Broccoli and Cauliflower Salad

Filipino style recipe: broccoli and cauliflower salad is a quick and easy side dish. It is mainly made up of steamed broccoli and cauliflower then add lemon juice, olive oil, garlic, onion, salt and pepper.

Ingredients
1 head broccoli florets, cut into bite size
1 head cauliflower florets, cut into bite size

Dressing:
2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
1 clove garlic, crushed
1 small onion, minced
Salt and pepper to taste

Procedures
Part 1
1. In a bowl, mix lemon juice, olive oil, garlic, onion, salt and pepper. Mix well.

Part 2
1. In a steamer, steam the broccoli and cauliflower for about 8 minutes.
2. Transfer the broccoli and cauliflower into a bowl and add the dressing.
3. Serve and enjoy!

Ginataang Monggo Recipe

Filipino Style Recipe: ginataang monggo recipe is another sweet rice porridge popular among Filipinos. It is mainly made up of sticky rice and roasted mung beans boiled with coconut milk with sugar.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4 servings

Ingredients:
1/2 cup sticky rice(malagkit), washed
1/4 cup mung beans(monggo)
1 cup water
1 can coconut milk
3/4 cup sugar
1 cup corn kernels(optional)
1 teaspoon vanilla extract(optional)

Procedures:
1. In a pan, toast monggo until roasted and brown.
2. Crushed the monggo using a rolling pin or bottle. Set aside.
3. In a casserole mix the rice, roasted monggo, water and coconut milk.
4. Cook in a low heat until the coconut milk is almost absorbed. Stir occasionally.
5. Add sugar, corn kernels and vanilla extract and stir well. Remove from heat.
6. Transfer to serving bowl and serve hot!

Fish Fillet Curry

Filipino Style Recipe: Fish fillet curry is another variety of mouth-watering curry dish. This is similar to other curry dish. Normally the fish marinade then cooked in a blend of curry powder and coconut milk together with potatoes, carrots and bell peppers. Add half of red chili for more spicy taste. This dish is usually serve as main dish or during Lenten season.

Estimated time of cooking: 15-20 minutes
Good for 2 servings

Ingredients:
1/2 kilo fish fillets(tuna, salmon, lapu-lapu, tanigue)
2 tablespoons curry powder
1 cup coconut milk
1 onion, chopped
3 cloves garlic, minced
1 thumb-sized ginger, minced
1 tablespoon fresh lime or calamansi juice
2 pieces potatoes, cut into cubes
1 pieces carrots, cut into cubes
2 pieces green and red bell peppers, cut into cubes
2 tablespoons olive oil
salt and pepper to taste

2 tablespoons cornstarch(optional)
1/2 red chili, sliced diagonally(optional)

Procedures:
Part 1
1. In a bowl, marinate fish with lime juice, pepper and salt for 30 minutes.
2. In a separate bowl, combine curry powder, coconut milk and cornstarch. Mix until dissolved.

Part 2
1. In a pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.

Part 3
1. In a pan, heat oil and saute ginger, garlic and onions.
2. Add the curry mixtures then stir and bring to boil.
3. Add fish then simmer in a low heat for 10 minutes or tender. (Do not stir but prevent fish from sticking.)
4. Add bell peppers, potatoes and carrots then season with salt and pepper according to taste. Simmer for another 2 minutes.
5. Transfer the fish into serving plate with sauce on top. Serve hot with steamed rice.

Mac and Cheese Soup with Broccoli

Filipino Style Recipe: Mac and cheese soup with broccoli recipe is an easy soup dish. It is mainly made up of pasta and broccoli cooked in milk and cheese.

Good for 5 servings

Ingredients:
100 grams elbow macaroni
2 onions, chopped
2 cloves garlic, minced
2 tablespoons cornstarch
1 cup evaporated milk
1 tablespoon butter
2 1/2 cups chicken or vegetable broth
2 cups broccoli florets, chopped
1 large carrot, chopped
2 tablespoons Parmesan cheese
1 cup cheddar cheese
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a pot, heat butter and saute onions, garlic and carrots.
2. Add cornstarch, chicken broth and milk then stir well. Cover and simmer for about 10 minutes.
3. Add broccoli and Parmesan cheese. Adjust seasoning with salt and pepper. Simmer until broccoli is cooked.
4. Add pasta and cheddar cheese then remove from heat.
5. Transfer to serving bowl then Serve and enjoy!

Shrimp in Tomatoes and Coconut Milk

Filipino Style Recipe: Shrimp in Tomatoes and Coconut Milk recipe is a quick shrimp stew. It usually consists of shrimp cooked in tomatoes and coconut milk.

Ingredients:
500 grams jumbo shrimp, peeled and deveined
1 can(400ml) coconut milk
2 large tomatoes, diced
1 red bell pepper, sliced thinly
1 white onions, sliced thinly
4 cloves garlic, minced
1 teaspoon olive oil
1 tablespoon lime juice
salt and pepper to taste

1/2 cup parsley(optional)
1/2 teaspoon red pepper flakes(optional)

Procedures:
1. In a pot, heat olive oil then saute red bell pepper until soft.
2. Add garlic, onions, red pepper flakes and parsley. Continue sauteing for a minute.
3. Add tomatoes, coconut milk, salt and pepper. Cover and simmer for 5 minutes in low heat.
4. Add shrimp and cook for another 3 minutes then add lime juice.
5. Adjust seasoning according to taste and continue cooking until sauce is thicken.
6. Transfer to serving bowl and top with remaining parsley. Serve and enjoy!

Tips:
1. You may also add curry powder to add more taste.

