutes. Serve with dipping sauce.

Cheesecake Brownies

Filipino Style Recipe: Cheesecake brownies is another variety of chocolate brownies marbled with cheesecake. This kind of brownie has an extraordinary design comes with chocolate buttons inside. This can be serve together with coffee or milk and commonly serve as mid-afternoon snack.

Ingredients:
Cheesecake layer:
1 pack(225 grams) cream cheese, softened
1/4 cup sugar
1 egg
1/2 cup dark chocolate buttons

Chocolate layer:
1/2 cup dark chocolate buttons
1/4 cup butter
1/2 cup white sugar
1/4 tsp vanilla extract
2 eggs
2/3 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Procedures
Part 1
1. In a mixing bowl, combine cream cheese and sugar then beat until smooth.
2. Add egg and beat again until well blended then add chocolate buttons. Set aside.

Part 2
1. In another bowl, melt chocolate and butter together by putting it under boiling water then stir until well blended.
2. Add in sugar, vanilla, and eggs into chocolate mixture while continuously mixing.
3. Sift in the flour, baking powder, and salt into chocolate mixture then mix until just blended.

Part 3
1. Grease a 9 inch square baking pan with melted butter then line with wax paper. Brush butter on the paper.
2. Pour half of the chocolate mixture over the baking pan then spread the cream cheese mixture over the first layer.
3. Pour the remaining chocolate mixture on top then swirl a knife on top to make marble pattern.
4. Bake in a preheated oven over 300 degrees Fahrenheit for 25-30 minutes or until top is crinkled.
5. Remove from the oven and let it cool, remove the wax paper then cut into squares. Refrigerate before serving.

Chewy Brownies

Filipino Style Recipe: Chewy brownies is another popular dessert originate in United States which is most likely between cake and cookie in texture. Brownie comes in different varieties and may include nuts, chocolate chips, frosting, whipped cream and other ingredients. This is usually serve together with coffee or milk.

Ingredients:
1/2 cup dark chocolate buttons
2 tbsp. natural cocoa unsweetened
1 cup flour
1/2 cup butter, softened
2 teaspoon vanilla extract
2 raw eggs, at room temperature
1 cup sugar
1/4 teaspoon salt
1/2 cup mini chocolate chips(optional)

Procedures:
Part 1
1. Preheat oven at 300 degrees Fahrenheit.
2. Grease an 8 inch square baking pan with butter then line with wax paper. Brush butter on the paper.

Part 2
1. In a bowl, melt butter and chocolate over boiling water. Remove from heat and let it cool slightly.
2. Mix in sugar, salt, and vanilla on the chocolate mixture. Add eggs one at a time while stirring until well blended.
3. Add flour, cocoa and chocolate chips then beat until well incorporated but do not over beat(approximately 30-60 seconds of beating).
4. Pour the mixture in a grease baking pan then bake for 30 minutes or until done.(Brownies is done when a toothpick inserted in the center comes out clean.)

Part 3
1. Remove from the oven and let it cool enough to handle.
2. Run a knife around the inside of the pan then flip into a flat surface.
3. Remove the paper from the brownies then cut into squares. Refrigerate before serving.

Hawaiian Pizza Pandesal

Filipino Style Recipe: Hawaiian Pizza Pandesal is inspire to typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and various toppings. We have several left-over pandesal this morning, I want to use it before it expire. Since I am craving for pizza and I already have some ingredients, I decided to use pandesal as alternative to pizza crust. The outcome is very good and the kids love it.

Estimated time of preparation: 15 minutes
Estimated time of baking: 8-10 minutes
Good for 8 servings

Ingredients:
8 big-sized pandesal, cut in half
140 grams pizza sauce or tomato sauce
100 grams mozzarella cheese or quick melt, grated

Toppings:
100 grams pineapple tidbits, drained
100 grams sweet ham, cooked and cut into cubes

Procedures:
1. Place pandesal in a flat surface, ladle enough pizza sauce into the center and spread it out at the edges.
2. Sprinkle shredded cheese on top then arrange toppings evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.
4. Pre-heat oven over 200 degrees Fahrenheit then bake pandesal for 8-10 minutes or until the cheese is melted.
5. Remove from the oven then transfer to serving sheet. Serve hot.

