Chicken Inasal

Filipino Style Recipe: chicken inasal is a popular grilled chicken recipe from Bacolod. Normally the chicken marinade with seasonings then grilled in a hot charcoal until tender.

Estimated time of preparation: 1-3 hours(marination) + 5-10 minutes(preparation)
Estimated time of cooking: 15-20 minutes each side of chicken
Good for 4-5 persons

Ingredients:
4-5 chicken legs with thigh attached

Marinade
2 tablespoons soy sauce
3 tablespoons vinegar
2 tablespoons calamansi or lime juice
6 gloves garlic, pounded
1 tablespoon ginger, grated
1 tablespoons brown sugar
1 tablespoon salt
1 tablespoon ground pepper

Basting
1 tablespoon annatto seeds(dilute in 1/4 cup hot water)
2 tablespoons cooking oil
2 tablespoons butter

Procedures:
Part 1
1. In a large bowl, combine soy sauce, vinegar, calamansi juice, ginger, garlic, salt and pepper.
2. Add chicken, cover and marinate chicken for 1-3 hours inside the fridge.

Part 2
In a pan, heat oil then add butter, annatto water and a dash of salt. Bring to boil and set aside.

Part 3
1. Grill marinade chicken over hot charcoal for 15 to 20 minutes while basting each side.
2. Transfer serving plate and serve with steamed rice and spicy vinegar.

Pineapple Prawns in Coconut Milk

Filipino Style Recipe: Pineapple prawns in coconut milk is a quick and delicious shrimp strew. The prawns cooked in a few minutes in coconut milk, pineapple juice, turmeric and curry powder together with pineapple chunks and fried eggplants.

Estimated time of preparation and cooking: 20-25 minutes
Good for 2-3 persons

Ingredients:
12 pieces tiger prawns, head and shells intact or removed
1 cup coconut milk
1/2 cup pineapple chunks
1/4 cup pineapple juice
1 teaspoon green curry paste
3 bird’s eye chilis(labuyo)
1 teaspoon turmeric powder(luyang dilaw)
3 tablespoons olive oil
salt and pepper to taste
1 eggplant, halves and sliced(optional)

Procedures:
Part 1
1. In a pan, heat 3 tablespoons oil and fry eggplant. Drain and set aside.

Part 2
1. In a same pan, add green curry paste and turmeric powder then stir.
2. Pour coconut milk then bring to boil over low heat.
3. Add pineapple, pineapple juice, chili and prawns then cook for 3 minutes.
4. Adjust seasoning with salt and pepper then add fried eggplant.
5. Remove from heat then transfer to serving plate. Serve.

Sauteed Green Beans and Mushrooms

Filipino Style Recipe: sauteed green beans and mushrooms is one of the easy and low carbohydrate dish. Normally the mushrooms and green beans sauteed then season with salt and pepper and cooked until tender and crisp.

Estimated time of preparation and cooking: 10-20 minutes
Good for 3-4 persons

Ingredients:
500 grams green beans, trimmed
200 grams mushrooms, sliced
1/4 cup butter
1 onions, chopped
3 gloves garlic, minced
1/4 cup water
1/2 teaspoon cornstarch(dissolved in 1/4 cup water)
salt and pepper to taste
dash of chili flakes(optional)
1/2 teaspoon sugar(optional)

Procedures:
1. In a pan, melt butter and saute garlic, onion and mushrooms.
2. Add green beans, water, chili flakes and soy sauce then simmer for 3 minutes.
3. Pour dissolved cornstarch then season with sugar, salt and pepper. Simmer for 2 minutes or until beans are tender and crisp.
4. Transfer to serving plate then serve.

Maruya(Banana Fritters)

Filipino Style Recipe: maruya or banana fritters is another typical Filipino meryenda(mid-afternoon snack). Maruya is normally consists of cardava banana dipped in a combination of flour, baking powder, milk, eggs, salt and sugar then deep fried until golden brown.

