Chicken Menudo

Filipino Style Recipe: chicken menudo is another mouth-watering tomato-based dish. The procedure is almost the same to pork menudo and chicken afritada. The chicken marinated then cooked in tomato sauce together with vegetables and other ingredients.

Ingredients:
3/4 kilo chicken breast, cut into cubes
5 cloves garlic, minced
1 onion, chopped
2 potatoes, cut into cubes
1 carrot, cut into cubes
1 red bell pepper, diced
1 cup tomato sauce
1 cup water
2 pieces hotdog, sliced
2 tablespoons dried raisins
2 bay leaves
3 pieces calamansi, juice
1/4 cup soy sauce
5 tablespoons cooking oil
brown sugar, salt and pepper to taste

1 chicken bouillon(optional)
1/2 cup sweet peas(optional)
2 tablespoons liver spread(optional)

Procedures:
Part 1
1. In a large bowl, marinate the chicken in calamansi juice and soy sauce for 15 minutes. Set aside.

Part 2
2. In a large pot, heat cooking oil and fry potatoes and carrots until light brown. Drain and set aside.

Part 3
1. In the same pot, reduce oil then saute garlic and onion.
2. Add marinated chicken then stir cook for 3 minutes.
3. Pour water, chicken bouillon and tomato sauce then simmer for 10 minutes or until chicken is tender.
4. Add potatoes, carrots, red bell pepper, raisins, hotdog, sweet peas, bay leaves and liver spread then simmer for 5 minutes. Stir occasionally.
5. Adjust seasoning with brown sugar, salt and pepper according to taste.
6. Remove from heat then transfer to serving bowl.Serve immediately with steamed rice.

Nilagang Buto-buto ng Baka

Filipino Style Recipe: nilagang buto-buto ng baka is an easy yet delicious Filipino soup dish. This soup dish is so simple to prepare but time consuming. Ingredients:
500 grams beef ribs, cut into serving pieces
7 cups water(add more if necessary)
1 onion, chopped
1/2 teaspoon peppercorn
2 potatoes, quartered
1 bundle bok choy(pechay)
1/2 small cabbage leaves(repolyo), cut into serving pieces
fish sauce or salt to taste
1 piece beef bouillon cube(optional)
1 carrots, cut into serving pieces(optional)
1/2 bundle green beans, trimmed and cut into 3-4inch(optional)
1 Japanese corn cob, cut into serving pieces

Procedures:
Part 1
1. In a large casserole, place the beef and add water. Set over medium heat and bring to a boil and simmer for about 1 1/2 hours or until meat is tender. (Remove the scum as it rises.)
2. Add more water if necessary. Pressure cooker only takes 30 minutes.

Part 2
1. Add onion, peppercorn, beef bouillon cube and sprinkle some salt.
2. Add corn, potatoes, and carrots then continue cooking until cooked.
3. Add the green beans then simmer for 3-5 minutes. Adjust seasoning according to taste.
4. Add cabbage and pechay then simmer for another minute.
5. Transfer to serving bowl then serve hot with steamed rice. Enjoy

Sinigang na Baka

Filipino Style Recipe: Sinigang na baka is another variety of tamarind soup dish that consists of beef boiled in a low heat until tender then cooked in tamarind soup together with other vegetables. This dish has a sour taste that is usually serve as main dish specially during rainy season.

Ingredients:
1 kilo beef, cut into serving pieces
12 tamarind(sampalok) or 2 packs sampaloc mix
1 big-sized onion, chopped
5 medium-sized tomatoes, quartered
3 medium-sized taro(gabi), peeled and cut into cubes
1 bundle of string beans(sitaw), cut into 2 inches long
1 bundle of river spinach(kangkong leaves)
3 pieces green pepper(siling haba)
salt and fish Sauce(patis)
1 1/2 liters water
1 radish, sliced(optional)

Procedures:
Part 1
1.Boil tamarind, pound and strain the juice. Set aside.

Part 2
1. In a casserole, place beef, salt then pour water.
2. Bring to boil in a low heat for 1 1/2 hours or until beef is tender. Add more water if necessary. (Pressure cooker takes less time.)
3. Add onion, tomatoes, and tamarind juice then bring to boil.
4. Add gabi then simmer until tender.
5. Add radish, okra, green pepper, and string beans then simmer for another 5 minutes.
6. Adjust seasoning with fish sauce then add kangkong.
7. Turn off the heat then let it sit for 1-2 minutes or until kangkong is cooked.
8. Transfer to serving bowl then serve hot with steamed rice.

Honey Sesame Chicken

Filipino Style Recipe: honey sesame chicken is another mouth-watering chicken dish that is commonly served in Chinese restaurants. The chicken comes fried in a crispy batter then tossed in a sweet honey-sesame sauce and served with sprinkled sesame seeds.

Ingredients:
3/4 kilo chicken fillets, cut into cubes
toasted sesame seeds for garnishing
cooking oil for frying

Coating:
1 raw egg, beaten
1/4 teaspoon salt
1/4 teaspoon ground pepper
5 tablespoons cornstarch

Sauce:
1 tablespoons sesame oil
3 garlic cloves, minced
1 teaspoon grated ginger
3 tablespoons honey
2 tablespoons sugar
1 tablespoon vinegar
salt and pepper to taste
2 teaspoons cornstarch(dissolved in 3/4 cup water)
2 tablespoons ketchup(optional)
1/4 teaspoon dried chili flakes(optional)

Procedures:
Part 1
1. In a bowl, combine the chicken and coating ingredients then stir to coat the chicken evenly. Let sit for 15 minutes.
2. In a frying pan, heat cooking oil and deep fry chicken for about 7 minutes or until color turns to golden brown. Drain and set aside.