Vegetable Curry Stew

Filipino style recipe: vegetable curry stew recipe is another vegetable dish. This stew sauteed with cubes of sweet potato and other vegetables. You may also serve this meal during Lenten season.

Good for 4 servings

Ingredients:
1 1/2 teaspoons curry powder
2 teaspoons olive oil
1 large sweet potato, peeled and cut into cubes
1 green pepper, cut into cubes
1 can diced tomatoes
1 small zucchini, cut into cubes
1 can garbanzo beans or any beans, rinsed and drained
1 onion, chopped
1/2 teaspoon salt
3/4 cup vegetable broth
1 teaspoon ground cumin(optional)

Procedures:
1. In a sauce pan, heat olive oil then add onion, green pepper, sweet potato and zucchini.
2. Stir occasionally, cook for 10 minutes or until vegetables are golden.
3. Add curry and cumin then continue cooking for 1 minute.
4. Add garbanzo beans, tomatoes, vegetable broth and salt.
Cover and simmer for 10 minutes or until vegetables are done.

Tips:
1. You also use vegetable soup mix dissolve in warm water as vegetable broth.
2. You may also add carrots and other green leafy vegetables.

Champorado Recipe

Filipino Style Recipe: Champorado recipe is a sweet rice porridge popular among Filipinos. It is usually sticky rice boiling with cocoa powder with brown sugar then served with milk on top.

Good for 2-3 servings

Ingredients:
1 cup glutinous rice(malagkit)
1/4 cup cocoa powder(dissolve with 1 cup of warm water.)
3 cups water
1/2 cup brown sugar
milk(fresh, evaporated or condensed)

Procedures:
Part 1
1. Wash rice with water until runs clear.

Part 2
2. In a pot, put-in rice with water and bring to boil over medium heat for about 10-15 minutes. Stir occasionally.
4. Pour cocoa mixture into a pot then stir continuously until well blended.
5. Adjust the sweetness with brown sugar then continue cooking until rice is cooked and the texture becomes thick.
6. Transfer to serving plate with swirls of milk on top. Serve hot and enjoy!

Tips:
1. You may also add salt and vanilla.

Ginisang Upo with Corned Beef

Filipino Style Recipe: Ginisang upo recipe is another simple filipino dish. Like ginisang sayote, upo or white squash sauteed with ground pork but I used corned beef instead then add salt and pepper to taste.

Good for 3-4 servings

Ingredients:
1 medium-sized White Squash(Upo), sliced
1 can(medium-sized) corned beef
5 cloves garlic, crushed
1 medium-sized onion, diced
2 tablespoon cooking oil
salt and pepper to taste
1/4 cup water
2 tablespoons fish sauce(optional)
2 medium-sized tomatoes, diced(optional)

Procedures:
1. In a pan, heat oil over medium heat then saute garlic and onions.
2. Add corned beef and water. Simmer for 1 minutes.
3. Add white squash then cover and simmer for another 5 minutes.
4. Adjust seasoning with fish sauce, salt and pepper.
5. Serve hot.

Tips:
1. You may also use 1/4 kilo ground pork as alternative.

French Toast Recipe

Filipino Style Recipe: french toast is a breakfast meal. It consist of sliced bread soak in mixtures of eggs, milk, sugar and a dash of salt. Toast with butter over a medium heat. Serve with butter and syrup.

Estimated time of preparation and cooking: 10-15 minutes
Good for 4-5 persons

Ingredients:
10 slices bread(I prefer whole wheat)
4 eggs
1 cup milk
1 tablespoon brown sugar
a dash of salt
1/2 teaspoon cinnamon powder(optional)
powdered or confectioner’s sugar(optional)
butter
maple syrup or other syrup

Procedures:
Part 1
1. In a large bowl, combine eggs, milk, cinnamon, salt and sugar then mix until well blended
2. Soak the sliced bread for a few seconds into mixture one at a time then gently turn to coat the other side.

Part 2
1. In a frying pan, melt butter over low heat.
2. Toast each bread until bottom turns to golden brown then turn the bread over and do the same way.
3. Repeat the procedures for remaining slices.
4. Transfer toasted bread to serving plate, then dust with confectioners’ sugar.
5. Serve immediately with butter and syrup on top together with hot coffee.

Sotanghon Salad Recipe

Filipino Style Recipe: sotanghon(glass noodles) recipe is another pasta dish. Normally the noodles cooked in hot water then top with any vegetables of choice. Pour the sauce with the blend of lime juice and fish sauce.

Good for 4-6 servings

 

Ingredients:
50 grams dried sotanghon(glass noodles)
1 boneless chicken breast fillet
1 carrot, shredded
10 pieces cherry tomatoes, halved
1/2 cup wansuy(coriander) leaves, chopped
3 tablespoons fresh lime or calamansi juice
2 tablespoons fish sauce(I prefer Thai fish sauce)
1 fresh red or green bell pepper, chopped
3 spring onions, thinly sliced
1 teaspoon brown sugar
2 tablespoons olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, pour hot water and soak sotanghon noodles then cover for 2-3 minutes or until noodles begin to soften.
2. Drain and rinse in cold water. Set aside.

Part 2
1. In a frying pan, heat olive oil and saute chicken fillet until cooked.
2. Cut into small pieces and season with salt and pepper.

Part 3
1. In a bowl, mix together bell pepper, lime juice, fish sauce, brown sugar and spring onions. Set aside.

Part 4
1. Transfer sotanghon noodles in a large bowl with shredded carrots, cherry tomatoes and coriander leaves.
2. Top with chicken fillets, pour the sauce then mix thoroughly. Done
3. Serve and Enjoy!

Tips:
1. You may add also wood ear mushrooms, prawns, tofu or bean sprouts.