Ingredients:
6 pieces ripe cardava bananas(saging na saba), cut into lengthwise
1 cup flour
1 teaspoon baking powder
1/2 cup milk
2 pieces eggs
1/2 cup sugar
1/2 teaspoon salt
oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, baking powder, salt, sugar, eggs and milk. Mix well.
2. Dip bananas in batter.

Part 2
1. In a pan, heat oil and deep fry the bananas(dipped in batter) until golden brown.
2. Drain then serve with vanilla ice cream or sugar if desired.

Prawns Curry with Pineapple

Filipino Style Recipe: prawns curry with pineapple recipe is a quick shrimp strew. It usually consists of prawns cooked in curry sauce together with pineapple chunks.

Estimated time of preparation and cooking: 10-15 minutes
Good for 2-3 persons

Ingredients:
10 pieces tiger prawns,(remove the head and legs then trim the tails)
250 grams pineapple chunks
2 tablespoons curry powder(dissolved in 1/4 cup water)
1 thumb-sized ginger, minced
2 gloves garlic, minced
2 tablespoons olive oil
3/4 cup water
Salt to taste

Procedures:
1. In a pan, heat oil and saute ginger and garlic.
2. Pour curry mixture and stir until boiling.
3. Add prawns and stir for a minute, add water and bring to boil.
4. Add pineapple and season with salt according to taste.
5. Simmer for 2 minutes or until cooked.
6. Transfer to serving bowl then serve.

Ginisang Munggo(Monggo)

Filipino Style Recipe: ginisang munggo(munggo guisado) or sauteed mung beans is another typical Filipino dish. Normally the mung beans(munggo) boiled and cooked until soft then sauteed with pork and ampalaya leaves.

Estimated time of cooking: 30-40 minutes
Good for 2-3 servings

Ingredients:
1 cup mung beans(munggo)
250 grams pork belly, sliced
5 cups water
2 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped
1 bunch ampalaya leaves or malunggay leaves
1 pork cube
salt and pepper to taste
1/2 cup pork rind(chicharon), crushed

Procedures:
Part 1
1. Soak mung beans in water for 1-2 hours before boiling.
2. In a pot, boil water and mung beans, simmer for 30 minutes or until mung beans is cooked.

Part 2
1. In a saucepan, cook pork until color turns to light brown and start to render oil.
2. Add garlic, onions and tomatoes, sauteing until it’s cooked.
3. Pour in boiled mung beans, broth and pork cube. Season with salt and pepper.
4. Bring to boil and simmer until thick.
5. Add ampalaya leaves and pork rind. Cover and remove from heat. Serve.

Molo Soup

Filipino Style Recipe: molo is another soup dish that usually served specially during rainy season. It is made of ground pork wrapped in a wanton wrapper then cooked in chicken stock together with shredded chicken.

Good for 5 servings

Ingredients:
Filling:
500 grams ground pork
1 pack wanton or siomai wrappers
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1 egg
salt and pepper to taste

Broth:
1 chicken breast
4 cups water
3 gloves garlic, minced
1 small onion, chopped
salt and pepper to taste
spring onions, chopped(optional)
1 chicken cube(optional)
toasted garlic(optional)

Procedures:
Part 1
1. In a pot, boil water then add chicken and salt. Cook for 10 minutes. Reserve the broth.
2. Remove chicken and shred using fork. Set aside.

Part 2
1. In a bowl, combine ground pork, egg, soy sauce, sesame oil, salt and pepper. Mix until well combined.
2. Scoop about 1 tablespoon filling and place into the center of molo wrapper.
3. Seal the edges using water or egg white in triangular shapes. Repeat for the remaining mixture.

Part 3
1. In a bowl, heat oil and saute garlic and onion.
2. Add shredded chicken, season with salt and pepper.
3. Add chicken cube and pour chicken broth and bring to boil.
4. Add molos and some wrappers and simmer for 5 minutes or until molos are cooked.
5. Sprinkle with spring onions.
6. Transfer to serving bowl, garnish with toasted garlic. Serve.