Part 2
1. In a sauce pan, heat sesame oil then saute ginger and garlic.
2. Add the rest of sauce ingredients then simmer while keep stirring until slightly thickens. Turn off heat.
3. Add chicken pieces then toss to coat. Transfer to serving plate then sprinkle with sesame seeds.

Stuffed Pechay

Filipino Style Recipe: Stuffed pechay is another simple yet delicious vegetable dish. Ground meat wrapped in pechay leaves then cooked in coconut cream and turmeric powder. This dish has a creamy and tasty flavor from coconut cream and turmeric powder.

Ingredients:
10 large pechay leaves, cut off the white stalks
300 grams ground pork, chicken or beef
1 1/2 cup coconut cream
4 cloves garlic, minced
1 onion, chopped

2 green chili(siling haba)
1 teaspoon turmeric powder
fish sauce or salt and pepper to taste

Procedures:
Part 1
1. In a flat surface, place pechay leaf then add a tablespoonful of ground meat at the center.
2. Roll and secure the filling, repeat the procedure for remaining pieces.

Part 2
1. In a pan, heat oil then saute garlic, onion, tomatoes and chili flakes.
2. Arrange stuffed pechay in a single layer then pour coconut cream.
3. Add green chili then season with turmeric powder, salt and pepper.
4. Simmer for 20 minutes or until the sauce is curdle and reduce.
5. Transfer to serving plate then top with toasted garlic. Serve with steamed rice.

Sinigang na Liempo

Filipino Style Recipe: Sinigang na liempo is another variety of tamarind soup dish that consists of pork liempo cooked in tamarind soup together with other vegetables. This dish has a sour taste that is usually serve as main dish specially during rainy season.

Filipino Style Recipe: Sauteed Chinese pechay(bok choy) is another healthy yet affordable dish. Normally the pork sauteed until tender then cooked and simmered with bok choy then season with fish sauce and pepper.

Ingredients:
2 bunches bok choy(chinese pechay), cut out the base
250 grams pork, cut into small pieces
4 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped(optional)
1 cup water or beef/pork broth
2 tablespoons vegetable oil
fish sauce or salt and pepper to taste

Procedures:
Part 1
1. In a pan, heat oil then add pork and fish sauce. Stir cook until light brown then set aside.
2. In a same pan, saute garlic, onion and tomatoes until soft.
3. Put back pork then pour water and bring to boil then season with fish sauce and pepper.
4. Add bok choy then cook for 2-3 minutes or until half-done.
5. Remove from heat then serve with steamed rice. Enjoy.

Afritadang Bangus

Filipino Style Recipe: Afritadang bangus or milkfish is another variety of popular Filipino tomato-based stew. Afritada is commonly consist of chicken but we will use milkfish(bangus) for this recipe. The fish comes fried then cooked in tomato sauce together with potatoes, carrots and bell pepper. This dish is usually serve as main dish together with steamed rice.

1 big sized milkfish(bangus), slice diagonally into 1 inch thick
1 green bell pepper, slice into strips
1 large potato, sliced
3 cloves garlic, minced

1 pack(115 grams) tomato sauce
1 cup water
salt and pepper to taste
1 carrots, sliced(optional)

Procedures:
Part 1
1. In a frying pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.
2. Sprinkle milkfish with salt then fry until golden brown. Drain and set aside.

Part 2
1. In a pan, heat oil then saute ginger, garlic and onion.
2. Add bell pepper then continue sauteing for 2 minutes.
3. Pour tomato sauce and water then bring to boil. Season with salt and pepper.
4. Add potatoes, carrots and fried fish then simmer for 2 minutes.
5. Remove from heat then transfer to serving plate. Serve with steamed rice.

Chicken Asparagus

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
2 tablespoons brown sugar
1 teaspoon sesame oil

Procedures:
Part 1
1. In a bowl, combine chicken and marinade then stir together. Set aside for 30 minutes.
2. Cut asparagus into 2-3 inches then separate the asparagus spears. Set aside.

Part 2
1. In a pan, heat oil then saute garlic and onion.
2. Add marinated chicken and stir cook until light brown.
3. Add chicken broth then simmer for 10 minutes or until chicken is tender.
4. Add oyster sauce then season with salt and pepper according to taste.
5. Add asparagus stalk and simmer for a minute.
6. Add asparagus spears and simmer for another minute.
7. Remove from heat then transfer to serving plate. Serve immediately.

Stir Fry Beef and Vegetables

Marinade:
1/4 cup soy sauce

1 teaspoon sesame oil

Part 1
1. In a bowl, combine beef and marinade then stir together.
2. Set aside for 30 minutes then drain and discard marinade.

Part 2
1. In a sauce pan, heat cooking oil and saute garlic and onion.
2. Add vegetables, oyster sauce, salt and pepper then stir cook for 4 minutes.
3. Transfer into bowl and set aside.

Part 3
1. In a same pan, heat oil then stir fry beef for 3 minutes.
2. Add cooked vegetables then toss and cook for another minute.
3. Transfer to serving plate then serve immediately with steamed rice.