Baked Tilapia Parmesan

Filipino Style Recipe: Baked Tilapia Parmesan is a flavorful and easy to prepared. Usually the fish bake for several minutes then spread with cheese coating. Bake for another few minutes until light brown then serve with dipping sauce.

Estimated time of baking: 25-30 minutes
Good for 3-4 persons

Ingredients:
1 kilo tilapia fillets

Cheese Coating:
1/2 cup Parmesan cheese
1/4 cup butter, melted
3 tablespoons mayonnaise
2 tablespoons calamansi juice
1 small onion, minced
1/4 teaspoon parsley or basil, chopped
salt and ground pepper to taste

Procedures:
Part 1
1. In a bowl, combine cheese coating ingredients then mix well. Set aside.

Part 2
1. In a greased pan or lined with aluminum foil, arrange fish fillet then sprinkle with salt and pepper.
2. Bake in a preheat oven over 375 degrees Fahrenheit for 15-20 minutes.
3. Remove from the oven then spread the cheese coating on top of fish fillet.
4. Bake for another 10 minutes or until light brown.
5. Transfer to serving plate then serve with stir fried beans and remaining cheese coating as dipping sauce.

Creme Brulee

Filipino Style Recipe: Creme brulee also known as trinity cream or burnt cream is one of my favorite dessert. It is consists of heavy cream, egg yolks and sugar then topped with caramelized sugar. This is traditionally flavored with vanilla and sometimes can also be flavored with chocolate, cinnamon, coffee, lemon, orange or other fruits.

Estimated time of preparation: 15-20 minutes
Estimated time of baking: 40-50 minutes
Good for 6 ramekins

Ingredients:
6 egg yolks, beaten
2 1/2 cups heavy cream
1/2 cup granulated sugar
1/8 teaspoon salt
1 tablespoon vanilla extract

Procedures:
Part 1
1. In a sauce pan, combine heavy cream and sugar then simmer until sugar is dissolved. Let it cool.
2. In a bowl, combine beaten egg yolks, cream mixture, salt and vanilla then whisk until thick and well blended.
3. Fill up each ramekins with egg-cream mixture then arrange in a shallow pan.

Part 2
1. Fill the pan with hot water until halfway of ramekins then bake over 350 degrees Fahrenheit for 40-50 minutes or until custard is set.
2. Let it cool then cover each ramekins with aluminum foil and refrigerate until ready to serve.

Part 3
1. Sprinkle each ramekins with sugar then shake off the excess sugar.
2. Caramelize the sugar using kitchen torch or broiler until color turns to amber. Serve!

Chocolate Cupcakes

Filipino Style Recipe: Chocolate cupcakes is a small cake that is usually bake in paper liner or aluminum cup. The cupcakes is designed to one person and have many varieties or flavor then topped with frosting or other cake decorations.

Estimated time of baking: 20-25 minutes
Good for 22 cupcakes

Ingredients:
1 & 1/2 cups flour
1 & 1/2 teaspoons baking powder
3 tablespoons cocoa powder
3/4 cup unsalted butter, softened
1 cup granulated sugar
3 raw eggs
1 & 3/4 cup fresh milk
1 teaspoon vanilla
1/4 cup dark chocolate chips(optional)

Procedures:
Part 1
1. In a mixing bowl, combine flour, baking powder, cocoa powder and dark chocolate chips then mix well. Set aside.

Part 2
1. In an electric mixer, combine butter and sugar until well blended.
2. Add eggs, milk and vanilla then mix until to blended.
3. Gradually add the flour mixture then mix until well combined.

Part 3
1. In a muffin pan, grease with cooking spray or place paper cups.
2. Pour batter into each cups until 2/3 full.
3. Preheat oven to 350 degrees Fahrenheit then bake for 20 minutes or until golden brown.(Cupcakes is done when a toothpick inserted in the center comes out clean.)
4. Remove from the oven and let it cool before serving.