Beef Pochero

Filipino Style Recipe: beef pochero is another beef dish that commonly served by Filipinos. This is similar to pork pochero. Normally beef boiled and cooked with tomato sauce together with cardava bananas(saba), potatoes, green beans, cabbage and bok choy. This is a mouth-watering dish that my family loves so much.

Estimated time of preparation: 20 minutes
Estimated time of cooking: 50-70 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef, cut into cubes
200 grams tomato sauce
1/2 cup soy sauce
4 garlic gloves, chopped
1 small onion, quartered
4 tablespoons fish sauce(patis)
4 pieces banana(saba), sliced diagonally
1 small bundle, green beans, sliced diagonally
1 small chinese cabbage, quartered
salt and pepper to taste
cooking oil

1 bundle bok choy or pechay(optional)
1 red bell peppers, cut into stips(optional)
6 potatoes, cut into cubes(optional)

Procedures:
Part 1
1. In a pot, arrange beef with 1 liter of water. Bring to boil and simmer for an hour or until the beef is tender.
2. Remove the scum as it rises. Add more water if necessary. Pressure cooker takes less time.

Part 2(optional)
1. In a pan, heat oil and fry potatoes. Drain and set aside.

Part 3
1. In a same pan, saute garlic and onion, add in beef and stir cook until light brown.
2. Add tomato sauce, soy sauce and fish sauce then stir cook for 2-3 minutes.
3. Pour beef stock then simmer until 5 minutes, add more water as necessary.
4. Add potato and banana then simmer for 3 minutes.
5. Add other vegetables, cook for 3-5 minutes or until vegetables are cooked.
6. Season with salt and pepper according taste and bring to boil.
7. Transfer to serving plate, serve with steamed rice.

Ginataang Sitaw

Filipino Style Recipe: ginataang sitaw or sauteed string beans in coconut milk is healthy yet affordable dish. Normally the string beans(sitaw) cooked with pork in a blend of coconut milk and shrimp paste.

Estimated time of preparation and cooking: 20-30 minutes
Good for 3-4 servings

Ingredients:
250 grams string beans(sitaw), cut into 2 inches
150 grams pork belly, cut into small pieces
1 1/2 cup coconut milk
1 onion, chopped
2 gloves garlic, minced
1 thumb-sized ginger, thinly sliced
2 tablespoons sauteed shrimp paste(I used Dizon Farm Shrimp Paste)
salt and pepper to taste

2 pieces green chili(siling haba), chopped(optional)

Procedures:
Part 1
1. In a saucepan, cook pork meat until color turns to light brown and start to render oil.
2. Saute garlic, onion and ginger until translucent.
3. Add shrimp paste and continue sauteing until it’s cooked.
4. Pour coconut milk then bring to boil. Add water if necessary.
5. Season with salt and pepper according to taste then add chili and string beans.
6. Cook for 2-3 minutes or until tender then transfer to serving plate and serve immediately.

Tortang Talong

Filipino Style Recipe: tortang talong or eggplant omelet recipe is an easy healthy breakfast recipe. It is consists of broiled eggplants then peel off the skin and dip in egg mixture before frying.

Estimated time of preparation and cooking: 30-40 minutes
Good for 4 servings

Ingredients:
4 medium-sized eggplants(talong)
3 eggs, beaten
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Broil eggplants until skin are charred and blister.
2. Let it cool then peel off the skin and retain the crown and the stem.

Part 2
1. In a large plate, flatten the eggplant using fork.
2. In a bowl, beat the eggs and season with salt and pepper. Mix well.
3. Dip each eggplant one at a time into egg mixture.

Part 3
1. In a pan, heat oil and fry eggplant(dipped in egg mixture) until both sides are golden brown.
Drain on paper towels. Serve.