Baked Hickory Smoked Chicken

Filipino Style Recipe: baked hickory smoked chicken is another variety of mouth-watering chicken barbecue dish. Instead of cooking the chicken in hot charcoal, we parboil, marinate in hickory smoked barbecue sauce and bake the chicken until tender.

Estimated time of preparation: 5-10 minutes(plus marinating time)
Estimated time of parboil: 15-20 minutes
Estimated time of baking: 45 minutes
Good for 3-4 persons

Ingredients:
3 pieces chicken leg quarter
1 bottle hickory smoked barbecue sauce
salt and pepper to taste
olive oil

Procedures:
Part 1
1. In a pan, arrange chicken then season with salt and pepper.
2. Parboil for 15-20 minutes. Drain and pat dry.
3. Prick the chicken several times with a knife.
4. Brush with hickory smoked barbecue sauce then refrigerate for at least 4 hours or overnight.

Part 2
1. Preheat oven at 350 degrees Fahrenheit.
2. In a baking pan, drizzle with olive oil then arrange marinated chicken.
3. Bake chicken for 45 minutes, basting with barbecue sauce every 15 minutes.
4. Remove chicken from the oven and brush again with the barbecue sauce.
5. Transfer to serving plate then serve with steamed broccoli.

Buttered Garlic Chicken

Filipino Style Recipe: buttered garlic chicken is another delicious chicken dish. Chicken is marinated in olive oil and garlic fried and baked in chicken stock and butter until tender.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 10-15 minutes(plus baking time)
Good for 2-3 persons

Ingredients:
500 grams chicken, cut into serving pieces
1/2 cup olive oil
2 heads of garlic, chopped
1/4 cup unsalted butter
1/4 cup chicken stock
salt and pepper to taste

Procedures:
Part 1
1. Pat dry chicken then season with salt and pepper.
2. In a container, combine olive oil, garlic and chicken.
3. Marinate for an hour or overnight inside the fridge. Reserve olive oil.

Part 2
1. In a frying pan, heat olive oil from marinade then fry garlic until light brown. Remove and set aside.
2. In a same frying pan, fry marinated chicken until golden brown. Drain.

Part 3
1. In a baking pan, arrange fried chicken then add butter, chicken stock and a teaspoon of olive oil.
2. Cover with aluminum foil then bake in a preheat oven over 350 degrees Fahrenheit for 20 minutes.
3. Remove cover then baste chicken and bake again for another 10 minutes.
4. Transfer to serving plate together with toasted garlic. Serve.

Baked Hickory Smoked Baby Back Ribs

Filipino Style Recipe: Baked hickory smoked baby back ribs is a popular dish in Western and Asian Cuisine. This dish is consists of loin ribs or back ribs marinated in hickory smoked barbecue sauce then baked until tender. This is usually served as main dish together with steamed veggies and mashed potatoes or rice. RACKS is one of the best restaurant that offered this kind of dish. Their version of hickory smoked baby ribs is very tender and the meat falls off from its bone.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of baking: 190 minutes

Ingredients:
2 racks baby back ribs
1 bottle hickory smoked barbecue sauce

Equipment and Materials:
Aluminum foil
Basting brush
oven

Procedures:
Part 1
1. Remove the silvery membrane at the interior side of the rack by simply cutting a small piece at the edge and peeling it off with your finger.
2. Prick the meat several times with a knife.
2. Brush the ribs liberally with hickory smoked barbecue sauce.
3. Wrap each rack of ribs tightly in aluminum foil then refrigerate for at least 4 hours or overnight.

Part 2
1. Preheat oven at 250 degrees Fahrenheit.
2. Bake the meat in the preheated oven for 2 1/2 hours or until tender.
3. Remove the meat from oven, open foil and brush another layer of barbecue sauce.
4. Set the oven to 350 degrees Fahrenheit then put the meat back to the oven and bake for another 10 minutes.
5. Repeat the brushing and baking for four times at 10 minutes each.
6. Remove the meat from the oven and brush again with the barbecue sauce before serving.
